OBJECTIVE To evaluate the impact of consuming ultra-processed foods on the micronutrient content of the Brazilian population’s diet.METHODS This cross-sectional study was performed using data on individual food consumption from a module of the 2008-2009 Brazilian Household Budget Survey. A representative sample of the Brazilian population aged 10 years or over was assessed (n = 32,898). Food consumption data were collected through two 24-hour food records. Linear regression models were used to assess the association between the nutrient content of the diet and the quintiles of ultra-processed food consumption – crude and adjusted for family incomeper capita.RESULTS Mean daily energy intake per capita was 1,866 kcal, with 69.5% coming from natural or minimally processed foods, 9.0% from processed foods and 21.5% from ultra-processed foods. For sixteen out of the seventeen evaluated micronutrients, their content was lower in the fraction of the diet composed of ultra-processed foods compared with the fraction of the diet composed of natural or minimally processed foods. The content of 10 micronutrients in ultra-processed foods did not reach half the content level observed in the natural or minimally processed foods. The higher consumption of ultra-processed foods was inversely and significantly associated with the content of vitamins B12, vitamin D, vitamin E, niacin, pyridoxine, copper, iron, phosphorus, magnesium, selenium and zinc. The reverse situation was only observed for calcium, thiamin and riboflavin.CONCLUSIONS The findings of this study highlight that reducing the consumption of ultra-processed foods is a natural way to promote healthy eating in Brazil and, therefore, is in line with the recommendations made by the Guia Alimentar para a População Brasileira (Dietary Guidelines for the Brazilian Population) to avoid these foods.

Internet i les xarxes socials online s'estan mostrant com a útils en la promoció de la salut i en la difusió d'hàbits saludables. L'objectiu del treball és observar el grau d'utilització que es fa de les xarxes socials online per a la promoció d'hàbits d'alimentació saludable. S'ha dissenyat un estudi observacional descriptiu transversal amb una mostra de 14 hospitals dels Estats Units. A l'estudi s'ha trobat una bona freqüència d'utilització dels canals que ofereix la xarxa però una baixa freqüència per fer promoció d'hàbits saludables en alimentació.

Cette étude s’insère dans une étude s’intitulant « Choix alimentaires d’adolescents canadiens et attitudes de leurs entraîneurs impliqués dans des activités sportives organisées ». Les objectifs étaient d’étudier chez des adolescents impliqués dans une compétition sportive provinciale où l’offre alimentaire est contrôlée 1) leur maîtrise des recommandations nutritionnelles 2) les facteurs individuels, comportementaux, socio-environnementaux influençant leurs choix alimentaires. Deux observateurs ont visité les différents sites alimentaires et de compétition pendant les Jeux du Québec de 2011 à Valleyfield. Les plateaux des athlètes ont été photographiés à table au moment des repas avec une caméra numérique et les commentaires oraux colligés par écrit. Au total, 173 photographies ont été analysées et comparées aux recommandations reconnues en nutrition sportive. Dans notre étude, les préférences alimentaires, l’offre alimentaire et la présence des coéquipiers sont les facteurs qui influencent le plus les choix alimentaires en compétition. Par contre, le sexe de l’athlète n’a pas influencé les choix alimentaires des athlètes observés. En pré-compétition, 85,4% des plateaux présentent une valeur énergétique supérieure aux recommandations et 66,3% d’entre eux ont une répartition en énergie inadéquate, peu importe le sexe. Un excès de lipides et de protéines au sein du repas précédant l’effort caractérise majoritairement les plateaux dont la répartition en énergie est non optimale (69,5%). Les recommandations en post-compétition (100%) et lors des jours de repos (95,8%) ont facilement été rencontrées. Il en est de même pour l’hydratation (99,4%). Le lait au chocolat est la boisson la plus populaire (59,5%). Les produits céréaliers (99,4%), le lait et substituts (87,3%), les légumes (85,7%), les viandes et substituts (83,2%), les aliments riches en sucres (79,8%), les fruits (70,5%) et les mets riches en gras (59,4%) sont particulièrement appréciés par les athlètes. Les commentaires recueillis font ressortir une vision dichotomique des aliments chez certains athlètes qui classifient les aliments en « bons » ou « mauvais ». Notre étude démontre que la présence d’une politique alimentaire permet de promouvoir des habitudes alimentaires saines et favorise la consommation d’aliments nutritifs lors d’une compétition sportive d’envergure. Cependant, de l’éducation en nutrition est toujours requise pour viser l’amélioration du comportement alimentaire avant l’effort.

Objetivo: Evaluar la efectividad de MARA (Modulo Activo Recreo Activo), sobre el tiempo de actividad física moderada vigorosa (AFMV) y de comportamiento sedentario de niños y niñas de 5º grado en 2 instituciones educativas oficiales de la ciudad de Bogotá. Materiales y métodos: Los participantes fueron 128 niños entre 10 y 12 años de edad, de 5to grado que asisten a dos colegios públicos en la localidad de San Cristóbal en Bogotá. La actividad física de los niños fue medida con acelerómetro GT3X+, durante 7 días entre julio y octubre de 2013. Uno de los colegios fue seleccionado aleatoriamente para ser intervenido por Muévete Escolar y su Módulo Activo Recreo Activo (MARA), (CIM) y otro colegio fue el grupo control (CC). El tiempo gastado en actividad física durante el día y en el momento de recreo fue medido antes y en la semana 10 después de la intervención: sedentario ( SED), actividad física leve ( AFL), actividad física moderada(AFM), actividad física vigorosa(AFV) y actividad física moderada a vigorosa (AFMV). Resultados: Posterior al análisis estadístico a través de modelos mixtos multinivel para ajustar por el efecto de conglomerado, se observó diferencia significativa entre CIM y CC (p < 0.0049) representado por incremento en los minutos de AFMV en CIM. Después de la intervención, los CMI disminuyeron los minutos de comportamiento sedentario (p= 0.0029), comparativamente con los CC. Conclusiones: El presente estudio contribuye a investigar sobre los efectos a corto plazo de modificar el momento del recreo, mediante la implementación de actividades guiadas, supervisadas y con el uso de materiales y equipos de juego. Los resultados del estudio sugieren que los efectos de la intervención con MARA fueron significativos especialmente en promover la práctica de AF diaria logrando incrementar los minutos de AFMV diaria, y así mismo disminuyendo comportamiento sedentario en el día. .

Background:  Poor diet quality is a major public health concern that has prompted governments to introduce a range of measures to promote healthy eating. For these measures to be effective, they should target segments of the population with messages relevant to their needs, aspirations and circumstances. The present study investigates the extent to which attitudes and constraints influence healthy eating, as well as how these vary by demographic characteristics of the UK population. It further considers how such information may be used in segmented diet and health policy messages. Methods:  A survey of 250 UK adults elicited information on conformity to dietary guidelines, attitudes towards healthy eating, constraints to healthy eating and demographic characteristics. Ordered logit regressions were estimated to determine the importance of attitudes and constraints in determining how closely respondents follow healthy eating guidelines. Further regressions explored the demographic characteristics associated with the attitudinal and constraint variables. Results:  People who attach high importance to their own health and appearance eat more healthily than those who do not. Risk-averse people and those able to resist temptation also eat more healthily. Shortage of time is considered an important barrier to healthy eating, although the cost of a healthy diet is not. These variables are associated with a number of demographic characteristics of the population; for example, young adults are more motivated to eat healthily by concerns over their appearance than their health. Conclusions:  The approach employed in the present study could be used to inform future healthy eating campaigns. For example, messages to encourage the young to eat more healthily could focus on the impact of diets on their appearance rather than health.

Objective: To identify food acquisition patterns in Brazil and relate them to the sociodemographic characteristics of the household. Design: A cross-sectional national Household Budget Survey (HBS). Principal component factor analysis was used to derive food patterns (factors) on the basis of the acquisition of food classified into thirty-two food groups. Setting: The source of data originates from the 2002-2003 HBS carried out by the Brazilian Institute of Geography and Statistics between June 2002 and July 2003 using a representative sample of all Brazilian households. Subject: A total of 48 470 households allocated into 443 strata of households that were geographically and socio-economically homogeneous as a study unit. Results: We identified two patterns of food acquisition. The first, named `dual`, was characterized by dairy, fruit, fruit juice, vegetables, processed meat, soft drinks, sweets, bread and margarine, and by inverse correlations with Brazilian staple foods. In contrast, the second pattern, named `traditional`, was characterized by rice, beans, manioc, flour, milk and sugar. The `dual` pattern was associated with higher household educational level, income and the average age of adults on the strata, whereas the `traditional` presented higher loadings in less-educated households and in the rural setting. Conclusions: Dietary patterns described here suggest that policies and programmes to promote healthy eating need to consider that healthy and non-healthy foods may be integral in the same pattern.

O objetivo deste estudo foi avaliar a qualidade global da dieta e a adequação do consumo de cada componente da dieta de adolescentes segundo fatores demográficos, socioeconômicos e índice de massa corporal (IMC). Trata-se de estudo transversal, de base populacional, que analisou amostra representativa de 409 adolescentes, de 12 a 19 anos, utilizando o Índice de Qualidade da Dieta (IQD). Foram estimadas as prevalências de dietas classificadas no 1º quartil do IQD e as médias de escores de cada componente do IQD. Regressões múltiplas linear e de Poisson foram utilizadas nas análises. O escore médio do IQD foi de 59,7. Observou-se menor prevalência de dietas inadequadas no segmento de melhor escolaridade do chefe da família. Os estratos de menor nível socioeconômico, avaliados por renda e escolaridade, mostram um consumo inferior de verduras e legumes, frutas, leite e derivados e menor variedade da dieta e uma ingestão superior de cereais e derivados e leguminosas. Adolescentes com sobrepeso/obesidade consomem mais carnes e ovos e menos frutas comparados aos que apresentam baixo peso/eutrofia. As meninas tiveram maior ingestão de gordura total e menor ingestão de sódio. Os resultados identificam os componentes que merecem atenção nas estratégias de promoção de alimentação saudável e os segmentos mais vulneráveis à má alimentação.

Background. Children in the age group of 2-5 years spend substantial amount of time during the day in some kind of childcare setting. These settings are an excellent environmental infrastructure to enhance their nutrition and physical activity behavior and to promote healthy eating and physical activity habits. Due to the steep rise in overweight and obesity among children in the past three decades, it becomes essential to intervene early. There exists a need for literature on a comprehensive and sustainable approach to obesity prevention for younger children in these settings. ^ Methods. Systematic literature search was undertaken using databases like Medline Ovid, Pubmed, Medline Ebsco, and Cochrane Library. Articles published in English as well as English language abstracts of foreign articles were included. The inclusion criteria were as follows: (1) Studies conducted in any part of the world exploring relevant themes and a child care or preschool setting would be included. (2) The interventions promoted physical activity, nutrition/healthy eating/improved diet, reduced television viewing, reduced BMI, changed knowledge and behavior of children and or staff or affected policy/standards/regulations. (3) The population was children in the age group of at least 2 years to 5 years. (4) Articles published in English and English language abstracts for foreign articles would be included. ^ Results. 16 articles were included in the review that consisted of primary interventions in the form of randomized control trials or pre-post interventions were conducted in a preschool or child care or day care setting only. The outcomes pertaining to healthy weight in children were increased vegetable intake, reduced BMI and increased knowledge among others. ^ Conclusion. There is a dearth of data on strong intervention trials in the child care setting. Preschool research studies in the young children that have been conducted are not strong enough. There is a need for more randomized control trials and a well planned evaluation in the preschool age children. There is a need to develop outcome measures that can accurately assess the changes in diet and physical activity in this age group. Child care nutrition and physical activity standards need to be made stringent. ^

Objective: This study employed a multilevel design to test the contribution of individual, social and environmental factors to mediating socio-economic status (SES) inequalities in fruit and vegetable consumption among women. Design: A cross-sectional survey was linked with objective environmental data. Setting: A community sample involving 45 neighbourhoods. Subjects: In total, 1347 women from 45 neighbourhoods provided survey data on their SES (highest education level), nutrition knowledge, health considerations related to food purchasing, and social support for healthy eating. These data were linked with objective environmental data on the density of supermarkets and fruit and vegetable outlets in local neighbourhoods. Results: Multilevel modelling showed that individual and social factors partly mediated, but did not completely explain, SES variations in fruit and vegetable consumption. Store density did not mediate the relationship of SES with fruit or vegetable consumption. Conclusions: Nutrition promotion interventions should focus on enhancing nutrition knowledge and health considerations underlying food purchasing in order to promote healthy eating, particularly among those who are socio-economically disadvantaged. Further investigation is required to identify additional potential mediators of SES-diet relationships, particularly at the environmental level. © The Authors 2006.

L’objectif général de la thèse est d’identifier des moyens novateurs afin de promouvoir la saine alimentation, soit la consommation de fruits et légumes, chez des femmes à risque de développer du diabète gestationnel. L’Intervention Mapping a servi de cadre pour planifier les étapes nécessaires au développement de l’intervention. Pour atteindre l’objectif de la thèse, quatre projets de recherche distincts, mais complémentaires ont été réalisés. Le premier projet de recherche impliquait d’effectuer une revue systématique sur la validation des mesures auto-déclarées de l’alimentation durant la grossesse. L’objectif était de recenser les méthodes utilisées pour mesurer l’alimentation durant la grossesse et de vérifier leurs qualités psychométriques pour identifier les outils à privilégier pour évaluer l’alimentation des femmes enceintes. L’objectif du deuxième projet de recherche était de valider un court questionnaire sur la consommation de fruits et légumes chez des femmes enceintes. Le troisième projet était une recherche formative dont l’objectif était de développer le contenu d’un questionnaire utilisant l’activation des intentions pour favoriser la consommation de fruits et légumes chez des femmes à risque de développer du diabète gestationnel. L’objectif du quatrième projet de recherche était d’évaluer l’efficacité d’une intervention de type activation des intentions comparativement à un groupe contrôle utilisant l’effet question-comportement pour promouvoir la consommation de fruits et légumes chez des femmes en âge de procréer (18 à 44 ans) à risque de développer du diabète gestationnel. Il s’est avéré que l’activation des intentions et l’effet question-comportement sont des techniques efficaces pour augmenter la consommation de légumes chez des femmes en âge de procréer à risque de développer du diabète gestationnel. Ce résultat suggère que ces deux techniques peuvent être utilisées pour favoriser une alimentation saine avant le début de la grossesse afin de diminuer le risque de développer du diabète gestationnel ou du diabète de type 2 et ainsi assurer la santé de la femme et celle de son enfant. Bref, les quatre projets de recherche de la thèse ont permis de développer une intervention qui utilisait un outil validé pour mesurer la consommation de fruits et légumes, qui répondait aux besoins de la population cible et qui fut efficace pour promouvoir la saine alimentation chez des femmes à risque de développer du diabète gestationnel.

A prevalência da obesidade está a aumentar nos países desenvolvidos e Portugal não é excepção. O presente trabalho teve como principal objectivo caracterizar a situação relativamente aos parâmetros antropométricos e hábitos alimentares de várias categorias profissionais do sector da saúde de uma instituição hospitalar do distrito de Lisboa. Com efeito, verificou-se que existem diferenças ao nível do Índice de Massa Corporal (IMC), da massa gorda e muscular e do perímetro de cintura entre as profissões estudadas (assistentes operacionais, enfermeiros, médicos e técnicos de diagnóstico e terapêutica). De acordo com a classificação do IMC, o grupo estudado situou-se no cut-off superior do ‘peso normal’ (IMC de 24,9 kg/m2). A obesidade esteve presente em 29% dos assistentes operacionais, 9% nos médicos e 5% nos enfermeiros e técnicos de diagnóstico e terapêutica. Também se observaram diferenças entre os géneros feminino e masculino, já que neste último o IMC foi de 26,5 kg/m2 e no primeiro foi de 24,6 kg/m2. Quanto aos hábitos alimentares, através do questionário de frequência alimentar (QFA) e após comparar com as recomendações da pirâmide dos alimentos mediterrânica e com a roda dos alimentos, foi notório o desvio do padrão alimentar face ao que é preconizado por estas representações. Assim, a maioria dos indivíduos não ingere produtos lácteos, pão, cereais e derivados com a frequência que seria adequada. Também se observaram diferenças no reporte de ingestão dos mesmos alimentos entre as categorias profissionais, salientando que todas estas apresentam padrões de ingestão desviantes das recomendações defendidas pela pirâmide dos alimentos mediterrânica e pela roda dos alimentos. Na sociedade actual, o local de trabalho é cada vez mais obesogénico devido quer à mudança na natureza do trabalho, quer às condições em que este decorre. Face aos resultados obtidos foi elaborado um plano de intervenção sócio- organizacional que visa promover hábitos alimentares e estilos de vida saudáveis. /ABSTRACT: Obesity prevalence is increasing all over developed countries, and Portugal is no exception. The present study had as major objective to describe the situation relative to anthropometric measures and dietary habits of several job strains operating in the health sector of a Lisbon district’s central hospital. Indeed, it has been verified that there are differences as concern to Body Mass Index (BMI), fat and muscle mass and waist circumference among the job strains studied (operational assistants, nurses, physicians and diagnostic and therapeutic technicians). According to BMI classification, the sample showed to be lined up with the superior BMI cut-off value for “normal weight” (BMI of 24,9 kg/m2). Obesity was present in 29% of operational assistants, 9% in physicians, 5% in nurses and diagnostic and therapeutic technicians. There were differences in both feminine and masculine genders, as in the latter the BMI was 26,5 kg/m2 and in the first, 24,6 kg/m2. As concern to dietary habits, through the application of the food frequency questionnaire (FFQ), after comparing with mediterranean food pyramid and wheel of foods it was notorious the deviation of dietary habits from these representations. Thus, most individuals do not consume dairy products, bread, cereals and derivates with an appropriate eating frequency. There were also differences in eating reporting of the same foods between job strains, focusing that all of these show eating patterns that deviates from the recommendations argued by mediterranean food pyramid and wheel of foods. In the present societies, workplace appears to be obesogenic due to the changes in labour’s nature and to the conditions that this one takes place. Towards the results obtained, it was developed a social and organizational intervention which entails to promote healthy eating habits and lifestyles.

Background: A cross-cultural, randomized study was proposed to observe the effects of a school-based intervention designed to promote physical activity and healthy eating among high school students in 2 cities from different regions in Brazil: Recife and Florianopolis. The objective of this article is to describe the methodology and subjects enrolled in the project. Methods: Ten schools from each region were matched and randomized into intervention and control conditions. A questionnaire and anthropometry were used to collect data in the first and last month of the 2006 school year. The sample (n = 2155 at baseline; 55.7% females; 49.1% in the experimental group) included students 15 to 24 years, attending nighttime classes. The intervention focused on simple environmental/organizational changes, diet and physical activity education, and personnel training. Results: The central aspects of the intervention have been implemented in all 10 intervention schools. Problems during the intervention included teachers' strikes in both sites and lack of involvement of the canteen owners in schools. Conclusions: The Saude no Boa study provides evidence that public high schools in Brazil represent an important environment for health promotion. Its design and simple measurements increase the chances of it being sustained and disseminated to similar schools in Brazil.

Background. This study was designed to evaluate the effects of the Young Leaders for Healthy Change program, an internet-delivered program in the school setting that emphasized health advocacy skills-development, on nutrition and physical activity behaviors among older adolescents (13–18 years). The program consisted of online curricular modules, training modules, social media, peer and parental support, and a community service project. Module content was developed based on Social Cognitive Theory and known determinants of behavior for older adolescents. ^ Methods. Of the 283 students who participated in the fall 2011 YL program, 38 students participated in at least ten of the 12 weeks and were eligible for this study. This study used a single group-only pretest/posttest evaluation design. Participants were 68% female, 58% white/Caucasian, 74% 10th or 11th graders, and 89% mostly A and/or B students. The primary behavioral outcomes for this analysis were participation in 60-minutes of physical activity per day, 20-minutes of vigorous- or moderate- intensity physical activity (MVPA) participation per day, television and computer time, fruit and vegetable (FV) intake, sugar-sweetened beverage intake, and consumption of breakfast, home-cooked meals, and fast food. Other outcomes included knowledge, beliefs, and attitudes related to healthy eating, physical activity, and advocacy skills. ^ Findings. Among the 38 participants, no significant changes in any variables were observed. However, among those who did not previously meet behavioral goals there was an 89% increase in students who participated in more than 20 minutes of MVPA per day and a 58% increase in students who ate home-cooked meals 5–7 days per week. The majority of participants met program goals related to knowledge, beliefs, and attitudes prior to the start of the program. Participants reported either maintaining or improving to the goal at posttest for all items except FV intake knowledge, taste and affordability of healthy foods, interest in teaching others about being healthy, and ease of finding ways to advocate in the community. ^ Conclusions. The results of this evaluation indicated that promoting healthy behaviors requires different strategies than maintaining healthy behaviors among high school students. In the school setting, programs need to target the promotion and maintenance of health behaviors to engage all students who participate in the program as part of a class or club activity. Tailoring the program using screening and modifying strategies to meet the needs of all students may increase the potential reach of the program. The Transtheoretical Model may provide information on how to develop a tailored program. Additional research on how to utilize the constructs of TTM effectively among high school students needs to be conducted. Further evaluation studies should employ a more expansive evaluation to assess the long-term effectiveness of health advocacy programming.^
