Rice (Oryza sativa L.) stands out as a staple food of the world population due to important nutritional properties. However, rice physico-chemical parameters vary according to genotype and management, for example, the use of nitrogen fertilizer. The aim of this work was to evaluate physico-chemical parameters of grains from thirteen cultivars of upland rice under supplemental sprinkler irrigation and fertilized with different nitrogen rates by topdressing (0, 40, 80, 120 and 160 kg ha(-1)). Parameters such as milling efficiency, commercial grade, gelatinization temperature, as well as total nitrogen and crude protein contents of grains were evaluated. Nitrogen fertilization positively influences the whole grain yield, especially IAC 25 and BRS Colosso. BRS Aroma, IAC 202, IAC 500, BEST 2000, Curinga and Baldo have a high percentage of broken grains. The cultivars Baldo and Carnaroli (appropriate for Italian cuisine), IAC 25 and Caiapo are classified as long grain and the others, as long-thin. The cultivars, except CIRAD 141, displayed grain gelatinization temperature between intermediate and low, providing quick cooking. The grain content protein varies among cultivars, and it can be increased with nitrogen fertilization.

O valor nutricional do Lentinula edodes (Berk.) Pegler varia em função da linhagem cultivada, do processamento após colheita, do estágio de desenvolvimento do basidioma e do tipo de substrato utilizado. Este trabalho teve como objetivo avaliar nutricionalmente basidiomas de L. edodes em função da linhagem e do tipo de eucalipto cultivado. O delineamento experimental foi inteiramente casualizado, em esquema fatorial 2 x 10 (linhagens de L. edodes x tipo de eucalipto), totalizando 20 tratamentos com 2 repetições, sendo que cada repetição correspondeu a uma amostra de basidiomas desidratados e moídos. de acordo com os resultados obtidos, verificou-se que as propriedades nutricionais do L. edodes (proteína bruta, extrato etéreo, cinzas e fibra bruta) demonstraram sofrer influência da interação eucalipto x fungo. Assim, os melhores resultados foram: Proteína bruta: Linhagem LE-96/18 cultivada em toras de E. urophylla, cuja média foi de 24,3%; Extrato etéreo: Linhagem LE-96/18 cultivada em toras do clone 23, cuja média foi de 3,0%; Cinzas: Linhagem LE-96/18 cultivada em toras de E. paniculata e E. camaldulensis e Linhagem LE-95/01 cultivada em toras de E. citriodora, cujas médias foram de 5,0%; Fibra bruta: Linhagem LE-95/01 cultivada em toras de E. paniculata, cuja média foi de 20,5%.

Purpose: The purpose of this paper is to determine the effects of isolated soy glycinin (11S) on lipid metabolism in animals subjected to a hypercholesterolemic diet. Design/methodology/approach: Male Wistar rats were kept in individual cages under appropriate conditions. The animals were divided into three groups (n=9): normal diet (STD) given a diet containing casein as protein source, recommended in AIN-93M; hypercholesterolemic (HC) fed a normal diet with 1 per cent cholesterol and 0.5 per cent cholic acid; and hypercholesterolemic+glycinin (HC+11S), fed a hypercholesterolemic diet, plus 11S soy protein (300 mg/kg/day), dissolved in saline and administered by gavage. After 28 days, the animals were sacrificed and blood and liver removed for biochemical analysis of total cholesterol (TC), HDL-cholesterol (HDL-C) and triglycerides (TG) in the plasma, hepatic TC and TG. Findings: A single daily dose of glycinin given to the hypercholesterolemic group demonstrated its functional role, particularly in raising HDL-C and reducing triglycerides in the liver. Originality/value: This study demonstrates the action of the 11S globulin in soybean as a serum lipid lowering agent, in addition to its nutritional properties, especially in raising the HDL-C. © Emerald Group Publishing Limited.

Our objective was to determine the best additive to use for the ensiling of sugarcane SP81-3250 based on the nutritional properties and aerobic stability of the silages. The additives evaluated were (1) and (2): salt (NaCl) at rates of 1.0 or 2.0 kg/100 kg fresh sugarcane (as-is basis), respectively; (3) and (4): quicklime (CaO) at rates of 1.0 or 2.0 kg/100 kg fresh sugarcane, respectively; (5) and (6): commercial inoculants Silobac (R) and Maize All (R); and a control treatment. The addition of quicklime reduced the NDF and ADF contents of the silages by 11% compared with the control treatment, but did not increase the digestibility. On the other hand, after 24 h of in vitro fermentation, the application of 1.0 and 2.0% salt reduced the gas production by 34.15 and 33.55 mL/g OM, respectively, and the IVOMD was reduced 5.74 and 5.90%, respectively, compared with the untreated silage. Moreover, the addition of quicklime elevated the pH of the sugarcane silages, with a trend towards an increase in the DM recovery. In contrast, the bacterial inoculants did not alter the pH values, but there was an upward trend for a DM recovery. After the silos were opened, the silages that were treated with salt (independent of the dose) and 1.0% quicklime exhibited greater stability. We recommend applying 1.0 kg of quicklime to each 100 kg of sugarcane at the time of ensiling to improve the nutritional characteristics of sugarcane silage variety SP81-3250.
