Os compostos voláteis de três cultivares de manga (Haden, Tommy-Atkins e Keitt) procedentes do Estado de São Paulo, foram isolados por uma técnica de headspace dinâmico, envolvendo sucção em polímero poroso. A separação da mistura complexa de voláteis foi efetuada por cromatografia gasosa de alta resolução. Alguns compostos voláteis foram identificados por cromatografia gasosa-espectrometria de massas e índices de Kovats. Os hidrocarbonetos monoterpênicos foram os compostos mais abundantes no headspace das amostras. Car-3-eno foi o componente majoritário dos cultivares Haden e Keitt, enquanto a Tommy-Atkins mostrou predominância de car-3-eno e alfa-pineno. Outros compostos identificados foram alfa-fencheno, alfa-canfeno, p-cimeno, beta-mirceno, beta-felandreno, limoneno, alfa-terpinoleno, beta-cariofileno e alfa-humuleno. Os três lotes analisados para cada cultivar mostraram grande homogeneidade, não havendo diferença significativa ao nível de 5%.

Types and content of carbohydrates were evaluated by chemical (spectrophotometric assay) and physicochemical (Thin Layer Chromatography - TLC and High Performance Liquid Chromatography - HPLC) methods in some Opuntia ficus-indica varieties according to age and season. The samples comprised four varieties of palm (giant, copena F1, clone 20, and round palm). The results demonstrated that the four varieties of palm contain a good quantity of neutral and acid sugars in both summer and winter seasons. However, samples collected in the summer presented a higher content of carbohydrates specially glucose, fructose, galactose, xylose, and arabinose. The tertiary cladode (old cladode) presented almost the double content of sugar found in the quaternary cladodes (young cladodes). Pectic polysaccharides were sequentially extracted with water at 60 ºC, and EDTA at 60 ºC solution resulting in Water-Soluble Pectin (WSP) and a Chelating-Soluble Pectin (CSP) respectively. Galacturonic acid was detected in the fractions WSP and CSP. However, the fraction CSP presented the highest content of sugar acid.

This study aimed to characterize Tamarindus indica L. seeds regarding its composition and to evaluate its antioxidant potential, fatty acid profile and content of tocopherols. In order to obtain the extract, the dried and crushed seeds were extracted with ethanol for 30 minutes in a 1:3 seeds: ethanol ratio under continuous stirring at room temperature. After that, the mixtures were filtered and subjected to roto-evaporation at 40 ºC in order to determine, through direct weighing, the dry matter yields of the extracts. According to the results, Tamarindus indica L. seeds showed high content of total carbohydrates (71.91%) and offered relevant content and antioxidant activity of phenolic compounds. Tamarindus indica L. seeds oil presents high oxidative stability (15.83 hours) and significant total tocopherol content (57.77 mg.kg-1), besides presenting a higher percentage of unsaturated fatty acids - the main component being linolenic (59.61%), which is considered an essential fatty acid.
