Foi realizado levantamento das espécies de fungos poliporóides que ocorrem no perímetro urbano do município de São José do Rio Preto (20º49'12" S, 49º22'44" W), Estado de São Paulo, Brasil. Foram identificadas 18 espécies pertencentes a 11 gêneros de Agaricales (Schizophyllaceae), Hymenochaetales (Hymenochaetaceae) e Polyporales (Ganodermataceae, Gloeophyllaceae, Meruliaceae e Polyporaceae): Coriolopsis floccosa (Jungh.) Ryvarden, C. polyzona (Pers.) Ryvarden, Datronia caperata (Berk.) Ryvarden, D. mollis (Somf.:Fr.) Donk., Ganoderma australe (Fr.) Pat., Gloeophyllum striatum (Sw.) Murrill, Gloeoporus thelephoroides (Hook.) G. Cunn., Hexagonia hirta (P. Beauv.) Fr., H. hydnoides (Sw.) M. Fidalgo, H. papyracea Berk., Polyporus tenuiculus (P. Beauv.) Fr., Phellinus callimorphus (Lév.) Ryvarden, P. gilvus (Schwein.) Pat., P. umbrinellus (Bres.) Herrera & Bondartseva, Pycnoporus sanguineus (L.) Murrill, Schizophyllum commune Fr., S. umbrinum Berk. e Trametes modesta (Kunze:Fr.) Ryvarden. Datronia mollis é nova citação para o Estado de São Paulo. Leaves and fruits from 63 Stryphnodendron adstringens trees were sampled in the Rio Preto State Park to analyze allozyme segregation, tissue specific expression of allozyme loci, and their genetic parameters. The enzyme systems ADH, EST, ACP, PGM, PGI, GDH, G6PDH, GOT, IDH, LAP, MDH, PER and SKDH were assessed by means of starch-gel electrophoresis. The polymorphic systems PGI, IDH, MDH and GOT demonstrated a dimeric quaternary structure, while EST and PER were monomeric. The total expected genetic diversity (H E) for leaves and seeds were 0.325 and 0.244 respectively. The effective number of alleles per locus (A E) was 1.58 in leaves and 1.42 in seeds. The values of H E and A E observed in S. adstringens were comparatively higher than the average values seen in allozyme studies of other woody plants. The values of the fixation indices for the population, considering leaves (f = 0.070) and seeds (f = 0.107), were not significant. The high values of genetic diversity and of effective number of alleles per locus, as well as the non-significant fixation index and the adjustments of the Hardy-Weinberg proportions between generations for the pgi-1, mdh-2 and idh-1 loci, indicated random mating in this population. The enzyme systems EST and PER demonstrated their best resolution in leaf tissues, while the MDH, IDH, PGI and GOT systems demonstrated their best resolution in seed tissues.

The increase in non-communicable chronic diseases of adults is due to demographic changes and changes in the risk factors related to physical activity, smoking habits and nutrition. We describe the methodology for the evaluation of persons at 23/25 years of age of a cohort of individuals born in Ribeirão Preto in 1978/79. We present their socioeconomic characteristics and the profile of some risk factors for chronic diseases. A total of 2063 participants were evaluated by means of blood collection, standardized questionnaires, anthropometric and blood pressure measurements, and methacholine bronchoprovocation tests. The sexes were compared by the chi-square test, with alpha = 0.05. Obesity was similar among men and women (12.8 and 11.1%); overweight was almost double in men (30.3 vs 17.7%). Weight deficit was higher among women than among men (8.6 and 2.6%). Women were more sedentary and consumed less alcohol and tobacco. Dietary fat consumption was similar between sexes, with 63% consuming large amounts (30 to 39.9 g/day). Metabolic syndrome was twice more frequent among men than women (10.7 vs 4.8%), hypertension was six times more frequent (40.9 vs 6.4%); altered triglyceride (16.1 vs 9.8%) and LDL proportions (5.4 vs 2.7%) were also higher in men, while women had a higher percentage of low HDL (44.7 vs 39.5%). Asthma and bronchial hyper-responsiveness were 1.7 and 1.5 times more frequent, respectively, among women. The high prevalence of some risk factors for chronic diseases among young adults supports the need for investments in their prevention.

We describe three birth cohort studies, respectively carried out in 1978/79 and 1994 in Ribeirão Preto, a city located in the most developed region of Brazil, and in 1997/98 in São Luís, a city located in a less developed region. The objective of the present report was to describe the methods used in these three studies, presenting their history, methodological design, objectives, developments, and difficulties faced along 28 years of research. The first Ribeirão Preto study, initially perinatal, later encompassed questions regarding the repercussions of intrauterine development on future growth and chronic adult diseases. The subjects were evaluated at birth (N = 6827), at school age (N = 2861), at the time of recruitment for military service (N = 2048), and at 23/25 years of age (N = 2063). The study of the second cohort, which started in 1994 (N = 2846), permitted comparison of aspects of perinatal health between the two groups in the same region, such as birth weight, mortality and health care use. In 1997/98, a new birth cohort study was started in São Luís (N = 2443), capital of the State of Maranhão. The 1994 Ribeirão Preto cohort and the São Luís cohort are in the second phase of joint follow-up. These studies permit comparative temporal analyses in the same place (Ribeirão Preto 1978/79 and 1994) and comparisons of two contrasting populations regarding cultural, economic and sociodemographic conditions (Ribeirão Preto and São Luís).

There is evidence showing a close relationship between diet and the occurrence of non-communicable chronic diseases. The present study assessed food consumption in a 2002/2004 cohort of young adults born in 1978/79 in Ribeirão Preto, SP, Brazil. The composition of the habitual diet consumed by a sample of 2063 individuals aged 23-25 years was analyzed using a validated semi-quantitative food frequency questionnaire based on studies of prevention of non-communicable chronic diseases. The Dietsys software was used for dietary calculations. In terms of WHO/2003 recommendations, there was a high mean daily consumption of energy from fat (consumption: 35.4%; recommendation: 15-30%), a low mean intake of energy from carbohydrates (47.5%; 55-75%) and a low mean consumption of total fibers (15.2 g; >25 g). Mean intake of energy from fatty acids (10%; <10%) and protein (15.6%; 10-15%) was within recommended limits. When compared to the recommendations of the food pyramid adapted to the Brazilian population, adequate intake was observed only regarding the meat group (consumption: 1.9 portions; recommended: 1-2). There was a low consumption of vegetables (2.9; 4-5), fruits (1.2; 3-5), breads (3.6; 6-9), and dairy products (1.7; 3), with excessive fat and sugar intake (5.7; 1-2). We conclude that the inadequate food consumption observed in this young population may be associated with the development of excess weight and may contribute to the triggering of non-communicable chronic diseases.

The influence of apolipoprotein E alleles and genotypes on plasma lipid levels was determined in 185 individuals of mixed ethnicity living in Ouro Preto, Brazil. DNA was obtained from blood samples and the genotypes were determined by an RFLP-PCR procedure. The *3 allele was the most frequent (72%), followed by *4 (20%) and *2 (8%); *4 frequency was higher and *2 frequency was lower in the dyslipidemic group than in the normal control group. The *2 carriers presented lower LDL and total cholesterol levels compared to the *3 and *4 carriers. All six expected genotypes were observed in the individuals genotyped: E2/2 (2.1%), E4/4 (2.7%), E2/4 (3.7%), E2/3 (8.0%), E3/3 (53.3%), E3/4 (29.9%); no difference in genotype frequencies was found between the normal and dyslipidemic groups. Compared with *2, the presence of *3 increases more than two times the risk for dyslipidemia (OR = 2.31; P = 0.025; 95% CI = 1.06-5.06) and the presence of *4 increases it three times (OR = 3.31; P = 0.006; 95% CI = 1.36-8.04). The only significant effect of genotype was an increased risk for dyslipidemia in the *4 genotype carriers (E3/4 + E4/4) compared with the *2 genotype carriers (E2/2 + E2/3) with OR = 3.69 (95% CI = 1.25-10.88). The present study indicates that in the Ouro Preto admixed population the presence of APOE *2 can confer a protective effect, whereas the presence of APOE *4 implies an enhanced risk for dyslipidemia.

More than any other low- and middle-income country, Brazil has the longest research tradition of establishing, maintaining and exploiting birth cohort studies. This research pedigree is highlighted in the present issue of the Brazilian Journal of Medical and Biological Research, which contains a series of twelve papers from the Ribeirão Preto and São Luis birth cohort studies from the Southeast and Northeast of Brazil, respectively. The topics covered in this raft of reports vary and include predictors of perinatal health and maternal risk factors, early life determinants of cardiovascular risk factors in childhood and adolescence, use of health services, and a description of dietary characteristics of young adults, amongst other topics. There is also a guide to the background, objectives, sampling and protocols employed across these studies, which, together with similar pieces published in past issues of the Brazilian Journal, serve as a very useful starting point, particularly for potential collaborators. In the fervent hope that further follow-up of these cohorts will take place - we provide our own justification for cohort maintenance and extension in this issue - future data collection could include: genetic material, atherosclerosis, ascertained, for instance, by intima-media thickness, and IQ testing in children - scores from which are emerging as potentially important predictors of adult health outcomes up to six decades later.

An analysis of scientific bibliographic productivity using the Hirsch h-index, information from the Institute of Scientific Information database and the Curriculum Lattes (CNPq, Brazil) was performed at the Faculdade de Filosofia, Ciências e Letras de Ribeirão Preto, Universidade de São Paulo (FFCLRP-USP) that has four departments in natural, biological and social sciences. Bibliometric evaluations of undergraduate programs showed a better performance of the departments of Chemistry (P < 0.001) and Biology (P < 0.001) when compared to the departments of Physics and Mathematics and Psychology and Education. We also analyzed the scientific output of the six graduate programs of FFCLRP: Psychology, Psychobiology, Chemistry, Physics Applied to Medicine and Biology, Comparative Biology, and Entomology. The graduate program in Psychology presented a lower h-index (P < 0.001) and had fewer papers indexed by the ISI web of science (P < 0.001) when compared to the other graduate programs. The poorer performance of the Psychology program may be associated with the limited coverage by the Thompson Institute of Scientific Information database.

The availability of HIV-1 genotype resistance testing (GRT) to clinicians has been insufficiently studied outside randomized clinical trials. The present study evaluated the outcome of salvage antiretroviral therapy (ART) recommended by an expert physician based on GRT in a non-clinical trial setting in Ribeirão Preto, Brazil. A prospective, open, nonrandomized study evaluating easy access to GRT at six Brazilian AIDS Clinics was carried out. This cooperative study analyzed the efficacy of treatment recommended to patients whose salvage ART was guided by GRT with that of treatment with ART based only on previous ART history. A total of 112 patients with ART failure were included in the study, and 77 of them were submitted to GRT. The median CD4 cell count and viral load for these 77 patients at baseline were (mean ± SD) 252.1 ± 157.4 cells/µL and 4.60 ± 0.5 log10 HIV RNA copies/mL, respectively. The access time, i.e., the time elapsed between ordering the GRT and receiving the result was, on average, 71.9 ± 37.3 days. The study results demonstrated that access to GRT followed by expert recommendations did not improve the time to persistent treatment failure when compared to conventional salvage ART. Access to GRT in this Brazilian community health care setting did not improve the long-term virologic outcomes of HIV-infected patients experiencing treatment failure. This result is probably related to the long time required to implement ART guided by GRT.

A secagem de feijão preto (Phaseolus vulgaris, L.) em leito de jorro bidimensional foi estudada num equipamento em escala piloto de 100cm de altura total, 10cm de largura e 40cm de comprimento. Um soprador centrífugo de 7cv foi utilizado para fornecer o ar responsável pela formação do jorro ao sistema e nenhum aquecimento adicional foi realizado, ficando a temperatura de operação em torno de 50ºC. Foi feito um estudo sobre a influência do tempo de secagem, da vazão de ar injetado no sistema e da carga de grãos em cada batelada sobre o tempo de cozimento, a capacidade de absorção, a densidade e o diâmetro da partícula. A taxa de secagem também foi estudada. Observou-se que em 6 horas a redução de umidade do grão é cerca de 60% e as condições operacionais estudadas não afetaram significativamente as propriedades físicas e tecnológicas do feijão.

Mesmo o Brasil sendo o maior produtor de feijão, é necessário importar para suprir a grande demanda interna, que é agravada pelas grandes perdas por infestações durante o armazenamento. Para combater estas perdas o processo de irradiação dos feijões é uma alternativa. Foram avaliadas as alterações que ocorreram em grãos de feijão preto crus e cozidos irradiados nas doses de 0, 2, 4, 6, 8 e 10kGy e avaliadas a quantidade de ferro, taninos e ácido fítico, a digestibilidade da proteína e a disponibilidade de ferro. Para o teor de ferro em grãos cozidos não houve variação (média de 118,17mg/Kg). Os teores encontrados de taninos para o cru não variaram com a intensidade radioativa, não sendo possível detecção nos cozidos. Quanto ao teor de ácido fítico, ocorreu diminuição da quantidade com aumento da irradiação nos grãos crus até dose 8kGy. A digestibilidade da proteína diminuiu nos feijões crus com o aumento da irradiação. Ocorreu crescente aumento na disponibilidade de ferro nos feijões crus irradiados (exceto na dose 8kGy), que não varia das doses 4 e 6kGy. Os resultados encontrados neste trabalho mostram que o processo de irradiação não compromete o valor nutricional do feijão preto.

Feijão armazenado por período longo em temperatura e umidade relativa elevadas torna-se endurecido e resistente ao cozimento devido ao desenvolvimento do defeito "difícil de cozinhar". Este trabalho teve como objetivo avaliar algumas propriedades físicas e químicas de feijão comum preto (Phaseolus vulgaris L.) cultivar Iapar 44, envelhecido. O envelhecimento do feijão foi acelerado a 41ºC e 75% de UR, por 30 e 60 dias, e feijão novo mantido a 5ºC e 60% de UR foi considerado controle. Foram avaliados o tempo de cozimento, por meio do equipamento de Mattson adaptado; a composição química e o pH dos grãos; a solubilidade em água e o perfil eletroforético das proteínas. Os resultados foram submetidos à análise de variância e teste de comparação de médias de Tukey (p<0,05). Verificou-se que o armazenamento, nos dois tempos, causou: aumento no tempo de cozimento dos grãos; diminuição do teor de umidade, aumento do teor de cinzas e manutenção dos teores de proteínas, lipídeos e carboidratos; diminuição do pH e diminuição da solubilidade e a mudança do perfil eletroforético das proteínas. Estes resultados estão de acordo com dados da literatura, que demonstram que durante o armazenamento de feijão em alta temperatura e umidade relativa há formação de ácidos, conduzindo à diminuição da solubilidade e estabilidade térmica das proteínas.

O objetivo dessa pesquisa foi o de avaliar os aspectos sensoriais do feijão preto submetido à radiação gama do 60Co. O estudo envolveu oito provadores, na faixa etária de 17 a 23 anos, selecionados e treinados para Análise Descritiva Quantitativa. Os provadores verificaram alterações quanto à aparência, aroma, sabor e textura em feijão preto irradiado com doses 2, 4, 6, 8 e 10kGy e feijão preto não irradiado. Para a análise estatística dos resultados obtidos foram aplicados, o teste F, ANOVA e o teste de Tukey (5%) com o uso de computadores e do programa específico para análise sensorial Compusense Five e SAS. As amostras irradiadas apresentaram diminuição do sabor amargo, cor acentuada e brilhante e a não irradiada textura seca. Deste modo, a irradiação como método de conservação pode ser utilizada para o feijão preto com as doses avaliadas no presente estudo.

Feijões endurecidos devido a condições impróprias de armazenamento têm sua qualidade e aceitabilidade afetadas. Para que sejam utilizados como produtos comestíveis, é necessário o estudo de processos tecnológicos que possibilitem seu aproveitamento. Portanto, este trabalho teve como objetivo caracterizar concentrados proteicos obtidos de feijão comum preto (Phaseolus vulgaris L.), cultivar Iapar 44, novo e envelhecido, bem como avaliar suas propriedades funcionais e sua utilização como ingrediente alimentar. O envelhecimento do feijão foi acelerado a 41 °C e 75% UR, por 30 e 60 dias, o feijão novo armazenado a 5 °C foi utilizado como controle. Concentrados proteicos foram obtidos por extração alcalina com NaOH 0,02% e posterior precipitação isoelétrica com HCl concentrado. Avaliaram-se o rendimento, composição química, perfil eletroforético das proteínas e propriedades funcionais de: solubilidade, absorção de água, formação de gel, absorção de óleo, capacidade e atividade emulsificante, estabilidade da emulsão, formação e estabilidade da espuma dos concentrados. O rendimento dos concentrados foi de 15% e estes apresentaram 75% de proteínas com perfil eletroforético e solubilidade proteica em água que variaram com o tempo de armazenamento. A solubilidade foi menor nos pHs 4 e 5. A absorção de água e a capacidade de formação de gel aumentaram com o armazenamento do feijão. A atividade emulsificante e estabilidade da emulsão foram prejudicadas pelo armazenamento de 60 dias. As demais propriedades não foram alteradas pelo armazenamento. Os resultados indicam possibilidades de uso do concentrado proteico de feijão armazenado como ingrediente alimentar.
