This study aimed at evaluating total or partial replacement of corn by sorghum in broiler diets and at estimating the effect of the pigment supplementation on broiler performance, carcass and cuts yield, and possible breast and leg pigmentation. We used 1680 one-d-old Ross® 308 broilers. Birds were sexed and distributed according to a completely randomized design (2 x 3 + 1). Treatments consisted of a control diet based on corn and diets with two levels corn replacement by sorghum (50 and 100%) and three pigments levels, with four replicates of 60 birds per treatment. There was no effect (p > 0.05) of the dietary replacement of corn by sorghum on performance, carcass and parts yield, and no changes in breast and leg meat pH (p >0.05). Meat redness (a*), yellowness (b*) and luminosity (L*) increased (p < 0.05) as pigment inclusion levels increased. It was concluded that the use of sorghum instead of corn did not affect broiler performance or carcass and cuts yield. When adequate pigments were used, meat color significantly improved.

The animal welfare is a series of practices that involves the maintenance of psychological and physiological freedoms of animals, to them remain healthy until slaughter and provide a satisfactory quality carcass and to avoid unnecessary suffering to animals. One way to evaluate the animal welfare is monitoring the occurrence of bruises on carcasses that is an indicative of inadequate management of the animals. The present study aimed to evaluate the occurrence of bruises in cattle carcasses at a slaughterhouse located in the Midwest Region of the State of São Paulo, Brazil. Was applied a check-list that determined the presence of bruises, the location and severity of them, ranking among scores I to III. Was observed in 98% (880/898) of the animals the presence of contusion. The Grade I injuries in the region of the hips at half carcasses had higher incidence with an average of 61.8% between the right and left sides. Could be observed multiple lesions in several animals slaughtered. In 133 animals observed were removed 15.6 kilograms of material only the injured region only of the hips, demonstrating economic losses to cattle farmers and industries for failures in animal welfare practices. The inappropriate pre-slaughter management compromises animal welfare and the quality of carcasses, discrediting our products on international meat trade and consisting in economic losses to the national cattle herds.

The objective of this work was to evaluate the chemical composition and fatty acid contents of Amazonian and giant river prawns. After four-month farming, with the same diet for both species, palmitic and stearic acids were the main saturated fatty acids. Oleic acid was the main monounsatured fatty acid, and the eicosapentaenoic and docosahexaenoic acids were the most abundant polyunsaturated acids. Amazonian prawn has higher levels of protein and polyunsaturated fatty acids than those of the giant river prawn, which shows its potential for aquaculture.
