O objetivo deste trabalho foi avaliar a qualidade de produtos minimamente processados de mamão 'Formosa', fatias ou metades, armazenados sob diferentes temperaturas (3ºC, 6ºC e 9ºC). Utilizou-se de frutos que, depois de selecionados quanto ao grau de maturação e ausência de danos, foram lavados, desinfeccionados com cloro (200 mg.L-1) e armazenados a 12ºC, por 12 horas antes do processamento, que foi feito manualmente, a 12ºC. Os mamões, depois de descascados, foram cortados em fatias (5,0 x 2,5 cm) ou em metades longitudinais sem as pontas, que, depois de enxaguadas com água sanitizada (20 mg de cloro.L-1) e escorridas por 2-3 minutos, foram embaladas em bandejas de isopor recobertas com filme de PVC esticável (metades) ou em bandejas de tereftalato de polietileno - PET (fatias) e imediatamente armazenadas sob refrigeração. A avaliação destes produtos foi feita a cada 3 dias, quanto à resistência da polpa, coloração, pH e conteúdos de sólidos solúveis, acidez titulável, ácido ascórbico e de carboidratos, solúveis e de redutores. Durante o armazenamento, as fatias tenderam a se tornarem mais firmes, com a sua polpa apresentando pequeno escurecimento. Os conteúdos de carboidratos solúveis e de redutores e de sólidos solúveis não foram afetados pelo tipo de corte, temperatura de armazenamento ou embalagem. Durante o armazenamento, os teores de acidez titulável aumentaram nas fatias e diminuíram nas metades e observou-se influência da temperatura. Não se observaram reduções nos teores de ácido ascórbico durante o armazenamento, ou influência dos cortes ou das embalagens. Os produtos mantiveram-se adequados para comercialização até o 10º dia de armazenamento.

O largo crescimento do setor de agronegócios no Brasil tem estimulado mudanças nos sistemas produtivos, tanto na intensificação, como na profissionalização da produção. Dessa forma, os produtores têm buscado estratégias para melhor atender aos desafios da atividade pecuária atual, dentre as quais se destacam as inovações tecnológicas que devem resultar em comprovado benefício à atividade, seja pelo aumento em produtividade, seja pela melhoria na qualidade dos produtos, seja pela conscientização do respeito ao meio ambiente. Assim como em outros segmentos do agronegócio brasileiro, na caprinocultura existe uma demanda crescente pela aplicação de inovações tecnológicas, uma vez que o sistema produtivo precisa ser mais competitivo para se manter no mercado. Dentre as inovações tecnológicas aplicadas na caprinocultura, foram abordadas as mais relevantes nas áreas de reprodução (desde métodos para indução de cio até a prática da transgenia), melhoramento genético (biogenética), sanidade (inovações no diagnóstico e prevenção de doenças de maior impacto na criação), nutrição (inovações nos sistemas de alimentação) e tratamento de dejetos (diminuição de contaminantes no ambiente). A utilização conjunta das inovações tecnológicas nos diferentes segmentos associados à cadeia produtiva caprina pode fazer com que ocorram melhorias nos rebanhos assim como nos produtos gerados.

The competition in the telecommunications industry has grown in Brazil since the privatization, forcing companies that are active in the market to a growing commitment to quality products and services in order to survive. In this context, this work aims to understand the main factors that influence the degree of satisfaction exists in respect of a mobile operator with its corporate customers. The research covered theoretical concepts and analytical models of quality management system and models of indices related to the measurement of customer satisfaction. For the field research was carried out in a practical application of the main approaches based on this thesis by a case study in corporate segment, through a questionnaire applied to 10 consultants and 40 corporate customers of that company. Comparing the results of research with the consultants and corporate clients there is the concern of respondents to the indicators that comprise the constructs of customer satisfaction, commitment calculated, the price index and the handling of complaints, denoting the dissatisfaction of the general assessment for corporate customers with the carrier, against its current expectations. It is concluded that the mobile operator of the telecommunications industry have a big challenge, after ten years of privatization and consequently the period of rapid expansion of customer base and with the depleted, retain corporate customers as highly strategic, thus avoiding that migrate to other companies. We emphasize the need for further research and analysis of different approaches through research and using the same models to specifically evaluate and measure customer satisfaction of mobile enterprise, to adjust the model to the national market. Finally, we suggest the creation of an effective customer loyalty program with a strategy of relationship and specific to the corporate sector of mobile telephony

The Six Sigma methodology has received considerable attention in the last two decades. This is due to its great potencial to reduce processes variability, through the use of accurate data, facts and statistical techniques. The methodology seeks to improve the quality of products and services, maximizing the company s financial performance. Specifically, its implementation and results in medium-sized textile enterprises is unknow, although there are signs that the methodology can be applied with success. Considering this scenario, the goal of this research is to describe the application of the Six Sigma methodology in a médium-sized textile company specialized in the production of male shirts in the satate of Rio Grande do Norte, Brazil. First, we present a literature review, seeking to highlight the themes of quality, Six Sigma and its methodology for improvement. Then, we show the implementation of the project selected, depicting the steps and procedures that must be performed. The results confirm the efficiency of Six Sigma in providing significant gains to companies. It is observed substantial improvements in the speed of product development and the flexibility of the parts produced, reducing the process lead time from 12.5 to 6.2 days, which means a performance improvement of over 50%. This leads also to cultural and behaviour change, creating motivation for implementation of new projects and a continuous search for knowledge

Companies involved in emerald mining and treatment represent an important area of industrial development in Brazil, with significative contribution to the worldwide production of such mineral. As a result, large volumes of emerald waste are constantly generated and abandoned in the environment, negatively contributing to its preservation. By the other side the interest of the use of mining waste as additive in ceramic products has been growing from researchers in recent years. The ceramic industry is constantly seeking to the marked amplification for the sector and perfecting the quality of the products and to increase the variety of applications. The technology of obtaining of ceramic tiles that uses mining residues assists market niches little explored. In this scenario, the objective of the present study was to characterize the residue generated from emerald mining as well as to assess its potential use as raw material for the production of ceramic tiles. Ceramic mixtures were prepared from raw materials characterized by X-ray fluorescence, X-ray diffraction, particle size analysis and thermal analysis. Five compositions were prepared using emerald residue contents of 0%, 10%, 20%, 30% and 40%. Samples were uniaxially pressed, fired at 1000, 1100 and 1200ºC and characterized aiming at establishing their mineralogical composition, water absorption, apparent porosity, specific mass, linear retraction and modulus of rupture. The results shows that the emerald residue, basically consisted of 73% of (SiO2 + Al2O3) and 17,77% of (MgO + Na2O+ K2O) (that facilitates sintering), can be added to the ceramic tile materials with no detrimental effect on the properties of the sintered products

In recent decades, ceramic products have become indispensable to the technological development of humanity, occupying important positions in scientific production and consequently in industrial production. One area of the economy that continues to absorb large amounts of the products of this sector is Construction. Among the branches of the ceramic industry, there are the red ceramic industry which is traditionally the basis of that economic sector. Among the reasons for which the red ceramic industry became popular in the country, and specifically in Rio Grande do Norte, is the abundance of this raw material, easily found throughout the national territory. However, it appears that the red ceramic industry has deficiencies in technology and skilled labor, resulting in the production of ceramic goods with low added value. Among the factors that determine the quality of the ceramic products red has the proper formulation of the ceramic mass, the conformation and the firing temperature. Thus, the overall goal of this work is to study the mineralogical and technological properties, two clays from the region of the Wasteland Potiguar industrial ceramist. Therefore, the raw materials were characterized by analysis of Xray diffraction (XRD) analysis, X-ray fluorescence (XRF), particle size analysis (FA), scanning electron microscopy (SEM), optical microscopy (OM ), plasticity index (PI), thermal gravimetric analysis (TGA) and differential thermal analysis (DTA). The technological properties of the material were analyzed by water absorption tests (AA%) porosity (% PA), the linear shrinkage (RT%), apparent density (MEA), loss on ignition (PF%) and flexural strength three points (TRF)

Extended storage of refrigerated milk can lead to reduced quality of raw and processed milk, which is a consequence of the growth and metabolic activities of psychrotrophic bacteria, able to grow under 7oC or lower temperatures. Although most of these microorganisms are destroyed by heat treatment, some have the potential to produce termoresistant proteolytic and lipolytic enzymes that can survive even UHT processing and reduce the processed products quality. Recently, the IN 51 determineds that milk should be refrigerated and stored at the farm what increased the importance of this group of microorganisms. In this work, psychrotrophic bacteria were isolated from 20 communitarian bulk tanks and 23 individual bulk tanks from dairy farms located at Zona da Mata region of Minas Gerais State and from southeastern Rio de Janeiro. Selected milk dilutions were plated on standard agar and after incubation for 10 days at 7oC, five colonies were isolated, firstly using nutrient agar and after using McConkey agar for 24 hours at 21oC. The isolates were identified by morphology, Gram stain method, catalase production, fermentative/oxidative metabolism and by API 20E, API 20NE, API Staph, API Coryne or API 50 CH (BioMerieux). In order to ensure reproductibility, API was repeated for 50% of the isolates. Species identification was considered when APILAB indexes reached 75% or higher. 309 strains were isolated, 250 Gram negative and 59 Gram positive. 250 Gram negative isolates were identified as: Acinetobacter spp. (39), Aeromonas spp. (07), A. Hydrophila (16), A. sobria (1), A. caviae (1), Alcaligenes feacalis (1), Burkholderia cepacia (12), Chryseomonas luteola (3), Enterobacter sp. (1), Ewingella americana(6), Hafnia alvei (7), Klebsiella sp. (1), Klebsiella oxytoca (10), Yersinia spp. (2), Methylobacterium mesophilicum (1), Moraxella spp. (4), Pantoea spp. (16), Pasteurella sp. (1), Pseudomonas spp. (10), P. fluorescens (94), P. putida (3), Serratia spp. (3), Sphigomonas paucomobilis (1). Five isolates kept unidentified. Pseudomonas was the predominant bacteria found (43%) and P. fluorescens the predominant species (37.6%), in accordance with previous reports. Qualitative analysis of proteolytic and lipolytic activity was based on halo formation using caseinate agar and tributirina agar during 72 hours at 21oC and during 10 days at 4°C, 10oC and 7°C. Among 250 Gram negative bacteria found, 104 were identified as Pseudomonas spp. and 60,57% of this group showed proteolytic and lipolytic acitivities over all four studied temperatures. 20% of Acinetobacter, Aeromonas, Alcaligenes, Burkholderia, Chryseomonas, Methylobacterium, Moraxella presented only lipolytic activity. Some isolates presented enzymatic activity in one or more studied temperatures. Among Gram positive bacteria, 30.51% were proteolytic and lipolytic at 10oC, 8.47% were proteolytic at 7oC, 10oC, and 21oC, 8.47% were proteolytic at all studied temperatures (4oC, 7oC, 10oC and 21oC) and 3.38% were proteolytic only at 21oC. At 4oC, only one isolate showed proteolytic activity and six isolates were lipolytic. In relation to Gram negative microorganisms, 4% were proteolytic and lipolytic at 7oC, 10oC and 21oC, 10% were proteolytic at 10oC and 4.4% were lipolytic at 4oC, 7oC, 10oC and 21oC, while 6.4% of all isolates were proteolytic and lipolytic at 10oC and 21oC as well as lipolytic at 4oC and 7oC. These findings are in accordance with previous researches that pointed out Pseudomonas as the predominant psycrotrophic flora in stored refrigerated raw milk

Coalho cheese is a typical product of the Northeastern Brazil, which is consumed both raw and cooked. The present work aimed to study the characteristics of artisanal and industrial processes in the production of coalho cheese sold in Natal / RN in order to evaluate its quality and consumer s profile. Four artisanal cheeses plants were monitored and a questionnaire was sent to different cheese industries. Besides this, eight cheese samples (four artisanal and four industrial) were evaluated in regard to the microbiological quality, physical-chemical and sensory attributes. The sensory acceptance was evaluated by using 108 non-trained panelists by using the hedonic scale. The consumer s profile survey was applied to 400 consumers of coalho cheese. The lack of hygiene control was detected at the artisanal cheese production, which uses raw milk as its raw material. Research has shown that the industrialized cheeses are made from pasteurized milk provided by their own production or by a third party, as observed in cheese making dairies. In general, the results indicate variation in the manufacturing process of coalho cheese, which results in the lack of product standardization. Regarding the physical-chemical analysis, most artisanal and industrial samples presented moisture content between 36 and 40 %, classified as medium moisture cheese, which is the only parameter that showed no significant difference (p>0.05). However, the water activity (Aw), pH and acidity results differed significantly. All artisanal samples showed coliform contamination at 35 °C, which confirms the poor hygienic conditions. In regard to coliforms at 45 °C, 75 % of artisanal coalho cheese samples had value higher than 103 MPN / g, a value above the lawful limits determined by RDC nº 12. Fifty percent of industrial coalho cheese samples showed coagulase-positive Staphylococcus values above the limit allowed by the RDC nº 12, indicating poor handling. The sensory evaluation revealed that the taste was the only parameter that showed significant difference, and this difference was only between two industrial brands. The consumer s survey showed that the coalho cheese flavor is the most important reason for buying this kind of cheese. Although coalho cheese is mainly bought in supermarkets, open street markets and country shops are still important selling points. It is concluded that there is no coalho cheese standardization in the RN state, which leads to variations in physical-chemical and sensory attributes. Moreover, it is necessary greater hygiene control in the production and handling procedures of coalho cheese.

Nowadays, the importance of using software processes is already consolidated and is considered fundamental to the success of software development projects. Large and medium software projects demand the definition and continuous improvement of software processes in order to promote the productive development of high-quality software. Customizing and evolving existing software processes to address the variety of scenarios, technologies, culture and scale is a recurrent challenge required by the software industry. It involves the adaptation of software process models for the reality of their projects. Besides, it must also promote the reuse of past experiences in the definition and development of software processes for the new projects. The adequate management and execution of software processes can bring a better quality and productivity to the produced software systems. This work aimed to explore the use and adaptation of consolidated software product lines techniques to promote the management of the variabilities of software process families. In order to achieve this aim: (i) a systematic literature review is conducted to identify and characterize variability management approaches for software processes; (ii) an annotative approach for the variability management of software process lines is proposed and developed; and finally (iii) empirical studies and a controlled experiment assess and compare the proposed annotative approach against a compositional one. One study a comparative qualitative study analyzed the annotative and compositional approaches from different perspectives, such as: modularity, traceability, error detection, granularity, uniformity, adoption, and systematic variability management. Another study a comparative quantitative study has considered internal attributes of the specification of software process lines, such as modularity, size and complexity. Finally, the last study a controlled experiment evaluated the effort to use and the understandability of the investigated approaches when modeling and evolving specifications of software process lines. The studies bring evidences of several benefits of the annotative approach, and the potential of integration with the compositional approach, to assist the variability management of software process lines

O clima pode ser entendido como as condições atmosféricas médias em uma certa região. Ele influencia diretamente a maioria das atividades humanas, em especial a agricultura na qual define o nível de produtividade agrícola, condicionado principalmente pela disponibilidade hídrica regional. Entretanto, os sistemas de classificações climáticas (SCC) são pouco utilizados no âmbito de estudos agrícolas pois, normalmente, considera-se sua escala de atuação muito abrangente. Dessa forma, valores médios mensais de temperatura máxima e mínima do ar de 27 estações termométricas e de 427 postos pluviométricos do Estado de São Paulo foram utilizados na atualização e melhoria do mapeamento dos SCC de Köppen modificado e de Thornthwaite, além da avaliação de potenciais aplicações em estudos de zoneamento agroclimáticos para o Estado de São Paulo. A utilização de dados de 427 localidades propiciou um mapeamento mais acurado do Estado pelas duas classificações. Avaliou-se a aplicabilidade das classificações em estudos agroclimáticos pela capacidade de separação dos climas pelos dois sistemas em relação aos elementos meteorológicos e componentes do balanço hídrico normal, com análises de dispersão dos dados, testes de separação de médias de Tukey e análises de cluster com dados independentes. O SCC de Köppen foi eficiente apenas na macroescala e com baixa capacidade de separação de tipos de climas em relação aos elementos meteorológicos (temperatura do ar, chuva) e elementos resultantes do balanço hídrico (evapotranspiração, deficiência e excedente hídrico). Conseqüentemente, não deve ser utilizado em estudos agrometeorológicos. O SCC de Thornthwaite permitiu separar eficientemente os climas na topoescala ou mesoescala, pois conseguiu resumir eficientemente as informações geradas por balanços hídricos normais, demonstrando capacidade para determinação de zonas agroclimáticas. Foram também feitas discussões sobre épocas de semeadura e qualidade de produtos agrícolas relacionadas com os SCC considerados.

Trata-se de um estudo de algumas formas de processamento da carne de jacaré do pantanal como uma alternativa de consumo, de uma forma não convencional, da carne dessa espécie. Testa-se, ao mesmo tempo, a utilização de carne de cortes normalmente descartados tais como o tronco e os membros. Dessa forma relatam-se os seguintes processamentos: produtos de salsicharia não embutidos (tipo hambúrguer), carne em conserva (enlatado), carne curada e não cozida (defumada) e produto curado e cozido (tipo apresuntado). Avalia-se a qualidade dos produtos através da análise sensorial e mede-se estatisticamente o grau de sua aceitação.
