Female Nile tilapia incubate fertilized eggs in their mouth until they are released as alevins. Consequently, the female may not eat during this period. Thus, it would be expected that female Nile tilapia are more adapted to recovering from fasting than males, which do not display this behavior. To test this hypothesis we conducted an experiment with two groups of fish consisting of 7 males and 7 females each, with one fish per aquarium. The experiment was divided into three phases involving adjustment of the animals to experimental aquaria (0-15th day), fasting (16th-27th day), and refeeding (27th-42nd day). Compensatory growth performance was assessed by specific growth rate, weight, food conversion efficiency and food intake. Food conversion efficiency increased after fasting with a similar rate for both sexes. However, specific growth rate, food intake and weight gain (%) were significantly higher in males than in females in the refeeding phase. Thus, we conclude that male Nile tilapia can compensate for a fasting period more efficiently than females, refuting our hypothesis. A possible mechanism involved in the greater male compensation is that they presented greater hyperphagia than females, concomitantly with a similar rate of food conversion efficiency for both sexes during refeeding, which would probably be provoking greater growth in males.

We investigated the association of eye color with the dominant-subordinate relationship in the fish Nile tilapia, Oreochromis niloticus. Eye color pattern was also examined in relation to the intensity of attacks. We paired 20 size-matched fish (intruder: 73.69 ± 11.49 g; resident: 75.42 ± 8.83 g) and evaluated eye color and fights. These fish were isolated in individual aquaria for 10 days and then their eye color was measured 5 min before pairing (basal values). Twenty minutes after pairing, eye color and fights were quantified for 10 min. Clear establishment of social hierarchy was observed in 7 of 10 pairs of fish. Number of attacks ranged from 1 to 168 among pairs. The quartile was calculated for these data and the pairs were then divided into two classes: low-attack (1 to 111 attacks - 2 lower quartiles) or high-attack (112 to 168 attacks - 2 higher quartiles). Dominance decreased the eye-darkening patterns of the fish after pairing, while subordinance increased darkening compared to dominance. Subordinate fish in low-attack confrontations presented a darker eye compared to dominant fish and to the basal condition. We also observed a paler eye pattern in dominants that shared low-attack interactions after pairing compared to the subordinates and within the group. However, we found no differences in the darkening pattern between dominants and subordinates from the high-attack groups. We conclude that eye color is associated with social rank in this species. Moreover, the association between eye color and social rank in the low-attack pairs may function to reduce aggression.

The objective of the present study was to investigate the influence of the establishment of dominance relationships and social stress on plasma cortisol and metabolite levels in Nile tilapia (Oreochromis niloticus). During the 30-day experiment, the fish weighing 236 ± 29 g were kept in individual aquaria, except for two pairings lasting 6 h each. Blood samples were taken from the animals before and after pairing. Display, approach, attack, rebuff, chase flight, and coloration were carried out on days 16 and 30. Activities and behaviors characteristic of the establishment of dominance relationships were described. It was possible to classify all experimental fish (N = 30) as dominant or subordinate. No differences were detected between dominant (N = 15) and subordinate (N = 15) fish during isolation or after pairing in cortisol (isolated: 5.76 ± 0.98 vs 5.42 ± 0.63; paired: 10.94 ± 1.62 vs 11.21 ± 2.45 µg/dl), glucose (isolated: 60.02 ± 4.9 vs 67.85 ± 16.16; paired: 110.44 ± 15.72 vs 136.26 ± 22.46 mg/dl), triglyceride (isolated: 167.87 ± 5.06 vs 185.68 ± 7.24; paired: 210.85 ± 13.40 vs 221.82 ± 12.70 mg/dl) or total protein levels (isolated: 7.01 ± 0.42 vs 6.69 ± 0.59; paired: 9.21 ± 0.62 vs 9.51 ± 0.66 g/dl). However, when isolated (N = 30) and paired (N = 30) tilapia were compared, there were significant differences in cortisol and metabolite levels. The similar response presented by dominant and subordinate tilapia indicates that establishment of dominance relationships was a stressor for both groups.

We investigated the effects of environmental color on the reproductive behavior of Nile tilapia, Oreochromis niloticus. Two environmental colors were tested by covering the aquarium (60 x 60 x 40 cm) with white (12 groups) or blue (13 groups) cellophane and observing reproductive behavior in groups of 2 males (10.27 ± 0.45 cm) and 3 females (10.78 ± 0.45 cm) each. After assignment to the respective environmental color (similar luminosity = 100 to 120 Lux), the animals were observed until reproduction (identified by eggs in the female's mouth) or up to 10 days after the first nest building. Photoperiod was from 6:00 h to 18:00 h every day. Food was offered in excess once a day and water quality was similar among aquaria. Daily observations were made at 8:00, 11:00, 14:00 and 17:00 h regarding: a) latency to the first nest, b) number of nests, c) gravel weight removed (the male excavates the nest in the bottom of the aquarium), d) nest area, and e) mouthbrooding incubation (indication of reproduction). The proportion of reproducing fish was significantly higher (6 of 13) in the group exposed to the blue color compared the group exposed to the white color (1 of 12; Goodman's test of proportions). Moreover, males under blue light removed significantly larger masses of gravel (blue = 310.70 ± 343.50 g > white = 130.38 ± 102.70 g; P = 0.01) and constructed wider nests (blue = 207.93 ± 207.80 cm² > white = 97.68 ± 70.64 cm²; P = 0.03) than the control (white). The other parameters did not differ significantly between light conditions. We concluded that reproduction in the presence of blue light was more frequent and intense than in the presence of white light.

Plasma cortisol and glucose levels were measured in 36 adult Nile tilapia males, Oreochromis niloticus (standard length, mean ± SD, 14.38 ± 1.31 cm), subjected to electroshock and social stressors. Pre-stressor levels were determined 5 days after the adjustment of the fish to the experimental aquaria (1 fish/aquarium). Five days later, the effects of stressors on both cortisol and glucose levels were assessed. The following stressors were imposed for 60 min: pairing with a larger resident animal (social stressor), or a gentle electroshock (AC, 20 V, 15 mA, 100 Hz for 1 min every 4 min). Each stressor was tested in two independent groups, one in which stress was quantified immediately after the end of the 60-min stressor imposition (T60) and the other in which stress was quantified 30 min later (T90). Pre-stressor values for cortisol and glucose were not statistically different between groups. Plasma cortisol levels increased significantly and were of similar magnitude for both electroshock and the social stressor (mean ± SD for basal and final samples were: electroshock T60 = 65.47 ± 15.3, 177.0 ± 30.3; T90 = 54.8 ± 16.0, 196.2 ± 57.8; social stress T60 = 47.1 ± 9.0, 187.6 ± 61.7; T90 = 41.6 ± 8.1, 112.3 ± 26.8, respectively). Plasma glucose levels increased significantly for electroshock at both time points (T60 and T90), but only at T90 for the social stressor. Initial and final mean (± SD) values are: electroshock T60 = 52.5 ± 9.2, 115.0 ± 15.7; T90 = 35.5 ± 1.1, 146.3 ± 13.3; social stress T60 = 54.8 ± 8.8, 84.4 ± 15.0; T90 = 34.5 ± 5.6, 116.3 ± 13.6, respectively. Therefore, electroshock induced an increase in glucose more rapidly than did the social stressor. Furthermore, a significant positive correlation between cortisol and glucose was detected only at T90 for the social stressor. These results indicate that a fish species responds differently to different stressors, thus suggesting specificity of fish stress response to a stressor.

Reproductive fish behavior is affected by male-female interactions that stimulate physiological responses such as hormonal release and gonad development. During male-female interactions, visual and chemical communication can modulate fish reproduction. The aim of the present study was to test the effect of visual and chemical male-female interaction on the gonad development and reproductive behavior of the cichlid fish Nile tilapia, Oreochromis niloticus (L.). Fifty-six pairs were studied after being maintained for 5 days under one of the four conditions (N = 14 for each condition): 1) visual contact (V); 2) chemical contact (Ch); 3) chemical and visual contact (Ch+V); 4) no sensory contact (Iso) - males and females isolated. We compared the reproductive behavior (nesting, courtship and spawning) and gonadosomatic index (GSI) of pairs of fish under all four conditions. Visual communication enhanced the frequency of courtship in males (mean ± SEM; V: 24.79 ± 3.30, Ch+V: 20.74 ± 3.09, Ch: 0.1 ± 0.07, Iso: 4.68 ± 1.26 events/30 min; P < 0.05, two-way ANOVA with LSD post hoc test), induced spawning in females (3 spawning in V and also 3 in Ch+V condition), and increased GSI in males (mean ± SEM; V: 1.39 ± 0.08, Ch+V: 1.21 ± 0.08, Ch: 1.04 ± 0.07, Iso: 0.82 ± 0.07%; P < 0.05, two-way ANOVA with LSD post hoc test). Chemical communication did not affect the reproductive behavior of pairs nor did it enhance the effects of visual contact. Therefore, male-female visual communication is an effective cue, which stimulates reproduction among pairs of Nile tilapia.

One of the challenges of the postgenomic era is characterizing the function and regulation of specific genes. For various reasons, the early chick embryo can easily be adopted as an in vivo assay of gene function and regulation. The embryos are robust, accessible, easily manipulated, and maintained in the laboratory. Genomic resources centered on vertebrate organisms increase daily. As a consequence of optimization of gene transfer protocols by electroporation, the chick embryo will probably become increasingly popular for reverse genetic analysis. The challenge of establishing chick embryonic electroporation might seem insurmountable to those who are unfamiliar with experimental embryological methods. To minimize the cost, time, and effort required to establish a chick electroporation assay method, we describe and illustrate in great detail the procedures involved in building a low-cost electroporation setup and the basic steps of electroporation.

A qualidade de 120 amostras de diferentes tipos de filé de peixe congelado foi avaliada com relação às características sensoriais, pH, teores de bases voláteis totais e histamina e presença de gás sulfídrico. Os resultados da análise sensorial indicaram boa qualidade dos peixes com valores médios de 5,52 (CV £ 13%) tanto para odor quanto para aspecto geral. Com relação a bases voláteis totais (BVT), teores médios de 62,71 mg N/100 g foram encontrados, com valores significativamente maiores (> 80 mg N/100 g) para namorado (Pseudopercis numida) e cação (famílias Carcharhinidae e Squalidae) e menores que 68 mg N/100 g para os demais tipos de peixe. Os valores médios de pH variaram de 6,11 em abrótea (Urophycis brasiliensis) a 7,49 em castanha (Umbrina sp.). Baseado nestes resultados, 79, 39 e 62% das amostras não atenderiam aos limites estipulados pela legislação vigente para BVT, pH e gás sulfídrico, respectivamente. Histamina foi encontrada em 37% das amostras com teores médios de 0,00 para linguado (Paralichthys sp. e Pleuronectes sp.) a 0,50 mg/100 g para namorado. A presença de histamina não foi detectada em abrótea. Foram observadas diferenças significativa entre os valores de BVT, pH e histamina das amostras de peixe agrupadas por famílias. Para uma melhor avaliação do potencial de utilização e estabelecimento de limites críticos para estes parâmetros como critério de qualidade, sugere-se que amostras sejam monitoradas desde o momento da captura. Os teores de histamina detectados nas amostras não seriam, por si só, capazes de causar intoxicação.

A perda de mercúrio contido em músculo de peixes (Piraíba, Brachyplatystoma ssp; Traíra, Hoplias malabaricus) submetidos a dois distintos processos de cozimento foi investigada. Os resultados mostraram perdas variando entre 0 e 30% (base seca), indicando que a maior parte do mercúrio foi retida. Assim, tais processos não protegem as populações, que deles se utilizam, contra a exposição por ingestão ao mercúrio originariamente contido na amostra "in natura".

O presente trabalho teve como objetivo obter dados quantitativos sobre as classes de lipídios presentes no filé de curimatã, Prochilodus cearensis. Os lipídios totais (LT) foram fracionados em classes de lipídios neutros (LN), gliceroglicolipídios (GL) e glicerofosfolipídios (PL) através de cromatografia em coluna aberta de sílica gel 60 (70-230 mesh). As análises foram realizadas em quatro lotes de amostras contendo cada uma três exemplares, adquiridos em feiras livres de Fortaleza-CE, nos meses de março, maio, junho e julho de 1998. Os LT representaram em média 3,8% em relação ao peso fresco da amostra. A classe lipídica dominante foi de LN com média de 75,1% dos LT ou 2,9g/100g de filé. Os GL e PL contribuíram em média com 1,6% (61mg/100g de filé) e 23,3% (885mg/100g de filé), respectivamente. A composição química centesimal apresentou média de 76,3% de umidade, 18,6% de proteína total e 1,3% de cinza.

O mercúrio total foi quantificado em 11 espécies de peixes de água-doce, originárias de diferentes procedências comerciais. O mercúrio vem sendo utilizado na agricultura, indústria, mineração, etc., e isso tem provocado drástico aumento desse metal no meio ambiente, atingindo em conseqüência a cadeia trófica. Nesse contexto, o homem, através do consumo de alimentos, principalmente pescado, torna-se vulnerável à ação tóxica do mercúrio. Os resultados obtidos para as espécies mandi - Pimelodus maculatus, tilápia - Tilapia sp, sagüiru - Cyphocharax modestus, lambari - Astyanax sp, sardela - Triportheus sp, traíra - Hoplias sp, curimbatá - Prochilodus sp e dourado - Salminus sp, comercializadas em São Paulo - SP, e para o jaraqui - Semaprochilodus insignis, curimatã - Prochilodus nigricans e matrinchã - Brycon sp, procedentes da Amazônia brasileira, variaram de 0,01 a 0,39mgHg/Kg. Os resultados observados, sob o ponto-de-vista de Saúde Pública, estão abaixo dos limites de tolerância brasileiros, de 0,5 e 1,0mgHg/Kg, para espécies não-predadoras e predadoras, respectivamente. Nas espécies de hábito alimentar carnívoro (traíra e dourado) os teores de mercúrio foram de 0,26 a 0,39mgHg/Kg. A expectativa de ocorrência de espécies excessivamente contaminadas não se confirmou.

A adição de ovos às massas alimentícias pode ser feita nas formas fresca, congelada ou desidratada, sendo a forma fresca a mais apropriada, de acordo com a literatura. Porém, não é esclarecida a vantagem da forma fresca sobre as demais. Este trabalho teve como objetivo comparar o efeito do uso de ovo líquido pasteurizado e de ovo desidratado na qualidade de massa curta do tipo rigatoni. Foram avaliadas 9 formulações de massa seca, sendo uma sem adição de ovos (controle), 4 com diferentes proporções de ovo líquido pasteurizado (5%, 10%, 15% e 20%) e 4 com ovo desidratado nas proporções (1,19%, 2,38%, 3,57%, 4,76%), correspondentes as de ovo líquido pasteurizado estudadas. As massas obtidas foram avaliadas quanto às características de cozimento (AACC 66-15, 2000), textura (TA-XT2i) e cor (Minolta). Através de testes sensoriais, a firmeza e o sabor das diferentes amostras foram avaliados, assim como a aceitabilidade das amostras controle e as de maiores quantidades de ovo. Com base nos resultados obtidos, pode-se concluir que podem ser produzidas, nas condições utilizadas neste trabalho, massas alimentícias similares utilizando uma das duas formas comerciais de ovo. Desta forma, as diversas vantagens do ovo desidratado em relação ao líquido (facilidade de transporte e estocagem em temperatura ambiente, menor volume ocupado, maior durabilidade, facilidade de mistura à farinha de trigo) podem ser aproveitadas sem prejuízo ao produto final.

Microrganismos patogênicos podem contaminar ovos em diferentes estágios do processamento. Na tentativa de reduzir problemas decorrentes dessa contaminação por microrganismos patogênicos e/ou deteriorantes, os ovos são submetidos a processos como lavagem da casca e pasteurização. Vários estudos mostraram que alguns agentes químicos utilizados nessa lavagem podem causar danos físicos ao produto, facilitando a entrada de microrganismos através da casca. O nosso objetivo foi avaliar a eficiência da lavagem dos ovos, anteriormente à quebra, na redução da contaminação de ovo integral líquido. Foram colhidas amostras de ovo integral em 3 pontos da linha de produção, provenientes de ovos lavados e não lavados. Foram feitas pesquisa de Salmonella sp e enumeração de S. aureus, L. monocytogenes e bactérias aeróbias. Os resultados foram analisados no nível de significância de 5% e pôde-se concluir que o emprego, ou não, da etapa de lavagem não tem influência na qualidade microbiológica do produto final.

A desordem nutricional mais comum no mundo é a deficiência de ferro. Sua disponibilidade é influenciada por outras substâncias. Os objetivos da pesquisa foram: avaliar a disponibilidade de ferro em alimentos fonte deste e de vitamina A, ovo (o), cenoura (c) e couve (cv), e verificar interação do ferro com alfa e beta-caroteno, e com outros interferentes. As misturas foram de ovo com cenoura e ovo com couve nas proporções (1:1), (1:1,5), (1:2), (1:2,5) e (1:3) e 3 alimentos sozinhos, totalizando 13 amostras. As amostras, após preparo, foram submetidas às análises de composição centesimal, ferro total, taninos, ácido fítico, ácido oxálico, alfa-caroteno e b-caroteno e diálise de ferro. Os dados foram analisados por teste de Tukey e correlação. Foi observada correlação positiva do ferro dialisável em relação à umidade e beta-caroteno e negativa para extrato etéreo, proteínas e cinza. A amostra 1,5 c apresentou teores mais elevados de taninos. As amostras 1 cv e 1,5 cv maiores teores de oxalato e ferro dialisável mais baixo. Pode ser concluído que misturas com maiores proporções de cenoura e couve aumentaram a disponibilidade do ferro e não houve interferência dos fatores antinutricionais. O beta-caroteno apresentou correlação positiva com ferro dialisável, exercendo influência na diminuição do efeito dos fatores antinutricionais.

One third of the world's fishing produce is not directly used for human consumption. Instead, it is used for making animal food or is wasted as residue. It would be ideal to use the raw material thoroughly and to recover by-products, preventing the generation of residues. With the objectives of increasing the income and the production of the industry, as well as minimizing environmental and health problems from fish residue, chemical silage from Tilapia (Oreochromis niloticus) processing residues was developed after homogenization and acidification of the biomass with 3% formic acid: propionic, 1:1, addition of antioxidant BHT and maintenance of pH at approximately 4.0. Analyses to determine the moisture, protein, lipids and ash were carried out. The amino acids were examined in an auto analyzer after acid hydrolysis, except for the tryptophan which was determined through colorimetry. The tilapia silage presented contents that were similar to or higher than the FAO standards for all essential amino acids, except for the tryptophan. The highest values found were for glutamic acid, lysine and leucine. The results indicate a potential use of the silage prepared from the Nile tilapia processing residue as a protein source in the manufacturing of fish food.
