Este trabalho teve como objetivo verificar a ocorrência de carbamato de etila, o grau alcoólico e a acidez volátil em cachaças e aguardentes de cana. As amostras foram obtidas de fabricantes de São Paulo, Minas Gerais, Rio de Janeiro, Espírito Santo e Ceará, de sistema de produção em destilador de cobre ou coluna de aço inoxidável, e de estabelecimentos registrados ou não. As análises de acidez volátil e de grau alcoólico foram realizadas conforme metodologia descrita pelo Ministério da Agricultura, Pecuária e Abastecimento. Os teores de carbamato de etila foram determinados pelo método de padronização externa, em sistema de cromatografia gasosa acoplada a espectrometria de massa (CG/EM), utilizando-se o modo MSI (Monitoramento Seletivo de Íons) para a quantificação. Os valores obtidos para o grau alcoólico variaram de 32,4 a 49,2 ºGL, sendo o teor médio de 40, 4 ºGL. Observou-se que 17 (22,7%) das bebidas apresentaram o grau alcoólico abaixo de 38 ºGL, que representa o valor mínimo imposto pela legislação vigente. Somente uma cachaça apresentou o grau alcoólico acima de 48 ºGL, limite máximo para esta bebida. Dentre as bebidas analisadas, 24 (32%) apresentaram acidez volátil acima do limite máximo. Os valores obtidos das 75 bebidas para o carbamato de etila variaram de 20 a 948 µg/L, apresentando um teor médio de 378, 25 µg/L. Somente 10 das 75 bebidas apresentaram teores de carbamato de etila abaixo de 150 µg/L, que é o limite máximo permitido pela Instrução Normativa nº 13 de 21 de junho de 2005.

1 - Colour, by itself, does not constitute a solid ground for judging of the age of a brandy because the more or less pronounced colour it acquires through aging can also be obtained by the addition of oack essence to newly distilled brandy. 2 - Urder the same conditions, colour intensity of a brandy wiU depend upon the nature of the wood and the condition of the storage. 3 - In accordance with the experimental results obtained by the present writers it rests no doubt that fermentation facility ferment resistence, produce and quality of the brendy all are factors depending upon the variety of the sugar cane. In addition, the authors presume that the variety of sugar cane has also influence upon the alteration of composition of the brandy submitted to aging. 4 - All aging phenomena of the brandy are accompanied by volume decreasing, what happens in a slow and continuous manner depending upon storage and environment conditions 5 - During brandy aging the alcoholic degree is greatly af- fected by evaporation, increasing or decreasing in accordance to the hygrometric state of the air and the teriperature in the place where the tuns are stored. 6 - The specific weight of the brandy is inversely proportio- nal to its alcoholic degree, but directly proportional to the extracts since the latter indicates the amount of dissolved residues. 7 - Brandy which shows high specific weight together with high alcoholic degree cannot be considered as aged. It may, however, be takens for brandy artificially coloved in order to conceal its actual age. 8 - The amount of extracts increases with aging, since it is the result of the solvent action of the brandy upon the soluble extractive substances of the wood. Notwithstanding that the extract, considered alone, has no value in determining the age of a brandy, since nothing easier is ohan to nake it change artificially. 9 -During aging the brandy get acidity in physiological as well as in physical way, but never by the action of microorganisms. 10 - The estturs produced during aging by the action of acids upon alcohols are the mean factors of the savour (bouquet) of a brandy and therefore every thing shall be done tor fhr estherification of a preserved brandy being not limited. 11 - Aeration increases esther formation, reduces the aging- time and turn better the taste qualities of the brandy. 12 - Due to the great proportion of high alcohols ordinarily found in the brandy, their analytical discrimination will be greatly important. 13 - The high alcohols are not responsable for the disastrous consequences of the alcoholism, but the high percentage of uthyl alcohol present in the brandy. 14 - The aldehydes appear always in high rate in the brazilian brandys in consequence of some intermediary products of the oxydation of the alcohols being left in the brandys during aging. 15 - The age has little or no influence on the quantity of phurphurol present in a brandy whose amount varies greatly the manner in which the wines to be distilled are treated. Wines centrifugalized or filtered before distillation always give rise to brandys poorer in phurphurol as compared with those distilled without these treatments. 16 - Though greatly variable, brandys of good qualities generally show a high residues coefficient, never under 200 mmg 17 - Lusson - Rocques oxydation coefficient cannot be indis- criminately applied to any brandy class, being, on the contrary, specifically destined to cognacs.

This paper describes variations in the profile of the main volatile organic compounds present in Brazilian sugar cane spirits distilled in copper and stainless steel distillers. The main organic compounds: aldehydes, ketones, carboxylic acids, alcohols and esters, were determined through High Performance Liquid Chromatography (HPLC) and High Resolution Gas Cromatography (HRGC). The spirits produced in copper distillers exhibit higher contents of aldehydes with respect to the ones produced in stainless steel. The inverse is true with respect to the higher alcohol and ester contents. No significant variation has been observed for the carboxylic acids.

The quantitative chemical analysis of the Brazilian sugar cane spirit distilled from glass column packaged with copper, stainless steel, aluminum sponge, or porcelain balls is described. The main chemical compounds determined by gas chromatography coupled with flame ionization (FID) and flame photometric (FPD) detectors and liquid chromatography coupled with diode array detector are aldehydes, ketones, carboxylic acids, alcohols, esters and dimethylsulfite (DMS). The spirits produced either in columns filled with copper or aluminum pot still exhibits the lowest DMS contents but the higher sulfate and methanol contents, whereas spirits produced in stainless steel or porcelain showed higher DMS concentration and lower teors of sulfate ion and methanol. These observations are coherent with DMS oxidation to sulfate, with methanol as by product, in the presence of either copper or aluminum.

Tiquira is a traditional homemade alcoholic distillate produced in the Maranhão State (Brazil), gotten from cassava (Manihot esculenta, Crantz.). It can be normally found on street markets. Due to the addition of tangerine leaves, the original tiquira has a bluish color. Samples of this beverage were acquired in the local trade and analyzed from the spectroanalytical point of view. The results indicated that these drinks had been adulterated by the addition of crystal violet, a potencialy hazardous compound. The identification and quantification of crystal violet in 10 spiked samples was accomplished by UV-Vis spectrophotometry through the standard addition method. In order to verify the efficiency of the proposed method, experiments on the quantification and recovery were carried out and the results indicated a content of crystal violet in the 10-6 to 10-7 mol L-1 range.

The objective of this work was to investigate if producers of sugar cane spirits in Minas Gerais, Brazil, have improved the copper content of their products and also if they have adjusted to the new standards of identity for 'cachaça' and 'aguardente'. Seventy-one samples, obtained from May 2003 until March 2004, were analyzed. Mean copper content was 2.30 mg/L, which indicates a significant reduction in levels. The mean alcohol content was 45.6 % v/v. All of the 'aguardente' but only 79% of the 'cachaça' attended to the standard of identity for alcohol content for these products.

A simple, specific and sensitive GC-MS procedure with ion m/z 62 was validated for the determination of ethyl carbamate (EC) in spirits. It exhibited linearity over the concentration of 30 to 600 μg/L with 30 μg/L limit of quantification. EC was detected in 70 of the 71 samples analyzed with levels from 33 to 2609 μg/L (mean level = 893 μg/L). 35% of the samples contained 500 to 1000 μg/L and 23% contained 150 to 500 and 1000 to 1500 μg/L. No significant correlation was found between EC and the levels of copper, pH and alcohol content of the samples.

Herein, we report the concentration of ethyl carbamate (EC) and copper in 380 samples of sugar-cane spirit and 45 samples of manioc spirit as determined by GC-MS and FAAS respectively. The cyanide content determined spectrophotometrically is reported for the manioc spirit. Sugar cane spirit produced by alembic distillation (70,0 µg L-1) shown a lower content of EC than samples produced by column distillation (270 µg L-1). No simple correlation between the content of EC and copper for sugar cane spirit as well among the concentration of EC, copper, and cyanide for manioc spirit could be observed.

Secondary alcohol concentrations in sugar cane spirits from different origins were determined by gas chromatography. A great variation in the concentration of the secondary alcohols was found in these spirits. Of the 33 brands analyzed, 8 of them were found to be out of conformity with the legislation. Sec butanol, for which the maximum allowed concentration level is 100 mg.L-1 in absolute ethanol, was found within a concentration range between 5 mg.L-1, the limit of quantitation (LQ) and 408 mg.L-1 in absolute ethanol. Sugar cane samples from Salinas, MG, were the only ones that exhibited self similarity because of the low concentrations of n-butanol and n-amylic alcohol (< limit of detection LD).

The concentration of 14 organic acids of 50 sugarcane spirits samples was determined by gas chromatography using flame ionization detection. The organic acids analytical quantitative profile in stills and column distilled spirits from wines obtained from the same must were compared. The comparison was also carried in "head", "heart" and "tail fractions of stills distilled spirits. The experimental data were analyzed by Principal Components Analysis (PCA) and pointed out that the distillation process (stills and column) strongly influences the lead spirits' organic acid composition and that producers' operational "cuts off" to produce "tail", "heart" and "head", fractions should be optimized.

The objective of the present study was the evaluation of the presence of organic and inorganic contaminants in samples of aged cachaça from the South of the state of Minas Gerais. Furfural, methanol and copper were determined by colorimetric reactions, while the analyses of ethyl carbamate and acrolein were performed by GC/MS and HPLC, respectively. High levels of furfural and copper were obtained. All samples showed concentrations below the established by legislation for the ethyl carbamate, and for acrolein, only one sample showed higher levels. Methanol was not detected in the samples.

The commercial sugar cane spits redistillation decreased up to 92,5% their ethyl carbamate (EC) original content. Quantitative analysis of EC in 15 samples of sugar cane spirit (alembic and column), fresh distilled and collected in situ demonstrated that the urethane is formed mostly after distillation. The average time to achieve the complete EC formation is independent of the diffuse light presence and of the distillation apparatus used. The k obs for urethane formation at 25 ºC was calculate as (3,3 ± 0,5) x 10-5/s and the activation parameters are: ΔH‡ 34 kcal/mol; ΔS‡ - 69 cal/mol K; and ΔG‡ 54 kcal/mol.

The aim of this study was to evaluate the chemical composition of sugar cane spirits, fermented by different commercial Saccharomyces cerevisiae yeast strains and double distilled by pot still. Sugar cane juices were separately fermented by yeasts CA-11, Y-904, BG-1, PE-2, SA-1 and CAT-1 and distilled by pot still according to the methodology used for whisky production. The alcoholic liquids from first and second distillations were analyzed for concentrations of ethanol, volatile acidity, aldehydes, esters, furfural, higher alcohols and methanol. The sugar cane spirits derived from fermentation by the different yeast strains presented distinct chemical compositions.

The volatile fraction of sugar cane spirits plays a key role in the quality and acceptance of these beverages. The composition of this fraction is dependent on the way sugar cane collection, fermentation, distillation and aging are carried out. The materials used in these processes strongly influence chemical composition. Acetic acid, acetaldehyde, ethyl acetate, ethanol, 2.3-butanedione, n-propanol, 3-methyl-buthanol and isobuthanol were the major volatiles in spirits. Dimethyl sulfide and n-propanol impaired beverage flavor. Ethyl octanoate, 1.1-diethoxy-ethane, 2-phenylethanol and 3-methyl-butanol were important aroma contributors. Ageing allows the extraction of flavor-active components (e.g., phenolic compounds) from wood.

Considerando-se as indesejáveis características sensoriais dos compostos sulfurados e o papel negativo que podem representar na qualidade sensorial das aguardentes, foi realizado um estudo para verificar uma possível correlação entre os teores de enxofre presentes em amostras de aguardentes de cana e sua qualidade sensorial. Nesse sentido foram determinados os teores de enxofre de sete amostras de aguardentes de cana, sendo quatro adquiridas no comércio local, e três obtidas em laboratório, utilizando-se alambiques de cobre, de aço inoxidável e de alumínio. As amostras foram então submetidas a testes de aceitabilidade quanto ao aroma, sabor e impressão global, realizados por uma equipe de 30 provadores, em cabines individuais, utilizando-se escala hedônica de nove centímetros. Os resultados assim obtidos após serem submetidos à análise de variância, ao teste de médias de Tukey e à análise de regressão, revelaram haver correlação negativa significativa (p£ 0,05) entre os teores de enxofre e a aceitabilidade das amostras de aguardentes, em relação a todas as características avaliadas, ressaltando o papel negativo representado pelos compostos sulfurados presentes nas aguardentes de cana e indicando ser o método de Ni Raney uma possível opção a ser adotada no controle de qualidade das aguardentes de cana.
