Prevalence and dissemination of Salmonella in a Brazilian poultry slaughterhouse were evaluated by three rapid detection systems (SS/SV(TM), VICAM, OSRT(TM), Unipath/Oxoid, and REVEAL(TM), Neogen), plus the conventional procedure. The carcasses were sampled after bleeding (P1), defeathering (P2), evisceration (P3), washing (P4), chilling (P5) and the packaged end-product (P6). In the first set of carcasses, the Salmonella incidence determined by the conventional method was 38.3% and 22.5% by SS/SV(TM). In the set for evaluation of OSRT(TM), the number of positive samples was the same detected by the cultural procedure (49.0%). In the third set, the positivity by the conventional procedure was 33.3%, and 5.0% by REVEAL(TM). The comparisons of positives in the first and third sets of carcasses were significantly different (P < 0.05). The positivity for Salmonella, in carcasses at P1 to P6, as determined by at least one of the methods, was 47.5%, 47.5%, 32.5%, 30.0%, 30.0% and 37.7%, respectively.

This study aimed to establish the seroprevalence and risk factors associated with neosporosis in sheep and dogs from rural properties. 1497 blood samples were collected from sheep and 42 from dogs that cohabited with sheep from 16 farms located in the central region of São Paulo State, Brazil. For the detection of N. caninum antibodies it was performed the indirect fluorescent antibody test (IFAT >= 25). For the epidemiological study it was applied a questionnaire for the owners or responsible from the sheep and dogs regarding informations related to neosporosis. The seroprevalence obtained out of the 1497 sheep sera tested was 8.0% (CI95% = 6.7-9.2%) and out of the 42 dogs 4.8% (CI95% = 0-7.2%). Variables statistically related to seropositivity for N. caninum in sheep were: dams well as water supply (P = 0.0004; OR = 2.15), presence of other domestic canids (P = 0.0013; OR = 2.38) and presence of reproductive problems (P = 0.0031; OR = 1.75). The rate of anti-Toxoplasma gondii antibodies was evaluated in equines, cats, dogs, poultry, pigs, cattle and sheep of farms in Eldorado, southern Mato Grosso do Sul. Blood samples were collected and sera were examined by the modified agglutination test (MAT), considering positives samples reactants with titers >= 25. Rates of reactor animals in the antibody detection test were: 22.89% (46/201) in poultry, 5.15% (20/388) in cattle, 47.61% (20/42) in dogs, 60.87% (14/23) in equines, 57.14% (8/14) in cats, 14.7% (5/34) in pigs. None of the sheep (0/14) were positive. High antibody rates were found in several species, a fact that raise concerns due to the possibility of risk to humans, once these animal species either share the same source of infection with humans or are food sources for them.

Bovine meat and bone meal (MBM) was widely used in animal diets until outbreaks of Bovine Spongiform Encefalopathy (BSE) occurred in some countries. It has not been confirmed yet whether or not BSE may be transmitted to man through chicken meat originated from poultry that had been fed diets containing MBM. Therefore, consumers nowadays express preference for meat originated from birds fed exclusively vegetable diets. This study analyzed samples of major breast muscle (Pectoralis major) using mass spectrometry of stable isotopes (carbon and nitrogen) as a means to assess the presence of MBM in broiler diets, a technique that might be used in the certification of poultry quality. A total of 150 day-old chicks were reared in five randomized treatments with increasing MBM dietary inclusion levels (0, 1, 2, 4 and 8%). on day 42, breast muscle samples were collected from three birds per treatment and used in the determination of 13C/12C and 15N/14N isotope ratios. The breast muscle isotope values were expressed as delta in parts per thousand (delta ). The following carbon isotope values (13C) were found: 18.74 ±0.11, 18.51 ±0.19, 18.24 ±0.10, -17.79 ±0.12, and -17.15 ±0.15 for 0, 1, 2, 4 and 8% MBM dietary levels, respectively. Nitrogen isotope values (15N) were 1.65 ±0.14, 1.65 ±0.28, 1.72 ±0.08, 1.95 ±0.16, and 2.52 ± 0.09 for 0, 1, 2, 4 and 8% MBM dietary levels, respectively. This study showed important differences in delta13C and delta15N values in breast meat, evidencing a simultaneous enrichment of this isotopic pair, which allowed tracing MBM in bird diets. Analysis of carbon and nitrogen stable isotopes may be used to ensure feeding with exclusively vegetable diets, and might also be used as a reliable evaluation tool in broiler meat certification. The diet with 1% inclusion level of MBM and the exclusively vegetable diet showed similar results.

Rubrivivax gelatinosus was grown in Pfennig's synthetic medium (PM) and in treated wastewater from poultry slaughterhouse (TW) to assess growth profiles for biomass production. Cultures inoculated at 1% (v/v) were grown under anaerobiosis at 30 +/- 2 degrees C and 1400 200 lux for 12 days. Regular absorbance curves for R. gelatinosus were found both on PM and TW. on PM, the highest dry weight of biomass, 0.39 g L-1. was achieved in the 216-h culture and the highest specific growth rate of 0.2960 h(-1) occurred in the 24-h culture. on TW, the highest biomass of 0.57 g L-1 was also obtained in the 216-h culture and the highest specific growth rate, 0.1970 h(-1), was achieved in the 48-h culture. For productivity and chemical oxygen demand investigations, the cultivation was accomplished in the TW under anaerobiosis at 32 +/- 2 degrees C and 4000 +/- 500 lux, for 10 days. The objective of the present study was to trace the inclusion of poultry offal meal (POM) in the diet of meat-type quails reared for a long period using the technique of stable isotopes. A number of 320 quails were randomly distributed into eight treatments: vegetable diet (T1), and a diet containing 8% POM were fed until the end of the experimental period (T2) or replaced by the vegetable diet on day 42 (T3), 56 (T4), 70 (T5), 84 (T6), 98 (T7), and 112 (T8). Breast muscle samples were collected from four birds randomly selected per treatment every 14 days. The obtained isotope results were submitted to multivariate analysis of variance (MANOVA) with the aid of the GLM procedure of statistical SAS program. Treatments were different from T1 when birds were sacrificed at least two weeks after the diet was changed. T2 results were different from T1 in all evaluated periods. It was concluded that it is possible to trace poultry offal meal inclusion in a strictly vegetable diet after the diet was changed for at least 14 days.

The keratin is not degraded by common enzyme, keratinases have the ability to degrade native keratin and others insoluble enzymes. In the present work was Studied keratinase produced by Streptomyces sp LMI-1 isolated from industrial plant of poultry processing. The enzyme degraded 87% of feathers after 120 h, it was stimulated by Ba(2+) and inhibited by Ca(2+), Mn(2+), EDTA and Hg(+). The optimum pH and temperature for the enzyme was 8.5 and 60 degrees C, respectively. The enzyme was stable after 2 hours at 50 degrees C. The culture broth analysis by thin layer chromatography showed presence of amino acids serine, methionine, proline, tyrosine and leucine after 72 hours of incubation. The microorganism showed potential for use in industrial process because of higher enzyme production and feathers degradation.

Quatro culturas de bactérias fotossintetizantes isoladas de águas residuárias de abatedouro de aves foram identificadas como Rhodocyclus gelatinosus com base nas seguintes propriedades: desenvolvimento de cor avermelhada nos cultivos em meio sintético, motilidade positiva, morfologia de bastonetes gram-negativos ligeiramente curvos, atividade de liquefação da gelatina, utilização de citrato como fonte de carbono e produção de bacterioclorofila a e carotenóides da série espiriloxantina alternativa. Esses testes foram também aplicados para uma linhagem de Rhodocyclus gelatinosus de referência para efeito de comparação. A biomassa de R. gelatinosus pode representar uma fonte de nutrientes e de pigmentos na alimentação de aves.

Rhodocyclus gelatinosus R1 foi cultivado fotoautotroficamente em águas residuais de abatedouro de aves dentro de colunas de vidro (90x670 mm) durante sete dias a 31 ± 4ºC, sob anaerobiose e intensidade luminosa fornecida pela luz do dia e por três lâmpadas incandescentes (100W) mais quatro lâmpadas fluorescentes (40W). O cultivo obtido foi centrifugado (4.500xg/20 min) e liofilizado, originando a biomassa bacteriana, que continha 7,1% de umidade. A determinação da composição centesimal indicou (base seca) 67,6% de proteína bruta, 27,6% de carboidratos totais, 0,6% de lipídeos e 4,2% de cinzas. A composição em aminoácidos da fração protéica da biomassa mostrou-se semelhante à relatada na literatura para Rhodocyclus gelatinosus e para outras bactérias fotossintetizantes. A redução na DQO do efluente após o cultivo e a retirada da biomassa foi da ordem de 90%. A valiosa composição química da biomassa de Rhodocyclus gelatinosus R1 e o alto conteúdo em aminoácidos essenciais indicam o uso potencial desse produto na suplementação de ração para aves.

Well being of animals had been historically a public concern, since the beginning of human kind history. As world's population grows there is a need for food including meat. In the last decades there has been a great improvement in poultry production based on the careful control of several aspects, among which nutrition and management (environment, health and rearing systems). Nowadays, the search for good welfare conditions is a global tendency in animal production; however issues surrounding farm animal welfare or well-being, such as definitions, measurements, interpretation, and perception, continue to be controversial. It is known that the result of a broiler not adequately housed is a direct loss in production which leads towards a thought that health, welfare and productivity are intimately connected. In the other hand hints are found in the observation of behavioral responses as well as vocalization, which may provide more precise assessment to welfare. This has been possible due to the use of information technology applied to the field of ethology as well as the multidisciplinary view of the problem. This text provides a review on broiler's welfare issues since its definition to several way of trying to assess it adequately.

A infecção pelo Toxoplasma gondii tem sido diagnosticada em suínos em todo o mundo. Perdas econômicas geralmente estão relacionadas a distúrbios reprodutivos. A infecção pelo Toxoplasma tem também importância em saúde pública, já que cistos teciduais do parasito podem persistir na carne e subprodutos oriundos de suínos, que servirão de fontes de infecção para o ser humano. O objetivo deste trabalho foi verificar a frequência e os fatores de risco associados à infecção pelo Toxoplasma em granjas de reprodutores suídeos certificados ou não da microrregião de Toledo, no Paraná, que inclui os municípios de Toledo, Nova Santa Rosa, São José das Palmeiras e São Pedro do Iguaçú. A frequência relativa de infecção foi 13,4%, sem diferença com o tipo de granja. A análise de regressão logística demonstrou os seguintes fatores associados à infecção: não utilização de funcionários separados por área da granja, o acesso de animais ao cocho de ração e ao reservatório de água, a não utilização de tampa neste reservatório, a não prevenção de roedores, o número e peso médio de leitões ao desmame por porca.

Surtos de botulismo causados pelos tipos C e D da toxina botulínica são freqüentes no país, estando originalmente associados à osteofagia e à ingestão de alimentos e água contaminados. No presente trabalho são descritos os aspectos epidemiológicos, clínico-patológicos e laboratoriais de sete surtos da intoxicação em bovinos de corte e leite alimentados com cama de frango, ocorridos nos estados de São Paulo e Minas Gerais entre 1989 e 2000. Cinco surtos ocorreram em rebanhos de corte confinados ou criados extensivamente e suplementados com o subproduto, e dois em propriedades leiteiras. de um total de 1.535 animais alimentados regularmente com a cama de frango, 455 (29,64%) morreram em um período que variou de 2 a 4 semanas. A morbidade nos sete surtos estudados variou de 3,47 a 100%, da mesma forma que a mortalidade. em uma das propriedades a letalidade foi de 60,52%, e em todos os outros surtos ela foi acima de 88,43%; em três propriedades o coeficiente foi de 100%. Os sinais clínicos de paralisia progressiva, dificuldade na locomoção, decúbito e estado mental aparentemente normal, diminuição do tônus da musculatura da língua e cauda, sialorréia e dificuldade respiratória caracterizaram o quadro clínico. À necropsia de 30 animais não foi observada qualquer alteração macroscópica digna de nota. A presença de esporos de Clostridium botulinum foi detectada em amostras de cama de frango colhidas nas sete propriedades. Nas amostras de fígado, líquido ruminal e intestinal, provenientes dos 30 animais necropsiados, foi possível detectar toxinas botulínicas tipos C (5) ou D (9), ou classificada como pertencente ao complexo CD (1), em pelos menos um dos materiais provenientes de 15 animais, confirmando assim o diagnóstico clínico-patológico e epidemiológico de botulismo.
