The effects of six extruded diets with different starch sources (cassava flour, brewer's rice, corn, sorghum, peas or lentils) on dog total tract apparent digestibility and glycemic and insulinemic response were investigated. The experiment was carried out on thirty-six dogs with six dogs per diet in a completely randomized design. The diets containing brewer's rice and cassava flour presented the greatest digestibility of dry matter, organic matter and gross energy (p < 0.05), followed by corn and sorghum; pea and lentil diets had the lowest. Starch digestibility was greater than 98% in all diets and was greater for brewer's rice and cassava flour than for lentils and peas diets (p < 0.05). Dogs' immediate post-prandial glucose and insulin responses (AUC <= 30 min) were greater for brewer's rice, corn, and cassava flour diets (p < 0.05), and later meal responses (AUC >= 30 min) were greater for sorghum, lentil and pea diets (p < 0.05). Variations in diet digestibility and post-prandial response can be explained by differences in chemical composition of each starch source including fibre content and starch granule structure. The nutritional particularities of each starch ingredient can be explored through diet formulations designed to modulate glycemic response. However, more studies are required to support these.

Fermentable carbohydrates are an important part of the canine diet. They can improve gastrointestinal health by modifying gut microbial population and metabolic activity. The present study compared the fermentation characteristics and kinetic patterns of 10 carbohydrate sources using the in vitro gas production technique (IVGPT) with dog faecal inoculum. The substrates tested were: pure cellulose (PC), carboxymethylcellulose (CMC), sugar-cane fibre (SCF), beet pulp (BP), wheat bran (WB), fructooligosaccharides (FOS), inulin, yeast cell wall (YCW), ground psyllium seed (PS), pea hulls (PH). All substrates were incubated at 39°C under anaerobic conditions with faeces collected from dogs as microbial inoculum. Gas production of fermenting cultures was recorded and after 48 h, pH, shortchain fatty acids (SCFA) and organic matter disappearance (OMD) were determined. The results confirm high fermentation by dog faecal bacteria of FOS and inulin that produced high amounts of propionate and that underwent very rapid fermentation. Three substrates (SCF, CMC and PC) were not able to support bacterial growth, with low gas and SCFA production, and high BCFA formation. The PH and BP showed moderate OMD and SCFA production. Wheat bran B underwent rapid fermentation and generated a high proportion of butyrate. Psyllium seeds underwent slow fermentation with delayed gas production, supporting a high formation of SCFA, with an adequate amount of butyrate for bacterial growth while YCW, which showed a delayed fermentation, gave moderate SCFA production. O objetivo do presente estudo foi determinar a exigência protéica e correspondente relação energia/proteína em dietas para alevinos de piracanjuba, Brycon orbignyanus. Seis dietas semi-purificadas isocalóricas foram formuladas para conter 3.000 kcal de energia metabolizável (EM)/kg e concentrações de proteína bruta (PB) de 24, 26, 29, 32, 36 e 42%. Para essas concentrações, as relações E/P das dietas foram de 12,3; 11,6; 10,4; 9,2; 8,5 e 7,1 kcal EM/g PB, respectivamente. As fontes de proteína, lipídios e carboidratos digestíveis foram, respectivamente, caseína/gelatina, óleo de fígado de bacalhau/óleo de soja e dextrina. Após condicionamento de cinco dias, as dietas foram fornecidas, até a saciedade, em duas alimentações diárias, a 162 alevinos (27 peixes/dieta), que apresentaram 8,38 ± 0,09 g de peso médio inicial, distribuídos em 18 tanques de fibra-de-vidro de 100 L, conectados a um sistema de recirculação de água. A temperatura média da água foi de 26,3°C, com extremos de 23,7 e 30,2°C. Após 90 dias, a concentração de proteína na dieta que proporcionou ganho em peso máximo aos peixes foi 29% PB, com relação E/P igual a 10,4 kcal EM/g PB. As dietas com concentrações de PB iguais a 32, 36 e 42% não se mostraram superiores para conversão alimentar, taxa de eficiência protéica, valor produtivo da proteína e retenção de energia bruta. A deposição corporal de proteína e gordura não sofreu influência da concentração de PB da dieta

This work was carried out with the objective to evaluate the effect of different carbohydrate sources associated with sunflower oil on performance, carcass characteristics and cuts yields of feedlot sheep. Twenty four lambs were assigned to a completely randomized design with a 2 × 2 factorial arrangement with two sources of neutral detergent soluble carbohydrate, starch or neutral detergent soluble fiber, with and without the inclusion of 4.2% sunflower oil. The treatments consisted of diets containing high content of soluble fiber (17.14% DM) without adding oil, high in soluble fiber (16.35% DM) with inclusion of 4.2% sunflower oil, high starch (30.14% DM) without adding oil and high starch (28.21% DM) with addition of 4.2% of sunflower oil. The animals were feedlot with average initial of 17.7 kg and when reached 35 kg body weight were slaughtered. The different sources of carbohydrate and oil inclusion in the diet not influence the days on feedlot in the dry matter intake and average daily weight gain, but higher feed conversion was observed for the diet with a high percentage of neutral detergent soluble fiber compared to diet high in starch. The carcass weights and yields as well as the commercial cuts were not affected by diets. The performance and quantitative characteristics and carcass cuts of lamb are not affected by different carbohydrate sources and their association with 4.2% sunflower oil.

The objective this work was to evaluate the degradation, fermentation and kinetics of passage rumen fluid en sheep fed diets containing different carbohydrate associated with the oil. Four rumen cannulated sheep were allotted in 4 x 4 latin square. The treatments consisted of diets with high neutral detergent soluble fiber and diets with high starch associated or not with 4,2% of oil. Incubation times were 3, 6, 12, 24, 48, 72, 96 and 120 hours and ruminal fluid was collected at 0, 2, 4, 6, 8, 10, 12, and 24 hours after feeding. Diets high neutral detergent fiber soluble resulted in greater degradation of dry matter, crude protein, neutral detergent fiber soluble and starch, and higher pH values, butyric acid production, dilution rate and ruminal recycling compared with diets high starch content. The inclusion of 4,2% oil the different carbohydrate sources had no influence on the fermentation kinetics and degradation of the fiber. High content of neutral detergent soluble fiber in the diet favors the ruminal fermentation compared to the high starch content.

O mercado de alimentos para cães e gatos absorve importante quantidade de proteínas e carboidratos, apesar disso poucos estudos existem sobre digestibilidade e energia metabolizável destes ingredientes. Arroz e milho têm sido considerados as melhores fontes de amido, mas demonstra-se que o sorgo é igualmente bem digerido por cães. Na interpretação dos estudos, deve-se distinguir os que empregaram farinhas ou amidos purificados dos que empregaram ingredientes moídos, como utilizado na fabricação de alimentos para animais de companhia. Além de sua digestibilidade e valor energético, amidos interferem na glicemia de cães, o que torna interessante se empregar, para animais em condições específicas, fontes de carboidrato que levem à menores respostas de glicose e insulina. Devido a elevada necessidade de proteína, ingredientes protéicos são importantes nas formulações. Proteínas de origem animal apresentam maior variação em composição química, qualidade e digestibilidade que as de origem vegetal. Farinhas de origem animal podem apresentar excesso de matéria mineral, limitando sua inclusão na fórmula, enquanto derivados protéicos vegetais apresentam diversos fatores anti-nutricionais que devem ser inativados durante seu processamento. Demonstra-se que proteínas vegetais apresentam boa digestibilidade e energia metabolizável para cães e gatos, sendo sua inclusão interessante para reduzir a matéria mineral da dieta, controlar o excesso de bases do alimento e manter adequada a digestibilidade do produto, neste sentido soja micronizada e o farelo de glúten de milho 60% se destacam em digestibilidade e teor de energia metabolizável. A farinha de vísceras de frango, dentre as proteínas de origem animal secas demonstra-se como a de melhor digestibilidade e energia metabolizável.

The evolution of the food sector has increased interest in the identification of new starches with distinct properties. Curcuma longa and Curcuma zedoaria rhizomes, which are already used in industry to obtain food coloring and pharmaceutical products, may become commercially interesting as starch raw materials. This work aimed to characterize the starch of two Curcuma species. The results revealed that the rhizomes of two species showed low dry matter and high starch contents. The amylose contents of the starches (22% C. longa and 21% C. zedoaria) were similar to potato starch. The results of microscopic analysis showed flat triangular shape and the size was 20-30 mum for two starches. The final viscosity of C longa was high (740 RVU) and the pasting temperature was 81 degreesC. In C. zedoaria the final viscosity was 427 RVU and the pasting temperature was 78 degreesC. The purpose of this study was to verify the effects of a carbohydrate-electrolyte drink on soccer performance. Twenty soccer players volunteered to participate in the study. Players were allocated to two assigned trials according to their positional roles in the team: CHO group (ingesting a 6% carbohydrate-electrolyte solution at regular 15 minutes intervals) and NCHO (ingesting no fluid) during 75 min on-field soccer game. During the trials, body mass loss, heart rate, time spent running, number of sprints and core temperature were measured. There were statistically significant changes (p < 0.05) in body mass loss (CHO: 1.14 ± 0.37 kg vs. NCHO: 1.75 ± 0.47 kg) and number of sprints performed (CHO: 14.70 ± 4.38 vs. NCHO: 10.70 ± 5.80) between groups. The main finding of the present study indicates that supplementation with a carbohydrate-electrolyte drink during a soccer match is beneficial in helping to prevent deterioration in performance. © Journal of Sports Science and Medicine (2004).
