The Jackfruit tree is one of the most significant trees in tropical home gardens and perhaps the most widespread and useful tree in the important genus Artocarpus. The fruit is susceptible to mechanical and biological damage in the mature state, and some people find the aroma of the fruit objectionable, particularly in confined spaces. The dehydration process could be an alternative for the exploitation of this product, and the relationship between moisture content and water activity provides useful information for its processing and storage. The aim of this study was to determine the thermodynamic properties of the water sorption of jackfruit (Artocarpus heterophyllus Lam.) as a function of moisture content. Desorption isotherms of the different parts of the jackfruit (pulp, peduncle, mesocarp, peel, and seed) were determined at four different temperatures (313.15, 323.15, 333.15, and 343.15 K) in a water activity range of 0.02-0.753 using the static gravimetric method. Theoretical and empirical models were used to model the desorption isotherms. An analytical solution of the Clausius-Clapeyron equation was proposed to calculate the isosteric heat of sorption, the differential entropy, and Gibbs' free energy using the Guggenhein-Anderson-de Boer and Oswin models considering the effect of temperature on the hygroscopic equilibrium.

The objective of this study was to evaluate the physicochemical and microbiological parameters of pork meat submitted to dry salting. Sodium chloride (NaCl) was added at levels of 0%, 2.5%, 5%, 7.5% or 10% by the meat weight. Dry salting technique was used, which consists of rubbing the sodium chloride manually, followed by a rest period. The data were submitted to analysis of variance using a completely randomized experimental design. The means were compared by Duncan test at 5%. The salting process reduced (P < 0.05) humidity and water activity, and it increased (P < 0.05) ash, chloride, palmitic acid, and water holding capacity levels compared to those of the control. Luminosity (L*) was lower (P < 0.05) in the control, and a* color was more intense in samples with 2.5% NaCl. Cooking loss was lower (P < 0.05) in the samples salted with 5% and 10% NaCl, and similarity was observed between the levels 0 and 7.5% salt. The treatments with levels 0% and 2.5% NaCl had higher mesophilic counts. The other microbiological parameters were within limits established by law. Therefore, salting with 5% NaCl can be used in pork meat in order to maintain the physicochemical and microbiological characteristics of the final product.

Acerola is a fruit that can be consumed in the form of juice and pulp. However, during its processing, a large amount of waste is generated (seed and bagasse). Adding value to these by-products is of great interest, since their use can enrich foods with nutrients and fiber. In this study, we performed phytochemical screening, determined the proximate and mineral composition, bioactive compounds and the technological functional properties of acerola seed flour and acerola bagasse flour. Seeds were dried in a ventilated oven at ± 45 °C and the bagasse was lyophilized. Samples were ground, stored in flasks protected from light. Phytochemical screening revealed metabolites of nutritional and pharmacological interest and no potentially toxic substances in the flours. Seed flour and bagasse flour showed high levels (g 100 g- 1 of dry matter - DM) of soluble fiber: 4.76 and 8.74; insoluble fiber: 75.76 and 28.58, and phenolic compounds: 4.73 and 10.82, respectively. The flours also showed high absorption of water, oil and emulsion stability, presenting potential for inclusion in meat products and bakery products.

The study and use of natural pigments in food industries have increased in recent years due to the toxicity presented by artificial pigments. Monascus ruber is a filamentous fungus that produces red, orange, and yellow pigments under different growing conditions. The growth of health food market has increased in parallel with the growth in biofuels production, such as biodiesel, which generates a concomitant increase in the production of glycerin that can be used in bioprocesses. The objective of this study was to use glycerin and glucose as substrates in the production of natural pigments in a bioreactor. The culture of Monascus ruber was carried out in a Bioflo III reactor with 4 L of working volume and pH, temperature, aeration, and agitation control. The highest pigment production was observed after 60 hours of fungal culture with 8.28 UA510 of red pigment. The pH range remained from 5.45 to 6.23 favoring the release of red pigment in the medium. This study shows the feasibility of the production of natural pigments by Monascus ruber in a bioreactor using a co-product of biodiesel without previous treatment as a substrate.

Pumpkin (Cucurbita maxima), popularly known as squash, is a widely grown vegetable in Brazil. In this study, pumpkin seed flours (PSF) with different granulometries were used: PSF 1 (medium granulometry) and PSF 2 (coarse granulometry) in the preparation of cereal bars (CB) with different combinations with brown oats. Five formulations were prepared: CB-1 (control - 25% brown oats and 0% PSF); CB-2 (12.5% PSF 1 and 12.5% brown oats); CB-3 (25% PSF 1 and 0% brown oats); CB-4 (12.5% PSF 2 and 12.5% brown oats); and CB-5 (25% PSF 2 and 0% brown oats). The acceptance test results were analyzed in a conventional preference mapping which indicated that the bars CB-2 and CB-5 received mostly the maximum hedonistic score. With the objective of developing a cereal bar replacing oats with PSF, the bars CB-2 and CB-5 were compared to the conventional bar CB-1. The cereal bars CB-2 and CB-5 showed an increase in crude protein (87.5% and 62.5%) and in dietary fiber (77% and 44%), respectively. These results allowed the classification of CB-2 and CB-5 as fiber sources; they can, therefore, be classified as light products according to the Brazilian legislation.

The equilibrium moisture content for adsorption and desorption isotherms of mango skin was determined using the static gravimetric method at temperatures of 20, 26, 33, 38 and 44 oC in the 0.056 to 0.873 water activity range. Both sorption curves show a decrease in equilibrium moisture content as the temperature increasing. The hysteresis effect was observed at constant water activity. The Guggenheim, Anderson, and de Boer (GAB) model presented the best fitting accuracy among a group of models and was used to determine the thermodynamic properties of water sorption. Integral enthalpy and integral entropy areas showed inverted values for the adsorption and desorption isotherms over the wide range of water activity studied. These values confirm, in energetic terms, the difference between adsorption and desorption isotherms observed in the hysteresis phenomenon. Finally, the Gibbs free energy revealed that the sorption process was spontaneous for both sorption isotherms.

Abstract Oxygen metabolism in cells causes the production of free radicals, which produce damage, including changes in cell structure and function. Antioxidants are substances that, at low concentrations, slow down or prevent oxidation. Fruits and vegetables contribute to the dietary supply of these compounds. The flora of the Cerrado in Brazil has shown to have high levels of bioactive compounds. This study aimed to characterize the antioxidant activity of the pulp of jatobá-do-cerrado in vitro and in vivo.In vitro antioxidant activity of the aqueous, ethanol and aqueous acetone extracts was evaluated by the DPPH method. We determined total phenols by the Folin-Ciocalteu assay and tannins by the Folin-Denis method.In vivo antioxidant potential of the aqueous acetone extract was evaluated by the TBARS technique. The aqueous acetone extract had the highest antioxidant capacity, followed by the aqueous and ethanol extracts. The same pattern occurred in the extraction of phenols and in the extraction of tannins. In vivo administration of the aqueous acetone extract inhibited lipid peroxidation compared to the control group. The inhibition of peroxidation has increased by elevating the dosage concentration of the extracts, demonstrating a significant antioxidant potential in vivo as well as in vitro.

INTRODUÇÃO: Pacientes com doença renal crônica (DRC) quando submetidos ao exercício resistido (ER) apresentam substancial melhorias de muitas funções, em especial os relacionados ao sistema cardiovascular, respiratório, muscular e na qualidade de vida (QV). Não existem avaliações do impacto de exercício simples e factíveis em pacientes com DRC associada ao Diabetes Mellitus (DM) durante o período intradialítico. OBJETIVO: Estudar o papel do exercício resistido no tratamento e na qualidade de vida em pacientes submetidos à hemodiálise crônica (HD). Assim, submetemos pacientes com DRC e DM ao ER durante a hemodiálise. MÉTODOS: Quinze pacientes em cada grupo: 1: DM com DRC submetidos ao ER; 2: DM com DRC sedentários; 3: DRC e ER e, 4: DRC sedentários. Avaliações durante oito semanas, com ER três vezes na semana. Avaliação laboratorial, teste de força muscular (FM) e QV (SF-36). RESULTADOS: O ER induziu melhoria na glicemia e na FM com discretas, mas significantes alterações na uréia e, K (p < 0,0001). Foi de impacto a melhoria na avaliação dos parâmetros de QV (p < 0,001) com o ER, como a Capacidade Funcional, o Aspecto Físico, redução das Dores (de uma maneira geral), Saúde Geral, Vitalidade, a Função Social, Estado Emocional e na Saúde Mental. Conclusão: O programa de ER (simples e factível) no período intradialítico alterou parâmetros clínicos, na FM e uma significante melhoria na avaliação da QV. O impacto na QV foi importante para o paciente, inclusive envolvendo melhoria em nível familiar e de relacionamento social quando submetidos ao ER.

Sementes de cinco espécies florestais ocorrentes em matas ciliares da bacia do Rio Grande, no Estado de Minas Gerais, foram classificadas de acordo com a tolerância à dessecação e ao armazenamento, como forma de subsidiar futuros programas de propagação e conservação ex situ. Sementes de Miconia argyrophylla DC. (Melastomastaceae), Allophylus edulis (A. St.-Hil., Cambess. e A. Juss.) Radlk. (Sapindaceae), Ixora warmingii Müll. Arg. (Rubiaceae), Aulomyrcia venulosa DC. (Myrtaceae) e Metrodorea stipularis Mart. (Rutaceae) foram coletadas e levadas ao Laboratório de Sementes Florestais, sendo beneficiadas e submetidas à secagem, armazenamento e avaliação da germinação. Após a classificação fisiológica, verificou-se que M. argyrophylla e M. stipularis possuem sementes do tipo ortodoxas, as quais podem ser armazenadas à baixa temperatura (-20ºC) e com baixo conteúdo de água ( <5%), por longos períodos, sem comprometer a viabilidade das mesmas. Por outro lado, as sementes de A. edulis, I. warmingii e M. venulosa foram classificadas como recalcitrantes, não tolerando a secagem a conteúdos de água abaixo de 12%, indicando que práticas de conservação in situ devem ser levadas em consideração para a preservação dos recursos genéticos destas espécies.

Seeds of Magnolia ovata were dried to different water contents to assess the viability and transcript abundance of genes related to seed development, cell cycle, cytoskeleton and desiccation tolerance.The expression of development, cell cycle and cytoskeleton relative genes (ABI3, CDC2-like and ACT2) alone could not explain the germination behaviour of M. ovata seeds in relation to drying damage. Irrespective of their initial water content, the seeds performed in the same way during the initial period of germination and the deleterious effects of desiccation only occurred in later stages. Expression of PKABA1, sHSP17.5 and 2-Cys-PRX did not show a relationship with desiccation. However, the expression patterns of PKABA1 and sHSP17.5 suggested the participation of these genes in protective mechanisms during the imbibition of M. ovata seeds.

A Bacaba (Oenocarpus bacaba) é uma palmeira típica da região amazônica, muito utilizada para alimentação pela população local, na região norte do Brasil. Objetivou-se com esta pesquisa avaliar o efeito de diferentes temperaturas e substratos na germinação das sementes de bacaba e fazer a classificação fisiológica das sementes quanto à secagem e ao armazenamento. Os frutos foram coletados em Caseara, Tocantins, Brasil. A germinação foi realizada em diferentes temperaturas e substratos após o beneficiamento. A viabilidade também foi avaliada após a secagem a diferentes conteúdos de água para classificação fisiológica quanto à secagem e ao armazenamento. O melhor substrato para a germinação de sementes de bacaba foi sobre areia. Não foi verificado efeito da temperatura na germinação das sementes, exceto quando as sementes foram incubadas a 35 °C, temperatura que não foi observada germinação. Apesar de não haver efeito da maioria das temperaturas testadas sobre a porcentagem final de germinação, quando as sementes foram incubadas nas temperaturas de 30 °C e 25 - 35 °C observou-se maior velocidade de germinação. As sementes de bacaba não toleram a secagem abaixo de 0,36 g H2O g-1 peso seco, sendo portanto classificadas como recalcitrantes.

RESUMO:Não é incomum que se tome o diálogo de Schelling conhecido como Clara por um estoque de proposições filosóficas, do qual se arrancam aquelas mais apropriadas para a tese que se queira sustentar. Procuramos nos afastar desse tipo de procedimento. Tomando seriamente seu tratamento literário, trata-se antes de investigar esse diálogo, apreendendo-o como um modelo, ensaiado pelo filósofo, para uma crítica do presente. Para tanto, analisamos a oscilação entre diálogo e narrativa, de modo a compreender sua composição e princípio formal, o que acarreta uma reflexão, interna à obra, sobre o tempo histórico, o qual se apresenta numa dialética entre inatualidade e presente.
