The concentration of Zn, Cu, Pb, Cd, Ni, Co, Ag, Mn, Fe, Ca, Mg, K and Na in molluscs Macoma balthica, Mya arenaria, Cardium glaucum, Mytilus edulis and Astarte borealis from the southern Baltic was determined. The surface sediments and ferromanganese concretions associated with the molluscs were also analysed for concentration of these metals. Species- and region-dependent differences in the metal levels of the organisms were observed. The properties of molluscs analysed which have a tendency toward elevated biological tolerance of selected trace metals were specified. The interelement relationship between metal concentrations in the soft tissue and the shell was estimated and was discussed.

The influence of habitat modification by Mytilus edulis L. on the settlement and development of Fucus serratus populations was investigated on rocky shores of the Isle of Anglesey, North Wales. Settlement of fucoids was higher inside mussel habitat than outside on one of two shores studied. The effect of microhabitat on survival of fucoid germlings was examined by transplanting the germlings into and outside mussel habitats, each with and without the exclusion of grazers. Observation showed that periwinkles and top shells were abundant in mussel habitat, while limpets dominated bare rock. Exclusion of grazers greatly enhanced the survival of fucoid germlings in both habitats, indicating that while mussel habitat supports a different grazer assemblage to bare rock, both assemblages are important in limiting fucoid recruitment. The risk of dislodgement was assessed and compared between fucoids growing on mussel shells and bare rock. In situ pull-tests showed that less force was required to detach large fertile thalli growing on mussel shells than those growing on the rock. Adhesion was generally broken between the mussel and the rock rather than between the holdfast and the mussel. These observations indicate that mussels provide an unstable substrate for mature fucoids. Overall results suggest that a negative effect of mussel-modified habitat on fucoids is profound in adults; but the effect is context-dependent in juveniles and can be positive at settlement. Results from a survey on population structure of fucoids across two shores showed that there were greater numbers of large fertile fucoids growing directly attached to rock than on mussel shells, while there was no difference for juvenile fucoids confirming the experimental results. Moreover thalli larger than 60 cm were found only on the rock but not on shells. This finding suggests that a mussel dominated habitat may have a significant impact on reproductive output in fucoid populations.

A spatially explicit coupled hydrodynamic-biogeochemical model was developed to study a coastal ecosystem under the combined effects of mussel aquaculture, nutrient loading and climate change. The model was applied to St Peter's Bay (SPB), Prince Edward Island, Eastern Canada. Approximately 40 % of the SPB area is dedicated to mussel (Mytilus edulis) longline culture. Results indicate that the two main food sources for mussels, phytoplankton and organic detritus, are most depleted in the central part of the embayment. Results also suggest that the system is near its ultimate capacity, a state where the energy cycle is restricted to nitrogen-phytoplankton-detritus-mussels with few resources left to be transferred to higher trophic levels. Annually, mussel meat harvesting extracts nitrogen (N) resources equivalent to 42 % of river inputs or 46.5 % of the net phytoplankton primary production. Under such extractive pressure, the phytoplankton biomass is being curtailed to 1980's levels when aquaculture was not yet developed and N loading was half the present level. Current mussel stocks also decrease bay-scale sedimentation rates by 14 %. Finally, a climate change scenario (year 2050) predicted a 30 % increase in mussel production, largely driven by more efficient utilization of the phytoplankton spring bloom. However, the predicted elevated summer temperatures (> 25 A degrees C) may also have deleterious physiological effects on mussels and possibly increase summer mortality levels. In conclusion, cultivated bivalves may play an important role in remediating the negative impacts of land-derived nutrient loading. Climate change may lead to increases in production and ecological carrying capacity as long as the cultivated species can tolerate warmer summer conditions.

1.This report presents the results of a field study conducted in the ECASA test site nOS in the Pertuis Breton, France. The site is located on the Atlantic West coasts. It is open to the bay of Biscay, but is slightly protected against westerly winds. The bay has been exploited by intertidal mussels culture for centuries. 2. Within the bay, mussels (Mytilus edulis) are cultivated either by the traditional pole technique, around the bay or on longlines in the centre of the bay. The area occupied by these longline s represents 250 ha, and the resulting annual production is 1 000 tonnes of mussels. The average depth at mid tide is of 13.8 m. The sediment is sandy, with a small fraction of mud. 3. The site is subject to several regular monitoring through the local implementation of national networks aiming at protecting the environment and marine resources, on pollutants (RNO), microbiological quality of the waters (REMI), phytoplanktonic toxic species (REPHY) and growth and mortality of molluscs (REMORA). Benthic macrofauna was studied in 1976. 4. Five sampling sations were chosen along a line, starting under the longlines, and at distances of 50, 100, 200, and 400 metres from the area cultivated. A reference station was chosen in a different direction at 2300 metres of the cultivated area. Sampling methods are described in the text. _Sediments were sampled for different analyses: grain size, content in organic matter, total organic carbon and nitrogen, and phytic pigments (chlorophyll a and phaeopigments). Redox were measured in cores. The macrofauna living into the sediment was also sampled. The water column was sampled for physical (temperature, transparency) and chemical parametres, including oxygen content, salinity, organic matter, dissolved nitrogen forms, phosphates and silicates. Results from benthic macrofauna surveys indicate that there were no significant differences between the different stations and the reference station, all being classified as slightly disturbed. The bay is submitted to freshwater runoffs from two adjacent rivers. 7. The sediment is slightly modified by the culture of bivalves. Total organic carbon, total nitrogen, Eh values and pheopigments were significantly higher under the trestles than in any other stations. Other stations often did not differ from the reference station. 8. The effects of shellfish culture on the water column were. However, it was observed a small decrease of the food available to the molluscs near the rearing 9. The DEB model was able to describe and predict adequately the growth of oysters, both in the Baie des Veys and in the Loch Creran. The parametres for its use in other environment are given, but a tuning of one parametre should be performed with the help of authors. 10. Among the indicators and models for use in are as of intertidal bivalve culture, it is recommended to use the sediment quality index, TOC (Total Organic Carbon), redox and pheopigments, in surficial sediment, AMBI for the macrofauna, chlorophyll a contents and nitrogen forms in the water column, and models describing the carrying capacity, filtration rate of molluscs, and a DEB model to predict the growth of molluscs.

Depuis 1992, la surveillance de la santé des mollusques marins du littoral français est assurée par le réseau de Pathologie des Mollusques (Repamo). Ses activités s’inscrivent dans le cadre de la Directive Européenne 2006/88/CE. Depuis son évaluation par la plateforme nationale d’épidémiosurveillance en santé animale en 2012, l’objectif de surveillance est la détection précoce des infections dues à des organismes pathogènes exotiques et émergents affectant les mollusques marins sauvages et d’élevage. L’année 2015 est la première année de transition pour laquelle un début d’évolution des modalités de surveillance de la santé des mollusques marins animées par l’Ifremer a été amorcé. Un dispositif hybride de surveillance a été mis en place, s’appuyant sur l’existant et intégrant des débuts d’évolution. La surveillance événementielle a constitué l’activité principale du dispositif en 2015 et s’est appuyée sur des réseaux existants : (1) la surveillance des mortalités observées sur des animaux sentinelles déployés sur les sites ateliers des réseaux Ifremer RESCO 2 (12 sites) pour l’huître creuse Crassostrea gigas et MYTILOBS 2 (8 sites) pour la moule bleue Mytilus edulis. Pour l’huître creuse Crassostrea gigas, la mortalité cumulée moyenne était de 50,3% (écart-type 10,9%) pour le naissain standardisé Ifremer (NSI), de 11,0% (écart-type 9,1%) pour les huîtres de 18 mois et de 7,3% (écart-type 5,6%) pour les huîtres de 30 mois. Les mortalités ont été observées principalement entre le début du mois de mai et la mi-juillet. Lors de ces épisodes de mortalité, des prélèvements d’animaux ont été réalisés en vue d’analyses diagnostiques : 7 prélèvements pour le NSI, 2 pour les huîtres de 18 mois et 1 pour les huîtres de 30 mois. Aucun agent réglementé n’a été détecté dans les échantillons d’huîtres creuses prélevés et analysés. Le virus OsHV-1 a été détecté dans les 7 échantillons analysés de NSI, dans 2 échantillons analysés d’huîtres de 18 mois et dans 1 échantillon analysé d’huîtres de 30 mois. La bactérie Vibrio aestuarianus a été détectée dans 5 échantillons analysés de NSI, dans 1 échantillon d’huîtres de 18 mois et dans 1’échantillon d’huîtres de 30 mois. Pour la moule bleue Mytilus edulis, des mortalités cumulées variant de 9% sur le site du Vivier à 51% sur le site des filières du Pertuis Breton ont été estimées. Les mortalités ont été observées au printemps sur des moules âgées d’une année et en automne sur des moules plus jeunes. Lors de ces épisodes de mortalités, des prélèvements d’animaux ont été réalisés en vue d’analyses diagnostiques : 2 prélèvements pour les moules d’une année et 1 pour les jeunes moules. Ces prélèvements ont eu lieu dans le Pertuis Breton. Aucun agent réglementé n’a été détecté dans les échantillons de moules prélevés et analysés. Des bactéries du groupe Splendidus ont été détectées dans les 3 échantillons de moules analysés. (2) la surveillance s’appuyant sur les déclarations de mortalités de mollusques par les conchyliculteurs et pêcheurs à pied professionnels auprès des Directions départementales des territoires et de la mer (DDTM). Cette modalité s’applique aux huîtres creuses et aux moules bleues lorsqu’il n’existe pas de site atelier RESCO 2 ou MYTILOBS 2 dans la zone où des mortalités sont déclarées par les conchyliculteurs ou pêcheurs à pied. Le réseau REPAMO 2 a réalisé 22 interventions, dont 15 pour les moules Mytilus edulis, 4 pour les coques Cerastoderma edule, 2 pour les palourdes Ruditapes sp. et 1pour les coquilles saint Jacques Pecten maximus. La recherche d’agents infectieux dans ces espèces de mollusques prélevés lors de hausse de mortalité a permis de mettre en évidence les parasites réglementés Perkinsus olseni dans 1 lot de palourdes, et Marteilia refringens dans 4 lots de moules, ainsi que le virus OsHV-1 dans 1 lot de palourdes et 1 lot de coques, la bactérie Vibrio aestuarianus dans 3 lots de coques, et des bactéries du groupe Splendidus dans 3 lots de coques et dans 13 lots de moules. L’année 2015 a également permis la démonstration sur un site atelier d’un exercice de surveillance programmée, ciblée et fondée sur les risques d’introduction et d’installation d’un organisme pathogène exotique. Elle a concerné le parasite Mikrocytos mackini de l’huître creuse Crassostrea gigas, sur un site atelier de la Charente-Maritime, suivi par le réseau RESCO 2. Le parasite Mikrocytos mackini n’a pas été détecté. En revanche, le parasite Marteilia refringens a été détecté dans ¾ des prélèvements d’huîtres réalisés. Dans le cadre du soutien scientifique et technique de l’évolution de la surveillance événementielle, l’année 2015 a également permis de poursuivre la démarche relative aux développements méthodologiques en lien avec la surveillance événementielle des mortalités de mollusques marins. Une étude de faisabilité de la recherche prospective de regroupements spatio-temporels d’événements de mortalités d’huîtres creuses a été préparée en collaboration avec tous les acteurs de la santé des mollusques marins en Normandie. Un outil de collecte et d’analyse des données de signalements des mortalités, automatisé, simple d’utilisation et flexible, a été élaboré.

Depuis 2014, des surmortalités anormales affectent les cheptels mytilicoles tant adultes que juvéniles avec des mortalités massives pouvant atteindre 100% (Béchemin et al. 2015). Les objectifs généraux de ce projet sont d’identifier des facteurs potentiellement corrélés avec les mortalités de moules observées dans les Pertuis Charentais: facteurs environnementaux biotiques, abiotiques et hydrodynamiques) et facteurs intrinsèques aux animaux (traits d'histoire de vie, qualité cytogénétique et physiologie). Après une introduction bibliographique complète, différentes questions sont ici abordées. 1. Historique des mortalités 2014-2015 ? Grâce { différentes sources d’information nous avons pu retracer les évènements de mortalités de 2014 et 2015 et valider l’échantillonnage réalisé en 2015 dans Morbleu (au niveau temporel et spatial). 2. Les mortalités 2014 et 2015 sont-elles exceptionnelles ? Existe-t-il un lien avec les fluctuations environnementales ? Pour cela, nous avons porté un regard rétrospectif sur 15 années de données acquises dans les réseaux portés par Ifremer afin de définir un niveau de mortalité « anormale » et d’explorer de potentiels liens avec les fluctuations environnementales. Nous avons pu observer que (1) les épisodes de mortalités de 2014 et 2015 peuvent être qualifiés d’exceptionnels, (2) ils sont survenus dans des conditions climatiques plutôt chaudes et pluvieuses associées à des indices de diversité phytoplanctoniques bas (nombre de taxons et équilibre quantitatif entre ces taxons). 3. Dans quelles conditions les mortalités de moules sont-elles survenues en 2015 ? Nous présentons ici dispositif mis en place sur nos 4 sites ateliers (Filière, Boyard, Eperon et Loix) et l’ensemble des échantillons et mesures collectées (environnement abiotique ou biotique, ou connectivité hydrodynamique des masses d’eaux). Cette action de recherche a nécessité 16 campagnes et aboutit à la bancarisation de 805 échantillons, certains prévelés au cours des mortalités observées sur les animaux déployés. Les mortalités observées en 2015 sont survenues dans un contexte environnemental abiotique différent de celui observé en 2014 (absence de dessalure comparable à celles observées en 2014, différence dans la contribution relative des fleuves aux masses d’eau). Néanmoins, les conditions hydrodynamiques et la connectivité entre les sites du Pertuis Breton et les côtes vendéennes sont quant à elle comparables entre ces 2 années. 4. Quelle(s) ont été la(les) espèce(s) ou population(s) de moules affectée(s) ? Différentes espèces et populations étant présentes sur les côtes française, nous avons cherché à préciser les ascendances génétiques sur des animaux moribonds et vivants prélevés (MORBLEU et mortalité déclarées MYTILOBS-2). Pour 99% d’entre eux, les animaux analysés ont pu être affiliés au fond génétique M. edulis européen du Golf de Gascogne. Toutefois la présence d’ascendance trossulus sur certains individus est à considérer. Avec les marqueurs utilisés, aucune différence génétique entre les animaux moribonds et survivants n’a pas être observée, les mortalités touchant certains hybrides edulis/galloprovincialis en proportion identique à celle de M. edulis. 5. Quelle était la qualité cytogénétique des animaux en 2015 ? Pourrait-il exister un lien avec les mortalités observées ? Nous avons échantillonné des animaux prélevés sur 7 sites mytilicoles avant et après la mortalité de l’année 2015. Les analyses de la qualité cytogénétique de ces animaux est toujours en cours. 6. Ces animaux étaient-ils dans des conditions physiologiques particulières ? des échantillons de moules vivantes, collectés avant, après et au cours des mortalités, sur des sites impactés et peu/pas impactés ont été analysés par une approche transcriptomique à haut débit (RNA-seq). L’échantillonnage 2015 ayant été tardif dans l’année (prélèvements jusqu’en juillet 2015), la réalisation de l’approche transcriptomique a été retardée. Le traitement des données de séquençage est encore en cours d’analyse. Ainsi cette année nous a permis (1) de confronter les données environnementales à 15 années de mesures, (2) de mettre en place un dispositif et d’échantillonner au cours d’un épisode de mortalité, (3) de préciser le fond génétique des animaux affectés. Cependant les prélèvements ayant été tardifs, de nombreuses analyses sont encore en cours de traitement.

The Water Framework Directive (WFD) establishes Environmental Quality Standards (EQS) in marine water for 34 priority substances. Among these substances, 25 are hydrophobic and bioaccumulable (2 metals and 23 organic compounds). For these 25 substances, monitoring in water matrix is not appropriate and an alternative matrix should be developed. Bivalve mollusks, particularly mussels (Mytilus edulis, Mytilus galloprovincialis), are used by Ifremer as a quantitative biological indicator since 1979 in France, to assess the marine water quality. This study has been carried out in order to determine thresholds in mussels at least as protective as EQS in marine water laid down by the WFD. Three steps are defined: - Provide an overview of knowledges about the relations between the concentrations of contaminants in the marine water and mussels through bioaccumulation factor (BAF) and bioconcentration factor (BCF). This allows to examine how a BCF or a BAF can be determined: BCF can be determined experimentally (according to US EPA or ASTM standards), or by Quantitative Activity-Structure Relationship models (QSAR): four equations can be used for mussels. BAF can be determined by field experiment; but none standards exists. It could be determined by using QSAR but this method is considered as invalid for mussels, or by using existing model: Dynamic Budget Model, but this is complex to use. - Collect concentrations data in marine water (Cwater) in bibliography for those 25 substances; and compare them with concentration in mussels (Cmussels) obtained through French monitoring network of chemicals contaminants (ROCCH) and biological integrator network RINBIO. According to available data, this leads to determine the BAF or the BCF (Cmussels /Cwater) with field data. - Compare BAF and BCF values (when available) obtained with various methods for these substances: BCF (stemming from the bibliography, using experimental process), BCF calculated by QSAR and BAF determined using field data. This study points out that experimental BCF data are available for 3 substances (Chlorpyrifos, HCH, Pentachlorobenzene). BCF by QSAR can be calculated for 20 substances. The use of field data allows to evaluate 4 BAF for organic compounds and 2 BAF for metals. Using these BAF or BCF value, thresholds in shellfish can be determined as an alternative to EQS in marine water.

The unusual development of branches along the stem of Euterpe edulis is described for the first time. Branches originated at 2 to 190 cm from the ground. Ramified individuals and branches were able to produce reproductive structures and some branches produced roots. A plausible cause for the observed anomaly could be genetic problems due to small population sizes. The better agreement of this process can have a positive effect in the harvest of the heart of palm through the artificial induction of sprouts, what would prevent the death of the individual.

Yellow passion fruit pulp is unstable, presenting phase separation that can be avoided by the addition of hydrocolloids. For this purpose, xanthan and guar gum [0.3, 0.7 and 1.0% (w/w)] were added to yellow passion fruit pulp and the changes in the dynamic and steady - shear rheological behavior evaluated. Xanthan dispersions showed a more pronounced pseudoplasticity and the presence of yield stress, which was not observed in the guar gum dispersions. Cross model fitting to flow curves showed that the xanthan suspensions also had higher zero shear viscosity than the guar suspensions, and, for both gums, an increase in temperature led to lower values for this parameter. The gums showed different behavior as a function of temperature in the range of 5 - 35ºC. The activation energy of the apparent viscosity was dependent on the shear rate and gum concentration for guar, whereas for xanthan these values only varied with the concentration. The mechanical spectra were well described by the generalized Maxwell model and the xanthan dispersions showed a more elastic character than the guar dispersions, with higher values for the relaxation time. Xanthan was characterized as a weak gel, while guar presented a concentrated solution behavior. The simultaneous evaluation of temperature and concentration showed a stronger influence of the polysaccharide concentration on the apparent viscosity and the G' and G" moduli than the variation in temperature.

A comparative study between microsatellite and allozyme markers was conducted on the genetic structure and mating system in natural populations of Euterpe edulis Mart. Three cohorts, including seedlings, saplings, and adults, were examined in 4 populations using 10 allozyme loci and 10 microsatellite loci. As expected, microsatellite markers had a much higher degree of polymorphism than allozymes, but estimates of multilocus outcrossing rate ((t) over cap (m) = 1.00), as well as estimates of genetic structure (F(IS), G(ST)), were similar for the 2 sets of markers. Estimates of R(ST), for microsatellites, were higher than those of GST, but results of both statistics revealed a close agreement for the genetic structure of the species. This study provides support for the important conclusion that allozymes are still useful and reliable markers to estimate population genetic parameters. Effects of sample size on estimates from hypervariable loci are also discussed in this paper.

Samples of fruit from the jussara palm plant (Euterpe edulis), collected in different regions of the state of Santa Catarina. Brazil, were analyzed for chemical composition. phenolic acids. anthocyanins, flavonoids and fatty acids profile. Results indicated that the jussara fruit has a high lipid content (18.45-44.08%), oleic acid (44.17-55.61%) and linoleic acid (18.19-25.36%) are the fatty acids found in the highest proportion, and other components were proteins (5.13-8.21%). ash (1.55-3.32%) and moisture (34.95-42.47%). Significant differences were found in the total phenolic, total monomeric anthocyanins and other flavonoids for the samples from the five cultivation regions. The fruit from region E harvested in summer, with high temperatures and medium altitudes, had the highest contents of total phenolics (2610.86 +/- 3.89 mg 100 g(-1) GAE) and monomeric anthocyanins (1080.54 +/- 2.33 mg 100g(-1) cy-3-glu). The phenolic compound included ferulic, gallic, hydroxybenzoic and p-coumaric acids, as well as catechin, epicatechin and quercetin. The results show promising perspectives for the exploitation of this tropical fruit with a chemical composition comprising considerable phenolic acids and flavonoids compounds and showing activity antioxidant. Plinia edulis, an arboreous species popularly known as ""cambuca"", is native to the Brazilian Atlantic Rain Forest. Despite its traditional uses, no reports are available on the safety of this utilization or on the relationship between the antiulcer activity of its extract and its phytochemical compounds. This paper reports on the investigation of the acute toxicity and gastroprotective effect of the aqueous ethanol extract of leaves of Plinia edulis on HCl/ethanol-induced ulcers. In order to correlate the secondary metabolites and the efficacy of the crude drug in traditional medicine, the extract was submitted to chromatographic fractionation after solvent partition. The extract did not show acute toxicity in mice treated with 5 g/kg p.o.. but exhibited significant antiulcer activity in rats at doses of 100, 200, and 400 mg/kg p.o., more active than the reference drug lansoprazole. The ethyl acetate fraction yielded P-amyrin, oleanolic acid, ursolic acid, and maslinic acid, which were identified based on spectrometric analyses. Since antiulcerogenic activity is not restricted to one class of compounds in plants, the triterpenoids isolated in the extract can be associated with the observed effect. O excesso de gordura corporal induz a um quadro inflamatório associado à endotoxemia metabólica e aumento da resistência à insulina, bem como altera o perfil lipídico que resulta em prejuízos a função hepática e renal. Estudos sugerem que a ingestão de alimentos antioxidantes, como os polifenóis, proporcionam efeitos benéficos sobre os metabolismos glicídico e lipídico. O objetivo deste estudo foi investigar o efeito da casca de jabuticaba (Myrciaria cauliflora), da polpa do açaí juçara (Euterpe edulis Martius) e do jambolão (Syzygium cumini) sobre o perfil lipídico, a glicemia e a endotoxemia em camundongos Swiss submetidos à dieta de cafeteria. Inicialmente, os frutos foram liofilizados e submetidos à avaliação da composição centesimal. O ensaio biológico contou com 50 camundongos machos adultos da raça Swiss distribuídos em 5 grupos (n=10/grupo), a saber: grupo tratado com dieta comercial padrão (controle negativo), grupo tratado com dieta de cafeteria (controle positivo) e grupos teste que receberam por 14 semanas a dieta de cafeteria suplementada com 2% de casca de jabuticaba, ou polpa do jambolão ou polpa do açaí juçara liofilizados. Na 13ª e 14ª semana foram determinadas a tolerância à insulina e à glicose dos animais. Ao final do período experimental, avaliaram-se o ganho de peso, os parâmetros bioquímicos sanguíneos, histopatológicos e endotoxemia. Os parâmetros bioquímicos avaliados foram: colesterol total (CT) e as frações HDL-c, LDL-c, triacilgliceróis (TAG), bem como proteína C reativa (PCR), aspartato aminotransferase (AST) e alanina aminotransferase (ALT). Na histopatologia foram avaliados os efeitos da dieta hipercalórica sobre a área dos adipócitos, esteatose hepática e função renal a partir do número e área dos glomérulos. A endotoxemia foi avaliada pela concentração de lipopolissacarídeos (LPS) no soro dos animais. Aplicou-se o teste t para comparação dos resultados entre os grupos controle e ANOVA, complementada com teste de Tukey (α=5%), para comparação dos grupos suplementados com os frutos e o controle positivo. A suplementação com 2% de jambolão à dieta de cafeteria resultou em redução significativa (p<0,05) do conteúdo de CT, LDL-c, TAG, da razão CT/HDL, bem como diminuição da área dos adipócitos dos animais tratados com os frutos. A suplementação com açaí juçara também foi capaz de reduzir o conteúdo de CT, TAG e a área dos adipócitos, além de elevar a tolerância à glicose. Por outro lado, a jabuticaba não foi eficaz na melhoria dos parâmetros relacionados ao metabolismo lipídico, ao metabolismo da glicose e dos aspectos histopatológicos. A suplementação com 2% dos frutos liofilizados não promoveu efeitos positivos na redução do ganho de peso, resistência à insulina e endotoxemia provocada pela ingestão da dieta de cafeteria. Além disso, os frutos também não foram eficientes na preservação da histologia renal e infiltração lipídica no fígado. Conclui-se que a inclusão do jambolão e do açaí juçara na dieta pode apresentar efeitos positivos sobre danos causados por dietas hiperlipídicas, especialmente no que se refere à dislipidemia, à tolerância à glicose e à hipertrofia dos adipócitos.

Os iogurtes simbióticos, que combinam microrganismos probióticos e substâncias prebióticas, adicionados de polpa de frutas são uma tendência crescente no mercado. O fruto açaí (Euterpe edulis) se destaca pela presença de compostos bioativos, como as antocianinas. Neste contexto, o presente trabalho teve como objetivo caracterizar e avaliar os parâmetros físico-químicos e a viabilidade microbiológica de iogurte simbiótico de açaí enriquecido com inulina e adicionado de cultura probiótica de Bifidobacterium animallis subsp. lactis BB-12. As formulações de iogurte atenderam aos requisitos físico-químicos exigidos pela IN no 46/2007 do MAPA apresentando teor de cinzas de 0,86 % ± 0,10, extrato seco total de 23,18 % ± 2,59, teor de gordura de 4,16 % ± 0,31, acidez de 0,70 % ± 0,05 e pH de 4,45 ± 0,10. Entre as formulações o conteúdo fenólico total variou de 18,17 a 117,84 mg de AGE/100 g, teor de antocianinas de 1,92 a 47,88 mg/100 g e atividade antioxidante de 0,71 a 6,95 μmol Trolox/g, observando-se um aumento de acordo com o aumento do teor de polpa de açaí adicionada. Ao final de 28 dias de armazenamento a 5 °C, observou-se uma redução no teor de antocianinas e da atividade antioxidante. Verificou-se a contribuição positiva da polpa de açaí na viabilidade das bactérias láticas totais, cujas contagens variaram de 4,56 a 7,04 log UFC.g-1 e de B. lactis BB-12 que variou de 3,17 a 6,34 log UFC.g-1, favorecendo a multiplicação dessas bactérias nos iogurtes. Nas formulações com 20 e 25 % de polpa de açaí as contagens das bactérias láticas totais e probiótica mantiveram-se viáveis de acordo com a IN no 46/2007 do MAPA e a Lista de Alegação de Propriedade Funcional (Anvisa), durante os 28 dias de armazenamento a 5 oC. Concluiu-se que a adição de polpa de açaí E. edulis, inulina e B. lactis BB-12 foi tecnologicamente viável na elaboração de iogurte simbiótico de açaí, sendo uma excelente alternativa de diversificação do produto no mercado.
