ABSTRACT: To evaluate the short period climatic variations impact over Amazonic mangrove ecosystem, studies were carried out on the northeast coast of Para State. Sediments, surficial and interstitial waters were collected and examinated throughout salinity, pH and Eh (mV) measurements; mineralogical determination using X-ray diffraction and electronic microscopy. Chemical analysis of dissolved sulfides, sulfate and chloride, among others were made in samples collected seasonally, under spring and neap tides conditions. The seasonal chloride variations in the interstitial waters shows 20 g/l during the dry season and less of 10 g/l in the season; the concentration in surficial are higher at neap tides (rainy season) and spring tide (dry season). The dissolved sulfides were found only at 10 cm, indicating sediment exposure to the atmospheric oxygen advectives fluxes. The dissolved iron rates increases between 0-10 cm and the pH tends to neutrality. The saturation of interstitial waters at dry season is indicated by evaporitic minerals: gypsum and halite. The pluviometric variations are responsible by gradual changes in the nutrient and physical chemical properties of surficial and interstitial waters, into the saline equilibrium control at coastal waters, in the salinization and desalinization of sediments and the distribution of mangrove vegetation at the estuary. The prolonged exposure of sediments during the dry season and the morphological characteristics contribute to the total or partial oxidation of surficial sediments, modifying the mineralogy of sediments and the physical chemical characteristics of interstitial waters.

Background: The use of all by-products of bovine slaughter is of high economic importance for the industries of products of animal origin. Among these products, fat has an important role, once fat rendering may generate several different products, such as protein material that may be used in the manufacture of meat products. However, in spite of the importance that the use of all by-products has for the economic balance of the industry, there are no reports on their use in Brazil, or studies that supply data on microbiological and physical-chemical local standards for this protein. Thus, the objective of this study was to evaluate microbiological and physical-chemical characteristics of protein material obtained from fat rendering, as well as to provide support for companies to use fat rendering to generate protein material, adding value to industrialized meat products.Materials, Methods & Results: The experimental production of edible protein obtained of fat rendering was conducted in slaughterhouse with supervision of the Brazilian Ministry of Agriculture, Livestock and Food Supply. Protein material was obtained in a continuous, humid heat system at high temperatures. Fat scraps containing protein were ground and cooked at high temperature (85 degrees C), and placed in a three phase decanter centrifuge. After centrifugation, protein material was ground again and packed. Samples were collected from 15 batches of protein material, and the following microbiological analyses were carried out: counts of aerobic mesophilic and psychrotrophic microorganisms, coliforms at 35 degrees C, Escherichia coli, sulfite-reducing Clostridium, and Staphylococcus aureus, besides presence or absence of Salmonella and Listeria monocytogens. The following physical-chemical analyses were also carried out: protein, total lipid, moisture, ash, carbohydrate, and energy content. Mean counts of mesophiles, psychrotrophs, and coliforms at 35 degrees C were 4.17; 3.69 and 1.87 (log CFU/g), respectively. Levels of protein, total lipids, moisture, ashes and carbohydrates were 27.50; 7.83; 63.88%; 0.24%; and 0.55%, respectively, and energy content was 182.63 kcal/100g.Discussion: Results of microbiological analyses demonstrated that, although low, the final product showed to be contaminated. Contamination that occurred during the second grinding procedure may be an explanation for these bacterial counts. Also, the temperature used for fat fusion was not enough to eliminate thermoduric microorganisms. However, even with the presence of indicator microorganisms in the samples, none was contaminated by E. coli, sulfite-reducing Clostridium, S. aureus, Salmonella or L. monocytogenes. Physical-chemical analyses showed that the product had adequate nutritional quality. Based on these results, it was possible to conclude that protein material obtained in fat rendering showed characteristics that enable the use of this product as raw material for processed meat products. Besides, the present study was the first one to present scientific results in relation to edible by-products obtained in fat rendering, supplying important information for slaughterhouses and meat-processing plants. The study also produced relevant data on the innocuousness of the product, which may be used to guide decision-making of health inspectors.

The aim of this study was to evaluate the effect of gamma radiation associated with modified atmosphere on postharvest quality of guavas ‘Pedro Sato’. It was used guavas from the region of Vista Alegre do Alto/São Paulo/Brazil. After harvest, the fruits were immediately transported to the Fruit and Vegetables Laboratory from the Agroindustrial Management and Technology Department, Agronomic Sciences College - UNESP - Botucatu / SP, where they were kept at 10 ° C and 90-95% RH in cold storage, for 28 days. It was used the randomized design, with factorial scheme 5 x 5, three repetitions. The first factor consisted of the following effects: control 1 (without package or irradiation), control 2 (polystyrene package/PS + package low density polyethylene/LDPE and without irradiation), treatment 1 (PS + LDPE and 0.2 kGy ), treatment 2 (PS + LDPE and 0.6 kGy) and treatment 3 (PS + LDPE and 1.0 kGy). The second factor consisted of the evaluation periods: 0, 7, 14, 21 and 28 days. The analyses were: firmness, soluble solids (SS), titratable acidity (TA), maturity index, pH, respiration rate. Concluded that high doses of irradiation promoted a negative effect on physical-chemical characteristics of guava ‘Pedro Sato’, verifying that only the lowest dose associated with modified atmosphere provided fruits with higher quality and acceptability, due to higher maturation rate and soluble solids obtained. Regarding the days of analysis, there were no positive effect of the treatments during storage, where only the early days promoted better values for the variables studied.

Mulberry (Morus nigra L.) is a fruit with a great potential for technological uses, which could be employed to manufacture of syrups, ice cream, candies, yoghurts, beverages, jam, etc. Only the leaf from mulberry trees is commercially used for silkworm feeding. This tree is cultivated on many agricultural environments such as small rural proprieties and settlements. Small farmers waste a great amount of their production for not knowing about mulberry technology. Thus, the objective of this work was to access extraction yield and physical-chemical properties of mulberry whole juice from ripe, green and a mixture of both by using press and depulper. Statistical analysis of results was carried by media and standard deviation calculations. 173 kg of mulberry were picked being 49.31% ripe and 50.68% green. Press delivered greater extraction yield of whole juice (80.50% to 81.60%) when compared to press (71.43% to 77.50%). Whole juice obtained from both equipments has shown the following values: soluble solids 7.45% - 12.11%, titrable acidity 0.45 – 1.23%, ratio 6.03 – 26.84, pH 3.69 – 4.35, total reducing sugar 4.05% – 9.96%, reducing sugar 3.95% - 9.15%, sucrose 0.00% - 0.04%, turbidity 221.25 NTU - >4,000 NTU. Whole juices obtained from both equipments has shown similar physical-chemical characteristics except turbidity. The authors concluded that press was the best extraction equipment due to its greater yield and whole juice quality regarding turbidity

The aim of this study was to evaluate the effect of gamma irradiation associated with modified atmosphere in cold storage of guava ‘Pedro Sato’ minimally processed, checking their physical-chemical characteristics. Were used guavas from the region of Vista Alegre do Alto/São Paulo/Brazil. After harvest, fruits were immediately transported to the Fruit and Vegetables Laboratory from the Agroindustrial Management and Technology Department, Agronomic Sciences College - UNESP - Botucatu / SP, where they were kept at 10 ° C and 90-95% RH in cold storage, for 12 days. In the laboratory, fruits were selected by size and lack of defects in order to standardize the lot and then were cut into slices 0.5 cm thick. We used the completely randomized design, with factorial design 5 x 5, with three replications. The second factor consisted of the evaluation periods: 0, 3, 6, 9 and 12 days. The analyses were: firmness, soluble solids (SS), titratable acidity (TA), maturity index, pH, breathing behavior. In the end of this work it was concluded that the lower dose of radiation associated with modified atmosphere promoted positive effect on physical-chemical characteristics of guava ‘Pedro Sato’, providing fruits with higher quality and durability, due to higher maintenance of pulp firmness, the highest pH and soluble solids obtained. Regarding the storage days, there were no beneficial effect of the treatments during storage, mainly due to the sensitivity of fruits submitted to gamma irradiation, where only the early days provided better values for the variables.

Sediment quality from Paranagua Estuarine System (PES), a highly important port and ecological zone, was evaluated by assessing three lines of evidence: (1) sediment physical-chemical characteristics; (2) sediment toxicity (elutriates, sediment-water interface, and whole sediment); and (3) benthic community structure. Results revealed a gradient of increasing degradation of sediments (i.e. higher concentrations of trace metals, higher toxicity, and impoverishment of benthic community structure) towards inner PES. Data integration by principal component analysis (PCA) showed positive correlation between some contaminants (mainly As, Cr, Ni, and Pb) and toxicity in samples collected from stations located in upper estuary and one station placed away from contamination sources. Benthic community structure seems to be affected by both pollution and natural fine characteristics of the sediments, which reinforces the importance of a weight-of-evidence approach to evaluate sediments of PES. 'Golden' papayas at maturity stage 1 (15% yellow skin) were chosen to study selected oxidative processes, the activity of antioxidant enzymes and lipid peroxidation in storage at 22°C, during the ripening of the fruit. An increase in ethylene production was observed on the second day of storage and it was followed by an increase in respiration. An increased activity of catalase, glutathione reductase and ascorbate peroxidase was observed concurrently or soon after this increase in ethylene production and respiration. The increased activity of these enzymes near the peaks of ethylene production and respiration is related to the production of oxidants accompanying the onset of ripening. On the fourth day of storage, there was an increased lipid peroxidation and decreased activities of catalase, glutathione reductase and superoxide dismutase. Lipid peroxidation induces the increase of antioxidant enzymes, which can be verified by further increases in the activities of catalase, glutathione reductase, superoxide dismutase and ascorbate peroxidase. Unlike the other antioxidant enzymes, the ascorbate peroxidase activity in the pulp increased continuously during ripening, suggesting its important role in combating reactive oxygen species during papaya ripening. With regard to physical-chemical characteristics, the soluble solids did not vary significantly, the acidity and ascorbic acid contents increased, and hue angle and firmness decreased during storage. The results revealed that there was variation in the activity of antioxidant enzymes, with peaks of lipid peroxidation during the ripening of 'Golden' papaya. These results provide a basis for future research, especially with regard to the relationships among the climacteric stage, the activation of antioxidant enzymes and the role of ascorbate peroxidase in papaya ripening.
