Fats and oils are very important raw materials and functional ingredients for several food products such as confectionery, bakery, ice creams, emulsions, and sauces, shortenings, margarines, and other specially tailored products. Formulated products are made with just about every part of chemistry, but they are not simple chemicals. In general, they consist of several, and often many, components. Each of these components has a purpose. Most formulated products have a micro- or nano-structure that is important for their function, but obtaining this structure is often the big challenge. Due to a rise in overweight or obesity, health concerns have increased. This fact has led to the need to the develop products with low fat content, which have become a market trend. In addition, the development of new products using fat substitutes can be a good option for companies that are always trying to reduce costs or substitute trans fat or saturated fat. However, the successful development of these products is still a challenge because fat plays multiple roles in determining the desirable physicochemical and sensory attributes, and because the consumers who want or need to replace these ingredients, seek products with similar characteristics to those of the original product. Important attributes such as smooth, creamy and rich texture; milky and creamy appearance; desirable flavor; and satiating effects are influenced by the droplets of fat, and these characteristics are paramount to the consumer and consequently crucial to the success of the product in the market. Therefore, it is important to identify commercially viable strategies that are capable of removing or reducing fat content of food products without altering their sensory and nutritional characteristics. This paper intended to provide an overview about the role of fat in different food systems such as chocolate, ice cream, bakery products like biscuits, breads, and cakes considering the major trends of the food industry to meet the demands of modern society.

This study analyzed the influence of forest structural components on the occurence, size and density of groups of Bare-face Tamarin (Saguinus bicolor) - the most threatened species in the Amazon - and produced the first map of distribution of groups in large-scale spatial within the area of continuous forest. Population censuses were conducted between November 2002 and July 2003, covering 6400 hectares in the Ducke Reserve, Manaus-AM, Brazil. Groups of S. bicolor were recorded 41 times accordingly distributed in the environments: plateau (20); slopes (12); and lowlands (09). The mean group size was 4.8 indiv./group, and ranged from 2 to 11 individuals. In the sites where the groups were recorded, and in an equivalent number of sites where no tamarins were found located at least 500 m from those where they had been recorded, we placed 50 m x 50 m plots to record the following forest structural components: abundance of trees; abundance of lianas; abundance of fruiting trees and lianas; abundance of snags; abundance of logs; percentage of canopy opening; leaf litter depth; and altitude. Bare-face Tamarin more often uses areas with lower abundance of forest logs, smaller canopy opening and with higher abundance of snags, areas in the forest with smaller canopy opening present higher density of S. bicolor groups. Apparently this species does not use the forest in a random way, and may select areas for its daily activities depending on the micro-environmental heterogeneity produced by the forest structural components.

One dune habitat in the semi-arid Caatinga Biome, rich in endemisms, is described based on plant species composition, woody plant density, mean height and phenology and a multivariate analysis of the micro-habitats generated by variables associated to plants and topography. The local flora is composed mainly by typically sand-dweller species of Caatinga, suggesting the existence of a phytogeographic unity related to the sandy areas in the Caatinga biome, which seems to be corroborated by faunal distribution. Moreover, some species are probably endemic from the dunes, a pattern also found in vertebrates. The plant distribution is patchy, there is no conspicuous herbaceous layer and almost 50% of the ground represents exposed sand. Phenology is not synchronized among species, occurring leaves budding and shedding, flowers development and anthesis, fruits production and dispersion both in rainy and dry seasons. Leaf shedding is low compared to the level usually observed in Caatinga areas and about 50% of the woody individuals were producing leaves in both seasons. Spectrum of dispersal syndromes shows an unexpected higher proportion of zoochorous species among the phanerophytes, accounting for 31.3% of the species, 78.7% of the total frequency and 78.6% of the total density. The habitat of the dunes is very simple and homogeneous in structure and most of environmental variance in the area is explained by one gradient of woody plants density and another of increase of Bromelia antiacantha Bertol. (Bromeliaceae) and Tacinga inamoena (K. Schum.) N.P. Taylor & Stuppy (Cactaceae) toward valleys, which seem to determine two kinds of protected micro-habitats for the small cursorial fauna.

The influence of climatic variations on the herbaceous component of the "caatinga" vegetation was examined in the state of Pernambuco, Brazil. A total of 105 1 × 1 m-plots were established, of which 35 were in a level micro-habitat, 35 in a riparian micro-habitat, and 35 in a stony microhabitat. During two consecutive years all herbaceous plants in these plots were counted, measured (height and diameter), and collected for identification. The Shannon-Wiener diversity index and the equitability were calculated for each year, as well as the density, frequency, dominance, total basal area and importance index for each species. The total annual pluviometric was 819.5 and 448.8 mm in 2002 and 2003, respectively. The herbaceous flora in the study area was composed of 71 species, of which 58 were sampled in the plots. The families with the greatest species richness were Malvaceae (8 species), Euphorbiaceae (7), Poaceae (6), Convolvulaceae (4), Fabaceae (4), and Portulacaceae (4). The diversity indices were 2.66 and 3.01 nats ind-1 in 2002 and 2003, respectively. The density, frequency, dominance and importance value of herbaceous populations, as well as, the height and diameter of plants were low in the dryer year. The riparian group was the most isolated of the microhabitats examined, both in terms of its floristic and its population structure. Annual seasonal climatic variations greatly modified these populations structure during the course of this study, emphasizing the fact that long-term studies are needed in order to better understand the dynamics of the herbaceous component of the "caatinga" vegetation.

Muito se tem dito e escrito sobre as peculiaridades da administração estratégica nas micro e pequenas empresas (MPE). Pouco, entretanto, tem sido feito em termos de trabalho empírico, de cunho quantitativo, quando comparado com o volume de pesquisa que trata de grandes empresas. Nesse sentido, o presente artigo buscou explorar o processo de formação de estratégias nessas empresas, descrevendo seus principais aspectos e, principalmente, verificando se há características desse processo que podem ser associadas a níveis de desempenho acima (e/ou abaixo) da média. Para tanto, utilizou-se a análise de regressão linear múltipla para entender as relações existentes entre as variáveis do processo de formação da estratégia consideradas no estudo e o desempenho; e, ainda, a análise discriminante para determinar os indicadores que diferenciam os grupos de empresas com desempenho acima e abaixo da média. Os resultados apontaram uma tendência à utilização de processos de formação de estratégia deliberados e formais. Por outro lado, reconhecemos também, uma tendência de inovação e mudança. O desempenho acima da média das micro e pequenas empresas, ao que parece, é resultado de uma receita balanceada desses dois ingredientes.

Este artigo trata da importância das questões de capital de giro na gestão das micro e pequenas empresas (MPE) no Brasil. Apresenta-se uma revisão dos conceitos de capital de giro e da importância das MPE no Brasil, além de uma discussão sobre a relevância de uma gestão financeira de curto prazo eficiente para o sucesso de um empreendimento de pequeno porte. Com características bem definidas, as micro e pequenas empresas são responsáveis pela geração da maior parte dos empregos formais no Brasil; apesar disso, ainda não contam com uma estrutura formal de apoio de crédito. O trabalho aponta como fator relevante para o sucesso das micro e pequenas empresas ter um bom gerenciamento do capital de giro. O mau gerenciamento desse fator contribui para o alto índice de mortalidade dessas empresas. Para que o administrador de capital de giro tenha êxito, é importante que haja um forte entrelaçamento com a administração estratégica, para uma solução definitiva do problema, isto é, que consista numa recuperação de lucratividade da empresa e as consequentes recomposições de seu fluxo de caixa, fazendo com que as micro e pequenas empresas consigam chegar à fase de maturidade.

Este artigo apresenta como a tecnologia de informação pode auxiliar na análise econômica e financeira em uma organização, favorecendo a apreciação dos resultados e de seu desempenho, com vistas à garantia da eficiência e da celeridade desse processo, e oferecendo, ainda, visibilidade das demonstrações financeiras para gestores e sócios. Também analisa como a contabilidade gerencial auxilia as micro e pequenas empresas no processo de planejamento e controle, focalizando a estrutura e o funcionamento dos elementos fundamentais para análise das demonstrações financeiras no apoio à decisão.

Esta pesquisa explora em perspectiva comparada as políticas públicas de empreendedorismo e Micro, Pequenas e Médias Empresas (MPMEs) no Brasil, no Canadá, no Chile e na Itália. A hipótese fundamental é que economias no estágio de inovação tendem a desenvolver mais políticas de empreendedorismo do que as de países no estágio da eficiência. Da mesma forma, países no estágio de inovação tendem a usar menos instrumentos de políticas de MPMEs do que países em estágio de eficiência, quase sempre para incentivar grupos, setores ou regiões em específico. O artigo contribui com a literatura de empreendedorismo ao analisar na prática a convergência/divergência das escolhas de política pública e estágio de desenvolvimento.

Estas linhas se constituem em políticas que pretendem promover o desenvolvimento econômico e social através da geração de trabalho e renda. Este artigo tem como objetivo analisar se as linhas de crédito públicas - Proger e BNDES/Finame - foram acessadas pelas microempresas no município de Chapecó (SC), suas dificuldades e perspectivas. Caracteriza-se como um estudo exploratório descritivo, com abordagem qualitativa. Do universo investigado constatou-se um baixo índice de acesso, existindo mais dificuldades do que perspectivas concretas de que essas linhas se constituam em políticas de inclusão social que promovam o desenvolvimento para o município e região. A ausência de informações dos públicos-alvo a serem beneficiados por essas políticas mostra a necessidade de reformular as diretrizes de exigência necessárias para o acesso ao crédito.

An alternative vector control method, using lambda-cyhalothrin impregnated wide-mesh gauze covering openings in the walls of the houses was developed in an area in the Eastern part of the interior of Suriname. Experimental hut observations showed that Anopheles darlingi greatly reduced their biting activity (99-100%) during the first 5 months after impregnation. A model assay showed high mortality both of mosquitoes repelled by the gauze as well as of those that succeeded in getting through it. A field application test in 270 huts showed good acceptance by the population and good durability of the applied gauze. After introducing the method in the entire working area, replacing DDT residual housespraying, the malaria prevalence, of 25-37% before application dropped and stabilized at between 5 and 10% within one year. The operational costs were less than those of the previously used DDT housespraying program, due to a 50% reduction in the cost of materials used. The method using widemesh gauze impregnated with lambdacyhalothrin strongly affects the behavior of An. darlingi. It is important to examine the effect of the method on malaria transmission further, since data indirectly obtained suggest substantial positive results.
