Atualmente observa-se uma diminuição no consumo de verduras entre os brasileiros, especialmente na região norte e nordeste do país, entre jovens e aos estratos sociais de baixa escolaridade. Entretanto, o consumo de verduras forma a base de excelência para uma alimentação saudável além de ser indispensável no dia-a-dia. Dentre as verduras de destaque encontram-se a couve-manteiga e o almeirão, que são verduras baratas, amplamente disponíveis no país e que contam com a presença de diferentes tipos de antioxidantes. Antioxidantes são compostos bioativos que possuem múltiplas propriedades, mas que se destacam pelo seu potencial de óxido-redução e por sua capacidade de competir por sítios ativos e receptores de estruturas celulares. Esses mecanismos estão descritos como sendo moduladores da resposta inflamatória, além de serem preventivos de várias condições e doenças. Incluem-se nessa classe os compostos fenólicos, que são produtos do metabolismo secundário dos vegetais e têm sua atividade devido a interação com espécies radicalares, tendo como um dos seus principais componentes os flavonoides, que são metabólitos secundários da classe dos polifenois, tendo seu consumo relacionado a diminuição do risco de doenças coronarianas e alguns tipos de câncer. O objetivo desse trabalho foi avaliar o efeito de quatro diferentes processos de cozimento (microondas, cozimento a vapor, cozimento em água fervente e fritura a óleo), em duas verduras de grande consumo no Brasil, em relação as quantidades de ácido ascórbico, acidez, compostos fenólicos totais, flavonoides totais e atividade sequestrante de radicais livres e verificar qual melhor método de cozimento que mantenha esses compostos. Neste trabalho investigou-se a modificação de superfície do titânio pela irradiação com feixe de Laser Nd:YAG. Os parâmetros do laser como a potência, o comprimento de onda, a frequência, a velocidade de varredura e a área de exposição foram mantidos constantes, exceto o espaçamento da matriz, o qual foi de 0,01 e 0,02 mm. A caracterização da superfície foi realizada por Microscopia Eletrônica de Varredura (MEV) e Difração de Raios X (DRX), sendo que os espectros foram refinados pelo método Rietveld. Pela análise de MEV, observou-se uma mudança na topografia, obtendo uma superfície rugosa produzida pelo fenômeno de ablação. As análises por Rietveld dos espectros de difração de raios X detectaram TiN, Ti2N, TiO2 (anatásio e rutilo), sendo que a amostra com espaçamento 0,01 mm apresentou uma maior quantidade de óxidos e nitretos. Isso pode ser devido à sobreposição do feixe, induzindo à formação de uma superfície com maior estabilidade termodinâmica. Os óxidos e nitretos obtidos são de grande importância, pois são responsáveis por produzir uma maior interação entre o osso-implante.

Introduction: The fluoridation surveillance in the public water supply came up with the need to develop mechanisms that would help society in the control of water quality. To perform reliable analysis, variables such as depth of the wells and pluvial variations should be subject of research and study. Objectives: To analyze the fluoride levels of deep wells in periods of rain and drought, corresponding to four brazilian cities and compare the results. Methodology: It was made the mapping of the water supply network and the identification of the sampling points according to the number of deep wells in each locality, selecting those who had the natural fluoride level. Three points were defined for each source of water supply, and the addresses were randomly selected. The samples were analyzed in duplicate at the laboratory of the Center for Research in Public Health of the Dentistry School of Araçatuba – UNESP, during 8 months, in periods of rain and drought (total absence of rain). Results: 174 analysis were conducted, the mean fluoride levels for rain and drought times were, respectively: 0,71 and 0,73. It was used the Student’s t test (p <0.05). Conclusion: There wasn’t statistically significant differences for the periods of rain and drought in any of the cities, at the year of 2010. This study highlights the importance of health surveillance, because beyond of ensuring social control, there is also the search for investigating variables that may have directly and / or indirectly influence on the results of the analysis.

Fluoridation of water for human consumption is a method of caries prevention that brings great social benefit, if kept at optimal levels. The increase in the production of bottled water emphasizes the need to verify whether fluoride presence in these waters occurs in sufficient quantity to prevent decay, or if it represents a significant risk of fluorosis. Objective: to compare the concentrations of fluoride present in bottled water to those declared on the labels, and to make a critical analysis of legal norms on the subject. Materials and method: this was a cross-sectional study, through which 22 samples of bottled water sold in state of Ceará, Brazil, were analyzed. Analyses were performed in duplicate by the electrometric method, and results were compared to those printed on the labels. Detailed searches by laws, resolutions, ordinances, and other official documents in force, related to the topic were performed. Results: the fluoride concentrations found ranged from 0.01 to 0.36 mgF/l. Although 72.7% of the samples were classified as fluoridated, the fluoride concentrations observed were shown to be insufficient for caries prevention. As for the rules, situations where they are not clear or even divergent were found. Conclusion: the current legislation on the subject requires updates to become more objective and to create new criteria on the use of the term “fluoridated water”.

The objective of this study was to evaluate the effect of adding calcium ions and fluoride in the formulation of a whitening gel 35% hydrogen peroxide in its penetration through the dental structure, whitening efficacy and surface hardness of dental enamel. 80 teeth bovine incisors were used, which were obtained enamel and dentin disks of the buccal surface with 6mm diameter and 2mm thick (1 mm of enamel and dentin 1mm). The samples were divided into four groups stratified according to the protective substance / remineralizing added to the gel of hydrogen peroxide 35%: Group Ca - Calcium gluconate 0.5%; Group F - Sodium fluoride 0.2%; Group Ca + F - Calcium gluconate 0.5% and Sodium Fluoride 0.2%; Control group - no substance was added. The initial color of the samples and the hardness of the enamel were measured before the bleaching procedures. The specimens from each group were placed on a metallic support on which there was a simulated pulp chamber, which was filled with acetate buffer to collect and stabilize the penetrated peroxide. The respective bleaching treatments were applied 3 times, total of 30 minutes of application. The amount of peroxide which passed through the samples was determined by absorbance spectrophotometry. The hardness of the samples was measured immediately after bleaching. Next, the samples were immersed in artificial saliva for 7 days, after which the final color was evaluated. Data were statistically analyzed adopting a 5% significance level
