Brazilian wines are appreciated by consumers for having fruity odor and taste which are typical from Vitis labrusca cultivars. The rusticity of these cultivars, the winemaking and the physicochemical properties are some of the key factors to obtain a quality beverage. In this context, the aim of this article was to analyze the quality of three white wines from wineries located in northwest region of São Paulo state by determining physicochemical properties and sensory profile. Data were analyzed by statistical tests and by Principal Component Analysis (PCA). It was possible to observe statistical differences (P<0,05) in most physicochemical properties. Furthermore, the PCA showed that the attributes body and color significantly explained the variance of the first and second component, respectively, higlighting the Vitis vinifera wine. Thus the connection between the physicochemical and sensory properties of white wines was important for characterization of these beverages produced in the northwest of São Paulo.

The aim of this study was to produce mix beverages of grape juice and soybean hydrosoluble extract (SHE) in laboratory scale. The raw materials were soybean (variety BRS 213), grape (species Vitis labrusca, variety Niagara Rosada), citric pectin, water and sugar. The mix beverage was produced with different proportions of SHE and grape juice (1:1; 1:1.5 and 1:2; respectively; m/m) and different soluble solids concentrations (10, 12 and 14 °Brix) obtained by adding granulated sugar (sucrose). Soybean hydrosoluble extract, grape juice and mix beverages were chemically analyzed (humidity, ash, protein, lipids, carbohydrate, reducing sugars, total reducing sugars, sucrose, titratable acidity and pH). The mix beverages were sensorial analyzed through the acceptance test (hedonic scale). The results of chemically analyzed were expressed as mean and standard deviation and the results of sensorial analyzed were submitted to variance analysis and the means were compared using the Tukey test at 5% of probability. The pH of mix beverages was lower than 3.9, without addition of acidulants. Sugar addition to mix beverages (10; 12 and 14ºBrix) increased the levels of soluble solids, total reducing sugar and carbohydrates, but it did not interfere in the reducing sugar concentration. The increased proportion of grape juice in mix beverages allowed observing the elevation of titratable acidity and reducing sugars levels, as well as the pH reduction. The increase of grape juice in mix beverage did not interfere in the acceptance of mix beverages. The more sweetened beverages were preferred by the sensory panel.

The Brazilian wine industry has a remarkable characteristic that distinguishes from other markets, while the foreign market only accepts products originating from European varieties (Vitis vinifera), in Brazil, products originating from American varieties (Vitis labrusca and Vitis bourquina) and hybrids are also accepted. Dry and sweet varietal wines from varieties Bordô (dry and sweet), Isabel (sweet) e Máximo (dry) were analyzed, by the following chemical standard analyses: alcohol content; density; total and reduced dry matter; alcohol/reduced dry extract ratio; reducing sugars; total, volatile and fixed acidity; pH; total and free sulfur dioxide; and energy value. All analyzed wines presented results within the parameters set forth by Brazilian law, a positive fact, once they are commercialized. The varietal wine Máximo presented a low content of total and free sulfur dioxide, which may cause future problems with its sanity.

BACKGROUND: It is widely accepted that red wines constitute one of the most important sources of dietary polyphenolic antioxidants. However, it is still not known how some variables such as variety, vintage, country of origin, and retail price are associated with the antioxidant activity and sensory profile of South American red wines. In this regard, 80 samples produced in Brazil, Chile and Argentina were assessed in relation to their sensory properties, color and in vitro antioxidant activity, and results were subjected to multivariate statistical techniques. RESULTS: Samples were grouped in clusters, characterized by high, intermediate and low in vitro antioxidant activity, sensory properties and prices. It was possible to observe that wines with high antioxidant activity were associated to high retail prices and overall perception of sensory quality. CONCLUSION: South American wines produced from Vitis vinifera such as Syrah, Malbec and Cabernet Sauvignon had higher in vitro antioxidant activity and also higher sensory quality than wines produced from Vitis labrusca. This result was independent of vintage (2002-2010), corroborating the idea that the same grape varietal, even when produced in different years, displays similar sensory characteristics and antioxidant activity. O conhecimento da interferência do porta-enxerto no desenvolvimento da copa é muito importante, pois tais interações para cada combinação porta-enxerto e cultivar copa adotada pode variar. Dessa forma, o objetivo deste trabalho foi avaliar a interferência dos porta-enxertos \'IAC 766\', \'IAC 572\', \'IAC 313\', \'IAC 571-6\' e \'Ripária do Traviú\', no desenvolvimento e fertilidade das gemas da cultivar copa \'Niagara Rosada\'. O estudo foi realizado em videira \'Niagara Rosada\' conduzida sob o sistema de espaldeira, na região de Jundiaí - SP. As avaliações foram realizadas em três ciclos de produção, destes, dois foram realizados no ciclo tradicional, em que a poda de produção é realizada no inverno e a colheita no fim da primavera e início de verão, e um foi realizado na denominada safrinha, em que a poda de produção ocorre no verão e a colheita no fim do outono e início do inverno. Para os ciclos de produção tradicionais avaliou-se a fertilidade da primeira até a quarta ou quinta gema, o número de brotação, o número de cacho e o comprimento final dos ramos em 2014 e 2015. No ciclo de produção safrinha avaliou-se a fertilidade da quinta até a oitava gema e os demais dados biométricos durante o cultivo. Nesse ciclo de produção avaliou-se a produção e qualidade de frutos da videira. O delineamento experimental adotado foi em blocos casualizados em esquema de parcela subdividida para fertilidade de gemas, e em blocos casualizados para as demais variáveis. Os dados coletados foram submetidos à análise de variância, e quando significativo, os dados foram submetidos ao teste de comparação de médias Tukey a 0,05 de probabilidade. Não foi observado efeito dos diferentes porta-enxertos na fertilidade de gemas, no desenvolvimento da planta, na produção e qualidade dos frutos de videira \'Niagara Rosada\'.
