This study assesses the storage temperature effect on the anthocyanins of pasteurized and unpasteurized açaí pulp. The data was obtained using a pasteurized and lyophilized pulp (PLP) to evaluate the temperature effect (0, 25, and 40 °C). Part of non-pasteurized frozen pulp (NPP) was pasteurized (NPP-P) at 90 °C for 30 seconds; both pulps were stored at 40 °C. The anthocyanin content reduction in the drink was evaluated from the half-life time (t1/2), activation energy (Ea), temperature quotient (Q10), and the reaction rate constant (k). The t1/2 of the PLP anthocyanins stored at 40 °C was 1.8 times less than that stored at 25 °C and 15 times less than that stored at 0 °C; therefore, the higher temperatures decreased the stability of anthocyanins. The pasteurization increased the t1/2 by 6.6 times (10.14 hours for NPP and 67.28 hours for NPP-P). The anthocyanin degradation on NPP-P followed a first order kinetic, while NPP followed a second order kinetic; thus it can be said that the pasteurization process can improve the preservation of anthocyanins in the pulp.

Availability of analytical standards is a critical aspect in developing methods for quantitative analysis of anthocyanins. The anthocyanins cyanidin-3-O-glucoside and cyanidin-3-O-rutinoside were isolated from samples of freeze-dried açaí (Euterpe oleraceae Mart.), which is a round and purple well-known palm fruit in Brazil, and then used as standards. The isolation of the anthocyanins was performed by High Performance Liquid Chromatography (HPLC), using an adapted six-channel selection valve. The identification of anthocyanin pigments in açaí was based on mass spectrometric data for molecular ions and MS-MS product ions and on previous published data. After the collection procedure, standards with a high purity grade were obtained and an external standard curve of each anthocyanin was plotted.

The purpose of this study was to evaluate changes in the structure and some functional properties of biofilms added with modified clays (Cloisite® 15A and Cloisite® 30B) prepared by the casting method. The analysis of the microstructure of the films, scanning electron microscopy (SEM), Optical microscopy (MO), and Infrared Spectroscopy (FTIR) indicated that the addition of clay in the films resulted in the formation of a heterogeneous microstructure, microcomposite or tactoid. Due to the formation of a microcomposite structure, functional properties of the films added with both clays such as opacity, solubility, and permeability to water vapor (PVA), were not better than those of the control film. Thus, it was concluded that although it is possible to produce a film added with modified clays using the casting method, it was not possible to obtain intercalation or exfoliation in a nanocomposite, which would result in improved functional properties.

An indicator can be defined as a substance which indicates the presence or absence of another substance or the degree of a certain reaction through characteristic changes, especially color. Therefore, the aim of this work is to evaluate the performance of a bio-based film with anthocyanin as an indicator of chilled pork deterioration. A film made of cassava starch, glycerol, and grape anthocyanins was prepared using the casting technique. Pork loin samples were put in Petri dishes containing an anthocyanin film on the bottom and stored at 4 ºC. Psychrotrophic microorganism count and the pH of the pork loin samples were analyzed for a 14 day- period. At the same time, the films were subjected to colorimetric analysis using D65 illuminant and the CIELAB system. Chroma and hue angle data for these films were evaluated by Anova and Dunnett's test. An increase in the microbial population and in the pH was observed over the storage period as result of pork deterioration. Color changes were also identified in the film. However, only at the beginning of the storage period was it possible to establish a correlation between film color and pork deterioration. The shelf life end-point could not be clearly detected by the film.

Rancidity development during frozen storage (–20 °C) of sierra fish (Scomberomorus sierra) was studied. Fillets were packed in low-density polyethylene films with and without butylated hydroxytoluene added (BHT-LDPE and LDPE respectively). Fillets stored with no package were used as control. Special attention was given to the effect of previous ice storage (0, 3, 6, 9 and 15 days) on the quality of the frozen fish. Physical (pH and texture) and chemical (peroxide value, PV and thiobarbituric acid index, TBA-i) analyses were carried out. Lipid oxidation increased with ice storage time in fish muscle without film packing, being greater than the film packed muscle (with and without antioxidant). An effect of previous ice storage time was observed on the frozen product (in all treatments). However, fish muscle with film packing containing antioxidant showed less lipid deterioration. Under the conditions applied in this study, the plastic films with antioxidant prevented the lipids oxidation during the cold handling of the sierra muscle.

O presente trabalho foi realizado com o objetivo de verificar os efeitos imediatos da desidratação sobre a qualidade fisiológica de sementes de açaí. Anteriormente à secagem das sementes da cultivar BRS Pará foi determinado o teor de água das mesmas e selecionado o lote daquelas que apresentavam o maior teor de água, que foi de 43,4%. As sementes foram submetidas à secagem, em equipamento com circulação forçada de ar (30±2ºC), até atingirem o teor de água de 37,4%, 30,3% 26,1%, 21,0%, 15,% e 11,9%, constituindo os demais tratamentos. O efeito da secagem sobre a qualidade das sementes foi avaliado por meio das determinações de germinação, tempo médio de germinação, velocidade de emergência, comprimento e massa da matéria seca de plântulas. A secagem até 37,4% de água não produz efeitos fisiológicos prejudiciais imediatos sobre as sementes de açaí, contudo, abaixo de 30,3% há redução progressiva da germinação e do vigor das sementes e ao atingirem 15,1% de teor de água, o desempenho fisiológico é anulado.

Sementes de Euterpe oleracea são consideradas recalcitrantes e demandam ampliação do conhecimento sobre os fatores que interferem na sua conservação. Diante disso, o presente trabalho foi realizado com o objetivo de verificar os efeitos do teor de água da semente e da temperatura do ambiente na manutenção da qualidade das mesmas. Sementes da cultivar BRS Pará, com diferentes teores de água (43,4; 37,4; 30,3; 26,1; 21,0; 15,1 e 11,9%) e acondicionadas em sacos de polietileno foram armazenadas sob temperaturas de 20, 15 e 10 ºC durante 360 dias e submetidas a avaliações periódicas do teor de água, da germinação e do vigor. A secagem parcial até 37,4% de água não produz efeitos imediatos sobre a germinação e o vigor das sementes, a partir daí a secagem favorece, progressivamente, a deterioração das sementes e, ao atingirem 15,1% as sementes não germinam. Após o armazenamento, sementes com 21,0% de água ou menos não germinam independentemente da temperatura. A associação de 43,4% de água na semente e o armazenamento em ambiente a 20 ºC favorece a conservação das sementes por até 270 dias.

O trabalho teve como objetivo verificar os efeitos do teor de água e da temperatura do ambiente de armazenamento na incidência de fungos e na germinação de sementes de açaí (Euterpe oleracea Mart.). Foram utilizadas sementes da cultivar BRS Pará, com teores de água de 43%, 37%, 30%, 26%, 21% e 12%, que foram acondicionadas em sacos de polietileno, armazenadas sob temperaturas de 20 ºC, 15 ºC e 10 ºC, durante 360 dias e submetidas a avaliações bimensais do teor de água, da germinação e da incidência de Penicillium sp., Aspergillus sp., Fusarium solani e Fusarium verticillioides. Foi adotado o delineamento experimental inteiramente casualizado com quatro repetições para o teste de germinação e cinco repetições para os testes de sanidade. Foi observada maior ocorrência de Penicillium sp., e Aspergillus sp em sementes com teores de água abaixo de 30% e mantidas nas temperaturas de 15 ºC e 20 ºC. Enquanto, as maiores incidências de fungos do gênero Fusarium foram encontradas em sementes armazenadas com graus de umidade de 43% e 37% e mantidas em temperatura de 10 ºC.

The main objective of seed coating technology using polymers is to improve the physical, physiological and sanitary characteristics of seed performance. The objectives of the present study were to determine: the plantability of corn seeds treated with insecticide, fungicide and graphite, covered with a film coating; the dust retention on treated corn seeds; and the leaching of applied products on corn seeds covered by a film coating. Seed plantability was determined by counting the skips and double seeds; dust was determined by using fiberglass paper in mg.100 g-1 of seeds; and the leaching was determined by collecting the material leached in a 10 cm layer of sand after irrigation. The following conclusions were made: seeds covered with film coating effectively reduce skips and double seeds; film coating effectively reduces the formation of dust from the seeds; film coated seeds minimize the leaching of the insecticide applied in seed treatment; and there are differences in effectiveness related to film coating type and dosage.
