This article shows the genesis of the law of volumes of combining gases, formulated by Gay-Lussac in 1808, and how it allowed the expression of the composition of organic compounds in terms of whole numbers of volumes, thus leading to the first classification of organic compounds, formulated by Dumas and Boullay in 1828. It was from this work that Organic Chemistry began to shed its purely taxonomic nature, analogous to what prevailed in Natural History, and to then develop in a vigorous and continuous process, initiating what may be the most significant historical phenomenon in the History of Chemistry of the nineteenth century.

This study evaluated the level of the metals Pb mg kg-1 and Cd mg kg-1 found in plant species and the contribution of the levels detected in contaminated soils located in the urban area of the city of Santo Amaro, Bahia. Levels were determined by graphite furnace and flame atomic absorption spectrometry. The results showed the presence of Pb and Cd in plant species at levels ranging from 0.18 to 118.2 mg kg-1 and 0.04 to 7.29 mg kg-1, respectively. The concentration values obtained varied according to the plant species and were not strongly influenced by the concentration values detected in the soil.

The aim of this study was to investigate the sorption and desorption of thiamethoxam in contrasting soils under the effect of organic acids. The results showed that MTo sorption had higher Kd. The presence of organic acids increased sorption and reduced desorption of thiamethoxam at MTo. The opposite was observed for the LVdf where the presence of 400 µmol L-1 of acid reduced the sorption of thiamethoxam in a concentration of 20 µmol L-1, not influencing desorption. The dynamics of organic acids with minerals from the soil particles were clarified by infrared analysis.

The identification and manipulation of chemical compounds involved in vital activities of arthropods have the potential for developing less aggressive pest control strategies. Herbivory induces the emission of volatile organic compounds involved in the recruitment of natural enemies, plant-plant interactions and repellency of other herbivores. In this report, we review the main chemical groups of volatile organic compounds and their ecological functions, provide an overview of the signal transduction pathways activated upon herbivory, and review the current state of knowledge for practical applications in pest management. We conclude by proposing perspectives for future research.

Chloropropanols are a well-known group of food processing contaminants. They are formed through the reaction between lipids and chlorides when submitted to thermal treatment, and can be found in free and bound form. Although free chloropropanols were identified around 30 years ago, the occurrence of bound forms, especially 3-MCPD, and glycidyl fatty acid esters, has only recently been reported in several food products. Dietary exposure to these ester-bound compounds has been considered a priority food safety issue since free forms can be potentially released through the action of gut lipases, representing a major toxicological concern.

This work reports a practical case based on the use of microwave-assisted derivatization and GC-MS for the analysis of glucose. Using two different methods for derivatization, one reference compound and the calculated dipole moment, all the isomers of glucose were identified. Identification was corroborated for the assignment of structures using the mass spectra. With this work, students are expected to associate different types of information to solve the complex problem of the analysis of glucose.

Validation of a rapid method for the determination of ascorbic, citric, fumaric and tartaric acids in stored pulp fruit and its application as a quality parameter was performed. The validation parameters showed that for the four evaluated acids, the method presented low limits of detection (LOD) and quantification (LOQ), indicating good precision and accuracy, thus representing an important tool for quality assessment of stored fruit pulp. The results showed that the concentration of organic acids generally decreased with longer storage time in the fruit pulp under study. Amongst all the organic acids under investigation, ascorbic proved the least stable.

The impacts derived from the emission of volatile organic compounds (VOC) into the atmosphere can have harmful consequences for human health and the environment. In this regard, the present paper proposes the construction of a low-cost cold plasma reactor for the treatment of these compounds. Tests with the prototype were performed to confirm the efficiency for BTEX (benzene, toluene and xylene) samples. Degradation efficiency was confirmed by the gas chromatography method.

Resorcinol-formaldehyde (RF) organic gels have been extensively used to produce carbon aerogels. The organic gel synthesis parameters greatly affect the structure of the resulting aerogel. In this study, the influence of the catalyst quantity on the polymeric solution sol-gel process was investigated. Sodium carbonate was used as a basic catalyst. RF gels were synthesized with a resorcinol to formaldehyde molar ratio of 0.5, a resorcinol to catalyst (R/C) molar ratio equal to 50 or 300, and a resorcinol to solvent ratio of 0.1 g mL-1. The sol-gel process was evaluated in situ by Fourier transform infrared spectroscopy using a universal attenuated total reflectance sensor and measurements of the kinematic viscosity. The techniques showed the evolution of the sol-gel process, and the results showed that the lower catalyst quantity induced a higher gel point, with a lower viscosity at the gel point. Differential scanning calorimetry was used to investigate the thermal behavior of the RF dried gel, and results showed that the exothermic event related to the curing process was shifted to higher temperatures for solutions containing higher R/C ratios.

Microemulsions (MEs) are thermodynamically stable systems consisting of nanosized droplets dispersed in a solvent continuous medium (known as pseudo-phase), which is immiscible with the dispersed phase. These systems consist of water, a hydrophobic solvent called "oil," an amphiphile and often, a co-surfactant that is normally a medium chain alcohol. A large number of publications describe the importance of MEs in many branches of chemistry, and there is an intensive search for new applications. In addition, MEs have been applied in many areas, including oil extraction, removal of environmental pollutants from soils and effluents, dissolution of additives in lubricants and cutting oils, cleaning processes, dyeing and textile finishing, as nanoreactors to obtain nanoparticles of metals, semiconductors, superconductors, magnetic and photographic materials, and latex. However, only some studies indicate the potential applications of MEs in food and even fewer evaluate their chemical behavior. Potential applications of MEs in food comprise dissolution of lipophilic additives, stabilization of nutrients and biologically active compounds, using as an antimicrobial agent and to maximize the efficiency of food preservatives. This work consists of a literature review focusing on composition and physical and chemical characteristics of microemulsions. Despite the small number of studies on the subject reported in the literature, we demonstrate some potential applications of MEs in food chemistry.
