This paper reports the data on the cuiabana sausage historical aspect, and from the study performed on its technical/sensory characteristics. Four formulations of cuiabana-type sausage were prepared, varying the basic raw material (bovine, chicken and swine meats). For processing these sausages, the raw meats (beef, chicken and pork) were cut into cubes and together with the other ingredients (garlic, cheese, pepper and chives) they were weighed and homogenized. The resulting mixture was refrigerated for 24 hours for intensifying the flavor. Thereafter, it was stuffed into natural casings. These prepared samples were characterized on the physical-chemical profile and on the shelf life under refrigeration for over a seven day-storage in order to assess the microbiological contamination (total coliforms and fecal thermotolerant bacteria), sulphite-reducing clostridium, Salmonella spp., coagulase-positive Staphylococcus), and pH. The sensory evaluation and statistics analysis were carried out on the different types of laboratory- processed cuiabana sausage. Introducing over time changes in the cuiabana sausages formulation are positive factors; therefore, variations in the formulations it is feasible to get a better final product than that original one, and it might be resulted from the market demand.

Poultry meat and its derivatives are among the foodstuffs considered by environmental health authorities to present the highest risks to the public. A total of 185 samples were collected in five monthly batches, from different processing stages in a sausage plant that uses mechanically-deboned chicken meat (MDCM) and tested for the presence of Salmonella. Enrichment was carried out in both Kauffman tetrathionate broth and Rappaport-Vassiliadis broth and isolation on Salmonella-Shigella agar and brilliant-green agar. Live Salmonella bacteria were isolated from six samples of the raw meat and from the emulsion, in batches three, four and five, but not from any sample in batches one or two. The six isolated strains were all classified as Salmonella Albany, which has not previously been reported in MDCM. of the two enrichment broths, Rappaport-Vassiliadis gave the better results. The Pattern of contamination suggests a probable common source, given that a new supplier was used in the third, fourth, and fifth months. It was also shown that the industrial cooking was effective in preventing Salmonella surviving in the final product.

The objective of this study was to characterize the fish farms located in the lowland micro region in Cuiaba, MT, through interviews with 26 selected farmers which represent the universe of fish farms that are active. Qualitative data were subjected to statistical Chi-square test to diagnose the existence of correlation between them with 95% confidence. These results support the conclusion that the species that compose the group of round fish are present in 100% of fish farms, accounting 88.2% of production. The difference is that production exclusively in nurseries and the largest area of shallow water, with production in higher scale than elsewhere in the country, with prospects of growth in area and productivity. Some actions should be implemented: legislation objectively and with sufficient qualified personnel to inspect the enterprises, applied research in food management and feed production with better price and quality, technical and administrative management, use of juveniles with proven genetics and monitoring of water quality. Fish farming is the main source of income funding for 67.5% of farmers interviewed. The size of the fish farms did not affect the variables related to implementation, conduct and management of the activity. The demand and price of feed are the variables that most directs the decision making of farmers. The main marketing channel used by medium and large farmers is exclusively, the slaughterhouses. The main part of fish is sold processed.

In order to determine the prevalence of anti-Toxoplasma gondii antibodies, 2000 serum samples from female dairy cattle belonging to 50 farms in the southwest of Mato Grosso state were analyzed by the indirect fluorescent antibody test (IFAT >= 64). Serum samples from 61 dogs (IFAT >= 40) and 116 humans (IFAT = 40), all from the same farm, were also tested. Among these samples, 1420 (71.0%) cattle, 54 (88.5%) dogs, and 113 (97.4%) humans were seropositive for the infection. No significant differences (P >= 0.05) were observed for risk factors associated with the occurrence of toxoplasmosis in humans due to contaminated sources such as fresh milk, cheese/sausage, and contact with felines or other animals. The presence of felines can indicate the likelihood of a contaminated environment, posing a risk to the human population and other animals. The work presented herein is the first report to evaluate the seroprevalence of T gondii in bovines from the Southwest region of the Mato Grosso state, Brazil. (C) 2009 Elsevier B.V. Trata-se de um estudo de algumas formas de processamento da carne de jacaré do pantanal como uma alternativa de consumo, de uma forma não convencional, da carne dessa espécie. Testa-se, ao mesmo tempo, a utilização de carne de cortes normalmente descartados tais como o tronco e os membros. Dessa forma relatam-se os seguintes processamentos: produtos de salsicharia não embutidos (tipo hambúrguer), carne em conserva (enlatado), carne curada e não cozida (defumada) e produto curado e cozido (tipo apresuntado). Avalia-se a qualidade dos produtos através da análise sensorial e mede-se estatisticamente o grau de sua aceitação.
