The evaluation of soil permeability throughout the weathering profile is one of the most important features to be considered in environmental studies. This study, developed from field testing and analysis of data obtained by geostatistical methods, aims at mapping the permeability around the Ribeirão Claro river. The intent is to simulate an accident with toxic liquids where soil permeability is of fundamental importance. Another purpose of the research was to determine the minimum time that, in the event of an accident, a possible contaminant to reach the water table level and be routed to the nearest drain, in this case, the Ribeirao V Claro river constitutes fundamental information. The studied area of approximately 4 km² is located within the UNESP-Rio Claro campus, consisting of colluvial soil from Fm. Rio Claro superimposed on residual soil of Fm. Corumbataí. The method used to determine the permeability is the concentric cylinders performed on a sampling grid with 64 points containing spacing of 5 meters EW and 10 meters NS. In the places of permeability tests were collected samples for laboratory determination of the percentage of fines. From particle size analysis was performed and analysis statistical and geostatistical on this data. The histogram was based on the statistical studies, and the semivariograms were based on geostatistical estimation methods. Based on the comparison between the maps and the data obtained, it was determined that the percentage of fines in colluvial surface soil has little influence on permeability, which the proximity to the Ribeirao Claro river, the eastern portion, a factor that influences the distribution of permeability values

Brazil is one of the largest producers of animal protein. In 2010, the production of meat (beef, pork and poultry) was estimated at 24.5 million tons and 75% was consumed in the country. The meat is a primary source of water and fat and contains between 20% and 35% protein, providing all essential amino acids and several micronutrients and vitamins. Due to the large consumption of this food, its quality is extremely important and the research of some indicators microorganism become essential in order to ensure the hygienic and sanitary quality, indicating contamination of fecal origin, with the possible presence of pathogens or to identify food spoilage. Thus, the aim of study was to determine the microbiological quality of 90 samples handled meat products and pre- prepared marketed in Botucatu city, according to the parameters required by ANVISA (RDC  12, 2001). Among the samples analyzed, all of them were negative for Staphylococcus coagulase positive and were within the limit allowed by ANVISA for the Clostridium sulfite reducer (up to 3 x 103 CFU/ g). The presence of Salmonella was confirmed in only one sample (1.1%), against to the legal parameters. About thermotolerant coliforms, 54.4% of the samples were outside the acceptable limit by law (up to 5 x 103 MPN/g). Therefore, the presence of these microorganisms indicates inadequate hygiene conditions of foodhandlers and equipment used in the, which are considered inadequate for consumption

Staphylococcus is one of the more important causes of the called Foodborne Disease(FD), being that from the 40 species described from genus, the more important is Staphylococcus aureus. During years believed that the S. aureus was the only specie from genus able to produce enterotoxins, responsable for the clinical frame in humans, but latest studies report the isolation of other species both positive coagulase (PC) as negative with enterotoxigenic potential. The symptoms of this intoxication appear after a short period of incubation (2-6 hours) and usually characterized by nausea, vomits, abdominal ache, diarrhea, and rarely is fatal. For the toxin to be formed in food is necessary that bacteria population to be at least 105 UFC/g, being that such toxins characterized by presenting great resistance front of gastrointestinal proteases and of homemade termical treatment. Among the main foods that might carry the microorganism, the milk and its derivatives have highlights. The contamination of the product might happen as from the milk from cows with clinical and/or subclinical mastitis, as the Staphylococcus genus is one of the main agents etiologic from this disease, equipments utensils badly sanitized equipments and utensils and from the manipulators. The control of these factors configures as fundamental condition for the achievement of a safe, quality product, which doesn’t offer risk to the consumers

Geophysics studies in areas impacted by petroleum derivatives describe abnormalities of both low and high electrical resistivity (the opposite of electrical conductivity), confirmed as contaminant phase by chemical analysis: this contradiction can be explained by degrading processes that naturally occur and create sub products that can change the environment conductivity. Monitoring the variation of the parameters mentioned serves as a comparative basis to the variation in geoelectrical parameters, which identified the correlation between the same contaminant parameters and the difference between their behavior studied apart, as well as its relations with the biodegradation process. The results are applied to the fuel distribution and storage sectors, leading to the diagnosis and monitoring of possible groundwater contamination scenarios, and the knowledge of the area exposure time to the contaminant, besides the better remediation alternative and impacts control. Among some conclusions, the most significant are the decrease in conductivity over time, so as the increase in Eh value in the gasoline contaminated tank, as well as the decrease in the pH value in the second tank with ethanol, which can be attributed to its degradation. Comparing the variations in both tanks, it is evident that Eh, pH and electrical conductivity do not behave temporally in a similar way, although some correlations between Eh and pH can be related.

The consumption of minimally processed vegetables has been growing due to consumer demand for products easy to prepare. As it is extremely manipulated, this product can be contaminated with spoilage organisms such as yeasts, that have the ability to decrease the shelf life of food. In this sense, seeking to concerns about the resistance of microorganisms to sanitation methods for food industries and given the need for more studies of the antimicrobial power of ozone, this study aimed to isolate and identify the yeasts present in minimally processed vegetables, and check their antimicrobial resistance to sodium hypochlorite and ozone. 84 samples of minimally processed vegetables were collected. From them, 47 yeast cultures were isolated and submitted for identification and testing of resistance to sodium hypochlorite sanitizers (50, 100, 200 and 400 ppm) and ozone (0.25 and 0.5 ppm). From the total yeast isolated, 85.1% corresponds to Cryptococcus laurentii, 12.8% to Arxula adeninivorans and 2.1% to Debaryomyces hansenii var. fabryii. All of them were resistant to the sanitizers sodium hypochlorite and ozone at all concentrations tested. Given these observations, some actions must be taken during processing to avoid contamination with deteriorative microbiota.

Foods are susceptible to be contaminated with several etiologic agents, which can lead to the development of illnesses, triggered by pathogenic microorganisms or their toxins. Food prepared and improperly stored can be the diseases vehicle. This study aimed at evaluating the sanitary conditions in preparing free school meals in the nursery schools, located in a city of the state of São Paulo. This study was conducted by performing microbiological analyses of samples collected from hands of workers responsible for preparing food, and of the water samples used for cleansing and preparing foods. The kitchen physical, structural and cleaning conditions were assessed by means of a checklist. This study analyzed 31 samples from worker hands swab, and 21 samples of water collected from three school kitchens. This study pointed out that the food handlers training should be improved, and a peremptory control of the water used for food preparation purpose should be established. Also, this study showed that the evaluated schools maintain the respective kitchens in a good standard of conservation and cleanliness.

As micotoxinas são metabólitos secundários produzidos por fungos. Com o intuito de aumentar a produção leiteira, cada vez mais usam-se alimentos ricos em grãos na dieta de bovinos, o que eleva significativamente o risco de exposição às micotoxinas. As condições climáticas brasileiras favorecem o desenvolvimento de fungos e a produção de micotoxinas. As micotoxinas ingeridas pelos bovinos podem ser transferidas para o leite que, ao ser consumido, causará a contaminação do homem. Este é um fator preocupante, pois o leite é um alimento altamente consumido em todas as fases da vida e é extremamente importante para o desenvolvimento de crianças. O Brasil é o 3º maior produtor mundial de leite, com a intenção de se colocar no mercado externo. Com base nesses fatos, o objetivo deste trabalho foi levantar informações a respeitos das principais micotoxinas encontradas no leite, seja este cru, refrigerado ou esterilizado. Para tanto, foi realizado um levantamento bibliográfico em três bases de dados, utilizando-se os seguintes descritores: (mycotoxins OR micotoxinas) AND (milk OR leite). Foram selecionados 10 trabalhos que realizaram quantificação de micotoxinas no leite, sendo concluído que as micotoxinas de maior importância no leite são as aflatoxinas, que representam um grande risco à saúde humana e animal, sendo importante a prevenção dos fungos produtores da mesma.

The objective of this study was to detect possible carriers of parasites and/or commensals between the horticulturists of Fair of the Producer from Upper Paranaiba, Minas Gerais. A total of 30 horticulturists were instructed to collect three stool samples on alternate days during the months of August and September 2007. Horticulturists were positive 40% for one or more parasite and / or dinner, and found: Giardia lamblia (3.5%), Entamoeba histolytica / E. dispar (7%), Entamoeba coli (13%), Endolimax nana (13%) and Ascaris lumbricoides (3.5%). Stool of gardeners is of importance in monitoring parasite sanitary conditions of vegetables sold in urban environments.
