Este estudo teve por objetivo investigar a relação trabalho / saúde em trabalhadores de cozinhas industriais, focalizando o aspecto socioeconômico e outras dimensões da vida social (estresse no trabalho e eventos de vida produtores de estresse), incluindo-se morbidade (obesidade, doenças crônicas e transtornos mentais comuns), condição laboral (incômodos ambientais e acidentes de trabalho) e comportamentos relacionados à saúde (consumo alimentar, tabagismo e álcool). Utilizando dados coletados nos nove Restaurantes Populares do Estado do Rio de Janeiro, apresentam-se três artigos. O primeiro descreve a população de estudo, considerando três grupos ocupacionais: Administrativos, Cozinheiros e Copeiros, e os Auxiliares de Serviços Gerais. O segundo artigo investiga a associação entre as características psicossociais e o impedimento laboral por motivos de saúde, considerando uma análise hierarquizada e, finalmente, o terceiro artigo discute a certificação da reprodutibilidade, na população de estudo, do questionário sueco da versão para o português do Demand-Control Questionnaire (DCQ), utilizado para avaliar estresse no ambiente de trabalho. Os homens representaram 62,7% do total de trabalhadores. A idade média dos funcionários foi de 35,1 anos, (DP=10,3). A renda familiar líquida foi de até dois salários mínimos para 60% dos trabalhadores. Obteve-se para o tempo de trabalho em cozinhas, uma média de 59,8 meses, tendo variado de um mínimo de 2 meses e máximo de 30 anos. A prevalência de doenças que tinham diagnóstico médico foi de 15,0% para Doença Osteomusculares Relacionadas ao Trabalho (DORT); 14,3% para Hipertensão Arterial Sistêmica; 12,7% para Gastrite; e, 2,1% para Diabete Mellitus tipo II. O acidente de trabalho corte foi relatado por 20,2% dos trabalhadores, seguido de contusão com 16,0%. A prevalência de acidentes de trabalho foi mais expressiva entre os ASG. A prevalência de impedimento laboral por motivos de saúde foi de 10,8%. Os modelos resultantes das análises multivariadas de associação entre impedimentos das atividades laborais e as variáveis que permaneceram no modelo final após o ajustes das variáveis indicaram que aqueles que referiram estado geral de saúde regular e ruim tiveram uma razão de prevalência de três para impedimento das atividades laborais comparados aos de muito bom e bom estado geral de saúde (RP: 3,59; IC:1,44-8,97). Os trabalhadores que exerciam suas atividades nos restaurante localizados na área 2 (Bangu, Central do Brasil, Maracanã e Niterói) apresentaram RP:2,38; IC:1,15-4,91) para ausências no trabalho quando comparados aos da área 1 (Barra Mansa, Campos, Itaboraí, Duque de Caxias e Nova Iguaçu). A confiabilidade da escala do DCQ, teste-reteste, produziu um Coeficiente de Correlação Intraclasse para as dimensões: demanda psicológica, controle do trabalho e apoio social no trabalho de 0,70, 0,68 e 0,80, respectivamente, sendo considerados bom. Este estudo reforça a importância dos aspectos psicossociais na ocorrência do impedimento por motivos de saúde e contribui para o conhecimento dessas relações. Sugere-se realizar estudos com desenho longitudinal, que permitam aprofundar o conhecimento sobre os determinantes psicossociais do trabalho e o absenteísmo.

INTRODUÇÃO: As chances de adoecer e de mortalidade são maiores, em crianças com estado nutricional (EN) inadequado nos primeiros meses de vida. Fatores de risco para o EN inadequado, incluem os aspectos psicossociais maternos, como a ansiedade, a depressão pós-parto (DPP), a ausência de suporte social. No entanto, são poucos os estudos sobre o papel destes fatores na determinação do EN infantil e seus resultados controversos. OBJETIVO: Investigar a relação entre depressão no pós-parto e o estado nutricional infantil inadequado no segundo mês de vida. MÉTODOS: Trata-se de um estudo seccional com 466 crianças aos dois meses de vida (média= 65 dias; DP=0,5) oriundas de unidades básicas de saúde do município do Rio de Janeiro, realizado entre junho de 2005 e dezembro de 2009. Para compor o desfecho, médias de peso-para-idade foram expressas em escores z e comparadas às informações da nova curva de referência WHO (2006) para menores de cinco anos. Foram classificadas como estado nutricional inadequado, crianças com escore z abaixo de -2, baixo peso-para-idade, e crianças com escore z acima de +2, excesso de peso-para- idade. Informações referentes à DPP foram obtidas por meio da aplicação da versão em português do instrumento EPDS (Edinburgh Postnatal Depression Scale). As análises das associações entre a DPP e os desfechos foram verificadas via modelos de regressão logística multinomial, mediante estimativas de razões de chances (OR) brutas e ajustadas e seus respectivos intervalos de confiança de 95% (IC 95). RESULTADOS: A amostra revelou escores z médios de -0,22 para peso-para-idade, 4,51%(n=21) apresentaram baixo peso-para- idade e 1,72% (n=8) de excesso de peso-para-idade. A prevalência de depressão foi de 27,6%. Nas análises brutas, filhos de mães deprimidas apresentavam 2,45 mais chance (OR=2,45; I.C. 95%=1,01-5,93;p-valor=0,050) de baixo peso-para-idade e 0,38 chance de excesso de peso-para-idade (OR=0,38;I.C. 95%=0,04-3,17;p-valor=0,38), do que os filhos de mães não deprimidas, porém esta associação apresentou nível de significância maior que 5%. Após ajuste pelo peso ao nascer, condições ambientais, posse de utensílios, prematuridade, idade materna e escolaridade materna a associação entre depressão e estado nutricional infantil não apresentou significância estatística (OR=2,39;I.C. 95%=0,74-7,71;p- valor>0,05).CONCLUSÃO: A DPP não foi associada ao estado nutricional infantil.

Crab traps have been used extensively in studies on the population dynamics of blue crabs to provide estimates of catch per unit of effort; however, these estimates have been determined without adequate consideration of escape rates. We examined the ability of the blue crab (Callinectes sapidus) to escape crab pots and the possibility that intraspecific crab interactions have an effect on catch rates. Approximately 85% of crabs that entered a pot escaped, and 83% of crabs escaped from the bait chamber (kitchen). Blue crabs exhibited few aggressive behavioral interactions in and around the crab pot and were documented to move freely in and out of the pot. Both the mean number and size of crabs caught were significantly smaller at deeper depths. Results from this study show that current estimates of catch per unit of effort may be biased given the high escape rate of blue crabs documented in this study. The results of this paper provide a mechanistic view of trap efficacy, and reveal crab behavior in and around commercial crab pots.

Instituição fundamental à monarquia lusitana, a Casa Real portuguesa abrangia, em seu espaço, centenas de criados, homens e mulheres das mais diversas origens. Com a transferência da Corte para o Rio de Janeiro, em 1808, o príncipe regente d. João reestruturou o seu universo doméstico, estabelecendo aqui, e à semelhança de Portugal, todos os departamentos imperativos à correta execução das tarefas cotidianas da sua Casa: cavalariça, cozinha, serviço de copa, câmara, aquisição de gêneros alimentícios, etc. Esta tese tem como objeto a conformação da Casa Real portuguesa no Rio de Janeiro, entre os anos de 1808 e 1821. Serão analisados aqui a estrutura organizacional da Casa Real; os conflitos suscitados entre os recém-emigrados agentes do espaço doméstico régio e os súditos fluminenses; os mecanismos de remuneração peculiares ao universo doméstico joanino; as formas de acesso à Casa Real; e, finalmente, a estrutura financeira da Casa Real portuguesa. Num quadro mais amplo, procurou-se relacionar a Casa do Rei aos outros poderes instituídos na cidade, agora Corte, do Rio de Janeiro, de forma a demonstrar que o espaço doméstico da monarquia era, também, uma instituição relevante na montagem da administração joanina na América e, conseqüentemente, na transformação de um espaço historicamente colonial em centro do império português.

The northern quahog, Mercenaria mercenaria, ranges along the Atlantic Coast of North America from the Canadian Maritimes to Florida, while the southern quahog, M. campechiensis, ranges mostly from Florida to southern Mexico. The northern quahog was fished by native North Americans during prehistoric periods. They used the meats as food and the shells as scrapers and as utensils. The European colonists copied the Indians treading method, and they also used short rakes for harvesting quahogs. The Indians of southern New England and Long Island, N.Y., made wampum from quahog shells, used it for ornaments and sold it to the colonists, who, in turn, traded it to other Indians for furs. During the late 1600’s, 1700’s, and 1800’s, wampum was made in small factories for eventual trading with Indians farther west for furs. The quahoging industry has provided people in many coastal communities with a means of earning a livelihood and has given consumers a tasty, wholesome food whether eaten raw, steamed, cooked in chowders, or as stuffed quahogs. More than a dozen methods and types of gear have been used in the last two centuries for harvesting quahogs. They include treading and using various types of rakes and dredges, both of which have undergone continuous improvements in design. Modern dredges are equipped with hydraulic jets and one type has an escalator to bring the quahogs continuously to the boats. In the early 1900’s, most provinces and states established regulations to conserve and maximize yields of their quahog stocks. They include a minimum size, now almost universally a 38-mm shell width, and can include gear limitations and daily quotas. The United States produces far more quahogs than either Canada or Mexico. The leading producer in Canada is Prince Edward Island. In the United States, New York, New Jersey, and Rhode Island lead in quahog production in the north, while Virginia and North Carolina lead in the south. Connecticut and Florida were large producers in the 1990’s. The State of Tabasco leads in Mexican production. In the northeastern United States, the bays with large openings, and thus large exchanges of bay waters with ocean waters, have much larger stocks of quahogs and fisheries than bays with small openings and water exchanges. Quahog stocks in certified beds have been enhanced by transplanting stocks to them from stocks in uncertified waters and by planting seed grown in hatcheries, which grew in number from Massachusetts to Florida in the 1980’s and 1990’s.

Aboriginal Australians consumed oysters before settlement by Europeans as shown by the large number of kitchen middens along Australia's coast. Flat oysters, Ostrea angasi, were consumed in southeastern Australia, whereas both flat and Sydney rock oysters, Saccostrea glomerata, are found in kitchen middens in southern New South Wales (NSW), but only Sydney rock oysters are found in northern NSW and southern Queensland. Oyster fisheries began with the exploitation of dredge beds, for the use of oyster shell for lime production and oyster meat for consumption. These natural oyster beds were nealy all exhausted by the late 1800's, and they have not recovered. Oyster farming, one of the oldest aquaculture industries in Australia, began as the oyster fisheries declined in the late 1800's. Early attempts at farming flat oysters in Tasmania, Victoria, and South Australia, which started in the 1880's, were abandoned in the 1890's. However, a thriving Sydney rock oyster industry developed from primitive beginnings in NSW in the 1870's. Sydney rock oysters are farmed in NSW, southern Queensland, and at Albany, Western Australia (WA). Pacific oysters, Crassostrea gigas, are produced in Tasmania, South Australia, and Port Stephens, NSW. FLant oysters currently are farmed only in NSW, and there is also some small-scale harvesting of tropical species, the coarl rock or milky oyster, S. cucullata, and th black-lip oyster, Striostrea mytiloides, in northern Queensland. Despite intra- and interstate rivalries, oyster farmers are gradually realizing that they are all part of one industry, and this is reflected by the establishment of the national Australian Shellfish Quality Assuarance Program and the transfer of farming technology between states. Australia's oyster harvests have remained relatively stable since Sydney rock oyster production peaked in the mid 1970's at 13 million dozen. By the end of the 1990's this had stabilized at around 8 million dozen, and Pacific oyster production reached a total of 6.5 million dozen from Tasmania, South Australia, and Port Stephens, a total of 14.5 million dozen oysters for the whole country. This small increase in production during a time of substantial human population growth shows a smaller per capita consumption and a declining use of oysters as a "side-dish."

A resistência aos antimicrobianos pela produção de β-lactamases em enterobactérias é um problema adicional neste cenário. Staphylococcus spp é considerado um patógeno humano freqüentemente associado a infecções adquiridas no ambiente hospitalar. O objetivo desse trabalho foi estudar a resistência aos antimicrobianos em cepas de Enterobactérias e Staphylococcus spp. isoladas de equipamentos utilizados no preparo de dietas destinadas à pacientes internados em um hospital universitário no município do Rio de Janeiro, além de verificar a presença de genes codificadores de enterotoxinas nas cepas de Staphylococcus spp. As enterobactérias e os Staphylococcus spp. foram isolados e identificados por metodologia convencional. Para o teste de susceptibilidade aos antimicrobianos foram utilizados discos contendo antimicrobianos clinicamente relevantes. Foi determinada a concentração inibitória mínima (CIM) pela técnica de microdiluição em caldo para os antimicrobianos clinicamente relevantes. A pesquisa de genes que codificam β-lactamases em enterobactérias foi realizada pela técnica de reação em cadeia da polimerase (PCR) e sequenciamento para os genes blaTEM, blaSHV, blaCTX-M, blaOXA-1 e blaCMY-2. Para Staphylococcus spp. foram pesquisados, através da PCR e sequenciamento, os genes de resistência a meticilina, gentamicina e eritromicina e os genes codificadores de enterotoxinas (sea-see, seg-sej, sen-ser e seu). Foram isoladas 97 cepas de enterobactérias, 40 de liquidificador e 57 de batedeira e 40 cepas de Staphylococcus spp., 20 de cada equipamento. Dentre as enterobactérias, o gênero Enterobacter foi isolado com maior frequencia (n=37, 38%). Foram ainda isoladas seis cepas de Salmonella spp. Das enterobactérias, 80% (n=79) foram resistentes a pelo menos um antimicrobiano e 38% (n=37) a três ou mais. A expressão fenotípica presuntiva de b-lactamases do tipo AmpC foi detectada em 32 cepas. O gene blaCMY-2 não foi encontrado. Doze cepas apresentaram halos de inibição com screaning positivo para a pesquisa de ESBL. Foi detectada a presença do gene blaSHV em K. pneumoniae subsp. pneumoniae. O sequenciamento desse gene permitiu identificá-lo como sendo blaSHV-36. Dentre os Staphylococcus spp., oito foram identificados como coagulase-positivas (SCP) e 32 como coagulase-negativas (SCN). As oito cepas de SCP foram identificadas como S. aureus subsp. aureus. Dentre os SCN, as espécies identificadas com maior frequência foram: S. caprae (n=7, 17,5%), S. simulans (n=5, 12,5%) e S. epidermidis (n=4, 10%). Destas, 83% (n=33) foram resistentes a pelo menos um antimicrobiano e 30% (n=12) foram resistentes a mais do que três. Duas cepas (5%) de S. epidermidis apresentaram perfil de resistência a até seis antimicrobianos e genes de resistência a meticilina, a eritromicina e a gentamicina. Todas as sete cepas que foram resistentes no TSA e na CIM a gentamicina, apresentaram o gene aac(2)/aph(6). O gene ermB foi observado ainda em uma S hominis subsp hominis que apresentou resistência na CIM e no TSA. Foi detectada a presença de pelo menos um gene codificador de enteroxotxina em 83% (n=33) das cepas. O gene seg foi detectado em 11 cepas, o gene sei em 17 cepas e o gene sen em 31 cepas. Os resultados encontrados implicam as dietas preparadas com esses equipamentos como veículo de disseminação de enteropatógenos e Staphylococcus spp. com marcadores de resistência e genes codificadores de enterotoxinas relevantes no ambiente hospitalar.

Absence of regular cleaning has been found to result in heavy bacterial loads on the surfaces of utensils and other equipment used in prawn processing factories and peeling centers. Instance of high faecal contamination is also sometimes met with. Detailed investigations have shown that a cleaning schedule comprising of treatment of these surface with a detergent followed by application of an effective disinfectant like sodium hypochlorite would prevent such bacterial build up.

Cost-profit analysis and market testing of some value-added products from silver carp such as fish mince block, fish sausage, fish ball, fish stick and fish burger were analyzed during April 2001 to March 2002. The study also explored the possibility to involve rural low-income people in the production and marketing of such products. The production of silver carp was higher in greater Jessore and Mymensingh districts but the price remained low during the peak-harvesting season in October to November. The price varied with size of the fish, season, market characteristics and effective demand of the buyers. Price of about 500 g size fish was found to be Tk. 20-25/kg in the rural markets. The average size of fish in the rural markets was 3S0-550 g while that in the urban markets it was 700-1,200 g. The cost of production of the value added products and profit margin were assessed on the basis of market price of the raw material as well as that of the finished products, transportation, storage and marketing costs. The profit margins of 34%, 39%, 81% and 31% of their sales price were obtained for fish sausage, fish ball, fish stick and fish burger, respectively. Actual production cost could be minimized if the fish is purchased directly from the farmers. Consumer's acceptance and marketability tests showed that both rural and urban people preferred fish ball than fish sausage. However, response towards the taste, flavor and color of fish ball and fish sausage was found to vary with occupations and age of the consumers. A correlation was observed between age group and acceptance of new products. Fish ball, fish stick and fish burger were found to be the most preferable items to the farmers because of easy formulation process with common utensils. Good marketing linkage and requirement of capital had been identified as the prerequisites for operating small-scale business on value-added fish products.

Over the past 15 years of its development, the fish processing industry in India has shown considerable improvement in maintenance of hygiene during handling of the raw material, processing and marketing of the finished product. This is best manifested in the lowering of upper limits of bacterial loads in factory environs and in processed products (Pillai, 1971). More care and attention is given by the processors in recent years in the scientific cleaning and sanitizing of utensils and equipment, chlorination of water supplies and personnel hygiene. An example of sanitation score form is given to help scientists and technologists to evaluate the hygienic status of the processing units.

Prawn processing factories of the three major fish processing centres of the West Coast of India, viz., Cochin, Mangalore and Calicut were surveyed to determine the occurrence of Clostridium perfringens in processing areas, and in processed products. Direct plating on Sulphite-polymyxin- sulphadiazine Agar and enrichment techniques were used. Samples of prawn, prawn guts, frozen prawns, canned prawns, water, ice, swab from utensils and soil from the factory premises were examined. Among a total of 461 samples examined, only 32 (6.9%) gave positive results. The incidence of C. perfringens was more in prawn guts (80%), followed by soil (50%), prawn (38%), ice (33.3%), frozen prawns (11%), swab (5.0%) and water (1.1%). No C. perfringens was isolated from canned prawns.

The culture of Penaeus monodon has explicitly defined the need for diet formulations or supplementary feeds that would promote optimum growth and survival of the animal. A total of 28 feed combinations were developed for P. monodon. Fish meal, shrimp head meal, squid head meal, Ascetes spp. rice bran, and soybean cake were used as primary ingredients in these feeds. The commercial vitamin mix No. 22 was added to the dry ingredients. Gelatinized corn starch and wheat flour were used as binders. The pellets were extruded using a portable kitchen grinder with a diameter of 4 mm. The products were either sun-dried for 8 hours or oven-dried overnight at 50 degree C to stabilize moisture at 8-10%. The pellets were then kept in covered glass bottles and stored in the laboratory at room temperature. The cost of the feeds excluding labour were also computed. The pellets were analyzed for protein, fat, carbohydrate, crude fiber, ash, and moisture contents using standard procedures. They were also analyzed for water stability. To test the stability of pellets in water, 2-g samples were placed in plankton nets (mesh #40) and suspended in water for two, and six hours. The undissolved samples were then vacuum-dried and the moisture determined. Cost of the feeds ranged from P1.10 to P2.60 per kg depending on the feed ingredient. Squid and Ascetes spp. were rather expensive for use as basic ingredients. Proximate analysis of dry weight showed percentage protein content ranged from 20-63 g; fat, 8-20 g; carbohydrate (by difference), 11-36 g; ash, 8-28 g; moisture, 6-11 g; and crude fiber, 5 . 13 g. Stability tests showed that after two hours, 35-88% of solids remained intact and after 6 hours, 20-55% of the pellets remained undissolved. When a pellet disintegrates easily, pollution of the water occurs. Chances for the shrimp to feed on the pellet is minimized when the pellet is unstable. Thus, the search for a more compact feed pellet has to be continued.

Waste cooking oil (WCO) is the residue from the kitchen, restaurants, food factories and even human and animal waste which not only harm people's health but also causes environmental pollution. The production of biodiesel from waste cooking oil to partially substitute petroleum diesel is one of the measures for solving the twin problems of environment pollution and energy shortage. In this project, synthesis of biodiesel was catalyzed by immobilized Candida lipase in a three-step fixed bed reactor. The reaction solution was a mixture of WCO, water, methanol and solvent (hexane). The main product was biodiesel consisted of fatty acid methyl ester (FAME), of which methyl oleate was the main component. Effects of lipase, solvent, water, and temperature and flow of the reaction mixture on the synthesis of biodiesel were analyzed. The results indicate that a 91.08% of FAME can be achieved in the end product under optimal conditions. Most of the chemical and physical characters of the biodiesel were superior to the standards for 0(#)diesel (GB/T 19147) and biodiesel (DIN V51606 and ASTM D-6751).

How do humans use predictive contextual information to facilitate visual search? How are consistently paired scenic objects and positions learned and used to more efficiently guide search in familiar scenes? For example, a certain combination of objects can define a context for a kitchen and trigger a more efficient search for a typical object, such as a sink, in that context. A neural model, ARTSCENE Search, is developed to illustrate the neural mechanisms of such memory-based contextual learning and guidance, and to explain challenging behavioral data on positive/negative, spatial/object, and local/distant global cueing effects during visual search. The model proposes how global scene layout at a first glance rapidly forms a hypothesis about the target location. This hypothesis is then incrementally refined by enhancing target-like objects in space as a scene is scanned with saccadic eye movements. The model clarifies the functional roles of neuroanatomical, neurophysiological, and neuroimaging data in visual search for a desired goal object.
