A água é um recurso cada vez mais escasso e também de alto custo em várias regiões. O beneficiamento de frutas e hortaliças, em geral, apresenta elevado consumo de água durante o processo de limpeza. A linha de beneficiamento e de classificação do tomate de mesa é constituída de: recebimento, limpeza, seleção, classificação e embalagem. Normalmente, o recebimento dos tomates em uma linha de beneficiamento ocorre com taxa de alimentação constante, porém com interrupções frequentes dos operadores, ocasionando desperdício de energia e água, e a eficiência de limpeza dos frutos. O objetivo deste trabalho foi avaliar um sistema de limpeza dos frutos, equipado com um controle automático de fluxo de água, visando ao uso racional de água. Para a avaliação da eficiência do processo de limpeza, aplicou-se uma metodologia que utiliza o turbidímetro. Observou-se que o índice de limpeza foi, segundo critérios estatísticos, semelhante nos sistemas automatizado e tradicional, todavia o consumo de água no sistema automatizado foi quatro vezes inferior quando comparado ao sistema tradicional, indicando o potencial de aplicação comercial deste sistema.

This study had as objective the evaluation of mechanical damages occurred in banana Nanicão during the improvement process, packing and distribution, identifying the probable critical points. The mechanical damages caused by transport, first cleaning; cleanness and sorting; preservation in the packing, transport, and mature were evaluated. The studied packing had been: torito wooden packing (18 kg), wood type ½ box, (13 kg) and cardboard (18 kg). The stage of preservation and transport of the fruits to the distribution center duplicated the light defects and quintupled the serious defects, causing rottenness after the acclimatization. The cardboard packing did not support the piling up and presented deformations, that resulted in the kneading the fruits of the inferior packing, causing a significant increase of the serious defects. The fruits conditioned in the involved packing of plastic bubble had presented an inferior number of serious damages when compared with the others packing, without the plastic.

On the last years, in Brazil, sorting and classifying fruits and vegetables using packing lines have increased. This work aimed at characterizing the cleaning process for fresh market tomatoes at two packing lines, one imported and one national located at Campinas, São Paulo State. Characterization included data, number, types and brushes velocity, water use, fruit standing time and cleaning efficiency. Standing time was measured correlating to fruit diameter (CEAGESP). For measuring cleaning efficiency an equipment was developed that was mainly composed of a ring involved with white cloth. Samples were taken before and after the cleaning step and evaluated using a colorimeter HUNTER Lab. The results showed a strong difference between the two equipments. The imported equipment showed lower number on brushes and rotation than national one, however a higher water consumption. For imported equipments this relation was not found. Both packing lines showed the same cleaning efficiency. Cleaning efficiency is related to be an interaction among the studies parameters, and it could be necessary a better management than the one used on both equipments.

Excessive and inadequate handling of fruits and vegetables provides high incidences of physical damage, consequently, post harvest losses. The main goal of this work was to evaluate the impact magnitude in persimmon packing lines, Rama Forte, and to determine, at the laboratory, its impact limits. For evaluating the critical points it was used an instrumented sphere of 76 mm of diameter (Technmark, Inc, Lansing, USA), which registered the impact magnitude in seven distinctive impact lines located in four packing houses. For determining physical damages, tests were carried out at the laboratory, where fruit drop was related to impact magnitude, physical damage incidence and fruit post harvest losses. At the packing lines, the values found varied from 21 to 87 G on the transfer points and the majority of registered impacts (over 94%) were down 50G. Drops from 20 cm caused an increase in weight losses after six days of storage at room temperature. Drops from 20 and 30 cm caused skin darkness (low L values), associated to a decrease in color intensity (chroma). Impact drop did not affect pulp fruit chemical features.

Este estudo teve como objetivo a avaliação de danos mecânicos ocorridos na banana "Nanicão" durante o processo de beneficiamento, transporte, embalagem e distribuição, identificando os prováveis pontos críticos. Avaliaram-se os danos mecânicos causados após o transporte, despistilagem e primeira despenca; limpeza e classificação; acondicionamento nas embalagens e transporte, e amadurecimento. As embalagens estudadas foram: embalagem de madeira torito (18 kg), madeira tipo ½ caixa (13 kg) e papelão (18 kg). Verificou-se que, na etapa de acondicionamento e transporte das frutas até o centro de distribuição, duplicaram os defeitos leves e os defeitos graves quintuplicaram, causando podridões após a climatização. A embalagem de papelão não suportou o empilhamento e apresentou deformações, que resultaram no amassamento das frutas que estavam nas embalagens inferiores e no aumento significativo dos defeitos graves. As frutas acondicionadas nas embalagens envolvidas pelo plástico bolha apresentaram menos danos graves quando comparadas às demais embalagens, sem o plástico.

No Brasil, nos últimos anos, tem aumentado o beneficiamento e a classificação de frutas e hortaliças em equipamentos. O objetivo deste trabalho foi caracterizar a etapa de limpeza de dois equipamentos de beneficiamento de tomate de mesa, um nacional e outro importado, instalados na região metropolitana de Campinas - SP. A caracterização foi realizada quanto ao número, tipo e velocidade de rotação das escovas, aplicação de água, tempo de permanência dos frutos e eficiência de limpeza. O tempo de permanência foi mensurado com relação ao tamanho dos frutos, segundo os padrões da CEAGESP. Para mensurar a eficiência, foi desenvolvido um equipamento composto de um anel deslizante envolvido por um pano branco. As amostragens foram realizadas antes e após a etapa de limpeza e avaliadas utilizando colorímetro HUNTER Lab. Por meio dos resultados, observaram-se diferenças entre os dois equipamentos, em que o importado apresentou menor número de escovas, rotações mais baixas e maior consumo de água que o nacional. No equipamento nacional, o tempo de permanência dependeu do tamanho dos frutos, não sendo encontrada essa correlação no equipamento importado, e ambos tiveram a mesma eficiência de limpeza. Conclui-se que a limpeza está relacionada à interação entre os parâmetros estudados, sendo também necessário realizar manutenções nos equipamentos das unidades para a melhoria no funcionamento.

O manuseio inadequado e excessivo de frutas e de hortaliças causa alta incidência de danos físicos e, consequentemente, perdas pós-colheita. O objetivo deste trabalho foi avaliar a magnitude de impacto em linhas de beneficiamento e classificação para caqui "Rama Forte" e determinar, em laboratório, seus limites de impactos. Para a avaliação dos pontos críticos, foi utilizada uma esfera instrumentada de 76 mm de diâmetro (Techmark, Inc., Lansing, EUA), que registrou a magnitude dos impactos em sete equipamentos distintos de quatro unidades de beneficiamento. A determinação de danos físicos foi feita em testes laboratoriais, nos quais a queda dos frutos foi relacionada com a magnitude de impacto, incidência de danos físicos e perdas na qualidade do fruto. Nas linhas de beneficiamento, os valores de impactos encontrados variaram de 21 a 87 G nos pontos de transferência, e a maioria dos impactos registrados (acima de 94%) durante a passagem pela linha foram de valores de até 50 G. Alturas de queda a partir de 20 cm causaram aumento na perda de massa do caqui no sexto dia de armazenamento, em temperatura ambiente. As quedas de 20 e 30 cm causaram maior escurecimento da casca (menores valores de L), associada à redução da intensidade da cor (chroma). O impacto não causou efeito nas características químicas da polpa do fruto.

The cleanness level in fresh market tomatoes cleaning equipment is essential for consumer acceptance and conservation of product quality. However, the washing process in cleaning current equipments demands an excessive volume of water, leading to serious economic and environmental concerns. The objective of this work was to contribute with technical information for the washing system optimization. The conventional washing system currently used in cleaning equipment, which consists of perforated PVC pipes, was compared with a proposed system which uses commercial sprays. Characteristic curves (flow rate versus pressure) for both systems were determined in lab conditions and the respective water consumptions were compared. The results confirmed the excess of water consumption in the conventional washing systems, and the proposed system proved that is possible to reduce it, and the use of sprays allowed the rational use of the water.

Quality evaluation of classification was done in two fresh market tomatoes packing house, using electronically and mechanical equipments in two harvest periods, summer and winter seasons. The main goal of this work was to evaluate size and color grading conformity with the standards proposed by the Brazilian Program for Horticulture Modernization and size grading obtainded with the one established by the packer. The cultivar studied was Carmen. The results showed that there was no grade conformity with the fresh tomato quality standards proposed by the Brazilian Program for Horticulture Modernization. The grade conformity obtained when compared with the one programmed by the packer, was only for large sizes, in both equipments. The electronically equipment has presented better performance, over the mechanical, considering grading quality and fruits post-harvest quality. However, the electronically equipment must be constantly monitored to achieve efficiency and investment return. On the other side, for mechanical equipment it will be necessary to review the actual system of size grading, in order to follow the fresh tomato quality standards.

The post-harvesting cleaning process in fresh market tomatoes production is essential to the consumer acceptance, since the degree of dirtiness of the fruits is directly related to its quality. However, the washing stage of the cleaning process of commercial packinghouse demands an excessive water volume, bringing serious environmental concerns. The objective of this work was to compare the cleaning efficiency in two cleaning systems through the evaluation of different operational conditions of the cleaning process, related with the brush rotation, water flow and fruit standing time under the system. It was compared the conventional system utilized in commercial equipment with a system using commercial sprays. The results showed that the cleaning efficiency was not directly related to the water volume used, but to the water pressure, standing time and brushes rotation. Therefore, the use of commercial sprays can bring benefits to the cleaning efficiency, increasing it up to 13%, and to the environmental, decreasing water consumption.

Tomatoes are one of the most important vegetable crops grown in Brazil and are among the crops that have one of the highest post-harvest losses indexes in the country. The present work aimed at evaluating impact damage observed in packing lines of fresh tomatoes as well as to determine, under laboratory conditions, quality alterations of tomato fruits submitted to impact damage in different surface types. Critical points evaluation was accomplished using an instrumented sphere. Critical transference points found showed variations in acceleration levels from 30 to 129 G (m s-2). Tests carried out under laboratory conditions showed that padded surfaces reduced up to 31% impact damage. Incidence of severe internal physical damage was evaluated by a subjective scale and increased by 79% on hard surfaces for the highest fall drop. On the other hand, it was observed an effective reduction in physical damage on fruits when padded surfaces were used. When a 10-cm drop was performed, the maximum reduction measured was 10% for hard surfaces and 5% for previously padded surfaces. For quality parameters, it was observed for high drops on hard surfaces, highest values for weight loss, total acidity, lower values for vitamin C and Soluble Solids.

This work proposes to determine the water activity and the freezing point depression of tangerine, pineapple and lemon juices at various concentrations (10-55oBrix) and to achieve a correlation between these properties. The freezing point depression was determined with a LAKTRON cryoscope and common laboratory materials. The water activity was determined with a DECAGON CX-2 hygrometer in the temperature range of 15 to 30oC. With the results, the adjustment to CHEN (1987) water activity prediction equation to non-electrolyte mixtures was verified, through the calculation of the variation coefficient (CV). Being CV smaller than 3% for the proposed model, it can be said that the experimental data have adjusted well to the prediction equation. The water activity and the freezing point depression was correlated for tangerine, pineapple and lemon juices and r2 values were higher than 99%. Therefore, it is possible to obtain the water activity by knowing the freezing point depression of studied juices.

Fruits juices are natural sources of several compounds that present antioxidant action. Together with the fruits, they contribute with almost 40% of the antioxidant capacity in a healthy diet avoiding and preventing diseases deriving from oxidative stress. The present study determined the antioxidant capacity of seven samples of industrialized fruits juices applying CRAC (Ceric Reducing/Antioxidant Capacity) assay, a new electrochemistry assay that evaluates, by means of chronoamperometric measurements, the ability of a sample in reducing species Ce4+ in acid media. At the end of the assay was obtained the following classification: cashew > guava > grape > mango > apple > orange > passion fruit.
