Carotenoids are widely distributed in nature, providing yellow, orange or red color in a great number of vegetables, microorganisms and in some animals. Carotenoids act as biological antioxidants and seem to play an important role in human health by protecting cells and tissues from the damaging effects of free radicals and singlet oxygen. Several authors describe the oxidative cleavage of carotenoids in flavor compounds as occuring through chemical or photochemical degradations or through biotechnological processes. Biotransformation of carotenoids seems to be a reasonable alternative to produce flavor compounds since these compounds are considered 'natural' ingredients. In this work we describe the properties of some carotenoids, as well as biotechnological approaches to obtain its oxyfunctionalized derivatives.

A comparison of the phenolic content of several Chilean honeys showed great variations in flavonoid concentration among the samples analysed. Higher amounts of phenolics are found in honey from dry climates. The antioxidant effect of extracts, using ORAC analysis, did not correlate with the flavonoid content or with the total phenolic concentration.

We review here the chemistry of reactive oxygen and nitrogen species, their biological sources and targets; particularly, biomolecules implicated in the redox balance of the human blood, and appraise the analytical methods available for their detection and quantification. Those biomolecules are represented by the enzymatic antioxidant defense machinery, whereas coadjutant reducing protection is provided by several low molecular weight molecules. Biomolecules can be injured by RONS yielding a large repertoire of oxidized products, some of which can be taken as biomarkers of oxidative damage. Their reliable determination is of utmost interest for their potentiality in diagnosis, prevention and treatment of maladies.

The purpose of this work was to determine the safe shelf life of single-base propellants. The kinetic parameters relative to the consumption of the stabilizer diphenylamine (DPA) added to the propellant were determined as a function of the storage and ageing time. High Performance Liquid Chromatography (HPLC) with spectrophotometric detection was used to determine the DPA percentage before and after the artificial ageing at 60, 70 and 80 ºC. The experimental data were very well adjusted to a pseudo-first order kinetic model and the respective kinetic constants are 8.0-10-3 day-1 (60 ºC); 1.9-10-2 day-1 (70 ºC); 1.2-10-1 day-1 (80 ºC). The activation energy was calculated as 130 kJ mol-1 and the half-time for depletion of the DPA at the hypothetical temperature of 40 ºC of storage was estimated as being 6 years.

Sunflower oil is one of the vegetable oils most susceptible to oxidative reaction. Therefore the presence of natural (tocopherol) and/or synthetic (TBHQ) antioxidants is a prerequisite to secure the stability of this oil during its shelf life, especially with the increased use of PET packaging. On determining the total tocopherol content in 10 samples of deodorized sunflower oils, high losses in total tocopherol during deodorization were identified. In order to facilitate researche involving oxidative stability of vegetable oils, a method for isolated quantification of TBHQ using the isocratic elution system was developed.

The contents of total phenolics, flavonoids, and antioxidant activity of bee pollen ethanolic extract were determined and compared to those of commercial antioxidants. Bee pollen extract from the state of Rio Grande do Sul presented antioxidant activity statistically equal to that of α -tocopherol and higher than those of BHT and BHA. A statistically significant correlation was observed between the antioxidant activity and the total phenolics and total flavonoids contents of bee pollen extracts. HPLC technique made the identification of high contents of rutin and myricetin possible, which may partially explain the high antioxidant activity of Brazilian bee pollen.

The aim of this work was to evaluate the antioxidant properties of ginger and rosemary extracts, obtained by supercritical extraction. The extracts were characterized by HPLC, GC-MS, phenolic compounds content and antioxidant activity. The main active compounds were identified and high content of phenolic compounds was observed. The extracts presented high antioxidant activity against the free radicals ABTS+ (350 and 200 mM Trolox/g, for ginger and rosemary, respectively) and DPPH+ (145 and 80 mM Trolox/g, for ginger and rosemary, respectively). These results suggested that the attained extracts are potential substitutes of synthetic antioxidants used in chemical, food and pharmaceutical industries.

An apparatus which allows the direct measurement of the antioxidant capacity of volatiles compounds emitted from some herbs and culinary spices is described. The device comprises: a sample chamber, a mixing chamber, a pump and, a detection system. Volatiles from Clove (Syzygium aromaticum (L.) Merr. & L.M. Perry) were purged and captured into a DPPH-containing solution and changes in the absorbance were recorded on-line. Linear response was observed when temperature was set between 30-53 ºC; nitrogen flow was 15 mL min-1 during 60 min; DPPH concentration was 20 µmol L-1 and a sample size (powdered Clove) ranged between 200-1000 mg.

Growing knowledge on the health-promoting impact of antioxidants in everyday foods, combined with the assumption that a number of common synthetic preservatives may have hazardous side effects has led to increased investigations in the field of natural antioxidants, principally those found in plants. Food industries normally discard plant residues that could benefit the human health and diminish undesirable environmental impact. Once estimated the content of antioxidants in these residues, advantageous economical and social alternatives to the discard are possible, for example, their use for preparation of nutraceuticals to be offered to low-income populations. We present here a broad, although not complete, account of the continuously growing knowledge on the antioxidant capacity of whole fruits, seeds and peels, cereals, vegetal oils and aromatic plants, at several physical forms, as well as a description of the usual methods for evaluating their antioxidant capacity and examples of agroindustrial processes that could be harnessed for the production of antioxidant supplement food, along with research perspectives in the area.

The use of antioxidants either to prevent or retard food's lipids oxidation was approved after inquires that verified their security within a daily intake limit. In this study, the methodology was developed and validated for the analysis of synthetic antioxidants: propylgallate (PG), tert-butylhydroquinone (TBHQ), butylhydroxyanisole (BHA), octylgallate (OG) and butylhydroxytoluene (BHT) in vegetables oils, margarine and hydrogenated fats by high performance liquid chromatographic. The methodology revealed itself efficient, with recovery rates above 90% for all antioxidant substances, besides good linearity in concentration range of 40-240 mg kg-1 (r = 0,999), repeatability with CV < 3,7% and limit of quantification 16.55, 10.32, 1.40, 3.76 and 9.30 mg/kg for BHT, BHA, PG, OG and TBHQ, respectively.

In this investigation antioxidant response and toxicity of metals in receiving water effluent miner in the Blanco river in Pseudokirchneriella subcapitata was assessed. The catalase activity, lipid damage through Tbars, the growth rate of was determined. The result showed an inhibition of the growth rate of P. subcapitata which correlated with increased catalase activity and the lipid liperoxidation. These responses were correlated with the concentrations of copper and iron.

The objective of this work was to study the potentialities of Dipteryx lacunifera Ducke seeds oil for biodiesel production. The yield in oil was of 46.11 ± 0.37%. Methyl biodiesel was prepared by base catalyzed transesterification yielding 88.13% and percentage conversion of triglycerides to corresponding methyl ester of 89.1%. The addition of the tertiary butylhydroquinone (TBHQ, 50 ppm), butylated hydroxytoluene (BHT, 50 ppm) and cashew nut shell liquid (CNSL, 2000 ppm) antioxidants in the biodiesel contributed to the increase of the induction period of 2.97 h for 8.08; 6.06 and 6.02 h, respectively.

Antioxidants are an alternative to prevent or slow the degradation of the biofuel. In this study, it was evaluated the oxidative stability of B100 biodiesel from soybean oil in the presence of three commercial synthetic antioxidants, butylated hydroxyanisole (BHA), butylated hydroxytoluene (BHT) and tert-butylhydroquinone (TBHQ), pure or blended, from the experimental design of simplex-centroid mixture. The reaction order and rate constant were also calculated for all tests. The treatment containing pure TBHQ proved to be the most effective, proven by design, the optimum mix obtained and the rate constant. Binary and ternary mixtures containing TBHQ also showed appreciable antioxidant effect.

Most compounds reinforcements have been used to improve thermals, mechanical and barrier properties of biopolymers films, whose performance is usually poor when compared to those of synthetic polymers. Biodegradables films have been developed by adding mango and acerola pulps in different concentrations (0-17,1% w/w) as antioxidants active compounds to cassava starch based biodegradable films. The effect of pulps was studied in terms of tensile properties, water vapor permeability, DSC, among other analysis of the films. The study demonstrated that the properties of cassava starch biodegradable films can be significantly altered through of incorporation mango and acerola pulps.

Synthetic antioxidants are an alternative to prevent or retard the degradation of biofuels made from vegetable oils. In this study, it was evaluated the oxidative stability of B100 soybean oil biodiesel, in the presence of tercbutylhydroquinone (TBHQ). The results showed that the induction period, that precedes the seeding process, was delayed in the presence of the antioxidant. Moreover, the obtained results suggest that the B100 biodiesel containing TBHQ can present a storage time at 25 ºC, three times longer than the estimated time for the pure B100.
