Foi avaliado o efeito do processo de defumação a quente (45-90ºC/5 horas) e a frio (27-45ºC/10 horas) nas propriedades organolépticas, no rendimento e na composição dos filés de matrinxã (Brycon cephalus). Não houve diferença significativa no rendimento de filés defumados e não-defumados. As perdas no processo de defumação foram significativamente maiores para defumação a quente (19,37%) em comparação à defumação a frio (17,08%). O processo de defumação reduziu a umidade (in natura = 72,91%; defumado a quente = 58,51%; e defumado a frio = 59,68%) e aumentou os teores de proteína bruta, lipídios e cinzas. Houve diferença significativa somente nos teores de proteína no defumado a quente (28,07%) e defumado a frio (27,14%). O processo a frio resultou em melhor aparência e cor de filé, enquanto o processo a quente melhorou o sabor, o teor de sal e a aparência geral. O aroma e a textura não diferiram significativamente entre os processos. O processo de defumação a quente melhora as propriedades organolépticas e os níveis de proteína do filé de matrinxã.

The production of metallic junctions employing elastomers is an unconventional technique that has been in development in the last 20 years. The forming process gets successfull just if a simultaneous compression between the elastomers and the tube takes place. Exact solutions for problems involving forming with elastomers are quite difficult to determine. However, the upper-bound theory can be used in order to predict the necessary load for junctions forming. Thus, it is necessary to develop a model capable to provide an estimate of the total forming force, which is useful to set-up tools and equipments required for the process. In this work, Von Mises, Hill's 1948 and Hill's 1979 associated yielding theories, and the Hosford's theory (1979) as well, were used in order to study the anisotropic behaviour on total forming force of junctions using elastomers, insuring the functionality of the proposed model. Aluminum has been widely used in the forming and manufacture of beverage cans, specific aluminum alloy AA3104, which manufacturers are increasingly demanding as to mechanical properties, quality and reducing waste. This work describes the analysis and comparison of the behavior of earing AA3104 aluminum alloy samples of final thicknesses of 1.80 and 2.10 mm. Were obtained after a hot rolling process, a total population of 86 samples for the two different thicknesses, of which 23 samples of 1.80 mm and 2.10 mm 63 samples. After removal of samples, there was a mechanical test inlay, then characterizing the earing in them. The results earing to the thicknesses of 1.80 and 2.10 mm were analyzed and compared statistically to give 7.1% and 7.4% on average, respectively, correlated with the hot rolling process variables, showing that they are statistically equal and that the process variables do not affect the end result desired, ranging from 7.0 to 7,5%

The presence of pores in ceramics is directly related to the chosen forming process. So, in the starch consolidation method, the ceramics show, after burning, pores with morphology similar to that presented by this organic material. on the other hand, the increase in solid load leads up to alterations in dispersion viscosity, increasing the thermal stresses during drying and sintering processes. In order to verify the solid percentage influence in ceramic final properties, samples were prepared with silicon carbide in different compositions using or not starch as binder agent and pore forming element. The characterization of the ceramic pieces was performed by superficial roughness measurements, porosity besides by optical and scanning electron microscopy. The results showed ceramics with SiC and starch presented physical and microscopic properties slightly higher in relation to those with only ceramic powder in their composition. The presence of organic material, agglomerated and foam during the forming were essential for the final properties of the studied samples.

Zein films plasticized with oleic acid were formed by solution casting, by the stretching of moldable resins, and by blown film extrusion. The effects of the forming process on film structure were investigated by X-ray diffraction. Wide-angle X-ray scattering (WAXS) patterns showed d-spacings at 4.5 and 10 angstrom, which were attributed to the zein alpha-helix backbone and inter-helix packing, respectively. The 4.5.angstrom d-spacing remained stable under processing while the 10 angstrom d-spacing varied with processing treatment. Small-angle X-ray scattering (SAXS) detected a long-range periodicity for the formed films but not for unprocessed zein, which suggests that the forming process-promoted film structure development is possibly aided by oleic acid. The SAXS d-spacing varied among the samples (130-238 angstrom) according to zein origin and film-forming method. X-ray scattering data suggest that the zein molecular structure resists processing but the zein supramolecular arrangements in the formed films are dependent on processing methods.

Deposits formed on the surface of. paper were analysed in order to identify the sources of the defects, as well as to solve the problems associated with performance and adjustments at the wet end of the paper forming process. Standard paper samples containing deposits were collected and analysed by comparing the microstructure and composition of the deposit with paper regions adjacent to it. Optical microscopy (OM). energy dispersive X-ray microanalysis (EDX) X-ray powder diffraction (XRD). thermogravimetric analysis (TGA) and scanning electron microscopy (SEM) were the techniques used in this study. The results obtained from the EDX, XRD. and TG techniques allowed concluding that the calcium carbonate content in the farm of calcite is 1.6 times higher in the formed deposit them the quantity expected in the standard paper composition. The paper sample microstructure revealed by the SEM images indicates the presence of irregular spherical aggregates up to 20μm in diameter in the deposit region. containing larger amount of calcium carbonate as well as in the regions adjacent to the deposit. These spherical aggregates seem to be absorbed and integrated into the pulp fibres and present characteristics similar to those of partially cooked cationic starch. The analysed deposits are characterised by a dense and thick substance, forming a plate with highly adhesive property. This adhesive substance has a characteristic similar to glue with a large amount of organic matter due to the high weight loss shown by the TG curve. The results are consistent with the interaction ofparticles of negatively charged calcium carbonate and cationic starch, forming sterically stabilized deposits, which firmly adhere to the paper microstructure.

The objective of this work was to evaluate the microbiological quality and shelf life of Nile tilapia fillets subjected to different smoking methods and storing conditions. Two smoking processes (cold or hot) were used in fillets with or without pigmentation. Products were stored under refrigeration or freezing, and monitored continually for 28 days for evaluation of their shelf life. Frozen fillets were monitored for 146 days for analysis of thiobarbituric acid (TBA) only. Hot- and cold-smoking reduced the coliform quantity, respectively, by 99.78% and 97.80%. Product storage under refrigeration allowed a 99.73% coliform reduction, and storage under freezing reduced them by 99.83%. Fecal coliform values were within the allowed limits. TBA values in fillets reached their maximum on the 14th storage day. TBA values were higher in treatments under refrigeration storage than in those under freezing, as well as in cold-smoked fillets in comparison to the hot-smoked ones. Hot-smoked process, followed by refrigeration storage, is the most adequate technique to ensure quality and a larger shelf life for Nile tilapia fillets, regardless of pigmentation process.

This study aims to assess the implementation of Lean Six Sigma in the preparation of plates and hot lamination process for a company of aluminum rolled products, to improve the quality, productivity and process efficiency. As a basis for achieving these goals, the DMAIC methodology and various quality tools such as Cause Effect Diagram, Process Flow, SIPOC, Pareto, FMEA and Control Chart were used, trying to propose improvements to processes and increase their efficiency. The results were significant and were the basis for the continuation of a continuous improvement project throughout the factory

The goal of this work is to report some problems that occur in the in the production of aluminum billets (series 6XXX) produced by the hot top process in the Alcoa aluminum Inc. The aluminum fabrication process is described from its first stage, since the mining until the reduction, smelting and treatment of the metal. One of the plant’s final product, are billets for clients that produce profiles by extrusion. The product’s final quality highly depends on the whole production process. Therefore it’s necessary to use good practices in the treatment of the metal, follow up its fabrication and control its thermal treatment, in order to meet the required standards to satisfy the clients. The billet’s production method and its variables will be detailed through temperature and casting speed, cone of water flow, cooling rate, duration of thermal treatment, degassing and metal “in line “filtering, in other words when it’s still found in its liquid state. The non-conformities of the process were studied by metallographic analysis, both macrostutural and microstructural that will be described and discussed in this work

The plastic deformation is widely used in the metallurgical market due to its positive factors such as low prices and high speed production. Forming process products are obtained in high quality, both surface quality and mechanical properties. Friction is an importante factor in metal forming. Friction study in metal forming can be accomplished indirectly, such as the ring test of friction. Two samples of different materials being mild steel and copper alloy were used. The results showed the influence of friction in the flow behavior of the deformation of the second phase, as evidenced by standard metallography. It is observed that in the outer regions of the ring, plastic deformation occured in the radial direction. In the central region of the disc deformation occured in the direction of compression and the inner region of the ring flux lines showed a significant deformation in the radial direction towards the center of the ring
