Um total de 110 amostras de Salmonella Panama, incluindo 84 amostras ambientais, 16 amostras humanas, 5 amostras de alimentos e 5 amostras de animal silvestre provenientes de municípios no Estado do Pará, Brasil, foi submetido ao teste de sensibilidade a agentes antimicrobianos e à tipagem genotípica por PFGE. Todas as amostras analisadas apresentaram multirresistência a, pelo menos, 5 antibióticos. O modelo de resistência mais freqüente abrangeu 85 (77,3%) das amostras de S. Panama e foi representado pelos antibióticos cefalotina, cefazolina, cefuroxima, cefoxitina, gentamicina e tobramicina. A tipagem PFGE de 89 isolados de S. Panama resultou em 54 perfis genotípicos diferentes, dentre os quais foi observada a ocorrência de 16 clones. O dendograma revelou a existência de 2 grupos PFGE, designados grupo A e grupo B, definidos com uma similaridade genética de 83,34% e 83,87%, respectivamente. O maior clone e mais prevalente com 8 isolados de S. Panama foi oriundo de ambientes aquáticos dos municípios de Belém e Barcarena. Um segundo clone com 5 isolados foi proveniente de diferentes igarapés da Floresta Nacional de Caxiuanã. Ambos os clones demonstraram persistir no ambiente aquático por pelo menos 2 anos. Os 5 clones de Salmonella Panama encontrados em ambientes aquáticos da Floresta Nacional de Caxiuanã, que se caracteriza por apresentar ação antrópica mínina, não foram detectados em municípios mais impactados pela ação do homem como Belém e Barcarena, sugerindo adaptação dos mesmos em relação não só aos respectivos ambientes mas, principalmente, à reservatórios diferentes.

Salmonella food poisoning is a public health problem. Feed withdrawal from broiler chickens before slaughter can favor the multiplication of Salmonella in the cecum and crop of contaminated animals and subsequently lead to contamination of carcasses in the processing plant. In the present study, a cocktail of lytic bacteriophages isolated from sewage water was orally administered to 45-d-old broiler chickens 1 h after they received an oral dose of 107 cfu/mL Salmonella enterica subspecies enterica serotype Enteritidis. Immediately after phage administration and 30 min, 1, 3, 6, and 12 h thereafter, groups of chicken were killed. Ceca and crops were analyzed for the presence of Salmonella. At 3 h posttreatment, there were 103 cfu/g and 101 cfu/g of cecal and crop suspension, respectively. At 6 h after treatment, the number of Salmonella was 103 cfu/g in the cecal suspension, but below the detection limit in the crops. our results suggest that bacteriophage therapy may be able to reduce the contamination of chicken carcasses by reducing the preslaughter load of Salmonella in the birds.

The food dye tartrazine (CI 19140) was exposed to UV irradiation from an artificial source, a mercury vapor lamp, and a natural one, sunlight. It was observed that conditions such as energy dose, irradiation time, pH and initial dye concentration affected its discoloration. There was 100% of color removal, after 30 min of irradiation, when a dye solution 1 x 10(-5) mol L-1 was submitted to an energy dose of 37.8 J cm(-2). Liquid Chromatography coupled to Diode Array Detection and Mass Spectrometry confirmed the cleavage of the chromophore group and the formation of five by-products at low concentration. Although by-products were formed, the Salmonella/microsome mutagenicity assay performed for both, the dye solution at a dose of 5.34 mg/plate and the solutions obtained after exposure to UV irradiation, did not present mutagenic activity for TA98 and TA100 with and without S9. The eggs are pointed in several studies as the main cause of human salmonellosis. Have been identified that eggs are eaten raw or poorly processed are mainly responsible for outbreaks of human infection with Salmonella spp. Besides causing problems to public health, the presence of bacteria impedes or hinders the international food trade, as a sanitary barrier. Several factors predisposing to contamination of the internal contents of eggs for Salmonella spp., including the egg shell quality (shell quality), which is related to levels of calcium (Ca) and phosphorus (P) in the diet of quails . The experiment used eggs of Japanese quail under different diets containing two levels of Ca (2.0 and 3.5%) and two levels of available P (0.25 and 0.45%). Eggs of 120 japanese quails were divided into four treatments with three replicates. The experiment was divided into three production stages: initial, intermediate and final. Were assessed at each stage the presence of bacteria in internal and external content of experimentally contaminated eggs during periods of 0, 24, 96 and 168 hours after immersion in broth containing Salmonella Enteriditis. Salmonella Enteriditis was detected in the shell during all periods of storage, in decreasing amounts in all treatments. None of the treatments within the three production stages analyzed, we detected significant amounts of the bacteria inside the egg, in our experimental conditions. Therefore, the levels of Ca and P in the diets of quail do not determine higher or lower risks to public health represented by eggs
