Objetivando avaliar o desenvolvimento relativo dos componentes do peso vivo (PV), dos cortes comerciais e dos tecidos da carcaça, utilizaram-se 40 cabritos Saanen. Os animais foram abatidos ao atingir 5,0; 12,5; 20,0; 27,5 e 35,0 kg de PV e a carcaça foi seccionada em paleta, pescoço, 1ª a 5ª costelas, 6ª a 13ª costelas, peito/fralda, lombo e perna. A perna foi dissecada em ossos, músculos e gordura. Utilizou-se a equação alométrica Y=aXb para estimar o desenvolvimento relativo. O crescimento do tecido ósseo foi precoce, o do tecido muscular intermediário e o da gordura crescimento tardio, uma vez que a gordura subcutânea é depositada mais tardiamente. Os cortes comerciais apresentaram coeficiente de alometria isogônico, com exceção do corte da 6ª a 13ª costelas e do peito/fralda. O desenvolvimento da carcaça e dos não-componentes da carcaça acompanhou o peso de corpo vazio. Cabritos com 35 kg de PV possuem proporção de músculos e relação músculo:osso adequadas, mas apresentam proporção de gordura maior que a observada nos animais abatidos com 20 kg de PV.

The aim of this study was to compare wild boar (chromosomal number 2n = 36) to phenotypically similar animals of 2n = 37 and 2n = 38 chromosomes (crossbreeds) with respect to live weight, carcass yield, meat yield, fat and weight of inner organs. All animals were born and raised on the same farm and slaughtered at 39 weeks. The final live weight of wild boar 2n = 36 was significantly lower (47.2 kg) as compared to crossbreeds (80.0 kg). Animals 2n = 36 had more carcass yields (65.5%) than 2n = 37 karyotype (64.9%) and 2n = 38 (64.4%). Wild boar had the highest yields for the cuts with bones and boneless cuts compared to crossbreeds. Therefore, variations in karyotype are accompanied by differences in some carcass quantitative traits, i.e., 2n = 36 grow and fatten slower than crossbreeds 2n = 37 and 2n = 38. Fifty-nine Nellore bulls from low and high residual feed intake (RFI) levels were studied with the objective of evaluating meat quality traits. Animals were slaughtered when ultrasound-measured backfat thickness reached 4. mm, and samples of Longissimus were collected. A mixed model including RFI as fixed effect and herd and diet as random effects was used, and least square means were compared by t-test. More efficient animals consumed 0.730. kg dry matter/day less than less efficient animals, with similar performance. No significant differences in carcass weight, prime meat cuts proportion, chemical composition, pH, sarcomere length, or color were observed between RFI groups. Shear force, myofibrillar fragmentation index and soluble collagen content were influenced by RFI, with a higher shear force and soluble collagen content and a lower fragmentation index in low RFI animals. Feedlot-finished low RFI young Nellore bulls more efficiently convert feed into meat, presenting carcasses within quality standards. © 2012 Elsevier Ltd.

This study evaluated the chemical and lipid composition of uncooked or cooked loin (Longissimus thoracis) and rump (Biceps femoris) in samples of 2.54 cm thick from 35 carcasses of Nellore young bulls finished in feedlot for 96 days and slaughtered at an average weight of 532.17 ± 30.25 kg and 24 months of age. The rump had the lowest level of protein and ash (18.57 and 0.90%, respectively) and the highest level of ether extract compared to loin (3.37 and 1.90%, respectively). Higher levels of cholesterol were found in rump compared to loin (40.91 e 30.93 mg 100 g-1, respectively). The uncooked loin showed lower content of saturated fatty acids and higher content of polyunsaturated fatty acids. The best values for the omega-6: omega-3 ratio was observed in the uncooked beef. In the present study, the loin was healthier due to the higher amount of polyunsaturated fatty acids compared to rump. Cooking the meat decreases the levels of polyunsaturated fatty acids, omega-3, omega-6 and the omega-6: omega-3 ratio.

The objective of this study was to evaluate the postweaning history of heifers kept on marandu grass pastures with three canopy heights, in a continuous-grazing system, during the rainy period, on feedlot-or pasture finishing. The effects of three canopy heights (15, 25 and 35 cm) associated with two supplements (mineral salt and protein-energy supplement) and two finishing systems in the dry period (feedlot and open pasture) were studied in the postweaning period during the rainy season. The adopted design was completely randomized, with seven replications (animals) in a 2 x 2 factorial arrangement. The animals which received protein-energy supplement reached the finishing period with greater body weight in relation to those fed mineral salt. In both feedlot and pasture finishing systems, compensatory gain effect was observed in the animals that remained on the low pastures during postweaning compared with the high pastures. This compensatory gain was not verified in the animals that received protein-energy supplement in relation to the mineral salt, and thus the animals were slaughtered beforehand. The heifers on pastures with 25 or 35 cm in height were slaughtered in the same period, and those kept on the low pastures were slaughtered afterwards. The studied factors in the postweaning phase did not affect the carcass characteristics. Animals finished in feedlot slaughtered with the same body weight as those finished on pasture show greater carcass yield, subcutaneous fat deposition and renal pelvic and inguinal fat and greater losses with trimmings for cleaning the main hindquarter meat cuts; however, they provide cuts with the same weight but greater fat cover.
