A prensagem contínua de grãos oleaginosos é um método rápido, fácil e de baixo custo para a obtenção de óleos, sendo uma alternativa viável para pequenas comunidades de agricultores. A eficiência deste método é bem inferior àquela conseguida pelo tradicional método de extração por solvente, sendo afetada diretamente pelas condições iniciais dos grãos, como o teor de umidade e temperatura, e por aspectos construtivos da prensa, como dimensionamento do seu eixo e da gaiola. No presente trabalho, avaliou-se por meio de um planejamento experimental, aliado à metodologia de superfície de resposta, a influência da temperatura e do teor de umidade dos grãos de amendoim no rendimento em óleo bruto. As faixas avaliadas foram entre 8 e 10% para o teor de umidade e entre 25 e 60 °C para a temperatura. Os óleos brutos obtidos foram caracterizados conforme metodologia oficial da AOCS. As duas variáveis estudadas foram significativas para o nível de confiança adotado (95%), sendo as condições ótimas localizadas próximas aos maiores valores de temperatura e teor de umidade dos grãos. A faixa de temperatura de 50 a 65 °C e o teor de umidade de 10 a 10,8% correspondem a rendimentos máximos.

O presente trabalho avaliou a utilização de farelo de trigo e polidextrose como fontes de fibra no enriquecimento de biscoitos de polvilho. Utilizou-se a Metodologia de Superfície de Resposta para verificar a influência da adição destes ingredientes nos parâmetros de qualidade dos biscoitos. As respostas avaliadas do planejamento experimental fatorial completo 2² foram o volume específico, a dureza instrumental, a umidade e a cor - parâmetros L, a* e b*. Para as respostas: volume específico e dureza instrumental, todos os fatores foram significativos, a 95% de confiança, com R² = 0,9307 e 0,8091, respectivamente. Pela análise das superfícies geradas, pode-se observar que o farelo de trigo e a polidextrose reduziram o volume específico e o farelo teve maior efeito no aumento da dureza. A substituição de polvilho azedo por farelo de trigo e polidextrose nas proporções de 1,5 e 5%, respectivamente, gerou uma amostra rica em fibras, com 6,23% de fibra alimentar (calculado teoricamente), sem prejuízo considerável para as características de expansão e dureza, e com boa aceitação sensorial.

Objetivou-se com este trabalho isolar quantificar e investigar em amostras de Staphylococcus spp. isoladas de queijos de coalho, a presença dos genes toxigênicos sea-see, seg-sej, tst, eta e etb através da Reação em Cadeia da Polimerase (PCR). Foram verificadas contagens de Staphylococcus coagulase positiva (SCP) variando de 10² a 10(6) UFC.g-1. Os genes toxigênicos tst, sec, sed, seg, seh, sei e sej foram identificados em 18 dos 20 isolados de Staphylococcus spp. com os seguintes percentuais 5, 11, 9, 20, 16, 25 e 14% respectivamente. A presença de elevado percentual de isolados contendo diferentes genes toxigênicos é preocupante para a saúde do consumidor pela possibilidade de produzirem toxinas responsáveis por intoxicações alimentares. A ocorrência de vários genes toxigênicos em amostras de Staphylococcus coagulase negativa é outro fato importante, pois no Brasil não existe legislação com determinação de limites para Staphylococcus coagulase negativa em alimentos.

Origanum vulgare L. essential oil has been known as an interesting source of antimicrobial compounds to be applied in food conservation. In this study, the effect of O. vulgare essential on the growth of A. flavus, A. parasiticus, A. fumigatus, A. terreus and A. ochraceus was assessed. The essential oil had a significant inhibitory effect on all assayed fungi. MIC was 0.6 µL.mL-1 for all fungi, while MFC was in the range of 1.25-2.5 µL.mL-1. The radial mycelial growth of A. flavus and A. parasiticus was strongly inhibited over 14 days at 0.6, 1.25 and 2.5 µL.mL-1 of oil in solid medium. The mycelial mass of all fungi was inhibited over 90% at 0.6 and 0.3 µL.mL-1 in liquid medium, while it was 100% at 1.25 µL.mL-1. The oil in a range of concentrations (0.6 to 2.5 µL.mL-1) was effective in inhibiting the viability and spores germination in a short time of exposure. The main morphological changes caused by the essential oil in A. parasiticus observed under light microscopy were absence of conidiation, leakage of cytoplasm, loss of pigmentation, and disrupted cell structure. These results demonstrated that O. vulgare essential oil produced a significant fungitoxic effect supporting its possible rational use as anti-mould compound in food conservation.

Functional and technological properties of wheat depend on its chemical composition, which together with structural and microscopic characteristics, define flour quality. The aim of the present study was to characterize four Brazilian wheat cultivars (BRS Louro, BRS Timbauva, BRS Guamirim and BRS Pardela) and their respective flours in order to indicate specific technological applications. Kernels were analyzed for test weight, thousand kernel weight, hardness, moisture, and water activity. Flours were analyzed for water activity, color, centesimal composition, total dietary fiber, amylose content and identification of high molecular weight glutenins. The rheological properties of the flours were estimated by farinography, extensography, falling number, rapid visco amylography, and glutomatic and glutork equipment. Baking tests and scanning electron microscopy were also performed. The data were subjected to analysis of variance and principal component analysis. BRS Timbauva and BRS Guamirim presented results that did not allow for specific technological application. On the other hand, BRS Louro presented suitable characteristics for the elaboration of products with low dough strength such as cakes, pies and biscuits, while BRS Pardela seemed suitable for bread and pasta products.

This study aimed to verify the hygienic-sanitary working practices and to create and implement a Hazard Analysis Critical Control Point (HACCP) in two lobster processing industries in Pernambuco State, Brazil. The industries studied process frozen whole lobsters, frozen whole cooked lobsters, and frozen lobster tails for exportation. The application of the hygienic-sanitary checklist in the industries analyzed achieved conformity rates over 96% to the aspects evaluated. The use of the Hazard Analysis Critical Control Point (HACCP) plan resulted in the detection of two critical control points (CCPs) including the receiving and classification steps in the processing of frozen lobster and frozen lobster tails, and an additional critical control point (CCP) was detected during the cooking step of processing of the whole frozen cooked lobster. The proper implementation of the Hazard Analysis Critical Control Point (HACCP) plan in the lobster processing industries studied proved to be the safest and most cost-effective method to monitor each critical control point (CCP) hazards.

AbstractThe aim of this study was to analyze the impact that heat treatment with salts and freezing processes on the sensory, instrumental, and physico-chemical characteristics of fried potatoes of the Monalisa cultivar. The potatoes were blanched in distilled water (P); sodium chloride solution (B1); calcium chloride solution (B2), and a solution with both of these salts (B3). They were then pre-cooked and frozen for 24 hours and for 30 days. After frying, sensory characteristics were analyzed (color, texture, flavor, oiliness), along with overall preference and instrumental determinations of texture, color, and oil content. Further tests were conducted on the sample with the best results in the sensory analysis (B1), along with sample P as a control, to determine granule microstructure, carbohydrate fractions, glycemic index, and glycemic load. Blanching B3, despite reducing oil absorption and providing less oiliness, obtained lesser overall preference. Freezing for 30 days increased the lightness, except for when sodium chloride was used, which intensified the color yellow. The use of sodium chloride did not interfere with the type of starch granules, nor with the formation of resistant starch; however, longer freezing time reduced the glycemic index and concentrated the dietary fiber content. All samples exhibited low glycemic index and moderate glycemic loads.
