Eryngium foetidum L., Eryngium cf. campestre and Coriandrum sativum L. are Apiaceae family vegetable appreciated due to its peculiar flavor and consumed mainly in the north and northeast of Brazil. The vegetables are rich in protein, vitamins, fiber, minerals, total phenolics and other essential bioactives for a balanced health. Nevertheless, many vegetables are falling into disuse by the population, instead of processed foods. The rescue consumption of these species is very important, aiming at their nutritional, therapeutic and antioxidant benefits. In this study, was quantified the levels of total phenolic, flavonoids and dihidroflavonoides by molecular absorption spectrophotometry in the ultraviolet. The total antioxidant capacity was also evaluated using five methodologies of in vitro assays: test Total Antioxidant Capacity (TAC), scavenging of DPPH and ABTS radical, Power Reducing and Power Chelating. It was also evaluated the power inhibitor of α-amylase and lipoxygenase extracts. All species showed significant levels of total phenolics, flavonoids and dihidroflavonoides in its composition. All treatments showed antioxidant activity of 50% except the sheets of E. cf. campestre, C. sativum and bracts of E. foetidum in DPPH and bracts of E. foetidum in ABTS. All treatments also exhibited 50% inhibition activity of the enzyme lipoxygenase.In α-amylase only the leaves of E. cf. campestre and C. sativum showed IC50. It was evaluate the phytochemical composition, aiming to meet the nutritional potential of Apiaceae family vegetables, called unconventional: Eryngium foetidum L., Eryngium cf. campestre; and conventional: Coriandrum sativum L. At the centesimal composition analysis Coriandrum sativum L. presented the highest levels of protein. The leaves of Eryngium foetidum L. exhibited higher values than other species in dietary fiber, while Eryngium cf. campestre detach with superior results in lipids. About the analyzed minerals, the leaves of Eryngium cf. campestre expressed results superior to the other in N, Ca, Mg, S and Cu. The amount of iron highlighted in sheets of E. foetidum, whereas P, K, Mn, Zn and B were most significant on leaves of C. sativum. It was concluded that the levels of total phenolic compounds found in these vegetables, characterize them for its high potential in the antioxidant and inhibition of lipoxygenase and α-amylase enzymes. Their protein and mineral levels classify them as species that can be used as a nutritional source in the preparation of other foods and may their regular consumption bring benefit to human health.

This study aimed to determine the antioxidant activity, total phenolic compounds and color in avocado 'Hass' hydrothermally treated. The fruits were hydrothermally treated at 45 degrees C for 5, 10, 15 and 20 min. After treatment, fruit were stored at room temperature (21 +/- 1 degrees C and 70 +/- 5% relative humidity) and cold (10 degrees C +/- 1 and 90 +/- 5% relative humidity). The fruits were analyzed for their antioxidant capacity by DPPH method and phenolic compounds at 0, 3, 9 and 12 days. The fruits color was measured at 0, 3, 6, 9, 12 and 15 days. The control fruits had higher antioxidant capacity and content of phenolic compounds during the storage period, compared to the fruits hydrothermally treated. The hydrothermally treatment altered the behavior as for the maintenance of the antioxidant activity in relation to the fruits control. In spite of superior values of antioxidant activity for the fruits maintained at 21 +/- 1 degrees C and 70 +/- 5% relative humidity, those refrigerated presented better aspect for commercialization. The refrigerated fruits presented better aspect for commercialization in relation to the maintained under room temperature. The brightness, color a * and b * values decreased with the storage days. Values color superiors were observed for the fruits control and those maintained under refrigeration. As it increased the irradiation dose reduced the fruits antioxidant activity and coloration.

The purpose of the present investigation was to characterize the pitanga seeds on centesimal composition, and also to evaluate its antioxidant potential and fatty acid profile. For obtaining the extract, the dehydrated and ground seeds were treated with ethyl alcohol for 30 minutes, at a proportion of 1:3 of seeds:ethyl alcohol, under continuous agitation at room temperature. Afterwards, the mixture was filtered and the supernatant was placed into a rotoevaporator at 40ºC for determining the extract’s dry matter yield, by direct weighing. According to the results, the seeds of cherry showed high amounts of carbohydrates, and offer relevant content and antioxidant activity of phenolic compounds. In the seed oil, cherry high lighted a higher percentage of unsatured fatty acids, oleic being the main component.

The main objectives of this work were to evaluate the antioxidant activity and to determine of an ethanolic ginger extract total phenolic compounds concentration, as well as verifying its behavior by means of the oxidative stability, when added to refined soybean oil in concentrations of 0, 500, 1000, 1500, 2000 and 2500 mg/kg. The maximum antioxidant activity and EC50, concentration of the extract to achieve 50% of the antioxidant activity, value determined by free radical DPPH method were 79.1% and 42.6 g/mL, respectively. The total phenolic compounds concentration, determined to Folin-Ciocalteu method, was 251 mg/g. The induction period of the samples increased according to the augment of the extract concentration in the oil when evaluated using oxidative stability through the Rancimat equipament. It was possible to conclude that the ginger extracts possess effective action against the lipid oxidation and can be applied in foods as natural antioxidant.

Phenolic compounds and antioxidant capacity are defense mechanisms of plants against the oxidative stress damage. Phenolic compounds are synthesized through the phenylpropanoid pathway, where the enzyme phenylalanine-ammonia-lyase plays a key role and it is influenced by light and photoreceptors such as phytochromes. The present research aims to evaluate the phenolic compounds content and antioxidant capacity of the wild Micro-Tom (MT) cultivar tomato fruits and its photomorphogenic mutant tomato plants high pigment 1 (hp1), super responsive to events mediated by light, and aurea (au), quantitative phytochrome deficient. Twenty mature fruits of each genotype (MT, hp1, au) were used in triplicate for analyses. To quantify the total phenolic compounds the Folin-Ciocalteu method was used and the antioxidant capacity was analyzed by Ferric Reducing Antioxidant Power (FRAP) and 2,2-diphenyl-1-picrylhydrazyl (DPPH) methods. The hp1 mutant presented the highest total phenolic compounds content and higher antioxidant capacity than wild cultivar (MT) and au mutant, which did not differ significantly from MT cultivar.

The aim of this study was to compare the quality of clarifi ed juice and VHP (Very High Purity) sugar produced from “bisada” sugarcane and an early maturation variety, at the beginning of harvest. The experiment was conducted at Usina São Martinho S/A, Pradópolis,SP (Brazil). The process of juice clarifi cation and sugar production was conducted at the Laboratory of Technology of Sugar and Alcohol in the College of Agricultural and Veterinary Sciences at the Universidade Estadual Paulista (FCAV/UNESP), Jaboticabal (SP). The experimental design was randomized, and two varieties were used: SP83-2847 (“bisada” sugarcane) and RB855156 (early maturation), with twelve replications for technological analysis and four replications for sugar production. The clarifi cation process and the clarifi ed juice was evaluated in terms of settling rates, volume of sludge that formed, total soluble solids, pH, turbidity, total phenolic compounds, starch and color. The sugar was characterized regarding the percentage of apparent sugar, color, total phenolic compounds, starch, fi lterability, humidity and safety factor. It was verifi ed that the processing of the juice clarifi cation was not affected by the processing of the “bisada” sugarcane. However, the clarifi ed juice from the SP83-2847 variety had a more intense color and a higher total soluble solids value. The sugar produced from the “bisada” sugarcane presented similar quality to the early maturation variety. It was concluded that the processing of “bisada” sugarcane at the start of the harvest did not affect the juice clarifi cation and resulted in VHP sugar of a quality similar to that of the early maturation variety.
