With the increasing production and consumption of potato and its products, glycoalkaloid (GA) formation and toxicity are likely to become an important focus for food safety researchers and public health agencies. Not only the presence of GA, particularly in the form of a-solanine and a-chaconine, but also the changes occurring as a result of various post-harvest handling practices and storage, are critical issues influencing the quality of stored potatoes. Studies on various factors (pre-harvest, during harvest anal post-harvest) affecting GA have been carried out from time to time, but it is difficult to compare the results of one study with another due to wide variation in the parameters chosen. This review aims to develop a clear understanding of these issues. Published information on the types of GA, their effects on health, their typical concentrations in potatoes, their formation mechanisms, and how their levels can be controlled by following appropriate post harvest practices and storage regimes are critically analysed. The levels of GA in potato can be controlled effectively by adopting appropriate post-harvest practices. Further studies are necessary, however, to investigate best practices, which either check completely or retard substantially their formation. (C) 2008 Society of Chemical Industry.

In Brazil school food is constitutionally guaranteed to public school students at the preschool and elementary level. This food must be nutritious, hygienic and sanitary. The aim of the present study was to assess the hygienic/sanitary conditions of food and table utensil handlers in municipal public schools in Natal, Brazil. In total, 27 public schools were assessed, using a checklist and microbiological analysis of the hands and table utensils. For the microbiological analyses of the hands, coliforms were analyzed at 45ºC and for the utensils aerobic mesophilic bacteria, using methods recognized by AOAC, 2002 and APHA, 1992, respectively. Most of the schools studied did not exhibit good food and utensil handling practice procedures in any of the variables analyzed. It was shown that 74.1% of the handlers received no periodic training, 51.9% did not undergo annual health examinations and 100% did not practice proper hand hygiene, which reflected significantly (p < 0.05) in hand contamination, where fecal coliforms were detected on 55.6% of the hands analyzed. With respect to the utensils, it was found that 100% of the schools studied did not follow correct hygiene practices and most were classified as very bad ; that is, aerobic mesophilic bacteria values above the limits established by PAHO (Pan American Health Organization), with schools in the north and south districts recording the highest percentages. The results show that the hygienic-sanitary conditions of the food and utensil handlers in the schools studied were inadequate, demonstrating the need for implanting good handling practices aimed at protecting the health of children that take part in the program and offering safer foods. A utilização de produtos anestésicos durante práticas de manejo é frequentemente empregada, porém doses corretas de diferentes fármacos e para espécies distintas ainda estão em fases de pesquisa. O objetivo do estudo foi determinar a melhor concentração de benzocaína e eugenol para juvenis de piraputanga (B. hilarii). Foram utilizados 104 juvenis de piraputanga com peso médio de 50,04 ± 20,80 g e comprimento total médio de 16,30 ± 12,32 cm adquiridos em uma piscicultura comercial localizada na região Oeste do Estado do Paraná. O trabalho foi conduzido no Laboratório de Aquicultura do Grupo de Estudos de Manejo na Aquicultura - GEMAq da Universidade Estadual do Oeste do Paraná (UNIOESTE). Os animais foram submetidos a cinco concentrações de benzocaína (50,0; 100,0; 150,0; 200,0 e 250,0 mg L-1) e sete concentrações de eugenol (50,0; 100,0; 150,0; 200,0; 250,0; 300,0 e 350 mg L-1), para a aferição dos tempos referentes à letargia. Para a recuperação, os animais foram mantidos em aquários livre do anestésico e observado o tempo em que retornaram às atividades normais. A melhor dose de benzocaína verificada foi de 100 mg L-1, enquanto a melhor dose de eugenol foi entre 100 e 150 mg L-1.

Several initiatives, including research and development, increasing stakeholders' awareness and application of legislation and recommendation, have been carried out in Latin America to promote animal welfare and meat quality. Most activities focused on the impact of pre-slaughter conditions (facilities, equipment and handling procedures) on animal welfare and meat quality. The results are encouraging; data from Brazil, Chile and Uruguay showed that the application of the improved pre-slaughter handling practices reduced aggressive handling and the incidence of bruised carcasses at slaughter in cattle and pigs. These outcomes stimulated some to apply animal welfare concepts in livestock handling within the meat production chain as shown by the increasing demand for personnel training on the best. To attend this demand is important to expand local studies on farm animal welfare and to set up (or maintain) an efficient system for knowledge transfer to all stakeholders in the Latin America meat production chains. However, it is clear that to promote the long-term progress in this field is important to deliver practical solutions, assuring that they match the technical and financial conditions of those who are the target of training programs. Na presente revisão, buscou-se apresentar os principais impactos ambientais causados pela pecuária, sobretudo, em relação às emissões de gases efeito estufa (GEE). Além disso, buscou-se apresentar possíveis formas de mitigar essas externalidades. A criação de bovinos, no Brasil, acontece de forma extensiva, muitas vezes em áreas com pastagem degradada e, portanto, de baixa produtividade. Isso possibilita à atividade uma oportunidade de redução do impacto causado ao meio ambiente, uma vez que ações tomadas, no sentido de melhorar o rendimento animal, devem resultar em um menor consumo de recursos naturais (terra e água) e maior eficiência do sistema digestivo animal. Os principais problemas apontados pelos pesquisadores, no que tange à pecuária extensiva, são o metano emitido pela fermentação entérica dos ruminantes, o óxido nitroso emitido pelos dejetos dos animais em pastejo e o dióxido de carbono trocado pelo solo e vegetação. Muitos fatores influenciam a produção de CH4 entérico dos ruminantes, inclusive o tipo de carboidrato fermentado, o sistema digestivo do animal, a quantidade e o tipo de alimentos consumidos. Diante do exposto, pesquisadores têm desenvolvido tecnologias para reduzir a emissão de metano, através da melhoria das práticas de manejo alimentar, manipulação ruminal, por meio de suplementação com monensina, lipídios, ácidos orgânicos e compostos de plantas. Outras estratégias de redução de metano que foram investigadas são: defaunação e vacinas, que buscam inibir micro-organismos metanogênicos e a metanogênese. Assim, a busca por sistemas de produção eficientes tem sido uma das perspectivas da pecuária mundial para reduzir a emissão de poluentes e intensificar a produção animal.

O experimento foi realizado na Fazenda Experimental Lageado, Unesp Botucatu - SP, em um Nitossolo Vermelho distroférrico, em plantio direto sobre resteva de milho. O delineamento experimental foi em blocos ao acaso, com quatro repetições. As densidades de plantas (60, 120, 180, 240 e 300 plantas m²) constituíram as parcelas e as doses de N em cobertura (0, 20, 40, 60 e 80kg ha-1) constituíram as sub-parcelas. O objetivo do trabalho foi avaliar o rendimento de grãos de aveia branca cultivada em diferentes densidades de plantas e doses de N. Os resultados foram submetidos à análise de variância (teste F), e as médias submetidas à regressão polinomial. Verificou-se interação significativa para as variáveis avaliadas. O rendimento de grãos foi influenciado positivamente pelas densidades e doses de N. O número final de panículas foi influenciado pelas médias de densidades de plantas e doses de N e o número de grãos por panícula foi influenciado negativamente pelas densidades e positivamente pelas doses de N. A massa de mil grãos foi maior nas maiores densidades de plantas e nas doses intermediárias de N. Com redução na densidade inicial de plantas, o rendimento de grãos esperado foi alcançado com aumento na dose de N em cobertura. Com densidade normal de plantas e doses recomendadas de N em cobertura, o rendimento de grãos obtido foi maior que o esperado.

Fresh sausages are cured meat products that may be contaminated with Staphylococcus aureus during the manufacturing procedure, which is frequently related with inadequate handling practices. The use of nitrite in meat products has proven efficacy against Clostridium botulinum, and studies indicate that bactericidal action against S. aureus depends on factors that are intrinsic and extrinsic to the product. The objective of the present study was to evaluate the effect of nitrite concentration, and pH on S. aureus and psychrotrophic autochthone microbiota in fresh sausages stored at different times and temperatures. Fresh sausage were produced at nitrite concentrations 50, 150 and 200ppm and contaminated with S. aureus. The sausages were storage at refrigeration (7 and 12 degrees C) and the quantification of S. aureus and psychrotrophic microorganisms was carried out on days 0, 2, 4, 7, and 10. Results showed that nitrite concentrations and the temperatures used had minimal effect on the multiplication of S. amens and psychrotrophic autochthone microbiota. Final counts depended only on the length of storage: at the end of 10 days, counts were statistically similar in the different groups, showing that temperature and nitrite concentrations used did not control microbial growth effectively. It is suggested that the product should be stored below 7 degrees C or at freezing temperatures for greater microbiological stability.

Milk is considered a nutritionally complete food but it is also an excellent substrate for microbial growth. Therefore, it may pose a risk to consumers’ health. The aim of this study was to collect data on the occurrence of gastroenteritis outbreaks caused by the intake of milk and dairy products in the state of São Paulo, from 2000 to 2010. The data were collected from the records on foodborne illness outbreaks kept by the Division of Waterborne and Foodborne Diseases of the Center for Epidemiological Surveillance of the Department of Health of the State of São Paulo. A total of 239 outbreaks were notifi ed. They involved 2.418 cases related to the consumption of dairy products during the study period. The etiological agents were identifi ed in 79 outbreaks (33.0%). They were mostly bacteria (84.8%), especially Staphylococcus aureus. Most outbreaks occurred at home (59.4%) and during the months of January (14.2%) and July (12.5%). Most (24.1%) of the affected individuals aged 20 to 49 years. The results shows the need of better manufacturing and handling practices, as well as increasing the awareness of the population and relevant agencies about the importance of notifying cases and implementing preventive measures to ensure food safety.

Foodborne illness has always been with us, and food safety is an increasingly important public health issue affecting populations worldwide. In the United States of America, foodborne illness strikes millions of people and kills thousands annually, costing our economy billions of dollars in medical care expense and lost productivity. The nature of food and foodborne illness has changed dramatically in the last century. The regulatory systems have evolved to better assure a safe food supply. The food production industry has invested heavily to meet regulatory requirement and to improve the safety of their products. Educational efforts have increased public awareness of safe food handling practices, empowering consumers to fulfill their food safety role. Despite the advances made, none of the Healthy People 2010 targets for reduction of foodborne pathogens has been reached. There is no single solution to eliminating pathogen contamination from all classes of food products. However, irradiation seems especially suited for certain higher-risk foods such as meat and poultry and its use should advance the goal of reducing foodborne illness by minimizing the presence of pathogenic organisms in the food supply. This technology has been studied extensively for over 50 years. The Food and Drug Administration has determined that food irradiation is safe for use as approved by the Agency. It is time to take action to educate consumers about the benefits of food irradiation. Consumer demand will compel industry to meet demand by investing in facilities and processes to assure a consistent supply of irradiated food products. ^

A pesquisa sobre as percepções de residentes da região de Piracicaba em relação às questões ambientais e ao futuro da humanidade no planeta foi desenvolvida com base em um questionário semi-estruturado. As questões buscaram levantar dados autoavaliativos sobre perfil, comportamentos, estado de humor, qualidade de vida, condição econômica e hábitos de consumo, práticas para destinação de resíduos, iniciativas de exercício de cidadania em prol da sustentabilidade socioambiental, para enfim, indagar sobre percepções de futuro e avaliações sobre o contexto socioambiental dos participantes da pesquisa. A aplicação dos questionários foi feita de forma aleatória estratificada nos bairros das cinco regiões da cidade de Piracicaba: Norte, Sul, Leste, Oeste e Centro. Por meio dessas aplicações, foram obtidos 655 questionários, que foram sistematizados, tabulados e analisados estatisticamente, utilizando-se gráficos de frequência, o Teste de Kruskal Wallis, os Testes de Correlação de Spearman e Kendall, o Teste de Qui-Quadrado e o Teste Exato de Fisher. Foram também criadas nuvens de palavras, desenvolvidas no software online \"Wordle\" (FEINBERG, 2014). Os resultados obtidos com essa pesquisa e as análises desenvolvidas indicam que 227 pessoas, isto é, aproximadamente 35% dos respondentes, possui uma percepção pessimista sobre o futuro da humanidade no planeta. Porém, 493 pessoas, o equivalente a aproximadamente 75% do total de respondentes, considerou que, dentre as alternativas apresentadas no questionário (Desenvolvimento de tecnologias; Controle de natalidade; Educação e mudanças culturais; Cobrança de impostos com base nos impactos ambientais; Intervenção do Estado), a educação e mudanças culturais são fundamentais no processo de transformação social e de superação das problemáticas ambientais. Observou-se também que a crise hídrica vivenciada na época em que os questionários foram aplicados também influenciou na percepção social dos respondentes, uma vez que a palavra \"água\" foi citada 380 vezes. Por meio do trabalho, foi também possível analisar o comportamento ambiental dos pesquisados, notando-se que ainda há a necessidade de promoção de atividades educacionais e comunicacionais que possam estimular a adoção de hábitos e comportamentos mais comprometidos com ideias de sustentabilidade e que levem a mudanças mais efetivas nos padrões de relacionamento entre sociedade e meio ambiente.

Purpose – The purpose of this paper is to examine challenges and potential of big data in heterogeneous business networks and relate these to an implemented logistics solution. Design/methodology/approach – The paper establishes an overview of challenges and opportunities of current significance in the area of big data, specifically in the context of transparency and processes in heterogeneous enterprise networks. Within this context, the paper presents how existing components and purpose-driven research were combined for a solution implemented in a nationwide network for less-than-truckload consignments. Findings – Aside from providing an extended overview of today’s big data situation, the findings have shown that technical means and methods available today can comprise a feasible process transparency solution in a large heterogeneous network where legacy practices, reporting lags and incomplete data exist, yet processes are sensitive to inadequate policy changes. Practical implications – The means introduced in the paper were found to be of utility value in improving process efficiency, transparency and planning in logistics networks. The particular system design choices in the presented solution allow an incremental introduction or evolution of resource handling practices, incorporating existing fragmentary, unstructured or tacit knowledge of experienced personnel into the theoretically founded overall concept. Originality/value – The paper extends previous high-level view on the potential of big data, and presents new applied research and development results in a logistics application.
