Os pedúnculos de caju processados por métodos combinados e armazenados à temperatura ambiente (28ºC) foram avaliados quanto à tendência a mudanças físico-químicas, microbiológicas e sensoriais. Os resultados confirmam que os tipos de obstáculos usados (redução da Aw, tratamento térmico brando, redução do pH, adição de ácido ascórbico, benzoato de sódio a 1000ppm e SO2 a 600 e 900ppm) e sua intensidade foram capazes de assegurar a estabilidade microbiológica do produto durante a armazenagem à temperatura ambiente por 120 dias, bem como uma boa aceitação sensorial.

The power is still today an issue in wearable computing applications. The aim of the present paper is to raise awareness of the power consumption of wearable computing devices in specific scenarios to be able in the future to design energy efficient wireless sensors for context recognition in wearable computing applications. The approach is based on a hardware study. The objective of this paper is to analyze and compare the total power consumption of three representative wearable computing devices in realistic scenarios such as Display, Speaker, Camera and microphone, Transfer by Wi-Fi, Monitoring outdoor physical activity and Pedometer. A scenario based energy model is also developed. The Samsung Galaxy Nexus I9250 smartphone, the Vuzix M100 Smart Glasses and the SimValley Smartwatch AW-420.RX are the three devices representative of their form factors. The power consumption is measured using PowerTutor, an android energy profiler application with logging option and using unknown parameters so it is adjusted with the USB meter. The result shows that the screen size is the main parameter influencing the power consumption. The power consumption for an identical scenario varies depending on the wearable devices meaning that others components, parameters or processes might impact on the power consumption and further study is needed to explain these variations. This paper also shows that different inputs (touchscreen is more efficient than buttons controls) and outputs (speaker sensor is more efficient than display sensor) impact the energy consumption in different way. This paper gives recommendations to reduce the energy consumption in healthcare wearable computing application using the energy model.

El yacón (Smallanthus sonchifolius) es un tubérculo andino de vida útil muy corta bajo condiciones ambientales. Los objetivos de este trabajo fueron determinar: 1) la cinética de deshidratación osmótica de yacón, utilizando sacarosa como soluto; 2) el ajuste de la ecuación de Peleg a los datos experimentales; y 3) el coeficiente de difusión usando la ecuación de Hawkes y Flink. La fruta se peló y cortó en placas de 3 x 3 x 0,3 cm. Se la deshidrató osmóticamente con solución de sacarosa al 40% (p/p), hasta aw = 0,97. El proceso se realizó a temperatura de 25 °C y con agitación continua (105 rpm). Se determinó la pérdida de peso de las muestras, la ganancia de sólidos y la retención de agua. Los parámetros obtenidos para el ajuste de pérdida de agua y ganancia de sólidos son respectivamente: k1: 8,2 0,1 y k2: 0,53 ± 0,06; k1: 234 ± 8 y k2: 2,6 ± 0,5. La mayor transferencia de masa, tanto de agua como de soluto, ocurre durante los primeros 60 a 90 minutos de proceso, lográndose una ganancia media de sólidos de 9,5 [g.100 g-1 MF] y una pérdida de agua de 68,8 [g.100 g-1MF]. Se puede asegurar que es posible aplicar satisfactoriamente el proceso de deshidratación osmótica en yacón como pre tratamiento de conservación.

A pesquisa teve como objetivo acrescentar culturas starters nativas em salame tipo Italiano e avaliar o desempenho frente a culturas comerciais quanto às características microbiológicas, físico-químicas e sensoriais. As culturas utilizadas foram Staphylococcus xylosus, isolado de salames coloniais, e Lactococcus lactis ssp. lactis, isolado de um produto lácteo e fermentado em meio de cultura de plasma suíno. Elaboraram-se os seguintes tratamentos: T1 - adição de starters comerciais (Staphylococcus xylosus e Lactococcus lactis ssp. lactis); T2 - mistura de Staphylococcus xylosus isolado mais Lactococcus lactis ssp. lactis comercial; T3 - mistura de Lactococcus lactis ssp. lactis isolado mais Staphylococcus xylosus comercial; e T4 - Staphylococcus xylosus e Lactococcus lactis ssp. lactis, ambos isolados. Os tratamentos apresentaram uma queda de pH significativa e também uma redução na Aw, garantindo uma segurança microbiológica aos produtos. Em relação à oxidação lipídica, os tratamentos que continham Staphylococcus xylosus isolados de salames artesanais apresentaram valores menores que os outros tratamentos. Os salames elaborados com Staphylococcus xylosus e Lactococcus lactis ssp. lactis, ambos isolados, apresentaram melhores resultados sensoriais quando comparados com salames elaborados com culturas starters comerciais. Portanto, a adição de culturas starters nativas pode ser utilizada na elaboração de salames, proporcionando produtos seguros e com flavor diferenciado.

The impact of automatic and manual shelling methods during manual/visual sorting of different batches of Brazil nuts from the 2010 and 2011 harvests was evaluated in order to investigate aflatoxin prevention.The samples were tested as follows: in-shell, shell, shelled, and pieces in order to evaluate the moisture content (mc), water activity (Aw), and total aflatoxin (LOD = 0.3 µg/kg and LOQ 0.85 µg/kg) at the Brazil nut processing plant. The results of aflatoxins obtained for the manually shelled nut samples ranged from 3.0 to 60.3 µg/g and from 2.0 to 31.0 µg/g for the automatically shelled samples. All samples showed levels of mc below the limit of 15%; on the other hand, shelled samples from both harvests showed levels of Aw above the limit. There were no significant differences concerning the manual or automatic shelling results during the sorting stages. On the other hand, the visual sorting was effective in decreasing the aflatoxin contamination in both methods.

Pan bread samples available in the Brazilian market were evaluated for their physicochemical and sensory characteristics. Twelve pan breads, seven white and five whole grain breads, were evaluated. Moisture, water activity (Aw), firmness, and color (L*, a*, b*) of the crumb were evaluated on the first, fourth, seventh, and tenth days after purchasing the breads. Specific volume was evaluated on the first day of analysis with averages of 4.72 and 4.70 mL/g for the white and whole grain breads, respectively. The average results on the first day of analysis were: 37.03% and 41.23% moisture, 0.954 and 0.966 Aw, 276.27 and 267.83 gf firmness, 74.73 and 64.45 L* values, 0.37 and 3.85 a* values, and 15.51 and 18.98 b* values for the white and whole grain breads, respectively. The samples showed an increase in firmness, reduction in moisture and Aw, and no color changes over time. A survey conducted prior to the acceptance test showed that the three most important factors influencing purchase were taste (19.6%), tenderness (16.8%), and expiration date of the product (14.3%). The results showed that 37.2% of the panelists preferred white bread, 62.8% preferred bread with fibers, and 82.6% would probably or definitely buy white bread with fibers.

β-glucan is currently one of the most important bioactive substances. Hence, there is a growing interest in the production of various foods containing β-glucan. The study examines the influence of the degree of wheat flour extraction in the quality of breads with high β-glucan content. Rheological tests were conducted on dough. Volume, mass, color and texture of bread were measured after baking. We observed that increasing the degree of extraction caused an increase in the storage and loss modulus. All of the bread made from the different flours were smaller in volume after the addition of β-glucan, although the yield increased. The crumb color of β-glucan-added breads was darker than the control samples. Control samples were higher in textural parameters (firmness, gumminess and chewiness). β-glucan-added samples had decreased porosity. The results revealed that using very strong flour with a high protein content results in a high quality β-glucan bread with a higher nutritional value due to the high total dietary fiber and β-glucan content.

Abstract The growing interest in the usage of dietary fiber in food has caused the need to provide precise tools for describing its physical properties. This research examined two dietary fibers from oats and beets, respectively, in variable particle sizes. The application of automated static image analysis for describing the hydration properties and particle size distribution of dietary fiber was analyzed. Conventional tests for water holding capacity (WHC) were conducted. The particles were measured at two points: dry and after water soaking. The most significant water holding capacity (7.00 g water/g solid) was achieved by the smaller sized oat fiber. Conversely, the water holding capacity was highest (4.20 g water/g solid) in larger sized beet fiber. There was evidence for water absorption increasing with a decrease in particle size in regards to the same fiber source. Very strong correlations were drawn between particle shape parameters, such as fiber length, straightness, width and hydration properties measured conventionally. The regression analysis provided the opportunity to estimate whether the automated static image analysis method could be an efficient tool in describing the hydration properties of dietary fiber. The application of the method was validated using mathematical model which was verified in comparison to conventional WHC measurement results.

Abstract A challenge to the food sector has been the development of new products incorporating co-products from the food processing industry with minimal impact on their pre-determined structures and adding nutritional quality. In order to add value and develop alternatives for the use of co-products generated during the agroindustrial processing, this work aimed to study the stability of gluten-free sweet biscuits developed with soybean okara, rice bran and broken rice. The formulations were elaborated with increasing percentages of these ingredients and compared with the standard (commercial sweet biscuit) for ten months. The analyses were: weight, diameters (internal and external), thickness, specific volume, instrumental parameters of color, texture, scanning electron microscopy, water activity, proximal composition and isoflavones. The experimental sweet biscuits had characteristics of color, weight, volume and diameters (internal and external) very similar to the commercial, whereas texture, lipids and energy value decreased, and aw, moisture and protein increased during storage. Além de limitar a produtividade do feijoeiro, a deficiência de nitrogênio pode resultar na produção de sementes com baixo teor de proteína e baixo potencial fisiológico. Nesta pesquisa foram avaliados os efeitos da adubação nitrogenada em cobertura sobre o teor de proteína e o potencial fisiológico de sementes de feijão das cultivares (cv.) IPR Juriti e Pérola, cultivadas em parcelas (solo tipo = Latossolo Vermelho Distrófico), em sistema de plantio direto sob densa palhada de milheto na Estação Experimental da UNESP - Campus de Ilha Solteira, em Selvíria, MS (classificação climática de Köppen = Aw), durante o outono (março/junho) e inverno (junho/setembro) de 2005. Para cada cultivar foi utilizado o delineamento em blocos casualizados, com quatro repetições e o arranjo fatorial (5 x 2) entre doses de nitrogênio (0, 30, 60, 90 e 120 kg.ha-1) aplicadas em cobertura (na forma de uréia, contendo 45% de N) nos estádios fenológicos V4-3 e V4-6, correspondentes à completa emissão da terceira e sexta folha trifoliolada da haste principal. A aplicação de até 120 kg.ha-1 de N no estádio fenológico V4-3 promoveu maior acúmulo de proteína bruta na semente (dose 0 = 17,6% e 16,3%; 120 kg.ha-1 de N = 24,1% e 22,3% para as cv. IPR Juriti e Pérola, respectivamente) em relação ao estádio fenológico V4-6 (dose 0 = 19,2% e 18,3%; 120 kg.ha-1 de N = 21,3% e 20,3% para as cv. IPR Juriti e Pérola, respectivamente). O teor de proteína solúvel correspondeu a cerca de 90% da proteína bruta da semente da cv. IPR Juriti, contra 72% da cv. Pérola. As albuminas e as glutelinas representaram cerca de 80% da proteína solúvel da semente e as prolaminas a menor fração, 0,6%. Conclui-se que a aplicação de até 120 kg.ha-1 de N no estádio fenológico V4-3, em sistema de plantio direto sob densa quantidade de palha de milheto, propicia maior acúmulo de proteína bruta na semente de feijão em relação à aplicação no estádio V4-6. A dose de 90 kg.ha-1 de N propicia maior acúmulo de proteína solúvel na semente, sem, contudo, exercer influência acentuada sobre o seu potencial fisiológico.
