Este trabalho avaliou o efeito do alecrim na qualidade da carne de rã (Rana catesbeiana) defumada, por meio da análise das características sensoriais, da composição centesimal e do rendimento. Após o abate e a evisceração, as carcaças foram imersas em solução de salmoura (20%) numa proporção de 2:1 (volume da salmoura/peso). Posteriormente, elas foram banhadas em azeite e defumadas a uma temperatura de 50 a 90 °C. O delineamento experimental foi inteiramente casualizado, com 2 tratamentos (T1 = Carcaça de rã defumada com alecrim; T2 = Carcaça de rã defumada sem alecrim) com 16 repetições. Na análise estatística, foi utilizado o programa SAEG 2004, com 5% de significância. As carcaças defumadas apresentaram valores médios de proteína bruta (28,39%), lipídios totais (5,13%) e cinzas (2,79%) superiores comparados aos das carcaças in natura (23,41; 2,29 e 0,85%). Não houve efeito significativo do alecrim na composição centesimal. A carcaça de rã defumada com alecrim apresentou melhor aceitação quanto ao aroma. Nas demais características sensoriais, a presença do alecrim não interferiu nos resultados. A carne de rã pode ser defumada com e sem alecrim, sem interferir na aceitabilidade do produto.

Avaliou-se o efeito da relação volumoso:concentrado e do tipo de volumoso nos rendimentos de carcaça e dos cortes comerciais, e sobre a composição dos tecidos e musculosidade da perna de 32 cordeiros Ile de France, terminados em confinamento, alimentados com silagem de milho ou cana-de-açúcar, em duas relações volumoso:concentrado: de 60:40 ou 40:60. Os cordeiros foram abatidos aos 32kg de peso corporal; calcularam-se o peso e o rendimento da carcaça quente (PCQ e RCQ). Após 24 horas de refrigeração, obtiveram-se o peso e o rendimento da carcaça fria (PCF e RCF), o rendimento verdadeiro e as perdas por resfriamento. As carcaças foram divididas em cinco cortes comerciais, paleta, lombo, perna, costelas e pescoço, e a perna foi dissecada em músculo, osso e gordura, calculando-se as relações músculo:osso e músculo:gordura, além do índice de musculosidade da perna. Os cordeiros alimentados com silagem de milho apresentaram maiores PCQ (16,05kg), PCF (15,61kg), RCQ (50,4%) e RCF (49,0%). O rendimento de lombo foi menor nos cordeiros alimentados com cana-de-açúcar (9,1%). A cana-de-açúcar e a silagem de milho nas duas relações volumoso:concentrado estudadas não afetaram as proporções de osso, músculo e gordura e musculosidade da perna, e podem constituir a dieta desses animais sem diminuir as proporções desses tecidos, responsáveis pela qualidade da carne.

O objetivo do presente trabalho foi avaliar as características de qualidade: pH, cor, valor R, perda por exsudação, capacidade de retenção e absorção de água, capacidade de emulsificação, perdas por cocção, força de cisalhamento e análise sensorial da carne de matrizes pesadas de descarte de frangos de corte. A carne de peito de matrizes apresentou valores médios do parâmetro pH, valor R, perda por exsudação e valor de L* de 5,70, 1,43, 2,00 e 50,11, respectivamente. Para a capacidade de retenção e absorção de água, perda de peso por cozimento e força de cisalhamento, os valores médios foram de 77, 58, 18% e 4,94kgf cm-2, respectivamente. Na análise sensorial, a carne de matriz apresentou baixa intensidade de maciez (6,9) e menor suculência (3,4) e foi a mais elástica, borrachenta e difícil de deglutir. A carne de matrizes pesadas de descarte apresenta boas características de qualidade tecnológicas que possibilitam sua utilização como matéria-prima para a elaboração de industrializados.

Realizou-se o presente estudo com o objetivo de avaliar o efeito de sexo (machos inteiros x fêmeas) e de quatro pesos ao abate (28, 32, 36 e 40 kg) sobre o desempenho, os caracteres da carcaça e resultados econômicos de cordeiros mestiços ½ Ile de France x ½ Corriedale, terminados em sistema de confinamento. Quarenta animais (20 machos e 20 fêmeas) foram desmamados aos 60 dias e alimentados à vontade com uma ração contendo 16,46% de PB e 67,63% de NDT. Foram divididos em quatro grupos de machos (G1M, G2M, G3M e G4M) e quatro grupos de fêmeas (G1F, G2F, G3F, e G4F), sacrificados, respectivamente, com os pesos supra citados. Determinaram-se o ganho médio de peso diário (GMPD), o peso do corpo vazio (PCV), os pesos de carcaça quente (PCQ) e fria (PCF), as perdas ao resfriamento (PR), os rendimentos comercial (RC) e verdadeiro (RV) e o pH da carne em três momentos. Observou-se efeito de sexo para GMPD, com superioridade dos machos. Houve efeito de peso ao abate sobre PCQ e PCF e também de sexo, tendo as fêmeas superado os machos em G3 e G4, para PCQ, e em G2, G3 E G4, para PCF. Constataram-se maiores valores de RC e RV para as fêmeas, em G3 e G4. Todos os grupos apresentaram-se similares em relação ao pH da carne, o qual descreveu uma curva dentro dos padrões esperados. O estudo econômico destacou G1M como tendo apresentado melhor conversão alimentar e maior renda líquida/animal. Entre as fêmeas, G1F foi o melhor, destacando-se as rendas líquidas negativas constatadas em G3F e G4F. Concluiu-se que o melhor peso ao abate foi 28 kg, tanto para os machos, como para as fêmeas. No caso dos machos, tolerar-se-ia o peso de 32 kg, apesar de ter propiciado renda líquida 12,8% inferior a G1M.

Neste experimento, avaliou-se o efeito de sexo (macho e fêmea) e de quatro distintos pesos de abate (28, 32, 36, e 40 kg) sobre a morfometria da carcaça, os pesos dos cortes, a composição tecidual e os componentes não constituintes da carcaça, em cordeiros mestiços Ile de France x Corriedale, terminados em confinamento. Utilizaram-se 40 animais (20 machos e 20 fêmeas), desmamados aos 60 dias e alimentados, à vontade, com uma ração com 16,46% de PB e 67,63% de NDT. Foram divididos em quatro grupos de machos (G1M, G2M, G3M e G4M), sacrificados, respectivamente, com os pesos supracitados, e, da mesma forma, quatro grupos de fêmeas (G1F, G2F, G3F e G4F). Determinaram-se as medidas da carcaça e, de forma subjetiva, a condição corporal, o grau de conformação e o grau de gordura de cobertura. Calcularam-se os índices de compacidade da carcaça e da perna. Foram registrados os pesos e as porcentagens de sete cortes da meia carcaça, bem como as porcentagens de osso, músculo e tecido adiposo, avaliadas por meio de dissecção do lombo. A espessura da gordura de cobertura foi determinada na região lombar. O estudo morfométrico confirmou maior alongamento ósseo dos machos. de maneira geral, as carcaças apresentaram-se com bom acabamento, segundo os índices de compacidade verificados. Os cortes das carcaças das fêmeas foram mais pesados que os dos machos (exceto para o peso de 28 kg ao abate), principalmente em função dos maiores teores de gordura. Destaca-se a representabilidade dos pesos da pele e do conteúdo gastrintestinal na determinação do rendimento da carcaça. Pelos resultados obtidos, recomenda-se 28 kg como peso referência para sacrifício.

Seventy beef males of three breeding systems (BS), straightbreds Charolais (Ch) and Nellore (Ne), G1 crossbreds: 1/2 Ch + 1/2 Ne (1/2 Ch) and 1/2 Ne + 1/2 Ch (1/2 Ne) and G2 crossbreds: 3/4 Ch + 1/4 Ne (3/4 Ch) and 3/4 Ne + 1/4 Ch (3/4 Ne) were used. The number of animals by genetic group was, respectively, 15, 12,8, 12,14 and 9. Thirty-five males were castrated (C) at seven months and 35 were kept intact (1). The animals were feedlot finished from 20 to 24 months. The longissimus dorsi muscle was used for the meat evaluation. No significant interaction was observed between genetic composition and sexual condition, for the variables studied. The I males displayed meat with darker color (3.05 vs. 3.78 points) with less amount of marbling (4.26 vs. 5.75 points) and less amount of ether extract (1.73 vs. 2.88%). However they presented larger (66.03 vs. 60.50 cm(2)) longissimus dorsi area and meat with better palatability, juiciness and tenderness. Ch animals had larger longissimus dorsi than the Ne. In the G I group, the 1/2 Ch meat showed larger amount of marbling and ether extract and less cooking losses than the 1/2 Ne meat. Between G2 animals, the 3/4 Ne showed meat with larger thawing losses and larger amount of ether extract. In G1 animals meat, the heterosis level reached 18.54% for longissimus dorsiarea, 28.10% for ether extract and 64.01% for amount of marbling. In G2, the heterosis was -17.30% for lean texture and 10.40% for longissimus dorsi area.

To determine the effects of the pre-slaughter showering on some meat quality parameters, the bacterial changes in the Longus colli muscle and the contamination of the meat surface at three different points of the slaughter line were studied. Sixteen Nelore steers were slaughtered in a commercial slaughterhouse. Eight animals were submitted to pre-slaughter showering; a control group of eight animals were slaughtered without showering. Aseptic samples were collected for evaluations in the muscle depth, in the anterior portion of Longus colli muscle, just before chilling. The swab method was used for sampling carcass surface right after dressing, before carcasse washing, and at the beginning of chilling. Longus colli muscle samples were used to determine bacteria total count, psychrotrophic count and Enterobacteriaceae count, after 5, 24 and 48 hours from slaughtering, and in carcass surface, bacteria total count and psychrotrophic count. Multivariate methods were used to evaluate bacterial data the use of pre-slaughter showering did not affect the bacteria total counts, in the deep tissue. A significant growth of psychrotrophic bacteria was detected in both treatments. No significant differences (P>.05) were found in bacteria total count and psychrotrophic count between treatments. Also, no differences (P>.05) were detected between counts taken at different momments at the kill floor: skinning, before carcasse washing, and at the cooler, before chilling.

To determine the effects of the pre-slaughter showering on some meat quality parameters, the biochemical changes in the Longus colli muscle and the bleeding efficiency were studied. Thirty-six Nelore steers were slaughtered in a commercial slaughterhouse. Eighteen animals were submitted to pre-slaughter showering; a control group of eighteen animals were slaughtered without showering. Samples were collected for evaluations in the muscle depth, in the anterior portion of longus colli muscle,just before chilling. Bleeding efficiency was evaluated through the ratio of muscle haemoglobin/blood haemoglobin using blood samples taken five seconds after bleeding, and muscle sample taken before chilling. Longus colli muscle samples were also used to determine glycogen, glucose, pH and acidity, 5, 24 and 48 hours after slaughtering. Multivariate methods were used to evaluate biochemical data and the bleeding efficiency data analysis followed the randomized block design. Haemoglobin retained in the muscle and bleeding efficiency were not affected (P > .05) by pre-slaughter showering. The pre-slaughter showering did not affect (P > .05) the glycolysis. There was a significant effect of time in glycogen, glucose, pH and acidity, in the first 24 hours.

Filleting yield of Nile tilapia Oreochromis niloticus (L.) is low (30%) and generates large amount of wastes that may turn into environmental and economic problem. However, these wastes can be used for the extraction of minced fish (MF) which can be used in the preparation of sausages. The objective of this study was to assess the quality of sausages prepared with 0, 20, 40, 60, 80 and 100% of MF from Nile tilapia filleting waste during storage at 0±0.3°C. Alterations in the instrumental color (L*, a* and b*), lipid oxidation (TBARS), total volatile nitrogenous bases (TVB-N), pH, microbiological condition (pathogenic bacteria and aerobic psychrotrophic bacteria), and sensory attributes (color, odor, flavor, texture and overall acceptability) were evaluated for up to 40 days. The addition of MF to sausages increased TBARS values and decreases TVB- N, L*, a* and b* values. Acceptability of color attribute decreased with increasing MF; best flavor, texture and overall acceptability scores were registered for sausages containing 40 and 60% MF; best odor was registered for 100% MF. Pathogenic microorganisms were not detected, but decrease in pH and proliferation of aerobic psychrotrophic bacteria which, however, did not compromise sensory evaluation of sausages were registered throughout storage. Sausages prepared with MF from tilapia filleting waste have a shelf-life of 40 days when stored at 0±0.3°C, and the maximum recommended MF inclusion to maintain good sensory quality is 60%.

The aim of this study was to evaluate the effect of deboning time on broiler breeder hen meat for in natura consumption. Eighty samples of breast fillets with bone (Pectoralis major muscle) were collected and divided into four groups of 20 samples each; each group represented a different post-mortem deboning time: 0 (immediately after cooling), 4, 8 and 12h post-mortem. At 24h post-mortem, all samples were evaluated for the following parameters: pH, color (L*, a* and b*), cooking loss, water retention capacity, shear force, myofibrillar fragmentation index and fiber diameter. Color (L*, a* and b*), cooking loss, water retention capacity and shear force were significantly different (p ≥ 0.05) among the evaluated deboning times. The shear force value of breast fillets deboned at 0h post-mortem (8.478) was significantly different (p ≥ 0.05) from those deboned at 4, 8 and 12h post-mortem (5.154; 5.375 and 4.819, respectively). Therefore, an increase in the tenderness of breast fillets was observed, when deboning was performed at least 4h post-mortem.

The objective of this study was to evaluate pig fasting time at the farm (FT= 9, 12, 15 or 18 hours) and pig position into the pig lorry compartment on pork quality through liquid drip loss (DLL), pH1 evaluated at 45 minutes post slaughter and pHu evaluated 24 hours post slaughter. One hundred ninety two females, weighing 133±11 kg, from two farms were used. Pig locations were evaluated on truck compartment considering front, middle and rear (TCL) position and top or botton decks (LUD). The following effects were considered in the statistical model: block (BL= farm), FT, TCL, LUD and the interaction between BL and FT. The FT affected significantly the pH1 of Longissimus dorsi (LD) muscle, and pHu of Semispinalis capitis (SC), Longissimus dorsi (LD) and Semimembranosus (SM) muscles. Fasting time at farm equal or shorter than 12 hours resulted in carcasses with lower pHu values at LD and SM muscles and fasting time above 15 hours resulted in higher pHu on SC. There were no observed effect (p>0.05) of the evaluated sources of variation on DLL. TCL affected pH1 of SC, LD and SM muscles, and pHu of LD and SM muscles. Pigs located in middle or rear position in the lorry had no difference in pH1 of the evaluated muscles. But pigs located in the middle position of the lorry had greater values of pHu on LD and SM. It is stated that pigs fasting time at farm need to be close to 15 hours in aim of obtain higher frequency of pHu values in the normal range (5.55

This study aimed to evaluate the carcass quantitative characteristics, tissue composition of carcass cuts and meat quality of lambs receiving sunflower seeds in the diet. Twenty-one lambs 7/8 Ile de France 1/8 Ideal, not castrated, with initial body weight of 17 kg were housed in individual pens and distributed in three diets (0,7.5 and 15% of sunflower seeds inclusion) in a completely randomized design in 3 x 2 factorial arrangement (three diets and two carcass cuts). At the end of the experimental period, the animals were slaughtered; weights and hot and cold carcass yields and commercial and biological carcass dressing were collected. The carcasses were split lengthways and left half carcass divided into six anatomical parts. The leg and loin were removed for evaluation of tissue composition, meat color, water holding capacity, cooking losses and shearing force. Difference was detected in the commercial carcass yield; with higher value (46.82% of total weight) for carcasses of lambs fed without sunflower seeds when compared with carcass yield (44.11%) of lambs fed with 15% of sunflower seed inclusion. The proportion of muscle and total fat, as muscle:fat ratio were affected (P<0.05) by feeding, with higher quantity of muscle (63.15%) and less fat (16.63%) in the leg and loin cuts of lambs fed without sunflower seeds. In the leg was observed higher proportions of muscle (67.27%), muscle:bone ratio (4.08) and muscle:fat ratio (4.92) when compared with the loin cut. The water retention capacity and shearing force of Longissimus lumborum muscle showed better results when compared with Semimembranosus muscle. The inclusion of sunflower seeds in the diet of feedlot lambs increased the fat deposition in carcass cuts, however did not affect the other parameters of meat quality.
