A Salmonella é uma das principais causas de doenças transmitidas por alimentos em todo o mundo, sendo que no Rio Grande do Sul ela tem sido apontada como o principal agente de toxinfecções alimentares nos últimos anos. Nesse trabalho, foram caracterizadas linhagens de Salmonella isoladas de alimentos envolvidos em Salmoneloses ocorridas no Rio Grande do Sul, no período de 2001 a 2002. Entre os 85 isolados investigados, 79 (93%) foram sorotipificados como S. Enteritidis, enquanto os outros seis isolados foram classificados como S. Javiana (n=1), S. Infantis (n=1), S. Agona (n=1), S. Typhimurium (n=1) e S. enterica subsp. enterica (1,4,5) (n=2). A resistência das amostras de S. Enteritidis a dez agentes antimicrobianos foi investigada. De modo geral, altas porcentagens de sensibilidade foram verificadas. As maiores porcentagens de resistência foram apresentadas em relação ao ácido nalidíxico (21,5%), à gentamicina (12,7%) e à estreptomicina (11,4%). A resistência a um ou mais antimicrobianos foi verificada em 30 amostras (37,97%), o que permitiu que os isolados fossem agrupados em 32 perfis de susceptibilidade. Apenas duas amostras apresentaram resistência múltipla a quatro drogas. Quando os isolados de S. Enteritidis foram submetidos à PCR-Ribotipificação, somente dois perfis (R1 e R2) foram identificados, sendo que o perfil R1 agrupou 92,4% dos isolados. . Os mesmos isolados também foram analisados por RAPD, sendo possível identificar quatro perfis de bandas (A a D). O perfil A agrupou 81% das amostras, enquanto os perfis B, C e D agruparam 9%, 5% e 5% dos isolados, respectivamente. Os resultados das análises de PCR-Ribotipificação e de RAPD sugerem que uma mesma linhagem de S. Enteritidis foi isolada a partir de alimentos envolvidos em Salmoneloses ocorridas em diferentes cidades do Estado durante o período de 2001 a 2002.

Vegetais minimamente processados passam por algumas etapas durante seu preparo, ocorrem modificações na sua forma natural, porém devem manter a qualidade do produto fresco. Este estudo teve como objetivo quantificar mesófilos e psicrotróficos, coliformes totais e fecais, e verificar a presença de Escherichia coli, parasitos e sujidades em hortaliças prontas para o consumo. Foi utilizado o método de contagem em placas (UFC/g), para mesófilos e psicrotróficos. A contagem dos coliformes foi pelo método do Número Mais Provável (NMP). E. coli foi confirmada em meio EMB e provas bioquímicas. Para pesquisa de enteroparasitos, as hortaliças foram lavadas e o sedimento analisado pelos métodos de Faust e Lutz. As sujidades foram investigadas por filtração e observação em estereomicroscópio. A análise de mesófilos e psicrotróficos foi mensal, realizada em 48 amostras, variando entre 5,68 a 8,21 log10 UFC/g e entre 6,90 a 8,44 log10 UFC/g respectivamente. Destas, 24 foram analisadas para coliformes, onde as contagens de totais foram de <0,47 a 4,38 log10 NMP/g e de fecais de <0,47 a 3,66 log10 NMP/g. Quatro (16,6%) amostras apresentaram índices acima do permitido pela legislação. E coli foi observada em 6 amostras de coliformes fecais. Das 48 amostras utilizadas nas análises parasitológicas, cinco (10,4%) foram positivas para oocistos de Eimeria spp. A maioria das amostras apresentou algum tipo de sujidades. Contaminação de origem fecal foi verificada, sugerindo falhas nas etapas do processamento ou sanificação das hortaliças, além de indicar que o solo ou águas de irrigação possam constituir possíveis fontes desses microrganismos.

The issue of creating productions of hybrid matrices has demanded, for more than three decades, the attention of several theater theorists (COHEN: 1995; LEHMANN: 2007). The study of philosophers (DELEUZE & GUATTARI: 1995) has contributed for new concepts of the scene. These artistic practices, depending on the context, have been generating, more and more, new ways of staging. I will discuss the contamination caused by Antonin Artaud in contemporary theater, and the theater s infection by the performance, based on the thought of Barbara Browning (1995), from its capacity to penetrate and invade territories, and installs a new system. I affirm that the Totem Group (Recife PE) was contaminated by the performance and analyze two performative plays of the group, their points of convergence and separation. The first one is Ita, the search for the origin, the animal devir; the second is Caosmopolita, the body as a reflex of urbanity

The corn cob is an agricultural by-product still little used, this in part due to the low knowledge of the biotechnological potential of their molecules. Xylan from corn cobs (XSM) is a polysaccharide present in greater quantity in the structure of plant and its biotechnology potential is little known. This study aimed to the extraction, chemical characterization and evaluation of biological activities of xylan from corn cobs. To this end, corncobs were cleaned, cut, dried and crushed, resulting in flour. This was subjected to a methodology that combines the use of alkaline conditions with waves of ultrasound. After methanol precipitation, centrifugation and drying was obtained a yield of 40% (g/g flour). Chemical analysis indicated a high percentage of polysaccharides in the sample (60%) and low contamination by protein (0.4%) and phenolic compounds (> 0.01%). Analysis of monosaccharide composition indicated the presence of xylose:glucose:arabinose:galactose:mannose:glucuronic acid in a molar ratio 50:20:15:10:2.5:2.5. The presence of xylan in the sample was confirmed by nuclear magnetic resonance (¹H and ¹³C) and infrared spectroscopy (IR). Tests were conducted to evaluate the antioxidant potential of XSM. This showed a total antioxidant capacity of 48.45 EAA/g sample. However, did not show scavenging activity of superoxide and hydroxyl radical and also reducing power. But, showing a high capacity chelating iron ions with 70% with about 2 mg/mL. The ability to XSM to influence cell proliferation in culture was also evaluated. This polymer did not influence the proliferation of normal fibroblast cells (3T3), however, decreased the rate of proliferation of tumor cells (HeLa) in a dose-dependent, reaching an inhibition of about 50% with a concentration around 2 mg/mL. Analyzing proteins related to cell death, by immunoblotting, XSM increases the amount of Bax, Bcl-2 decrease, increase cytochrome c and AIF, and reduce pro-caspase-3, indicating the induction of cell death induced apoptosis dependent and independent of caspase. XSM did not show anticoagulant activity in the PT test. However, the test of activated partial thromboplastin time (aPTT), XSM increased clotting time at about 5 times with 600 μg of sample compared with the negative control. The presence of sulfate on the XSM was discarded by agarose gel electrophoresis and IR. After carboxyl-reduction of XSM the anticoagulant activity decreased dramatically. The data of this study demonstrate that XSM has potential as antioxidant, antiproliferative and anticoagulant compound. Future studies to characterize these activities of XSM will help to increase knowledge about this molecule extracted from corn and allow their use in functional foods, pharmaceuticals and chemical industries.

In Brazil school food is constitutionally guaranteed to public school students at the preschool and elementary level. This food must be nutritious, hygienic and sanitary. The aim of the present study was to assess the hygienic/sanitary conditions of food and table utensil handlers in municipal public schools in Natal, Brazil. In total, 27 public schools were assessed, using a checklist and microbiological analysis of the hands and table utensils. For the microbiological analyses of the hands, coliforms were analyzed at 45ºC and for the utensils aerobic mesophilic bacteria, using methods recognized by AOAC, 2002 and APHA, 1992, respectively. Most of the schools studied did not exhibit good food and utensil handling practice procedures in any of the variables analyzed. It was shown that 74.1% of the handlers received no periodic training, 51.9% did not undergo annual health examinations and 100% did not practice proper hand hygiene, which reflected significantly (p < 0.05) in hand contamination, where fecal coliforms were detected on 55.6% of the hands analyzed. With respect to the utensils, it was found that 100% of the schools studied did not follow correct hygiene practices and most were classified as very bad ; that is, aerobic mesophilic bacteria values above the limits established by PAHO (Pan American Health Organization), with schools in the north and south districts recording the highest percentages. The results show that the hygienic-sanitary conditions of the food and utensil handlers in the schools studied were inadequate, demonstrating the need for implanting good handling practices aimed at protecting the health of children that take part in the program and offering safer foods. Durante o processo de assimilação e uso dos alimentos, diferentes respostas metabólicas podem ser desenvolvidas pelo organismo dos animais. Estas respostas são fruto da integração de mecanismos complexos, que envolvem os sistemas neuro-endócrino e o funcionamento dos órgãos, sendo influenciadas pela dieta, espécie animal, idade, condição fisiológica e composição corporal. Este trabalho enfoca a importância fisiológica e os métodos de estudo das respostas pós-prandiais aos carboidratos, bem como as alterações fisiológicas conseqüentes ao balanço eletrolítico da dieta. A quantidade, estrutura química e processamento industrial do amido determinam boa parte da resposta pós-prandial de glicose e insulina de cães. em gatos, outros mecanismos parecem ser mais importantes, como a ingestão de aminoácidos. A fibra alimentar também altera a resposta pós-prandial ao alimento, devendo ser consideradas sua quantidade, solubilidade e fermentabilidade no desenvolvimento das dietas. Os métodos de estudo destas respostas incluem avaliação das respostas glicêmica e insulínca pós-prandiais, teste endovenoso de tolerância à glicose e à arginina. O clâmp euglicêmico apresenta-se também como ferramenta de estudo, no entanto revela informações mais relacionadas ao animal do que à dieta. A compreensão do conjunto de alterações metabólicas aos carboidratos é importante no estudo do controle da saciedade, composição corporal e inúmeras doenças degenerativas e endócrinas. A concentração e relação entre os macro-elementos da dieta (Na, Cl, K, P, Ca, Mg e S) e dos aminoácidos sulfurados (metionina, cistina e taurina) interferem em inúmeras funções orgânicas, como a cardiovascular, neuromuscular, metabolismo ósseo, renal e pulmonar, refletindo-se no equilíbrio hidro-eletrolítico e ácido-básico orgânicos. de importância prática para cães e gatos encontram-se a relação destes nutrientes com cardiopatias, nefropatias, osteodistrofias e urolitíases. A relação entre os macro-elementos é estabelecida em mmol/kg de matéria seca da dieta, calculando-se seu balanço cátion-ânion (excesso de bases ou ânions dietéticos não determinados). Suas repostas orgânicas são medidas, dentre outros métodos, pela hemogasimetria, balanço hídrico, mensuração do volume dos espaços extracelular e vascular, supersaturação e pH urinários.

Foram analisadas 40 amostras de salmouras empregadas na salga por submersão de queijos tipo mussarela, em uma indústria de laticínios do Estado de São Paulo, Brasil, com o objetivo de se conhecer a variação das características físico-químicas e microbiológicas durante o período de sua utilização. Os valores médios do pH, concentração de cloreto de sódio e de proteínas solúveis, desde o preparo da salmoura até o 21° dia de utilização, variaram de 7,21 a 5,76, 27,1 a 24,5 e de zero a 0,126 mg/ml, respectivamente. Por outro lado, os valores médios das contagens de microrganismos mesófilos e do número mais provável de coliformes totais e de origem fecal variaram de 5,8 x 10 UFC/ml a 6,9 x 10(4) UFC/ml, zero a 1,6 x 10(5)/100ml e zero a 1,1 x 10(5)/100ml, respectivamente. Além disso, os valores médios das contagens de bolores e leveduras e de Staphylococcus coagulase positiva, variaram de 0,4 x 10 UFC/ml a 2,0 x 10³ UFC/ml e de zero a 1,3 x 10 UFC/ml, respectivamente. Os resultados encontrados sugerem a existência de condições higiênicas inadequadas durante o preparo e utilização das salmouras, de modo a representar uma importante fonte de contaminação para os queijos. em decorrência deste fato, existe a possibilidade do comprometimento da qualidade dos queijos, de modo a representar risco potencial à população consumidora.

Com o intuito de conhecer melhor o sistema arterial nesta espécie, descrevemos a origem das artérias celíaca e mesentérica cranial dos bubalinos. Utilizamos 30 fetos e 1 animal adulto. Os fetos variavam de 4 a 8 meses de idade e tiveram seus vasos injetados com solução de látex - Neoprene, tiveram seus vasos dissecados, e um animal adulto, que teve seus vasos dissecados no local de abate. Observamos que as artérias celíaca e mesentérica cranial originavam-se da porção torácica da aorta em todos os casos, estando isoladas em 90,33% deles e em tronco comum (tronco celíaco mesentérico) em 9,67% dos casos.

A avaliação de alimentos é um dos principais pontos a serem observados no setor de nutrição animal, a qual diz respeito à utilização de métodos para descrever alimentos ao seu público e à sua capacidade de sustentar diferentes tipos e níveis de desempenho animal. Atualmente, as pesquisas têm buscado relacionar o conteúdo de nutrientes dos alimentos com seu aproveitamento digestivo e metabólico. A nutrição animal é uma ciência bastante dinâmica, sempre lança mão de novas tecnologias e estratégias para melhorar o aproveitamento dos alimentos e busca novas metodologias para respondem às demandas emergenciais.. Dessa forma, o estabelecimento de estratégias apropriadas para obtenção de respostas é essencial para que o sucesso na pesquisa seja atingido. Assim, esta revisão irá abordar e discutir as principais técnicas utilizadas na avaliação de alimentos aplicadas à nutrição de ruminantes.

As an auxiliary tool to combat hunger by decreasing the waste of food and contributing for improvement of life quality on the population, CEASA/RN has released from August/03 to August/05 the program MESA DA SOLIDARIEDADE. Despite of the positive results of this program, that has already distributed around 226 tons of food, there is still food being thrown in the trash as the deliver of the same food in its natural form would be a health risk to those who would consume it and only the correct processing of this food can make it edible. This work has as a goal the reuse of solid residues of vegetal origin generated by the CEASA/RN, through the Program MESA DA SOLIDARIEDADE and the characterization of the product obtained so it might be used as a mineral complement in the human diet. To the collecting of samples (from September until December /2004) it was developed a methodology having as a reference the daily needs of mineral salts for infants at the age of seven to ten. The sample was packed in plastic bags and transported in an ambient temperature to the laboratory where it was selected, weighted, disinfected, fractionated and dried to 70ºC in greenhouse. The dry sample was shredded and stored in bottles previously sterilized. The sample in nature was weighted in the same proportion of the dry sample and it was obtained a uniform mass in a domestic processor. The physical-chemical analyses were carried out in triplicate in the samples in nature and in the dry product, being analyzed: pH, humidity, acidity and soluble solids according to IAL (1985), mineral salts contents (Ca, K, Na, Mg, P and Fe) determined by spectrophotometry of Atomic Absorption, caloric power through a calorimetric bomb and presence of fecal traces and E. coli through the colilert method (APHA, 1995). During this period the dry food a base of vegetables presented on average 5,06% of humidity, 4,62 of pH, acidity of 2,73 mg of citric acid /100g of sample, 51,45ºBrix of soluble solids, 2.323,50mg of K/100g, 299,06mg of Ca/100g, 293mg of Na/100g, 154,66mg of Mg/100g, 269,62mg of P/100g, 6,38mg of Fe/100g, caloric power of 3,691Kcal/g (15,502KJ/g) and is free of contamination by fecal traces and E..coli. The dry food developed in this research presented satisfactory characteristics regarding to its conservation, possessing low calories, constituting itself a good source of potassium, magnesium, sodium and iron that can be utilized as a food complement of these minerals

The treatment of oil produced water and its implications are continually under investigation and several questions are related to this subject. In the Northeast Region Brazil, the onshore reservoirs are, in its majority, mature oil fields with high production of water. As this oil produced water has high levels of oil, it cannot be directly discarded into the environment because it represents a risk for contamination of soil, water, and groundwater, or even may cause harm to living bodies. Currently, polyelectrolytes that promote the coalescence of the oil droplets are used to remove the dispersed oil phase, enhancing the effectiveness of the flotation process. The non-biodegradability and high cost of polyelectrolytes are limiting factors for its application. On this context, it is necessary to develop studies for the search of more environmentally friendly products to apply in the flotation process. In this work it is proposed the modeling of the flotation process, in a glass column, using surfactants derived from vegetal oils to replace the polyelectrolytes, as well as to obtain a model that represents the experimental data. In addition, it was made a comparative study between the models described in the literature and the one developed in this research. The obtained results showed that the developed model presented high correlation coefficients when fitting the experimental data (R2 > 0.98), thus proving its efficiency in modeling the experimental data.

Realizou-se exame microbiológico em 24 amostras de sorvetes não pasteurizados, todos preparados de maneira não industrial e à base de leite (creme, nata, chocolate), fabricados por 12 sorveterias diferentes da cidade de Araraquara, SP. Colheram-se duas amostras de cada sorveteria com intervalo de 15 dias entre as colheitas. Realizaram-se as seguintes provas: contagem de bactérias aeróbicas ou facultativas mesófilas e psicrófilas e de Staphylococcus aureus; determinação do Número Mais Provável (NMP) de coliformes totais e fecais e da presença de Salmonella. As técnicas utilizadas foram aquelas convencionalmente usadas para tais determinações. Não foi encontrada Salmonella em nenhuma das amostras e de cerca de 16,6% delas isolou-se Staphylococcus aureus. em proporções variáveis verificou-se a presença de microrgarnismos deteriorantes e daqueles indicadores de poluição de origem fecal.

The use of animal models in biomedical research is ever increasing. Models that use primates might also have advantages in terms of low maintenance costs and availability of biological knowledge, thereby favoring their use in different experimental protocols. Many current stress studies use animal models at different developmental stages since biological response differs during ontogeny. The aims of this study were to perform a detailed characterization of the developmental stages of common marmosets (Callithrix jacchus), a very important animal model used in biomedical research. Ten subjects, 6 females and 4 males, were followed from birth to initial adult age (16 months). Behavioral and fecal collection for measurement of adrenal (cortisol) and sex (progesterone, estradiol and androgens) hormones took place twice a week during the first month of life and once a week for the remainder of the study. Behavior was observed for 30 minutes in the morning (0700-09:00h) and afternoon (12:00-14:00h). Behavioral profile showed changes during ontogeny, characterizing the 4 developmental stages and the respective phases proposed by Leão et al (2009).. Differentiation of developmental stages was considered using the onset, end, change and stabilization of the behavioral profile parental care (weaning and carrying), ingestion (solid food), affiliation (social grooming) and autogrooming, agonism (scent marking and piloerection) and play behavior and endocrine profile. Infant weaning and carrying terminated within the infantile stage and the peak of solid food ingestion was recorded in the infantile III phase. Receiving grooming was recorded earlier than grooming performed by the infant and autogrooming. The first episode of scent marking was recorded in the 4th week and it was the least variable behavior, in terms of its onset, which, in almost all animals, was between the 5th and 7th week of life. Solitary play and play with the twin started around the 7th week and play with other members of the group started 8 weeks later. Sex hormone secretion started to differ from basal levels between the 21st and 23rd week of life, in males and females, suggesting that puberty occurs simultaneously in both sexes. Basal cortisol, even at an early age, was higher in females than in males. However, cortisol was not correlated with the juvenile stage, as expected, since this stage corresponds to the transition between infancy and adult age and most behaviors are intensified by this time. The behavioral and endocrine profile of subadult animals did not differ from that of the adults. These results provide more detailed parameters for the developmental process of C. jacchus and open new perspectives for the use of experimental approaches focused on the intermediate ontogenetic phases of this species

Considering the constant environmental changes, the ability to introduce new food items in the diet is crucial to omnivore animal survival. For optimal nourishment and lessening of intoxication risks, the animals must detect signs that indicate which items are adequate for their intake. We investigate some factors that interfere in the responses to non familiar food, modulating their neophobic behavior, of marmosets Callithrix jacchus, an omnivore and generalist primate, native to Northeast Brazil, known for being cautious in ingesting not known food. We analyzed the influence of food taste (sweet or salty), pregnancy and sex in feeding behavior and neophobic responses in these animals. 10 captive females were first selected, 5 of them being then pregnant. The females, pregnant or not, ate more when presented to the sweet items than to the salty ones. Pregnant females, however, themselves were less neophobic to both tastes, being also strongly neophilic to the sweets. We verified then the influence of nourishment during pregnancy on young males and females post natal feeding behavior. We observed 10 young divided in two groups, one whose mother ate that food item during pregnancy and one whose mother had no contact to it. In the first group that food was more easily accepted by the young, suggesting that neofobia and feeding behavior had a pre natal influence. Female young also ingested more food and were less neophobic than males, a difference already observed in behavior of adults of these specie. These results suggest that the low neophobic behavior to sweet food showed by females can be adaptive, and might have bestowed more fitness to those who presented it
