AbstractFlour prepared via current assay methodologies from the carcasses of the Pantanal alligator (Caiman crocodilus yacare) was analyzed for its chemical composition, minerals, fatty acids, and sensorial profile. Carcasses of the Pantanal alligator, originating from the Coocrijapan scientific zoo, Cceres MT Brazil, were utilized. The carcasses were cooked for 60 minutes in a pressure cooker with water containing 2% salt and 5% chimichurri. The cooked carcasses were then ground and the mass was used for the manufacture of flour via three techniques: non-smoked, hot-smoked, and liquid-smoked. After each technique, the carcasses were dehydrated at 60ºC for 3h and were ground. Alligator flour was then produced. The moisture of liquid-smoked flour (10.97%) was higher than that of non-smoked flour (3.78%) and hot-smoked flour (4.43%). The flours provided high protein (57.11% - 58.27%) and ash (23.45 – 26.42%) rates, and were predominantly calcium (6.77% - 7.69%), phosphorus (3.67% - 4.05%), and iron (73.13 – 273.73 ppm/100 mg). Smoked-flour had a better acceptance rate by tasters when compared to non-smoked flour. Results show that flours produced from alligator carcasses had high protein, ash, and mineral rates and a reasonable acceptability by most tasters.

O objetivo deste estudo foi realizar o levantamento das características microbiológicas da carne do jacaré, através da detecão e/ou enumeração dos microrganismos mais comumente encontrados na carne. Pela inexistência de padrões na legislação brasileira para a carne de jacaré, os resultados foram comparados com os padrões microbiológicos existentes para carne bovina e pescado. Encontrou-se a presença de S. aureus e de Salmonella sp, resultados estes considerados insatisfatórios, o que nos permitiu, classificar o produto como impróprio para o consumo. O trabalho sugere também, procedimentos para evitar e/ou minimizar a presença desses microrganismos indesejáveis na carne.

Trata-se de um estudo de algumas formas de processamento da carne de jacaré do pantanal como uma alternativa de consumo, de uma forma não convencional, da carne dessa espécie. Testa-se, ao mesmo tempo, a utilização de carne de cortes normalmente descartados tais como o tronco e os membros. Dessa forma relatam-se os seguintes processamentos: produtos de salsicharia não embutidos (tipo hambúrguer), carne em conserva (enlatado), carne curada e não cozida (defumada) e produto curado e cozido (tipo apresuntado). Avalia-se a qualidade dos produtos através da análise sensorial e mede-se estatisticamente o grau de sua aceitação.

O presente trabalho teve por objetivo a produção de farinha de carne a partir das vísceras do jacaré do pantanal (Caiman crocodilus yacare) e o estudo das propriedades físico-químicas, bioquímicas e bacteriológicas da farinha elaborada. Essas características que servem de parâmetro de controle de qualidade, são normalmente exigidas na comercialização de farinhas de carne elaboradas a partir de vísceras e outros materiais de descarte para animais de consumo doméstico. Os resultados obtidos do pH, acidez solúvel, composição percentual dos componentes, dos minerais Ca e P, digestibilidade em pepsina, aspecto microbiológico (presença de salmonela) e estabilidade avaliada pelo nº de TBARS da farinha mostram ser viável o uso das vísceras do jacaré do pantanal como fonte alternativa de nutrientes para incorporação nas formulações de ração animal .

Motilin-immunoreactive cells in the duodenum, pyloric stomach and pancreas of Caiman latirostris and Caiman crocodilus were investigated using region specific antisera for porcine and canine motilin molecules. Motilin-immunoreactive cells were found in the duodenum, pyloric stomach and pancreas of both caiman species. These cells were primarily open-type endocrine ones in the epithelium of the duodenum and pyloric stomach. Motilin-immunoreactive cells were observed in both the exocrine and endocrine portions of the pancreas, and frequently exhibited one or more cytoplasmic processes of variable length. Since motilin-immunoreactive cells do not cross-react with serotonin or any of the other pancreatic and gut hormones, they are considered to be cell type independent from any of the other known pancreatic or gut endocrine cells. The molecular similarity between caiman motilin and porcine and canine motilins and the heterogeneity of the motilin molecule in the caiman digestive system is discussed.

The breeding of crocodilians is still a recent activity in Brazil. Its peak was in the 1990's, but it has gaps in its production, as there are no norms for the commercial breeding of these animals in captivity. However, its economic potential is great, and the search for ecological balance and viability of commercial production has become a challenge among farmers of this activity. Therefor, the objective of the study was to economically analyze the production of Caiman crocodilus yacare on a farm located in Caceres, state of Mato Grosso, identifying relevant items of costs in the activity, as well as the parameters related to the profitability and viability of the activity. The economic results for the breeding of this animal were positive, with profitability ratios higher than 70%.

Advances in the understanding of ecological factors determining predatorprey interactions have provided a strong theoretical background on diet preferences of predators. We examined patterns of jaguar predation on caiman in southern Pantanal, Brazil. We investigated factors affecting predation rates and vulnerability of caiman to predation by jaguars. We recorded 114 caiman mortality incidents. Predation accounted for 62.3% (n = 71) of all caiman found dead, while other causes of mortality (nonpredation) accounted for 37.7% (n = 43). We found that jaguars prey on a broad size range of caiman body and caiman predation was influenced by distance to forests. During dry seasons, 70% (n = 49) of deaths were due to predation, while 30% (n = 21) were due to nonpredation causes. However, we found no significant relationship between annual and monthly killings of caiman and rainfall totals by year and month (r = 0.130, r = -0.316). The annual flooding regime may be a more important factor influencing prey selection by jaguars. Although neotropical crocodilians are relatively well studied, their interactions with jaguars have been mostly ignored and should be prioritized in future studies.

Broad-snouted caiman`s (Caiman latirostris) geographic distribution comprises one of the widest latitudinal ranges among all crocodilians. In this study we analyzed the relationship between geographic distance (along the species latitudinal range) and genetic differentiation using DNA microsatellite loci developed for C. latirostris and Alligator mississippiensis. The results suggest that there is a consistent relationship between geographic distance and genetic differentiation; however, other biogeographical factors seem to be relevant. The Atlantic Chain (Serra do Mar) seems to be an effective geographic barrier, as well as the relatively narrow (<= 1.5 km) sea channel between Cardoso Island and the continent. In addition, coastal populations seem to have been well connected in recent geological time (Pleistocene 16,000 years ago) all along the eastern Brazilian coast. O crânio representa uma estrutura única e complexa dos vertebrados, sendo foco relevante objeto de estudos morfológicos e sistemáticos. Embora os crocodilianos constituam um importante grupo representante dos Archosauria, nossos conhecimentos acerca de seu desenvolvimento e homologias ainda são escassos. Aqui descrevemos uma sequência detalhada de ossificação dos ossos do crânio de Caiman yacare (Daudin, 1802), objetivando contribuir com informações de foco anatômico. Coletaram-se ao acaso embriões em intervalos regulares durante todo o período de incubação, sendo estes posteriormente submetidos a protocolo de diafanização e coloração de ossos. O padrão de ossificação em C. yacare segue parâmetros gerais em répteis e outros tetrápodes. Os primeiros centros de ossificação correspondem aos ossos dérmicos, envolvidos com funções primárias como a alimentação e respiração (e.g. maxila, dentário, esplenial, angular, pterigoide, ectopterigoide e jugal, incluindo ainda os dentes). Os ossos da porção dorsal do neurocrânio se ossificam posteriormente, evidenciando uma fontanela cranial que permanece até o momento da eclosão. Os ossos parietal, frontal e opstótico possuem mais de um centro de ossificação que se fundem durante a ontogenia. O centro de ossificação do parisfenoide está ausente, e apenas um centro de ossificação está presente para o basisfenoide. A porção posterior do crânio é formada por centros de substituição do condrocrânio que se ossificam em estágios posteriores.

The legal Pantanal caiman (Caiman crocodilus yacare) farming, in Brazil, has been stimulated and among meat preservation techniques the salting process is a relatively simple and low-cost method. The objective of this work was to study the sodium chloride diffusion kinetics in farmed caiman muscle during salting. Limited volumes of brine were employed, with salting essays carried at 3, 4 and 5 brine/muscle ratios, at 15%, 20% and 25% w/w brine concentrations, and brine temperatures of 10, 15 and 20ºC. The analytical solution of second Fick's law considering one-dimensional diffusion through an infinite slab in contact with a well-stirred solution of limited volume was used to calculate effective salt diffusion coefficients and to predict the sodium chloride content in the fillets. A good agreement was obtained between the considered analytical model and experimental data. Salt diffusivities in fillets were found to be in the range of 0.47x10-10 to 9.62x10-10 m²/s.

In this study, using a combined data set of SSU rDNA and gGAPDH gene sequences, we provide phylogenetic evidence that supports Clustering of crocodilian trypanosomes from the Brazilian Caiman yacare (Alligatoridae) and Trypanosoma grayi, a species that Circulates between African crocodiles (Crocodilydae) and tsetse flies. In a survey of trypanosomes in Caiman yacare from the Brazilian Pantanal, the prevalence of trypanosome infection was 35% as determined by microhaematocrit and haemoculture, and 9 cultures were obtained. The morphology of trypomastigotes from caiman blood and tissue imprints was compared with those described for other crocodilian trypanosomes. Differences in morphology and growth behaviour of caiman trypanosomes were corroborated by molecular polymorphism that revealed 2 genotypes. Eight isolates were ascribed to genotype Cay01 and 1 to genotype Cay02. Phylogenetic inferences based on concatenated SSU rDNA and gGAPDII sequences showed that caiman isolates are closely related to T. grayi, constituting a well-supported monophyletic assemblage (clade T. grayi). Divergence time estimates based on clade composition, and biogeographical and geological events were used to discuss the relationships between the evolutionary histories of crocodilian trypanosomes and their hosts.

Lactate accumulation in osteoderms; of the broad-nose caiman, Caiman latirostris, was determined following capture and surgery and after a period of forced submergence and related to concurrent values in blood. Control samples of bone and blood were taken after recovery from surgery and before submergence. In addition, samples of osteoderm were incubated in a lactate solution to determine equilibrium concentration, and additional samples were analyzed for elemental and CO2 concentrations. The composition of the osteoderms closely resembles that of typical vertebrate bone, with a high concentration of calcium and phosphate. Plasma and osteoderm lactate concentrations were both elevated following surgery and decreased significantly after 1 day of recovery. Submergence produced a typical lactate pattern in the plasma, with only a modest increase during the dive and then a sharp increase during recovery to a peak of 31.2 +/- 1.9 mumol ml(-1) after 1 h. When caimans were anesthetized 2 h after submergence, osteoderm lactate in the same animals was significantly increased to 14.8 mumol g(-1) wet mass. The ratio of the osteoderm: plasma lactate concentration after submergence was similar to the ratio observed in the incubated samples, suggesting that osteoderm lactate concentrations in vivo were equilibrated with circulating plasma levels. We conclude that caiman osteoderms sequester lactate during lactic acidosis and that the time course is fast enough to have benefit to these animals following normal anaerobic burst activity.
