In Brazil, several little economically explored fruits have good potential as raw material for the agro-industry. This study aimed to produce and determine the physical-chemical and sensory characteristics of light jambolan jelly. This fruit has intense purple color, which gave the jellies - both standard and light - a quite attractive visual aspect. The light jellies exhibited similar physical-chemical characteristics to the ones developed through the conventional method and; with the proportion of sweeteners used, the caloric values of the formulations were reduced to the range of 41 to 53%, attending the requirements of the Brazilian legislation for this type of product. The sensory profile obtained for the 4 light formulations developed, clearly showed the tasters' preference for the jelly elaborated with the association of cyclamate and saccharin. Thus, the results revealed good perspectives for the application of this fruit in the food industry.

The objective of this study was to obtain babassu coconut milk powder microencapsulated by spray drying process using gum Arabic as wall material. Coconut milk was extracted by babassu peeling, grinding (with two parts of water), and vacuum filtration. The milk was pasteurized at 85 ºC for 15 minutes and homogenized to break up the fat globules, rendering the milk a uniform consistency. A central composite rotatable design with a range of independent variables was used: inlet air temperature in the dryer (170-220 ºC) and gum Arabic concentration (10-20%, w/w) on the responses: moisture content (0.52-2.39%), hygroscopicity (6.98-9.86 g adsorbed water/100g solids), water activity (0.14-0.58), lipid oxidation (0.012-0.064 meq peroxide/kg oil), and process yield (20.33-30.19%). All variables influenced significantly the responses evaluated. Microencapsulation was optimized for maximum process yield and minimal lipid oxidation. The coconut milk powder obtained at optimum conditions was characterized in terms of morphology, particle size distribution, bulk and absolute density, porosity, and wettability.

Abstract This study aimed to characterize pomegranate seed oil and evaluate its quality and stability parameters against those of linseed oil. The profile of fatty acids and phytosterols and the content of tocopherols were analyzed by gas chromatography and high performance liquid chromatography, respectively. The quality of both oils was assessed as recommended by the American Oil Chemists' Society (AOCS) and stability was evaluated using 2,2-diphenyl-1-picrylhydrazyl (DPPH), β-carotene bleaching (coupled oxidation of β-carotene/linoleic acid) and Rancimat® assays. While α-linolenic acid (52%) was the most abundant fatty acid in linseed oil (LO), punicic acid (55%) was highest in pomegranate seed oil (PSO). Tocopherols and phytosterols (175 and 539 mg/100 g, respectively) were greater in PSO than in LO (51 and 328 mg/100 g, respectively). Both oils met quality standards. The β-carotene bleaching and the DPPH assays showed greater oxidative stability for PSO than for LO. The Rancimat® method, on the other hand, indicated low stability for both oils.

Abstract The objective of this work was to evaluate the antioxidant activity of protein hydrolysates obtained by the enzymatic hydrolysis of okara using an endopeptidase (Alcalase) and exopeptidase (Flavourzyme). The reaction was monitored by the pH-stat procedure in which five aliquots were collected during the hydrolysis by each enzyme, corresponding to different degrees of hydrolysis (DH). The antioxidant activities of the aliquots were evaluated by the ABTS, DPPH and FRAP methods. For the hydrolysates obtained using Alcalase, the antioxidant activities increased from: 68.6 to 99.5% (ABTS), 14.5 to 17.7% (DPPH) and 222.6 to 684.9 µM Trolox (FRAP), when the DH varied from 0 to 33.6%. With respect to Flavourzyme, the results were: 67.2 to 88.2% (ABTS), 9.5 to 18.5% (DPPH) and 168.0 to 360.3 µM Trolox (FRAP), when the DH increased up to 5.8%. The results showed that the protein hydrolysates had antioxidant capacities, which were influenced by the degree of hydrolysis and the type of enzyme.

INTRODUTION: Steroid resistant idiopathic nephrotic syndrome (SRINS) in children is one of the leading causes of progression to chronic kidney disease stage V (CKD V)/end stage renal disease (ESRD). OBJECTIVE: The aim of this retrospective study is to evaluate the efficacy of immunosuppressive drugs (IS) and to identify risk factors for progression to ESRD in this population. METHODS: Clinical and biochemical variables at presentation, early or late steroid resistance, histological pattern and response to cyclosporine A (CsA) and cyclophosfamide (CP) were reviewed in 136 children with SRINS. The analyzed outcome was the progression to ESRD. Univariate as well as multivariate Cox-regression analysis were performed. RESULTS: Median age at onset was 5.54 years (0.67-17.22) and median follow up time was 6.1 years (0.25-30.83). Early steroid-resistance was observed in 114 patients and late resistance in 22. Resistance to CP and CsA was 62.9% and 35% respectively. At last follow-up 57 patients reached ESRD. The renal survival rate was 71.5%, 58.4%, 55.3%, 35.6% and 28.5% at 5, 10, 15, 20 and 25 years respectively. Univariate analysis demonstrated that older age at onset, early steroid-resistance, hematuria, hypertension, focal segmental glomerulosclerosis (FSGS), and resistance to IS were risk factors for ESRD. The Cox proportional-hazards regression identified CsAresistance and FSGS as the only predictors for ESRD. CONCLUSION: Our findings showed that CsA-resistance and FSGS were risk factors for ESRD.

Resumo Arterite de Takayasu é uma doença rara, de etiologia desconhecida, que acomete a aorta e seus principais ramos. É uma patologia, geograficamente mais comum no Sudeste Asiático, que acomete principalmente mulheres em idade reprodutiva. A apresentação clínica é inespecífica, com sinais e sintomas que variam de acordo com o seguimento arterial acometido. O vaso mais comumente afetado é a artéria subclávia, enquanto a estenose de artéria renal é relativamente incomum. Comprometimento cardíaco e associação com outras patologias também podem estar presentes. Apresentamos neste relato o caso de uma paciente idosa com diagnóstico tardio de arterite de Takayasu e várias comorbidades ou complicações relacionadas.

A semente de aveia branca apresenta dormência quando recém colhida, sendo normalmente superada após um período de armazenamento, o que torna o teste de germinação algumas vezes ineficaz para avaliação da sua viabilidade. O objetivo neste trabalho foi estudar diferentes metodologias para a condução do teste de tetrazólio em sementes de aveia branca, visando estimar rapidamente a sua viabilidade. Foram utilizados cinco lotes de sementes de aveia branca, das cultivares Louise e IAC-7, testando-se os seguintes procedimentos: a) hidratação entre folha de papel toalha umedecida e embebição direta em água a 20 °C, por 18 h; b) coloração por 2 h, sobre papel e imersão direta na solução; c) concentrações de solução de tetrazólio a 0,1%, 0,5% e 1,0%. Paralelamente, foram estudados dois tipos de preparo: corte longitudinal da semente através do embrião, com descarte de uma das metades e imersão da outra na solução de tetrazólio, a 30 °C, e corte com colocação das duas metades sobre papel filtro umedecido com a solução de tetrazólio, a 40 °C. Com base nos resultados obtidos, concluiu-se que o teste de tetrazólio é promissor para avaliação rápida da viabilidade de sementes de aveia branca, com hidratação entre papel (18 h a 20 °C), coloração sobre papel (2 h, a 40 °C) umedecido com solução de tetrazólio a 1,0%;

Neste trabalho objetivou-se avaliar a viabilidade das sementes de Catanduva (Piptadenia moniliformis Benth.) armazenadas por 210 dias, em ambiente controlado e condição ambiental não controlada (sala de laboratório), acondicionadas em saco plástico, saco de papel e frasco de vidro. O delineamento experimental foi inteiramente casualizado, em esquema de parcela sub-subdividida, com os ambientes alocados na parcela principal, as embalagens nas sub-parcelas, sendo as sub-subparcelas constituídas dos tempos de armazenamento (0, 30, 60, 90, 120, 150, 180 e 210 dias). Os ensaios foram realizados em laboratório e em casa de vegetação. Em laboratório foram avaliados, a cada 30 dias, a porcentagem de germinação e o índice de velocidade de germinação. Em casa de vegetação, a cada 30 dias, foi avaliada a emergência de plântulas. A germinação das sementes e a emergência das plântulas de catanduva decresceram em função do tempo de armazenamento durante 210 dias. As sementes de catanduva podem ser acondicionadas tanto em embalagem de vidro quanto em sacos plásticos sem perda do seu potencial fisiológico por 210 dias, sendo o ambiente controlado (18-20 ºC, ±60% UR) o mais adequado.

Maize seeds, infected by Stenocarpella species, are important sources of inoculum for the introduction and dissemination of stalk and ear rot and macrospore leaf spot diseases. The use of healthy seeds is an important strategy for the preventive control of these diseases. However, one of the difficulties in the health quality control programs for maize seeds is the availability of a reliable and quick method for detecting these fungi during routine seed analyses. Therefore, the objective of the present study was to investigate the possibility of using the PCR technique as an alternative method for accurately detecting these pathogens in maize seed samples. Maize seeds were kept in contact with S. maydis colonie developed in PDA media containing mannitol at -1.4 MPa for 72 h. The seed samples used in this study were prepared with infected seeds at incidences of 100, 20, 10, 2, 1 and zero %.The primers used were able to detect S. maydis fungi in association with seeds with a maximum of 2% , however those primers were not able to differentiate between the two species.
