Resumo: O objetivo deste trabalho foi avaliar o efeito do cultivo de plantas de copo-de-leite (Zantedeschia aethiopica) em sistema hidropônico, no crescimento vegetativo, no teor de nutrientes na parte aérea e nas trocas gasosas. Utilizou-se o delineamento experimental inteiramente casualizado, em arranjo fatorial triplo (2x2x2), com oito tratamentos, três repetições e oito plantas por parcela. Os tratamentos consistiram de duas dimensões de espuma fenólica (2,5x2,5x2,5 e 5,0x5,0x3,8 cm, expressas em altura x comprimento x largura), duas soluções nutritivas e dois perfis hidropônicos (100 e 150 mm). As plantas de copo-de-leite foram cultivadas em sistema hidropônico fluxo laminar de nutriente (NFT) e apresentaram teores de nutrientes na parte aérea, na seguinte sequência decrescente: K>N>Ca>P>S>Mg para macronutrientes e Fe>Mn>Zn>B>Cu para micronutrientes. Plantas de copo-de-leite cultivadas em sistema hidropônico NFT, em espuma fenólica de 5,0x5,0x3,8 cm e em perfil hidropônico de 150 mm, apresentam maior acúmulo de massa de matéria seca na parte aérea e no rizoma, bem como maiores taxas fotossintéticas, independentemente da solução nutritiva.

Resumo: O objetivo deste trabalho foi avaliar o efeito da interação entre sistemas produtivos e estações do ano sobre a qualidade química e microbiológica do leite bovino, além de propor um índice de potencial nutracêutico do perfil de ácidos graxos do leite. Três propriedades foram avaliadas mensalmente, durante as diferentes estações do ano, em quatro graus de especialização dos sistemas de produção: altamente especializado, especializado, semiespecializado e não especializado. Os sistemas de produção e as estações do ano interferem de forma conjunta no perfil de ácidos graxos e, de forma isolada, na qualidade química e microbiológica do leite. As maiores contagens de células somáticas e os menores conteúdos de proteína foram observados no verão, e o grau de especialização das unidades produtivas esteve indiretamente relacionado à contagem bacteriana total no leite. No inverno, sistemas não especializados produziram leite com o melhor índice nutracêutico, que apresentaram os maiores teores de ácidos graxos poli-insaturados, ácido rumênico (CLA, 18:2n7-c9,t11) e ácido t10,c12-octadecadienoico (CLA, 18:2n6-t10,c12).

Este trabalho teve como objetivo desenvolver a tecnologia de conservação do extrato hidrossolúvel de babaçu baseado na pasteurização e na refrigeração. O extrato hidrossolúvel extraído da amêndoa de babaçu, também conhecido no Norte e Nordeste do Brasil como "leite" de babaçu, é um líquido branco ou levemente amarelado, de sabor e aroma muito semelhantes ao do leite de coco comum. O leite de babaçu extraído através de prensagem foi peneirado, pré-aquecido, adicionado de estabilizante carboximetilcelulose e homogeneizado em liquificador industrial. O leite de babaçu homogeneizado foi dividido em duas porções, adicionando-se em uma destas 0,4 % de metabissulfito de sódio, 0,4 % de sorbato de potássio e 0,01 % de ácido cítrico, e outra foi mantida sem conservantes (controle). Os leites sem e com conservantes foram envasados em garrafas de vidro e pasteurizados em banho-maria à temperatura de 90ºC por 30 minutos, resfriados à temperatura ambiente e mantidos sob refrigeração a 5ºC, durante 60 dias. As formulações foram caracterizadas físico-quimicamente quanto ao pH, sólidos solúveis (oBrix), acidez, açúcares totais e redutores, umidade, cinzas, gorduras e proteínas. Durante o armazenamento, a cada 15 dias, foram realizadas análises físico-químicas (pH, acidez total titulável e atividade de água), colorimétricas e microbiológicas. Os resultados mostram que houve pouca variação nos parâmetros físico-químicos; entretanto, microbiologicamente o leite de babaçu apresentou crescimento microbiano a partir dos 30 dias, atingindo valores elevados, acima dos padrões microbiológicos estabelecidos pela legislação, após os 60 dias de armazenamento.

Os autores apresentam dois casos de microlitíase alveolar pulmonar em gêmeos monozigóticos. Os principais achados obtidos em exames radiográficos e de tomografia computadorizada (técnica de alta resolução) são enfatizados, com base em breve revisão literária.

OBJETIVO: Avaliar a função endotelial em pacientes com artrite reumatóide, pela dilatação fluxo-mediada da artéria braquial. MATERIAIS E MÉTODOS: Sessenta e oito pacientes, sendo 32 com artrite reumatóide e 36 do grupo controle, foram avaliadas pela dilatação fluxo-mediada da artéria braquial (método ultra-sonográfico, no modo B, de avaliação de risco cardiovascular). Em um segundo tempo, foi avaliada a correlação entre a dilatação fluxo-mediada da artéria braquial, a proteína C reativa e o tempo de doença em pacientes com artrite reumatóide. RESULTADOS: A dilatação fluxo-mediada da artéria braquial na artrite reumatóide foi igual a 5,6 ± 9,69% e no grupo controle foi igual a 23,24 ± 5,65%, diferença estatisticamente significante (p < 0,00001). A proteína C-reativa teve resultado de 4,8 ± 9,1 mg/l. A correlação entre a idade, a dilatação fluxo-mediada da artéria braquial e a proteína C reativa nas pacientes com artrite reumatóide não mostrou resultado estatisticamente significante. CONCLUSÃO: Mulheres com artrite reumatóide apresentam importante disfunção endotelial quando comparadas com mulheres normais.

A fast and direct method for the determination of Cr in milk and cane sugar suspensions using graphite furnace atomic absorption spectrometry with Zeeman-effect background correction is described. No sample pre-treatment was necessary, minimizing the risk of contamination. The concentration of chromium in cane sugar was evaluated using Cr reference solutions prepared in 1% v/v HNO3 solution. The milk samples were introduced into the furnace with a mixture of amines for avoiding the autosampler blockage and foaming of milk. Chromium determination in milk was based on the standard additions method (SAM). The limit of detection and characteristic mass for cane sugar sample (30 muL) were 0,13 ng/ml and 4,3 pg, and for milk sample (10 muL) were 0,23 ng/ml and 7,8 pg, respectively. The graphite tube lifetime was 300 firings for sugar-cane sample and 100 firings for milk sample. The heating program was implemented in 68 s.

Selenium is both essential and toxic to man and animals, depending on the concentration and the ingested form. Most fruits and vegetables are poor sources of selenium, but coconut can be a good selenium source. Samples were suspended (1 + 4 v/v) in a mixture of tertiary amines soluble in water (10% v/v CFA-C). This simple sample treatment avoided contamination and decreased the analysis time. The standard additions method was adopted for quantification. The action of the autosampler was improved by the presence of the amines mixture in the suspension. A Varian model AA-800 atomic absorption spectrometer equipped with a graphite furnace and a GTA 100 autosampler was used for selenium determination in coconut water and coconut milk. Background correction was performed by means of the Zeeman effect. Pyrolytically coated graphite tubes were employed. Using Pd as chemical modifier, the pyrolysis and the atomization temperatures were set at 1400 and 2200ºC, respectively. For six samples, the selenium concentration in coconut water varied from 6.5 to 21.0 mug L-1 and in coconut milk from 24.2 to 25.1 mug L-1. The accuracy of the proposed method was evaluated by an addition-recovery experiment and all recovered values are in the 99.5-102.3% range. The main advantage of the proposed method is that it can be directly applied without sample decomposition.

The present work shows a method for the determination of chloramphenicol (CAP) antibiotic in milk, powder milk and honey. The solid phase extraction and liquid-liquid extraction were applied as a clean-up and pre-concentration strategies followed by LC-ESI/MS/MS analysis. The recovery was studied for different fortification levels from 0.05 to 1.00 µg L-1 in milk, showing values between 91 101% and RSD bellow 8.0%, while honey was spiked with a concentration of 0.20 µg kg-1 yelding a mean recovery of 83% and RSD of 6.5%. The quantification transition 321>152 showed a LOD of 0.52 ng kg-1 and LOQ of 1.85 ng kg-1.

This work presents a little of the history which marked the development of the dairy industry in Brazil and in the world. It shows problems and solutions related to the preservation of milk. In general, it also describes the traditional manufacture of cheese and applications of membrane technology as an auxiliary tool in the processing of some types of cheese.

A micellar electrokinetic chromatographic method (MEKC) is described for determining residues of amphenicols(chloramphenicol,thiamphenicol and florfenicol) in bovine milk. MEKC is conducted by using a separation buffer consisting of 20 mM Na2HPO4, 10 mM Na2B4O7, 50 mM SDS at pH 8.0; UV detection at 210 nm and 10 kV of voltage. The limit of detection ranged from 4.3-5.3 µg L-1. The MEKC method was applied for the simultaneous determination of amphenicols in milk samples spiked with amphenicols at three concentration levels: 10, 30 and 50 µg L-1. Recoveries ranging from 91-105% were obtained by following a simple extraction/preconcentration procedure.

A method for HPLC determination of sulfadimethoxyne in milk is presented. The analyte isolation and concentration were performed by solid-phase extraction through a C-8 cartridge, pre-conditioned with hexane, methanol and water and eluted with MeOH. The recovery determination was done with a spiked solution of 20, 50 or 100 µg L-1. In this concentration range, the recovery was 83.2% with a RDS of 15.4%. For quantification, a Zorbax Eclipse XDB-C8 (4.6 mm x 150 mm, 5 µm), a mobile phase of MeCN: 0.01 mol L-1 KH2PO4 aq. (1:4), and a variable wavelength detector (275 nm) were used.

Least-squares support vector machines (LS-SVM) were used as an alternative multivariate calibration method for the simultaneous quantification of some common adulterants found in powdered milk samples, using near-infrared spectroscopy. Excellent models were built using LS-SVM for determining R², RMSECV and RMSEP values. LS-SVMs show superior performance for quantifying starch, whey and sucrose in powdered milk samples in relation to PLSR. This study shows that it is possible to determine precisely the amount of one and two common adulterants simultaneously in powdered milk samples using LS-SVM and NIR spectra.

Human milk fat is essential for development of newborn infants. Many studies detail chemical characteristics of human milk fat; however there are no studies about its physical properties. The objective of this work was to analyze the centesimal composition of human milk and to compare the calculated energy value with the estimated energy by the creamatocrit method. Chemical composition and physical properties of human milk lipids and Betapol - a structured lipid - were also studied. The results showed that energy values of human milk estimated by creamatocrit and calculated by the centesimal composition didn't present significant correlation. Human milk lipids and Betapol presented distinct physico-chemical properties.

Deficiency of micronutrients is a public health problem. Cow milk is a source of retinol. The objective of this study is to evaluate the retinol concentration in milk commercialized in Natal/RN. Ten samples were taken of each brand of UHT milk. Vitamin content was determined by HPLC using the Shimadzu LC-10 AD Chromatograph, coupled to the Shimadzu SPD 10 A UV-VIS Detector and the Shimadzu C-R6A Chromatopac Integrator with Shim-pack CLC-ODS (M) column, measuring 4.6 mm x 25 cm. The mobile phase was 100% methanol, with a flow of 1 mL/min. The mean retinol concentration varied between 22.7 ± 4.9 µg/100 mL and 44.1 ± 4.1 µg/100 mL, with the differences statistically significant (p<0.001). Only one of the 7 brands had retinol concentration below the normal requirements for human consumption.

Xanthan is a polysaccharide synthesized by Xanthomonas bacteria and of extreme commercial importance as a microbial polysaccharide. The aim of this work was to produce xanthan using mozzarella cheese whey as substrate, by different isolates natives the Xanthomonas. The alternative medium for production was milk whey, urea and K2HPO4. The xanthan maximum productivity was 21.91 g L-1. Analysis of apparent viscosity was made in solutions of gum at 0.5-2.0%, 25-65 ºC with shear rate of 25-1000 s-1.The maximum viscosity found was 57.30 mPa.s. The isolates demonstrate capacity to degrade the lactose and to produce xanthan, being constituted an alternative for the industrial production.
