The objective of this work was to evaluate the chemical and physical characteristics of grains of soybean (Glycine max) cultivars for food processing. The soybean cultivars evaluated were: grain-type - BRS 133 and BRS 258; food-type - BRS 213 (null lipoxygenases), BRS 267 (vegetable-type) and BRS 216 (small grain size). BRS 267 and BRS 216 cultivars showed higher protein content, indicating that they could promote superior nutritional value. BRS 213 cultivar showed the lowest lipoxygenase activity, and BRS 267, the lowest hexanal content. These characteristics can improve soyfood flavor. After cooking, BRS 267 cultivar grains presented a higher content of aglycones (more biologically active form of isoflavones) and oleic acid, which makes it proper for functional foods and with better stability for processing, and also showed high content of fructose, glutamic acid and alanine, compounds related to the soybean mild flavor. Because of its large grain size, BRS 267 is suitable for tofu and edamame, while small-grain-sized BRS 216 is good for natto and for soybean sprouts production. BRS 216 and BRS 213 cultivars presented shorter cooking time, which may be effective for reducing processing costs.

The objective of this work was to evaluate isoflavone concentrations in seeds of different Brazilian soybean cultivars grown in a range of locations and environmental conditions in Brazil. Seeds of 233 cultivars grown in Ponta Grossa, PR, Brazil, during the 2001/2002 soybean season, and of 22 cultivars sown in different locations of Brazilian Northeast, Southeast on South regions were analyzed for total isoflavones, including daidzin, glycitin, genistin and acetylgenistin. The total isoflavones ranged from 12 mg 100 g-1 (cv. Embrapa 48) to 461 mg 100 g-1 (cv. CS 305) among the 233 cultivars grown in Ponta Grossa, and the differences among them are due to genetic effects since all cultivars were grown and collected at the same locatation and year. This is an indication of the possibility of breeding for isoflavone content. Differences in isoflavone content observed in the cultivars grown in different locations permit the selection of locations for optimum isoflavone content (low or high), depending on the uses of soybean. In the Northeast region (5-8°S), higher concentrations of total isoflavones were observed at São Raimundo das Mangabeiras (232 mg 100 g-1) and Tasso Fragoso (284 mg 100 g-1) municipalities, and in the South (23-30°S), isoflavones were higher in Guarapuava, Canoinhas, Vacaria and Campos Novos municipalities, ranging from 130 to 409 mg 100 g-1.

O objetivo deste trabalho foi avaliar os efeitos da cobertura vegetal com palhada de Brachiaria ruziziensis, da aplicação de Trichoderma harzianum 1306 e da interação entre esses métodos na redução da densidade de inóculo de Sclerotinia sclerotiorum, na incidência de mofo-branco e na produtividade da soja. As avaliações foram realizadas entre 2006 e 2008 em Jataí, GO, em lavoura comercial, com média de 136,08 escleródios do patógeno m-2. Em março e outubro de 2006, foram aplicados 0, 0,5, 1 e 1,5 L ha-1 do inóculo de T. harzianum 1306 (2x10(9) esporos viáveis mL-1) em parcelas cultivadas com e sem B. ruziziensis. Após dessecação da braquiária com glifosato (2,5 L ha-1) e plantio da soja 'M-Soy 6101' sobre 10,1 Mg ha-1 de palhada, verificou-se redução de 98% de apotécios. Nos tratamentos com palhada e 0,5 e 1 L ha-1 de T. harzianum, verificou-se 72,1 e 84,1% de escleródios parasitados a mais, respectivamente. Em 2006/2007, o rendimento da soja 'M-Soy 6101' foi inversamente proporcional à população de apotécios por metro quadrado, porém 7,6% menor nos tratamentos com palha. Na safra 2007/2008, a incidência da doença em soja 'M-Soy 7908' foi menor nas parcelas com palhada e 0,5 e 1 L ha-1 de T. harzianum 1306, aplicados apenas no ano anterior. O biocontrole com T. harzianum 1306 em campo e uso da palhada de B. ruziziensis é eficiente e viável para o controle do mofo-branco da soja em áreas de Cerrado.

O objetivo deste trabalho foi avaliar os efeitos gênicos aditivos e não aditivos para as características da espessura das camadas da testa e da lignina presente nessas camadas, e verificar se os caracteres utilizados para avaliação da qualidade fisiológica das sementes de soja se correlacionam com o teor de lignina do tegumento. Foram usadas três cultivares (M-Soy 8400, CD201, CD206) de alta e três (CD215, CD202, Savana) de baixa qualidade fisiológica, para se obterem sementes híbridas F1 e F2, inclusive os recíprocos, pelo sistema de cruzamento dialelo parcial e as linhagens parentais. Os parâmetros primeira contagem de germinação, contagem final de germinação e velocidade de germinação, utilizados para avaliação da qualidade fisiológica, podem ser correlacionados com o teor de lignina. Foram observadas correlações positivas entre o teor de lignina e a percentagem de plântulas normais no teste de envelhecimento ao 5º e 11º dias após a semeadura, com valores maiores de correlação no 5º dia. A correlação entre velocidade de germinação e teor de lignina foi negativa. A análise do dialelo apontou significância do efeito recíproco, o que indica que a espessura das camadas da testa e a espessura de lignina nessas camadas podem ser explicadas pelo efeito materno.

The objective of this work was to evaluate the spatial distribution of thrips in different crops, and the correlation between meterological parameters and the flight movements of this pest, using immunomarking. The experiment was conducted in cultivated areas, with tomato (Solanum lycopersicum), potato (Solanum tuberosum), and onion (Allium cepa); and non-cultivated areas, with weedy plants. The areas with tomato (100 days), potato (20 days), and weeds were sprayed with casein, albumin, and soy milk, respectively, to mark adult thrips; however, the areas with onion (50 days) and tomato (10 days) were not sprayed. Thrips were captured with georeferenced blue sticky traps, transferred into tubes, and identified by treatment area with the Elisa test. The dependence between the samples and the capture distance was determined using geostatistics. Meteorlogical parameters were correlated with thrips density in each area. The three protein types used for immunomarking were detected in different proportions in the thrips. There was a correlation between casein-marked thrips and wind speed. The thrips flew a maximum distance of 3.5 km and dispersed from the older (tomato) to the younger crops (potato). The immunomarking method is efficient to mark large quantities of thrips.

Penicillium citrinum grown in orange juice processing wastes medium under continuous agitation was studied in order to establish optimal conditions (incubation period, incubation temperature, initial pH and nitrogen addition) for biomass and ribonuclease production, as well as, biological depuration of the wastes. Nitrogen addition to wastes medium increased the biomass and ribonuclease production and provides COD reduction. The soy meal shows to be the best nitrogen source. The conditions for a more favorable enzyme and biomass production and COD reduction were initial pH 6.0 and temperature of 27°C. The maximum value obtained for these parameters on optimal conditions of cultivation was 11 U/mL of enzyme, 4 mg/mL of biomass (dry matter) and 55% of COD reduction, in 96 hours of incubation.

In terms of soil fertility, zinc is a micronutrient that is very important in the culture of soy, maize, rice and coffee, because it is a structural and functional component of a great number of enzymes. Therefore, diverse methods have been used to determine zinc in soil. In this work we use colorimetry as a methods of zinc determination in soil using two methodologies of sample digesting, H2SO4/H2O2 and HNO3/H2O2. In order to compare the results, atomic absorption spectrometry (AAS) was used. Results show that colorimetric methods can be used due to good sensitivity and reproducibility, since the zinc calibration curve showed good linearity. Comparing colorimetric methods with AAS we observed that the results were equivalent, as proven by the statistical values of the F and t of Student tests. Furthermore, both methods of soil digesting can be used, leading to a flexible methodology of low-cost for routine zinc analyses in soil.

The contextualized understanding of concepts in Chemistry by students from other areas is a challenging task. In this experiment, the synthesis of biodiesel is done by base catalyzed transesterification of refined soy oil with methanol at room temperature and common glassware found in any chemistry laboratory. The proposal permits introducing several concepts, such as that of emulsion, viscosity and catalysis to illustrate an activity based on an actual problem. In this didactic approach, some common problems of biodiesel production, such as soap formation and phase separation, are introduced into the procedure in order to raise questions and motivate the students to participate in the experimental work and stimulate reflections about critical aspects of biodiesel production. This experiment was carried out in the first semester of 2006, in experimental general chemistry taken by physics and agricultural, civil and chemical engineering students of UNICAMP.

Natural products have been, historically, very important for Brazil. Coffee, sugar and soy were some examples that prove this economical significance. A project that involves phytoproducts should be guide by three main axis: agriculture management for the plants; pharmaceutical; support the national industry and academy. In Brazil, pharmaceutical products contribute negatively to the commerce balance showing an enormous technological dependence in this economical sector. The consolidation of the phytoproduct's chain in Brazil could contribute for the development of the pharmaceutical sector in order to help all domains in natural products area.

Solid lipid nanoparticles (SLN), nanoemulsions (NE), and microemulsions (ME) were prepared by the hot solvent diffusion method, using tristearin or castor oil as oily phase, and soy lecithin and Solutol HS 15 as surfactants. Mean particle sizes ranged from 20 to 215 nm and negative zeta potentials were obtained for all nanocarriers. A HPLC method used to determine resveratrol was specific, linear, exact and precise. The entrapment efficiency was high for all formulations. However, resveratrol content was significantly varied among the lipid nanocarriers. Lipid nanocarrier containing hydrogels exhibiting pseudoplastic behavior were obtained after incorporation of hydroxyethylcellulose in the colloidal dispersions.

The objectives of this work were to produce biodegradable composites using starch and different agro-industrial wastes (coconut fiber, soy bran and sugarcane bagasse) using a baking process, and to study the effects of these components on the resultant composite properties. The addition of different residues yielded trays with different properties. Samples manufactured with soy bran showed the highest density and water uptake at relative humidities ≥ 60%. The addition of sugarcane bagasse resulted in less dense and resistant samples whereas coconut fiber composites showed the highest breaking stress. The samples fabricated in this study represent an alternative packaging option for foods with low water content.

A phytochemical investigation of Maclura tinctoria fruits yielded five flavonoids, including one prenylated flavonol (licoflavonol) and four prenylated isoflavones (wighteone, derrone, alpinum isoflavone, and 6-(2,2-dimethyl-2H-chromen-6-yl)-2-(1-hydroxy-1-methylethyl)-2,3-dihydro-5H-furo[3,2-g]chromen-5-one). The structures of the isolates were established by analyzing their spectroscopic data. Compound 6-(2,2-dimethyl-2H-chromen-6-yl)-2-(1-hydroxy-1-methylethyl)-2,3-dihydro-5H-furo[3,2-g]chromen-5-one is new and the other isolates are described for the first time in this species.

Soft nanoparticles of size 200-400 nm were obtained from soybean protein isolate (SPI). The particles were formed and suspended in water by the coacervation of aqueous suspensions of SPI in hostile buffered aqueous solutions in the presence of surfactants. We investigate the effect of storage, ionic strength, and concentrations of SPI and surfactant on nanoparticle size and zeta potential. Transmission electron microscopy images and scattering techniques (SLS/ DLS) revealed that the particles are spherical, with hydrophilic chains at the surface.

Filtrados das culturas de 40 isolados de bactérias endofíticas, obtidos a partir do sistema radicular de diferentes espécies de plantas foram testados na motilidade, mortalidade e eclosão de juvenis de segundo estádio (J2) de Meloidogyne javanica. As bactérias foram cultivadas em meio líquido "trypic soy broth" por sete dias sob agitação constante a 28 ºC, centrifugadas a 10.000 g por 15 min e o sobrenadante passado em filtro millipore de 0,22 µm de abertura. Cerca de 100 ovos ou 100 J2 foram colocados em contato com cada filtrado bacteriano, para os ensaios de eclosão, motilidade e mortalidade. As avaliações foram feitas após 24 e 48 h para motilidade e mortalidade e após 15 dias para eclosão. Dos isolados testados, sete imobilizaram juvenis em 24 h, não ocorrendo recuperação da mobilidade após serem transferidos para água, provocando, dessa forma, porcentagens de mortalidade semelhantes à induzida pelo nematicida aldicarbe utilizado como controle. Os mesmos isolados também inibiram eficientemente a eclosão dos juvenis. Dois isolados provocaram a morte de mais de 90% dos juvenis após 48 h de exposição. Diferentes diluições dos filtrados dos oito isolados mais eficientes também foram testadas. Maiores índices de mortalidade e redução na eclosão foram provocados pelo filtrado não diluído e pelas diluições em água 1:1 e 1:2 (v/v).

Heterodera glycines and Helicotylenchus dihystera were the two most abundant plant-parasitic nematodes found in two H. glycines race 3-infested fields, Chapadão do Céu, MS and Campo Alegre, MG. These fields had been planted with resistant (R) and susceptible (S) plants to cyst nematodes. In the first field, soybean (Glycine max) FT-Cristalina (S) was susceptible to H. glycines but resistant to H. dihystera, while GOBR93 122243 (R) was just the opposite. In the second field, M-Soy 8400 (R) was more resistant to the spiral nematode than M-Soy8411 (S), but the resistance to the cyst nematode was not different between the two genotypes. The total abundance of nematodes was not different between the susceptible and resistant plants in the two fields, suggesting that H. dihystera and/or bacterial feeders and other trophic groups replaced the reduced abundance of the cyst nematodes in resistant plants. Bacterial feeders acted as a compensatory factor to plant-parasitic nematodes in ecological function. The populations of fungal feeders were higher in GOBR93 122243 (R) than in susceptible FT-Cristalina (S) in Chapadão do Céu, but lower in M-Soy 8400 (R) than in M-Soy 8411 (S) in Campo Alegre. This is being attributed to the different periods of soil samplings that were made at the florescent period in the first field, and at the final growing cycle in the second field. Only four nematodes, H. glycines, H. dihystera, Acrobeles sp. and Panagrolaimus sp. dominated the nematode resistant community GOBR93 122243 (R) in Chapadão do Céu, but dominance was shared by ten genera in Campo Alegre, which explains why the five diversity indexes (S, d, Ds, H' and T) were higher in resistant plants than in susceptible plants in field two.
