Dopo una prima parte dove vengono illustrate le funzioni e gli organi principali dell'OIV, approfondendone gli scopi e i ruoli, l'elaborato analizza alcune delle risoluzioni enologiche più interessanti emanate nel 2020 e nel 2021 dall'organizzazione. La prima risoluzione che viene approfondita è la OIV-OENO-631-2020 "Rassegna delle pratiche per la riduzione delle dosi di SO2 in vinificazione". Vengono individuati sei principali punti d'intervento in cui è possibile, tramite azioni a monte, evitare che divengano necessarie dosi di solforosa eccessive o sostanziose durante tutto il corso del processo produttivo, dalla campagna alla cantina fino alla bottiglia, al fine di correggere appunto "errori" in passaggi precedenti. Segue la risoluzione OIV-OENO-643-2020: "Monografia sulle sfere adsorbenti in stirene-divinilbenzene". Questa monografia porta all'attenzione una nuova tecnica per la riduzione e eliminazione dei difetti aromatici di terra-muffa legati direttamente alla geosmina. Buona parte della monografia tratta metodologie analitiche sulla gestione delle sfere in cantina, necessitando queste di trattamenti di precondizionamento prima dell'utilizzo e rinnovamento una volta terminato. La tecnica è molto interessante; non presenta però selettività nei confronti della molecola: ne consegue che una sua applicazione è un rischio calcolato. L'ultima risoluzione che viene approfondita è la OIV-OENO 581a-2021 "Trattamento del vino con acido fumarico per l'inibizione della fermentazione malolattica". In questa risoluzione viene introdotto l'utilizzo dell'acido fumarico nelle produzioni alimentari e, nel caso della produzione di vino, l'utilizzo per contrastare i batteri responsabili della fermentazione malolattica.

The relativistic heavy ion program developed at RHIC and now at LHC motivated a deeper study of the properties of the quark-gluon plasma (QGP) and, in particular, the study of perturbations in this kind of plasma. We are interested on the time evolution of perturbations in the baryon and energy densities. If a localized pulse in baryon density could propagate throughout the QGP for long distances preserving its shape and without loosing localization, this could have interesting consequences for relativistic heavy ion physics and for astrophysics. A mathematical way to prove that this can happen is to derive (under certain conditions) from the hydrodynamical equations of the QGP a Korteveg-de Vries (KdV) equation. The solution of this equation describes the propagation of a KdV soliton. The derivation of the KdV equation depends crucially on the equation of state (EOS) of the QGP. The use of the simple MIT bag model EOS does not lead to KdV solitons. Recently we have developed an EOS for the QGP which includes both perturbative and nonperturbative corrections to the MIT one and is still simple enough to allow for analytical manipulations. With this EOS we were able to derive a KdV equation for the cold QGP.

We have studied some possible four-quark and molecule configurations of the X(3872) using double ratios of sum rules, which are more accurate than the usual simple ratios often used in the literature to obtain hadron masses. We found that the different structures ((3) over bar - (3) over bar and (6) over bar - 6 tetraquarks and D - D(*) molecule) lead to the same prediction for the mass (within the accuracy of the method), indicating that the alone prediction of the X mass may not be sufficient to reveal its nature. In doing these analyses, we also find that (within our approximation) the use of the (MS) over bar running (m) over bar (c)(m(c)(2)), rather than the on-shell mass, is more appropriate to obtain the J/psi and X meson masses. Using vertex sum rules to roughly estimate the X(3872) hadronic and radiative widths, we found that the available experimental data does not exclude a lambda - J/psi-like molecule current.

Heavy quark production has been very well studied over the last years both theoretically and experimentally. Theory has been used to study heavy quark production in ep collisions at HERA, in pp collisions at Tevatron and RHIC, in pA and dA collisions at RHIC, and in AA collisions at CERN-SPS and RHIC. However, to the best of our knowledge, heavy quark production in eA has received almost no attention. With the possible construction of a high energy electron-ion collider, updated estimates of heavy quark production are needed. We address the subject from the perspective of saturation physics and compute the heavy quark production cross section with the dipole model. We isolate shadowing and nonlinear effects, showing their impact on the charm structure function and on the transverse momentum spectrum.

We use QCD sum rules to test the nature of the meson X(3872), assumed to be a mixture between charmonium and exotic molecular [c (q) over bar][q (c) over bar] states with J(PC) = 1(++). We find that there is only a small range for the values of the mixing angle theta that can provide simultaneously good agreement with the experimental value of the mass and the decay width, and this range is 5(0) <= theta <= 3(0). In this range we get m(X) = (3.77 +/- 0.18) GeV and Gamma(X -> J/psi pi(+)pi(-)) = (9.3 +/- 6.9) MeV, which are compatible, within the errors, with the experimental values. We, therefore, conclude that the X(3872) is approximately 97% a charmonium state with 3% admixture of similar to 88% D(0)D*(0) molecule and similar to 12% D(+)D*(-) molecule.

We calculate the nuclear cross section for coherent and incoherent vector meson production within the QCD color dipole picture, including saturation effects. Theoretical estimates for scattering on both light and heavy nuclei are given over a wide range of energy.

We use the Kharzeev-Levin-Nardi (KLN) model of the low x gluon distributions to fit recent HERA data on F(L) and F(2)(c)(F(2)(b)). Having checked that this model gives a good description of the data, we use it to predict F(L) and F(2)(c) to be measured in a future electron-ion collider. The results are similar to those obtained with the de Florian-Sassot and Eskola-Paukkunen-Salgado nuclear gluon distributions. The conclusion of this exercise is that the KLN model, simple as it is, may still be used as an auxiliary tool to make estimates for both heavy-ion and electron-ion collisions.

We propose a simple model for the total pp/p (p) over bar cross-section, which is a generalization of the minijet model with the inclusion of a window in the pT-spectrum associated to the saturation physics. Our model implies a natural cutoff for the perturbative calculations which modifies the energy behavior of this component, so that it satisfies the Froissart bound. Including the saturated component, we obtain a satisfactory description of the very high energy experimental data.

Perturbative Quantum Chromodynamics (pQCD) predicts that the small-x gluons in the hadron wavefunction should form a Color Glass Condensate (CGC), which has universal properties, which are the same for nucleon or nuclei. Making use of the results in V.P. Goncalves, M.S. Kugeratski, M.V.T. Machado, F.S. Navarra, Phys. Lett. B643, 273 (2006), we study the behavior of the anomalous dimension in the saturation models as a function of the photon virtuality and of the scaling variable rQ(s), since the main difference among the known parameterizations are characterized by this quantity.
