Abstract (provisional) Background Food Frequency Questionnaires (FFQs) are commonly used in epidemiologic studies to assess long-term nutritional exposure. Because of wide variations in dietary habits in different countries, a FFQ must be developed to suit the specific population. Sri Lanka is undergoing nutritional transition and diet-related chronic diseases are emerging as an important health problem. Currently, no FFQ has been developed for Sri Lankan adults. In this study, we developed a FFQ to assess the regular dietary intake of Sri Lankan adults. Methods A nationally representative sample of 600 adults was selected by a multi-stage random cluster sampling technique and dietary intake was assessed by random 24-h dietary recall. Nutrient analysis of the FFQ required the selection of foods, development of recipes and application of these to cooked foods to develop a nutrient database. We constructed a comprehensive food list with the units of measurement. A stepwise regression method was used to identify foods contributing to a cumulative 90% of variance to total energy and macronutrients. In addition, a series of photographs were included. Results We obtained dietary data from 482 participants and 312 different food items were recorded. Nutritionists grouped similar food items which resulted in a total of 178 items. After performing step-wise multiple regression, 93 foods explained 90% of the variance for total energy intake, carbohydrates, protein, total fat and dietary fibre. Finally, 90 food items and 12 photographs were selected. Conclusion We developed a FFQ and the related nutrient composition database for Sri Lankan adults. Culturally specific dietary tools are central to capturing the role of diet in risk for chronic disease in Sri Lanka. The next step will involve the verification of FFQ reproducibility and validity.

Fish feeding accounts for a substantial amount in the variable expenditure of a fish farming enterprises. There is a need to examine closely the potentials and advantages of locally available agro-industrial by-products, as possible substitutes for the conventional feedstuffs which are dwindling in supply, and escalating in their cost. A wide range of by products from plant, animal and industrial processes have been studied and posses nutrient composition which can be exploited as dietary ingredients for warm water species as the Tilapia and Clarias sp. Such useful by-products include poultry feathers, rice bran, soybean hulls and cocoa husks which are discarded as wastes. However, some processing treatments might be required to alleviate the toxic effects of possible anti-nutritional factors in the by-products, for the achievement of optimum benefit

In conventional milling, the aleurone layer is combined with the bran fraction. Studies indicate that the bran fraction of wheat contains the majority of the phytonutrients betaine and choline, with relatively minor concentrations in the refined flour. This present study suggests that the wheat aleurone layer (Triticum aestivum L. cv. Tiger) contains the greatest concentration of both betaine and choline (1553.44 and 209.80 mg/100 g of sample, respectively). The bran fraction contained 866.94 and 101.95 mg/100 g of sample of betaine and choline, respectively, while the flour fraction contained 23.30 mg/100 g of sample (betaine) and 28.0 mg/100 g of sample (choline). The betaine content for
the bran was lower, and the choline content was higher compared to previous studies, although it is known that there is large variation in betaine and choline contents between wheat cultivars. The ratio of betaine/choline in the aleurone fraction was approximately 7:1; in the bran, the ratio was approximately 8:1; and in the flour fraction, the ratio was approximately 1:1. The study further
emphasizes the superior phytonutrient composition of the aleurone layer.
INTRODUCTION
Wheat is a valuable source of betaine, choline (1, 2), B
vitamins, vitamin E, and a number of minerals, including iron,
zinc, magnesium, and phosphorus (3). Epidemiological studies
indicate that whole-grain consumption is protective against
several chronic diseases (4-12). It has not been fully elucidated
how whole-grain cereals or specific fractions (13) exert their
protective effect, but it is thought to be due to their content of
several nutrients associated with the reduced risk of disease.
Conventionally, whole grain is separated during milling into
bran, germ, and flour (14). The nutrient composition of these

The Mediterranean Diet concept was formulated during the sixties, in association with the food consumption pattern of Mediterranean areas that produced olive oil and shared common health styles. These areas, besides their own cultural and religious differences, share common food habits, such as: - The use of olive oil (supplier of monounsaturated fatty acids and antioxidants); - The abundant use of cereals, mainly under the form of excellent quality bread, flour and pasta (providing fibre and energy); - Large and variegate consumption of fruit (fresh and dried), nuts and vegetables (colourful, rich in fibre, antioxidants and other protective materials); - Abundant use of herbs and spices (rich in antioxidants and other protective materials); - Simple culinary methods, using short cooking times and low temperatures (which enhance the preservation of food nutritional and sensorial characteristics). The Mediterranean Diet reflects a set of characteristics that make it internationally recognized as a health promoter eating pattern, where the relation between monounsaturated and saturated fatty acids is highly advantageous for the former, fibre, vitamins and natural antioxidants intake is high, together with a low consumption of animal protein and salt. The obtained results show contents in protein, lipid and carbohydrates very adequate to the “DRI”; The relation between mono and saturated fatty acids (40:9) should be emphasised, together with the high fibre content. Protective nutrients show remarkable results, with a wide variety of vitamins and minerals, in particular Vitamin A, complex B vitamins, biotin, vit. E, folic acid, iron, manganese and selenium, that are widely recognised as important antioxidants and responsible for the good function of the immune system. In conclusion, tomato soup, consumed traditionally as a poor meal, shows to be a health promoter nutritionally complete recipe.

O objectivo deste trabalho foi estudar a utilização de 5 compostos de resíduos de origem vegetal, como componentes de substratos hortícolas. Estudaram-se os processos de compostagem de bagaço de azeitona, bagaço de uva, polpa de alfarroba, casca de eucalipto e casca de pinheiro, caracterizaram-se os compostos obtidos e testou-se a sua aptidão agronómica, como substratos para viveiro de tomate (Lycopersicum esculentum Mill.) em placas alveoladas e cultura de pelargónio (Pelargonium x hortorum) em vaso. Após uma preparação prévia, que em alguns dos resíduos vegetais constou de moenda, suplemento de azoto e aumento do teor de humidade, efectuou-se a sua compostagem em caixas com 1200 L de capacidade, isoladas termicamente, com arejamento por volteio manual. Depois foram analisadas as suas características físicas e químicas e testados na sua aptidão como constituintes únicos de substratos e em misturas com turfa de sphagnum. A maioria dos processos de compostagem apresentou uma evolução habitual da temperatura, com a máxima aproximando-se ou ultrapassando 60 oC. Como excepções, verificou-se um período de compostagem muito longo em bagaço de azeitona; o atraso da fase termofílica em polpa de alfarroba e, na 1ª compostagem de casca de pinheiro, a temperatura não alcançou a zona termofílica. A maioria dos resíduos manifestaram uma acentuada resistência à degradação durante a compostagem, à excepção da polpa de alfarroba e da casca de eucalipto. Contudo, a nível físico-químico e químico registaram-se evoluções acentuadas, sobretudo nas variáveis relacionadas com alterações da superfície das partículas, como por exemplo, a capacidade de troca catiónica. Outras variáveis apresentaram uma evolução interessante para o acompanhamento do processo e o conhecimento do grau de estabilidade do composto final. Foi apreciável o efeito proporcionado pela adição de lamas de estação de tratamento de águas residuais urbanas, como suplemento azotado, a nível das propriedades físicas dos compostos, do aumento da velocidade do processo de compostagem e do enriquecimento dos compostos em macro e micronutrientes. A compostagem não conduziu à melhoria significativa das propriedades físicas dos materiais, excepto em casca de eucalipto. Os compostos caracterizaram-se fundamentalmente por uma reduzida capacidade de retenção de água e uma elevada capacidade de arejamento. Os compostos obtidos com incorporação de lamas apresentaram os valores mais baixos de capacidade de arejamento, mesmo assim dentro dos limites satisfatórios e, os valores mais altos de capacidade de retenção de água. Na cultura em placas alveoladas, o comportamento de muitas das misturas com compostos não se diferenciou do da testemunha, observando-se uma flutuação sazonal do comportamento das misturas nos dois viveiros de cada ano, associada às condições ambientais mais exigentes do ponto de vista da disponibilidade de água. Observou-se um maior número de correlações significativas entre as características dos substratos e as variáveis relativas ao crescimento das plantas nos viveiros efectuados mais tarde, sob condições de maior evapotranspiração. As plantas obtidas no segundo viveiro de tomate foram instaladas em cultura. As características das plantas do viveiro, apresentaram elevada correlação com as respectivas produções obtidas no campo, evidenciando a importância da qualidade das plantas de viveiro, na produção. Nos ensaios de pelargónio em vaso, também se observaram comportamentos idênticos ao da testemunha em muitas das misturas com compostos. Observou-se no 2º ensaio, um maior número de tratamentos com resultados idênticos aos da testemunha, resultante das condições de menor exigência hídrica, as quais fizeram sobressair menos as diferenças de propriedades físicas das misturas. Contudo, a diferença de crescimento obtido em algumas misturas, atribuiu-se também à interferência da continuidade capilar entre o vaso de papel com a estaca enraizada e a mistura em estudo. O trabalho presente mostrou que é possível obter compostos a partir de resíduos orgânicos, com boas características e a preço competitivo para utilização como substratos hortícolas. O processo de compostagem sendo um elemento chave, é fácil de controlar se houver uma regulação eficaz do arejamento e do teor de humidade durante o processo. Apesar de alguns resíduos, como a polpa de alfarroba, serem caros, se tomarmos em consideração o custo da sua eliminação, poderão conduzir a substratos comercialmente viáveis. Em condições ambientais que favoreçam uma maior evapotranspiração ou, em culturas com maior exigência hídrica, pode ser aconselhável a mistura dos compostos estudados com turfa de sphagnum pouco decomposta para melhorar a capacidade de retenção de água.

The sugar-feeding ecology of dipteran vectors has recently been targeted because it presents opportunities to inoculate common food sources for these dipterans with entomopathogenic bacteria as a means of controlling the population of host-seeking adult dipteran vectors. Whereas this approach to vector control holds some promise, differences in the nutrient composition and concentration in sugary food sources can influence the food selection pattern of dipteran vectors and potentially confound the outcomes of field trials on the efficacy of entomopathogenic bacteria as vector control agents. Further, nutrient components of bacteria-inoculated artificial diets may present unintended effects of extending the survivorship or fecundity of the target population and potentially render the whole approach counterproductive. The present study investigated the diet-specific factors that influence the foraging decisions of female Simulium venustum/verecundum (Diptera: Simuliidae) and female Anopheles stephensi (Diptera: Culicidae) on artificial nectar and honeydew. Paired choice experiments showed that the black flies forage more frequently from high calorie diets, which contained melezitose, or those diets that contained amino acids, compared to low calorie melezitose-free diets or amino acid-free diets. The mosquitoes however displayed a more random diet selection pattern. The effects of sugary diets on certain life-history traits considered to be important to the ecological fitness of the black flies and mosquitoes were also investigated. Sugary diets had no significant effect on the survivorship and fecundity of the black flies, but they influenced the resistance of Leucocytozoon-infected flies to the parasite. Amino acid-containing diets appeared to extend the survival of mosquitoes, and also allowed them to take more vertebrate blood when they blood fed.

The efficiency of a diet not only depends on its nutrient composition and nutrient balance but also on the effective utilization by the animal. In the utilization of dietary nutrients, the digestive enzymes play the crucial role of catalysing the hydrolytic reactions, splitting the macromolecules into simple absorbable molecules. The activity of these biocatalysts is regulated by alterations in pH, temperature, substrate type and concentrations, and also by the presence of activators and inhibitors. Thus any shift from the optimum conditions necessary for these enzymes may affect their activity, thereby correspondingly modify the digestibility of the nutrients supplied to the animals. Thus, investigations on the important digestive enzymes and their preferential conditions of activity are essential, so that the results obtained could be used in rationally adjusting the quality and quantity of feed supplied to the different stages of prawns In India, directed research on nutritional physiology and biochemical approaches to digestion in commercially important prawns is taken up_ only recently, and the field is still in an infant stage. In view of its emerging importance it is identified as an area of priority and the present investigation has been carried out on the Indian white prawn Penaeus indicus

Entre 1999 i 2003 es va desenvolupar un projecte Life de restauració a la maresma de La Pletera, afectada per un pla urbanització, i a la llacuna del Ter Vell, amb un elevat grau d'eutròfia (aiguamolls del Baix Ter, NE Península Ibèrica). L'objectiu d'aquesta tesi és establir el funcionament d'ambdós ecosistemes, analitzar-ne la problemàtica ambiental i avaluar els efectes de la restauració. A la maresma de la Pletera, es va analitzar el paper de la hidrologia en la composició i dinàmica dels nutrients i del zooplàncton en cinc llacunes, tres de les quals havien estat creades dins el projecte de restauració com a nous refugis per una espècie de peix amenaçada (Aphanius iberus). La hidrologia es va caracteritzar per un llarg període de confinament sense entrades d'aigua, interromput de manera irregular per inundacions puntuals. La dinàmica del nitrogen inorgànic es va relacionar amb les entrades d'aigua, mentre que la del fòsfor, del nitrogen total i de la matèria orgànica es va relacionar amb els processos d'acumulació i reciclatge intern durant el confinament. El zooplàncton es va analitzar mitjançant la combinació d'aproximacions taxonòmiques i de mides. L'estructura de mides de la comunitat es va veure més afectada per les interaccions tròfiques (depredació i competència) mentre que l'estructura taxonòmica va ser més sensible a factors abiòtics (nutrients). El ràpid creixement de la població A. iberus en les noves llacunes va suggerir que aquestes havien proporcionat l'hàbitat adequat per a l'espècie, almenys a curt termini. Les actuacions de restauració a la llacuna del Ter Vell es van centrar en la millora de la qualitat de l'aigua mitjançant (1) la construcció d'uns aiguamolls per depurar l'aigua d'entrada i (2) el dragat del sediment en diversos punts. Simultàniament a la restauració, però de forma independent, la gestió agrícola de l'aigua va reduir dràsticament el cabal d'entrada d'aigua dolça a la llacuna, provocant un canvi en el règim hídric. Es van analitzar els efectes a curt termini d'aquest canvi sobre la limnologia i el zooplàncton de la llacuna. Abans del canvi, la hidrologia era artificial ja que s'havia prolongat l'entrada d'aigua dolça d'acord amb la demanda agrícola, i per tant la llacuna presentava una elevada taxa de renovació de l'aigua i majors concentracions de nutrients. Després del canvi, la hidrologia va dependre més del clima, es van reduir les entrades d'aigua i es va allargar el període de confinament. La composició y dinàmica dels nutrients va tendir a assemblar-se a l'observada a les llacunes de la maresma, mentre que la comunitat del zooplàncton no ho va fer. L'estat ecològic de la llacuna va millorar després del canvi en el règim hídric.

Background: Postprandial lipid metabolism in humans has deserved much attention during the last two decades. Although fasting lipid and lipoprotein parameters reflect body homeostasis to some extent, the transient lipid and lipoprotein accumulation that occurs in the circulation after a fat-containing meal highlights the individual capacity to handle an acute fat input. An exacerbated postprandial accumulation of triglyceride-rich lipoproteins in the circulation has been associated with an increased cardiovascular risk. Methods: The important number of studies published in this field raises the question of the methodology used for such postprandial studies, as reviewed. Results: Based on our experiences, the present review reports and discuss the numerous methodological issues involved to serve as a basis for further works. These aspects include aims of the postprandial tests, size and nutrient composition of the test meals and background diets, pre-test conditions, characteristics of subjects involved, timing of sampling, suitable markers of postprandial lipid metabolism and calculations. Conclusion: In conclusion, we stress the need for standardization of postprandial tests.

Milk provides many key nutrients but the saturated and trans fatty acids in milk fat are associated with perceived negative effects on human health, especially cardiovascular disease. Recent epidemiological studies and dietary intervention trials challenge this perception, however; available evidence does not support the concept that consumption of saturated fats or dairy products adversely affects the risk of coronary heart disease (although replacing some saturated fats with mono or polyunsaturated fats is likely to provide benefit). Furthermore, the trans fats found in dairy products are consumed in very low amounts and do not appear to have the negative health effects associated with the consumption of industrial sources of trans fat. Milk fat is an excellent source of oleic acid that originates mainly by endogenous synthesis from stearic acid, but increasing the milk fat content of unsaturated fatty acids requires dietary formulations that bypass rumen biohydrogenation. Recent research indicates that long-chain omega-3 fatty acids and conjugated linoleic acids have potential beneficial effects in health maintenance and the prevention of chronic diseases. Enhancing the milk fat content of these fatty acids offers exciting possibilities, but educating consumers about inaccurate and inappropriate generalisations about fat remains the primary challenge. Finally, individuals do not simply consume milk-fat-derived fatty acids on their own, but rather as components in dairy foods which are highly complex and may contain many beneficial ingredients. Overall, dairy products are critical in providing many of the essential nutrients in the human diet. Nevertheless, dairy products vary in their nutrient composition, including fat, and this needs to be considered in the context of dietary recommendations and our need to consume a balanced diet.

Clubroot disease and the causal microbe Plasmodiophora brassicae offer abundant challenges to agriculturists and biological scientists. This microbe is well fitted for the environments which it inhabits. Plasmodiophora brassicae exists in soil as microscopic well protected resting spores and then grows actively and reproduces while shielded inside the roots of host plants. The pathogen is active outside the host for only short periods. Consequently, scientific studies are made challenging by the biological context of the host and pathogen and the technology required to investigate and understand that relationship. Controlling clubroot disease is a challenge for farmers, crop consultants and plant pathology practitioners because of the limited options which are available. Full symptom expression happens solely in members of the Brassicaceae family. Currently, only a few genes expressing strong resistance to P. brassicae are known and readily available. Agrochemical control is similarly limited by difficulties in molecule formulation which combines efficacy with environmental acceptability. Manipulation of husbandry encouraging improvements in soil structure, texture, nutrient composition and moisture content can reduce populations of P. brassicae. Integrating such strategies with rotation and crop management will reduce but not eliminate this disease. There are indications that forms of biological competition may be mobilised as additions to integrated control strategies. The aim of this review is to chart key themes in the development of scientific biological understanding of this host-pathogen relationship by offering signposts to grapple with clubroot disease which devastates crops and their profitability. Particular attention is given to the link between soil and nutrient chemistry and activity of this microbe.

Avaliaram-se 49 marcas de rações para cães adultos e filhotes comercializadas em Jaboticabal-SP. Os alimentos foram divididos em três segmentos: econômico, standard e super-premium. Nessa ordem, as rações para cães adultos apresentaram, em média, 16,9%, 20,9% e 27,8% de proteína, 9,7%, 10,5% e 15% de gordura, 6,4%, 2,9% e 1,1% de fibra e 1,9%, 1,9% e 1,4% de Ca. Para filhotes, os produtos standard e super-premium apresentaram, respectivamente, 26,1% e 31,0% de proteína, 10,8% e 15,2% de gordura, 2,6% e 2,4% de fibra, 2,1% e 1,7% de Ca e 1,6% e 1,3% de P. A porcentagem de rações cujos teores nutricionais declarados no rótulo não estavam de acordo com os encontrados nas análises de laboratório foi, para os produtos super-premium para filhotes, 80,0% para o Ca e 60,0% para a gordura; para os produtos standard para filhotes, 28,6% para proteína e 57,2% para o cálcio; para os produtos econômicos para cães adultos, 44,0% para a fibra e 33,0% para a proteína; para os produtos standard para cães adultos de 33,0% para a gordura e 50,0% para o Ca; e para os produtos super-premium para cães adultos, 50,0% para o cálcio e 33,0% para a gordura. Foram encontradas inadequações nutricionais em produtos, como teores insuficientes de proteína e altas concentrações de fibra, cálcio e fósforo.

No presente trabalho, estudou-se o processamento das vísceras de frango (Gallus domesticus) e das ratitas avestruz (Struthio camellus) e ema (Rhea americana), processadas da mesma forma, com o objetivo de elaborar farinhas. A qualidade e controle de produção dessas farinhas foram avaliados por meio de parâmetros tecnológicos exigidos pela legislação vigente. Basicamente, a matéria-prima foi cozida e esterilizada, filtrada em peneira (para a separação do óleo), moída, seca em estufa e analisada. Foram obtidos dados de rendimentos de produção, de composição de nutrientes, de digestibilidade em pepsina, do valor calórico, determinados os teores de cálcio e fósforo, e realizados estudos da estabilidade da farinha durante o armazenamento (Salmonella, pH, índice de acidez e TBA). Os resultados mostraram que a produção de farinha pelo processamento das vísceras de avestruz e ema é viável, seus parâmetros de qualidade atendem, em grande parte, às exigências, mas, para um emprego imediato (uso regular) na elaboração de rações, necessita de alguns ajustes (correções) de parâmetros físico-químicos (nutrientes).

Commonly grown in tropical and sub-tropical regions, guava (Psidium guajava L.) is an important fruit crop of Brazil. It is cultivated on a large scale in São Paulo state, and covers about 6,500 hectares. As a result of the guava selection program developed at FCAV/UNESP, two new cultivars were created: 'Rica' and 'Paluma' with a high productivity, and also with higher nutritional requirement. Leaves analysis has become a powerful tool in mineral-nutrition research with fruit crops, not only to determine response to different nutrients, but also for diagnostic techniques in making fertilizer recommendations and assessing deficiency symptoms. Nutrient composition of the leaves varies depending on the leaf maturity, tree age, variety and nutrient supply. For the interpretation of analytical values, selection of the index tissue is important. The results of experiments conducted in the field during 1989-2000 were studied. The nutritional status was evaluated by annual leaf sampling, carried out at full bloom. Recent fully developed leaves, corresponding to the third pair (with the petiole) were collected, starting at the end of the branch, all around the tree, at a height of 1.5 m from the soil, with a total of 30 leaf pairs per sample. The yield was evaluated by weighing all the fruits in the useful area of each lot. Foliar chemical analysis showed excellent correlation with the fruit production. Through the results it was verified that the maximum yield was associated to the following levels: N = 22-26; P = 1.5-1.9; K = 17-20; Ca = 11-15; Mg = 2.5-3.5; S = 3.0-3.5 g kg -1; B = 20-25; Cu = 10-40; Fe = 50-150; Mn = 180-250; Zn = 25-35 mg kg-1 DW in the leaves of the 'Rica' guava and to N = 20-23; P = 1.4-1.8; K = 14-17; Ca = 7-11; Mg = 3.4-4.0; S = 2.5-3.5 g kg-1; B = 20-25; Cu = 20-40; Fe = 60-90; Mn = 40-80; Zn = 25-35 mg kg-1 DW in the leaves of the 'Paluma' guava.
