O objetivo deste trabalho foi avaliar o efeito da adição de condimentos na carne de coelho, sobre a estabilidade térmica de suas proteínas miofibrilares. Retalhos de 24 músculos Longissimus dorsis foram moídos e misturados, para a obtenção de um lote homogêneo. Foram adicionados, em alíquotas dessa carne: 1,0; 2,0 ou 3,0% de sal; 2,5; 5,0 ou 7,5% de sacarose e 1,5; 3,0 ou 4,5% de ácido acético 3% em solução aquosa, e uma mistura perfazendo 3% de sal, 5% de sacarose e 3% da mesma solução de ácido acético. Após homogeneização manual, as amostras foram mantidas em repouso sob refrigeração, por 30 minutos. Alíquotas da ordem de 10mg foram usadas para análise térmica e o restante, para análises de pH, proteínas e umidade. As análises térmicas foram realizadas em um calorímetro diferencial de varredura DSC-TA2010, a 10ºC/min, entre 0 e 100ºC. As curvas de DSC da carne pura apresentaram endotermas nas temperaturas de (Td) 58,4(0,7ºC (miosina) e 78,2(0,2ºC (actina), envolvendo entalpia (DHd) de 17,5J/g de proteínas. O sal e o ácido acético desestabilizaram as proteínas, provocando redução da Td da miosina e actina, contrariamente à sacarose, que apresentou efeito estabilizante. A adição da mistura dos condimentos desestabilizou as proteínas miofibrilares. Apenas o ácido, adicionado acima de 1,5%, provocou desnaturação das proteínas.

In this work, a computer program called Thermal Kinetics was implemented to simulate thermal analysis experiments by numerical integration of the kinetics equations. The computer program was tested in two different examples: non-isothermal transformation of a Cu-Al alloy and non-isothermal decomposition of calcium oxalate monohydrated. In spite of the rather crude approximations of the model, the simulated profiles are very similar to the experimental curves. Both, the dalpha /dt and the dalpha /dT profiles reproduce the experimental transition temperatures with an error smaller than 25%.

This paper shows different aspects related to the application of different thermal analysis techniques in the study of energetic materials. The criteria used to choose the best technique and an exact approach to adjust the experimental data with a proper model are here discussed. The paper shows how to use the different thermal analysis results to help develop new compounds, to study the stability of some energetic materials and their compatibility, and the conditions necessary for a secure storing environment.

A laboratory experiment that enables the professor to introduce the problematic of sustainable development in pharmaceutical chemistry to undergraduate students is proposed, using a simple synthetic procedure. Cholesteryl acetate is prepared by the esterification of cholesterol using Montmorillonite K10 as heterogeneous catalyst. Cholesterol and cholesteryl acetate are characterized by spectroscopic (¹H RMN, 13C RMN, FTIR) and thermal analysis techniques. The thermal methods are used to introduce the concepts of polymorphism and the nature of mesophases.

An evaluation was made of the properties of sugarcane bagasse during the storage process for subsequent burning in a boiler. Samples of bagasse were collected over a period of 150 days from the Caeté sugar mill (MG) at various points of the stockpile soon after the sugarcane was pressed to extract its juice, as well as from natural bagasse, dry and damp. Thermal analyses of the samples were carried out and the results indicated that, during the storage of bagasse, dry or damp, the biomass loses up to 32% of its calorific power, due to decomposition of the hemicellulose.

O fracionamento do farelo de milho desengordurado (fubá grosso), subproduto do processamento industrial do milho, para obtenção de frações de amido, proteínas e fibras, utilizando métodos físicos e químicos, foi investigado. O fracionamento do fubá grosso por meio de tratamento químico com soluções de bissulfito de sódio e de etanol, foi satisfatório, pois produziu fração de amido com aceitável rendimento; já o fracionamento físico não foi muito eficiente, visto que não produziu fração enriquecida de proteínas e amido. Tanto o fubá grosso como as frações obtidas, foram caracterizados por meio de CLAE (Cromatografia Líquida de Alta Eficiência) e Análise Térmica (TG, DTG e DSC). O fubá grosso possui mais de 50% de amido (CLAE), e perda de 52% de sua massa entre 270 e 450ºC (TG e DTG). O estudo cinético, a partir de curvas DSC, mostrou que os processos de gelatinização da fração de amido e de desnaturação da fração de proteínas são eventos endotérmicos, com diferentes valores de entalpia e de energia de ativação.

Space Science was built using a composite made of plaster, EPS, shredded tires, cement and water. Studies were conducted to thermal and mechanical resistance. Inside the mold EPS plates were placed in order to obtain a higher thermal resistance on the wall constructed, as well as to give it an end environmentally friendly in view of both the tire and the EPS occupy a large space in landfills and year need to be degraded when released into the environment. Compression tests were performed according to ABNT blocks to seal, measurements of the temperature variation in the external and internal walls using a laser thermometer and check the temperature of the indoor environment using a thermocouple attached to a digital thermometer. The experiments demonstrated the heat provided by the composite values from the temperature difference between the internal and external surfaces on the walls, reaching levels of 12.4 ° C and room temperature in the interior space of the Science of 33.3 ° C, remaining within the zone thermal comfort for hot climate countries. It was also demonstrated the proper mechanical strength of such a composite for sealing walls. The proposed use of the composite can contribute to reducing the extreme housing shortage in our country, producing popular homes at low cost and with little time to work

Two methodologies were proposed to obtain micro and macroporous chitosan membranes, using two different porogenic agents. The methodologies proved to be effective in control the porosity as well as the pore size. Thus, microporous membranes were obtained through the physical blend of chitosan and polyethylene oxide (PEO) on an 80:20 (m/m) ratio, respectively, followed by the partial PEO solubilization in water at 80 ◦C. Macroporous chitosan membranes with asymmetric morphology were obtained using SiO2 as the porogenic agent. In this case, chiotsan-silica ratios used were 1:1, 1:3 and 1:5 (m/m). Membranes characterization were carried out by SEM (scanning electronic microscopy), X-ray diffraction, Fourier Transform Infrared Spectroscopy (FTIR), Thermal analysis (TG, DTG , DSC and DMTA). Permeability studies were performed using two model drugs: sodium sulfamerazine and sulfametoxipyridazine. By transmission FTIR it was possible to confirm the complete removal of SiO2. The SEM images confirmed the porous formation for both micro and macroporous membranes and also determined their respective sizes. By thermal analysis it was possible to show differences related with water sorption capacity as well as thermal stability for both membranes. DTG and DSC allowed evidencing the PEO presence on microporous membranes. The absorbance x time curves obtained on permeability tests for micro and macroporous membranes showed a linear behavior for both drugs in all range of concentration used. It was also observed, through P versus C curves, an increase in permeability of macroporous membranes according to the increase in porosity and also a decrease on P with increase in drug concentration. The influences of the drug molecular structure, as well as test temperatures were also evaluated
