The occurrence of green skin and soft pulp in 'Golden' papaya fruit during certain seasons has been reported by farmers in the northern of the state of Espirito Santo, Brazil. The objective of this study was to characterize and determine the occurrence of this disorder, which was referred as "early softening disorder". Fruits were harvested weekly for 11 months (from September to July). The fruits were stored at 10°C, and then fruit flesh firmness and skin color were analyzed. The results of the firmness test were submitted to regression analysis assuming a linear trendline. The slope of the curve was called the 'softening index' (SI). Fruits with early softening are characterized by a loss of firmness in less than 10 days, even when stored under refrigeration. Although softened, the skin of the fruit remains partially green. Fruits with the disorder occurred more frequently from mid-summer to mid-autumn (February to May). It is not possible to distinguish early softening disorder fruits from those without the disorder by skin color and flesh firmness analysis at the time of the harvest.

The goal of this research was evaluated the effects of potassium and nitrogen fertilization on the plum (Prunus salicina) fresh fruit quality and after cold storage. The experiment was carried out in a five year-old plum orchard 'Reubennel', located at Araucaria County, Parana State, Southern Brazil, in a Haplumbrept Soil. Potassium fertilizer was applied at 55 and 110 kg/ha/year of K2O, as KCl. Nitrogen fertilizer was applied at 40, 80, 120, 160 and 200 kg/ha/year of N, as urea. It was used a split-plot design in a factorial scheme (2x5). One hundred plum fruits were harvested from each plot, in the same day, when 25 to 50% of the peel presented yellow-reddish color. At harvest and after 17, 27 and 37 days of storage at 0 ± 0.5 ºC, the flesh firmness, the total soluble solids, and the titratable acidity were assessed. Fresh fruit quality was affected by N application, with the best results obtained by applying 40 kg/ha/year of N. The N and K rate of 40 and 110 kg/ha/year, respectively, kept superior fruit quality during the storage. 'Reubennel' cold storage can not exceed 27 days. Fresh and stored 'Reubennel' plum fruit qualities depend on the N and K fertilizer rates.

Em razão da freqüente ocorrência de infecção mista, na natureza, o presente trabalho objetivou estudar o efeito da interação de diferentes espécies de potyvírus em meloeiro (Cucumis melo), melancia (Citrullus lanatus) e abobrinha (Cucurbita pepo). Foram usados os seguintes vírus da família Potyviridae, gênero Potyvirus: Papaya ringspot virus (PRSV); Watermelon mosaic virus, (WMV) e Zucchini yellow mosaic virus, (ZYMV). Os efeitos na sintomatologia das infecções duplas e simples de PRSV, WMV e ZYMV foram avaliados em três híbridos de meloeiro, duas variedades de melancia e abobrinha 'Caserta', em experimentos de casa de vegetação. Os três vírus, isoladamente ou em todas as duplas combinações possíveis, foram inoculados, em plantas dos híbridos de meloeiro Hy Mark, Gold Mine e Orange Flesh, variedades de melancia Crimson Sweet e Charleston Gray e abobrinha 'Caserta', usando-se dez plantas de cada híbrido ou variedade, por combinação de vírus. As inoculações foram efetuadas por meio de extratos de folhas com infecção simples dos respectivos vírus. As plantas inoculadas com cada vírus isoladamente e suas respectivas combinações foram observadas quanto ao aparecimento de sintomas durante 30 dias após as inoculações. Amostras foliares das plantas inoculadas foram, também, testadas por ELISA indireto contra os anti-soros correspondentes para cada vírus. As infecções duplas em meloeiro, melancia e abobrinha revelaram, através da avaliação sintomatológica, que existem interações sinérgicas entre PRSV, WMV e ZYMV. As infecções duplas envolvendo o ZYMV apresentaram alta severidade, exibindo sintomas não encontrados em infecções simples, apesar da severidade nas infecções isoladas do ZYMV.

A podridão-de-cratera dos frutos de meloeiro, causada por Myrothecium roridum, vem ocorrendo com freqüência nos plantios da região Nordeste e ocasionando perdas de produção. Foi analisada a influência do método de inoculação (gota, pulverização, gota com ferimento, pulverização com ferimento e injeção subepidérmica), da intensidade (0, 1, 3, 5, 7, 9 e 10 ferimentos) e idade de ferimento (0, 3 e 6 horas) e da idade do fruto (12, 22 e 27 dias) na severidade da podridão-de-cratera em melão dos tipos Amarelo (cv. AF-682) e Honeydew (cv. Orange Flesh), inoculados com três isolados de M. roridum (CMM-609, CMM-636 e CMM-766). A severidade da doença foi influenciada pela interação entre métodos de inoculação, isolados e cultivares. As inoculações por pulverização ou deposição de gota propiciaram maiores lesões nos frutos submetidos a ferimentos. Entretanto, não foram observados sintomas nos frutos sem ferimentos. A inoculação por injeção subepidérmica, apesar de também provocar ferimento no fruto, apresentou lesões menores. A severidade da doença aumentou com o incremento do número de ferimentos, atingindo o máximo com 10 ferimentos. Verificou-se uma tendência de redução da severidade da doença nos frutos com o aumento da idade do ferimento. As lesões foram significativamente menores nos frutos feridos 6 horas antes da inoculação do que naqueles feridos imediatamente antes da inoculação. A idade do fruto não foi determinante para elevação ou redução da severidade da podridão-de-cratera.

Objetivou-se neste trabalho avaliar o efeito de 1-MCP (300 nL.L¹) nas alterações fisiológicas que ocorrem durante o amadurecimento do melão, tipo Orange cv. Orange Flesh e sua influência no controle da podridão causada por Fusarium pallidoroseum, em dois ambientes de armazenamento, sem refrigeração (29 ± 1 ºC e umidade relativa de 65 ± 2 %) e refrigerado (10 ± 2 ºC e umidade relativa 90 ± 3 %) durante 15 dias e nove dias adicionais em condição ambiente. Avaliouse a atividade respiratória, produção de etileno, perda de matéria fresca, cor da casca e da polpa, firmeza da polpa, pH, acidez total titulável, sólidos solúveis totais, açúcares solúveis totais e severidade da doença. O delineamento foi inteiramente casualizado em arranjo fatorial com quatro repetições/tratamento. Frutos tratados com 1-MCP, armazenados em ambiente sem refrigeração, mantiveram firmeza da polpa praticamente inalterada até o 15º dia e quando em refrigeração mantiveram-se inalterados até o final da avaliação aos 24 dias após a colheita, retardando também a abscisão do pedúnculo, uma variável indicativa de maturação. O tratamento com 1-MCP retardou o amadurecimento de frutos controlando a podridão de F. pallidoroseum. Este tratamento também reduziu a respiração, produção, etileno, perda de peso, não influenciando significativamente as variáveis de qualidade do fruto: coloração da casca e polpa dos frutos, teor de sólidos solúveis totais e açúcares solúveis totais durante o período de armazenamento, bem como pH e acidez total titulável nas diferentes condições de armazenamento estudadas. A refrigeração interagiu positivamente com o 1-MCP, aumentando o tempo de conservação e sanidade do melão.

Banana is the most consumed fruit in the world and Brazil is the second largest producer. Despite its global position, Brazil has an average of 40% losses during the post-harvest period. So, this experiment aimed at evaluating the efficiency of post-harvest treatments to improve the storage of banana cultivars cv. 'Prata', 'Maçã' and 'Nanica'. The fruits were acquired at CEASA with green peel, and were submitted to six different treatments: T- immersion in drinking water for 3 minutes (control), H3 - hot water (50 °C for 3 minutes), H8 - hot water (50 °C for 8 minutes), HP - immersion in hypochlorite 0.2% for 3 minutes, OS - immersion in soybean oil 10% for 3 minutes, and OM - immersion in mineral oil 10% for 3 minutes. The fruits were stored at room temperature at about 21 °C for 14 days and evaluated in three periods (1, 7 and 14 days) comparing peel color, flesh/peel ratio, titratable acidity (TA), soluble solids (SS), SS/TA ratio, and pH. The fruits of cv. 'Prata' and 'Maçã' submitted to the treatments H3, H8 and HP ripened at the same time as the control for peel color, which showed increased soluble solids, flesh/peel ratio, acidity and a decrease in pH. On the other hand, the cv. 'Nanica' did not respond significantly different when compared to the applied treatments and the control. The fruits treated with OM and OS were kept green for a longer time for the cultivars 'Prata' and 'Nanica', but there were some changes on peel color due dark spots in 'Prata' banana and a softening aspect in 'Nanica', indicating some level of toxicity of these treatments. Fruits of the 'Maçã' cultivar continued green with the application of mineral oil, without toxicity symptoms. In conclusion, the treatments applied did not show any advantage for storage of these fruits.

O presente estudo teve como objetivo avaliar as tecnologias pós-colheita utilizadas e a qualidade dos frutos produzidos nas fazendas exportadoras de melões nobres, situadas no Polo Agrícola Mossoró-Assu/RN. Foram estudados os melões Gália 'Solar King', Cantaloupe 'Torreon', Charentais 'Aura Prince' e Orange Flesh 'AF-1749', quanto às seguinte variáveis de qualidade: perda de massa, aparências interna e externa, firmeza da polpa, acidez titulável, pH, sólidos solúveis e açúcares. Os frutos foram avaliados aos 0, 7, 14, 21 e 28 dias de armazenamento refrigerado. O período de transporte foi simulado, armazenando os frutos nas mesmas condições de temperatura e umidade relativa em que são transportados. Conclui-se que as empresas produtoras e exportadoras de melões nobres utilizam um alto nível de tecnologia pós-colheita para manter a qualidade dos frutos dessas cultivares que apresentam pouca resistência pós-colheita. No entanto, foi constatado, pelos altos valores de firmeza e baixos de sólidos solúveis, que são colhidos frutos ainda imaturos. Na avaliação das aparências externa e interna, foi observado, aos 28 dias, que os frutos ainda estavam comercializáveis, apesar de terem atingido a nota limite devido ao aparecimento de defeitos, tais como, manchas, depressões e injúrias, que podem ser reduzidos com o manejo mais adequado dos frutos.

This study was carried out to obtain more information about the physicochemical properties, composition, and antioxidant activity of pitanga fruits (Eugenia uniflora L.), particularly fruits from the State of Rio Grande do Sul, Brazil. Pitanga with different flesh colors (purple, red, and orange) from tree selections cultivated at Embrapa Clima Temperado (RS-Brazil) were analyzed. Only slight differences were observed in the quality parameters and in the proximate and fatty acid compositions among the fruits studied. The extracts from purple-fleshed pitanga had the highest total phenolic and anthocyanin contents along with the highest antioxidant capacity. The antioxidant capacity (DPPH and FRAP assays) of methanolic pitanga extracts was highly correlated with the total phenolic content, but in ethanolic extracts, the anthocyanin content was correlated only with the FRAP antioxidant capacity. Orange fleshed pitanga had higher β-cryptoxanthin and β-carotene levels than those of the red fruit, which had higher lycopene content. The results indicate that the purple-fleshed pitanga, cultivated in Rio Grande do Sul, is a rich source of phenolic compounds and has high antioxidant capacity. The red and orange-fleshed pitanga, on the other hand, are rich sources of carotenoids.

This study was carried out with one of the most important cultivar grown in the State of Sao Paulo, Brazil, which has gained the preference of consumers, due to its sweet taste, intense skin color and large size; however, these fruits are susceptible to chilling injury when cold stored for long periods. The use of controlled atmosphere (CA) with elevated CO2 and reduced O2 concentrations prevent the onset of the chilling symptom. Thus, the effect of three different conditions of controlled atmosphere (CA1, CA2, CA3 and Control) was evaluated in order to extend the storage life of 'Douradão' peaches. After 14, 21 and 28 days, samples were withdrawn from CA and kept in fresh air at 25 ± 1 °C and 90 ± 5% RH to complete ripening. On the day of removal and after 4 days, were the peaches quality characteristics were evaluated. The results showed that the use of CA during cold storage reduced weight loss and prevented postharvest decay. CA2 and CA3 treatments were effective in keeping good quality of 'Douradão' peaches during 28 days of cold storage, the ripe fruits showed reduced incidence of woolliness, adequate juiciness and flesh firmness. CA1 and Control treatments did not present marketable conditions after 14 days of cold storage.

The sensory quality of 'Douradão' peaches cold stored in three different conditions of controlled atmosphere (CA1, CA2, CA3 and Control) was studied. After 14, 21 and 28 days of cold storage, samples were withdrawn from CA and kept for 4 days in ambient air for ripening. The sensory profile of the peaches and the descriptive terminology were developed by methodology based on the Quantitative Descriptive Analysis (QDA). The panelists consensually defined the sensory descriptors, their respective reference materials and the descriptive evaluation ballot. Fourteen panelists were selected based on their discrimination capacity and reproducibility. Seven descriptors were generated showing similarities and differences between samples. The data were analyzed by ANOVA, Tukey test and Principal Component Analysis (PCA). Results showed significant differences in the sensory profiles of the peaches. The PCA showed that CA2 and CA3 treatments were more characterized by the fresh peach flavor, fresh peach appearance, juiciness and flesh firmness, and were effective in keeping the good quality of the 'Douradão' peaches during the 28 days of cold storage. The Control and CA1 treatments were characterized by the mealiness and were ineffective for quality maintenance of the fruits during cold storage.

Baru (Dipteryx alata Vog.), a species of legume found in the Brazilian savannas, was investigated in this study for the composition of its flesh and seed. Thermal analyses, Thermogravimetry (TG), and Differential Scanning Calorimetry (DSC) were used to investigate the proteins in defatted meal, concentrate, and protein isolate. The protein concentrate was extracted at pH 10, followed by a precipitation at the isoelectric point to obtain the isolate that was spray dried. The thermogravimetric curves were obtained under a nitrogen atmosphere with a 100 mL/minutes flow. The initial, final and peak temperatures and mass loss were analyzed. Within the performed temperature ranges studied, the defatted meal and concentrate presented four steps of mass loss, while the isolate showed only two steps. The protein content of defatted meal from Baru nuts was higher than that of the isolate. On the other hand, there was a reduction in enthalpy, which suggests that the process applied to obtain the baru concentrate and isolate led to protein denaturation.

The goal of this study was to evaluate the sensory profile of eleven peach cultivars grown in an experimental orchard located in the city of Lapa (PR, Brazil) in two seasons. The peach cultivars analyzed were Aurora I, Chimarrita, Chiripá, Coral, Eldorado, Granada, Leonense, Maciel, Marli, Premier, and Vanguarda. The sensory analysis was performed by previously trained panelists; 20 of them in the first season and 10 in the second season. The sensory evaluation was performed using Quantitative Descriptive Analysis, in which the following attributes were measured: appearance, aroma, flesh color, flesh firmness, flavor, and juiciness. The results showed preference for sweet, soft, and juicy fruits. Chimarrita, Chiripá, and Coral fruits showed better sensorial performance than the other peach cultivars. It was also verified that the analysis of the attributes aroma, flesh firmness, and flavor is enough for performing the sensory profile of peach fruits for in natura consumption.

In this research, the effects of three different holding periods (6, 12 and 24 hours) prior to storage on the quality attributes of Starking Delicious apples were investigated during storage of 8 months at 0.5 ± 1.0 ºC. Changes in weight loss, flesh firmness, pH values, soluble dry matter amount, titratable acidity values, ascorbic acid contents, and total and reducing sugar content were determined. According to the results, the holding period showed statistically significant changes in the quality attributes of the apples (p < 0.05).

Yellowfin tuna has a high level of free histidine in their muscle, which can lead to histamine formation by microorganisms if temperature abuse occurs during handling and further processing. The objective of this study was to measure levels of histamine in damaged and undamaged thawed muscle to determine the effect of physical damage on the microbial count and histamine formation during the initial steps of canning processing and to isolate and identify the main histamine-forming microorganisms present in the flesh of yellowfin tuna. Total mesophilic and psicrophilic microorganisms were determined using the standard plate method. The presence of histamine-forming microorganisms was determined in a modified Niven's agar. Strains were further identified using the API 20E kit for enterobacteriaceae and Gram-negative bacilli. Physically damaged tuna did not show higher microbiological contamination than that of undamaged muscle tuna. The most active histamine-forming microorganism present in tuna flesh was Morganella morganii. Other decarboxylating microorganisms present were Enterobacter agglomerans and Enterobacter cloacae. Physical damage of tune during catching and handling did not increase the level of histamine or the amount of microorganisms present in tuna meat during frozen transportation, but they showed a higher risk of histamine-forming microorganism growth during processing.

The chemical analysis of flesh and seed of date palm fruit (Kentichi) was evaluated. Carbohydrates were the predominant component in all studied date cultivars (~78.69-83.46 g/100g dry matter), followed by moisture content (~9.23-11.17%), along with moderate amount of fat (~0.56-7.10 g/100g dry matter), protein (~2.16-2.80 g/100g dry matter), and ash (~1.18-1.64 g/100 g dry matter). Some antioxidants (Ascorbic acid, total phenolic, total flavonoid, chlorophyll and carotenoids) were found in different values in both date fruit and seed. The physicochemical properties and antioxidant activity of both flesh and seed oil which was extracted using Hexane, Soxhlet and Modified Bligh - Dyer extraction methods were determined. The experimental results showed that temperature, different solvents and extraction time had significant effect on the yield of the date palm oil and physicochemical properties. Date Flesh oil showed an important free radical scavenging activity towards 1-1-diphenyl-2-picrylhydrazyl (DPPH) free radical.
