Swordfish are kept chilled, not frozen, for up to 15 days before being unloaded at Australian ports. Swordfish landed alive, and to a lesser extent prerigor, have better quality when unloaded. Warmer fishing waters did not lead to poorer quality at unloading. There was a serious loss of quality during long fishing trips. Sex had no influence on swordfish quality. Three methods of chilling were evaluated: refrigerated seawater (RSW) chilling for up to 2 days followed by storage under ice, refrigerated brine (seawater with extra salt added) for up to 2 days followed by storage in a freshwater ice slurry, and ice slurry (freshwater ice mixed with seawater) for up to 2 days followed by storage under ice only. Two fishing trips were monitored for each method. The freshness indicator K value was used to determine which method produced the best quality swordfish when unloaded at the factory. Storage method played a larger role in quality loss than capture conditions. Refrigerated brine produced the best quality swordfish when the machinery functioned properly closely followed by RSW. Ice slurry chilling of large fish such as swordfish exhibited initial delays in the reduction of core temperature which led to lower quality. This method could be improved with the addition of mechanical circulation. Mechanical problems, which resulted in minor increases of temperature during brine storage, led to a much larger loss of quality than would be expected.

The swordfish, Xiphias gladius, is a large migratory oceanic species. It is widely distributed in tropical, temperate, and sometimes cold waters of all oceans, and is usually found in areas with sea-surface temperatures above 13°C. It can reach a maximum size of 540 kg, and is a favorite food fish in many countries. It is excellent for steaks, canning, or teriyaki, the Japanese dish of meat grilled with sugar, soy sauce, and rice wine. Swordfish is harvested commercially throughout its distribution, in both coastal and high-seas fisheries. Sport fisheries for swordfish are very small compared to those for other billfishes, accounting for no more than a few hundred fish per year. (PDF file contains 284 pages.)

Procedures for sampling genomic DNA from live billfishes involve manual restraint and tissue excision that can be difficult to carry out and may produce stresses that affect fish survival. We examined the collection of surface mucous as a less invasive alternative method for sourcing genomic DNA by comparing it to autologous muscle tissue samples from Atlantic blue marlin (Makaira nigricans), white marlin (Tetrapturus albidus), sailfish (Istiophorus platypterus), and swordfish (Xiphias gladius). Purified DNA from mucous was comparable to muscle and was suitable for conventional polymerase chain reaction, random amplified polymorphic DNA analysis, and mitochondrial and nuclear locus sequencing. The nondestructive and less invasive characteristics of surface mucous collection may promote increased survival of released specimens and may be advantageous for other marine fish genetic studies, particularly those involving large live specimens destined for release.

We verified the age and growth of swordfish (Xiphias gla-dius) by comparing ages determined from annuli in fin ray sections with daily growth increments in otoliths. Growth of swordfish of exploitable sizes is described on the basis of annuli present in cross sections of the second ray of the first anal fins of 1292 specimens (60−260 cm eye-to-fork length, EFL) caught in the region of the Hawaii-based pelagic longline fishery. The position of the initial fin ray annulus of swordfish was verified for the first time with the use of scanning electron micrographs of presumed daily growth increments present in the otoliths of juveniles. Fish growth through age 7 was validated by marginal increment analysis. Faster growth of females was confirmed, and the standard von Bertalanffy growth model was identified as the most parsimonious for describing growth in length for fish greater than 60 cm EFL. The observed growth of three fish, a year-old in size when first caught and then recaptured from 364 to1490 days later, is consistent with modeled growth for fish of this size range. Our novel approach to verifying age and growth should increase confidence in conducting an age-structured stock assessment for swordfish in the North Pacific Ocean.

Large pelagic sharks are caught incidentally in the swordfish and tuna fisheries of the Mediterranean Sea. In our study, twelve shark species were documented as bycatch over three years from 1998 to 2000. Blue shark (Prionace glauca) was the predominant species in all gears and areas examined. Shortfin mako (Isurus oxyrinchus), common thresher shark (Alopias vulpinus), and tope shark (Galeorhinus galeus) were the next most abundant shark species—found in more than half of the areas sampled. Catch composition varied both in the areas and gears investigated. Sharks represented 34.3% in weight of total catches sampled in the Alboran Sea and 0.9% in the Straits of Sicily. Higher shark catches were observed in the swordfish longline fishery, where a nominal CPUE value reached 3.8 sharks/1000 hooks in the Alboran Sea. Size distribution by fishing gear varied significantly. Albacore longline catches consisted mainly of juveniles, whereas subadult and adult specimens were more frequent in the swordfish longline and driftnet fishery. Estimates of incidental marine mammal, sea turtle, and seabird mortality in the California drift gillnet fishery for broadbill swordfish, Xiphias gladius, and common thresher shark, Alopias vulpinus, are summarized for the 7-year period, 1996 to 2002. Fishery observer coverage was 19% over the period (3,369 days observed/17,649 days fished). An experiment to test the effectiveness of acoustic pingers on reducing marine mammal entanglements in this fishery began in 1996 and resulted in statistically significant reductions in marine mammal bycatch. The most commonly entangled marine mammal species were the short-beaked common dolphin, Delphinus delphis; California sea lion, Zalophus californianus; and northern right whale dolphin, Lissodelphis borealis. Estimated mortality by species (CV and observed mortality in parentheses) from 1996 to 2002 is 861 (0.11, 133) short-beaked common dolphins; 553 (0.16, 103) California sea lions; 151 (0.25, 31) northern right whale dolphins; 150 (0.21, 27) northern elephant seals, Mirounga angustirostris; 54 (0.41, 10) long-beaked common dolphins, Delphinus capensis; 44 (0.53, 6) Dall’s porpoise, Phocoenoides dalli; 19 (0.60, 5) Risso’s dolphins, Grampus griseus; 11 (0.71, 2) gray whales, Eschrichtius robustus; 7 (0.83, 2) sperm whales, Physeter macrocephalus; 7 (0.96, 1) short-finned pilot whales, Globicephala macrorhychus; 12 (1.06, 1) minke whales, Balaenoptera acutorostrata; 5 (1.05, 1) fin whales, Balaenoptera physalus; 11 (0.68, 2) unidentified pinnipeds; 33 (0.52, 4) leatherback turtles, Dermochelys coriacea; 18 (0.57, 3) loggerhead turtles, Caretta caretta; 13 (0.73, 3) northern fulmars, Fulmarus glacialis; and 6 (0.86, 2) unidentified birds.

U.S. commercial vessels fishing in the Atlantic Ocean, Caribbean Sea, and the Gulf of Mexico have been subject to regulations limiting the landing of swordfish less than 25 kg whole weight since June 1991. The intent of those regulations was to reduce the mortality of immature swordfihs. Plots of fishing effort from 1990 to 1994 indicate that the regulations were effective in some areas. Fishing effort decreased after 1991 in the Venezuelan Basin, a swordfish nursery area. However, in areas close to the U.S. coastline, effort did not appear to shift away from areas where immature swordfish were discarded. To identify areas with high rates of discarding, plots were made showing areas where the number of discarded swordfish was equal to or greater than the number of fish landed.
