Com o objetivo de estudar as características qualitativas da carne de ovinos de diferentes categorias quanto aos músculos dos cortes da carcaça (paleta, lombo e perna), utilizaram-se 18 ovinos ½ Ile de France ½ Ideal (seis cordeiros não-castrados, seis ovelhas de descarte e seis machos adultos castrados). Os animais foram criados em pasto de capim-tifton 85 e receberam suplementação (concentrado). Os cordeiros foram abatidos aos 32 kg, com aproximadamente 5 meses de idade, e as ovelhas e os machos adultos castrados, com 55 kg e aos 60 meses de idade. Não houve diferenças nos valores de pH 45 minutos e pH 24 horas entre as categorias animais e nos músculos dos cortes da carcaça. A idade de abate influenciou a luminosidade da carne de todos os músculos. O teor de vermelho não diferiu entre os animais adultos, mas foi superior aos valores obtidos na carne dos cordeiros. A carne de animais adultos é mais escura que a de cordeiros. As perdas por cocção no músculo Triceps brachii são maiores que no Longissimus lumborum e Semimembranosus. Os valores de pH e a capacidade de retenção de água são similares entre as categorias animais.

To determine the effects of the pre-slaughter showering on some meat quality parameters, the bacterial changes in the Longus colli muscle and the contamination of the meat surface at three different points of the slaughter line were studied. Sixteen Nelore steers were slaughtered in a commercial slaughterhouse. Eight animals were submitted to pre-slaughter showering; a control group of eight animals were slaughtered without showering. Aseptic samples were collected for evaluations in the muscle depth, in the anterior portion of Longus colli muscle, just before chilling. The swab method was used for sampling carcass surface right after dressing, before carcasse washing, and at the beginning of chilling. Longus colli muscle samples were used to determine bacteria total count, psychrotrophic count and Enterobacteriaceae count, after 5, 24 and 48 hours from slaughtering, and in carcass surface, bacteria total count and psychrotrophic count. Multivariate methods were used to evaluate bacterial data the use of pre-slaughter showering did not affect the bacteria total counts, in the deep tissue. A significant growth of psychrotrophic bacteria was detected in both treatments. No significant differences (P>.05) were found in bacteria total count and psychrotrophic count between treatments. Also, no differences (P>.05) were detected between counts taken at different momments at the kill floor: skinning, before carcasse washing, and at the cooler, before chilling.

To determine the effects of the pre-slaughter showering on some meat quality parameters, the biochemical changes in the Longus colli muscle and the bleeding efficiency were studied. Thirty-six Nelore steers were slaughtered in a commercial slaughterhouse. Eighteen animals were submitted to pre-slaughter showering; a control group of eighteen animals were slaughtered without showering. Samples were collected for evaluations in the muscle depth, in the anterior portion of longus colli muscle,just before chilling. Bleeding efficiency was evaluated through the ratio of muscle haemoglobin/blood haemoglobin using blood samples taken five seconds after bleeding, and muscle sample taken before chilling. Longus colli muscle samples were also used to determine glycogen, glucose, pH and acidity, 5, 24 and 48 hours after slaughtering. Multivariate methods were used to evaluate biochemical data and the bleeding efficiency data analysis followed the randomized block design. Haemoglobin retained in the muscle and bleeding efficiency were not affected (P > .05) by pre-slaughter showering. The pre-slaughter showering did not affect (P > .05) the glycolysis. There was a significant effect of time in glycogen, glucose, pH and acidity, in the first 24 hours.

The influence of restricting feed intake of young bulls in feedlots was evaluated in terms of structure of muscular fibers and respective areas, sampled by biopsy on the semitendinoso muscle. Sixty six crossbred Simental-Nelore bulls, 8 months old, averaging 220±34.03 kg were submited for 84 days in phase 1 (growing period), to three treatments: ad libitum (AL), restriction + whole soybean (RWS) and restriction + toasted whole soybean (RTS). The level of restriction of feed intake was 23%. Phase 2 was performed by splitting the animals in each treatment in phase 1 in two groups, feeding one with a diet containing soybeans and the other with poultry litter. The results showed that the animals AL presented more white fibers (FG), compared to the RWS and RST and a larger area of these fibers. A greater frequency of red fibers was observed in treatments RWS and RST. The conclusion was that the restriction of feed intake and consequent compensatory growth contributed for modulation of the muscular fibers increasing the frequency of the fast oxidative glycolitic (FOG) in 10.88% and decreasing of the slow oxidative (SO) and FG in 4.81 and 6.90%, respectively, with possible alteration on meat quality.

We evaluated the presence of Listeria spp. and Listeria monocytogenes in environmental samples by means of swabs collected the bovine slaughter plant enabled to export, located in the state of Sao Paulo, Brazil. After the pre-enrichment at 30±1°C for 22 to 26h the samples were analyzed using the BAX System Listeria. Those positive for Listeria spp. were submitted a second PCR reaction to confirm the presence of Listeria monocytogenes. From 411 environmental samples analyzed, 62 (15.1%) were positive for Listeria spp. and 21 (5.1%) for Listeria monocytogenes, which showed their persistence in the slaughter plant. There were no statistical differences between the rainy and dry periods and between areas sampled, although it has been found between sectors. The floor surface and the sector cuts have higher rates of positivity.
