Os objetivos neste experimento foram gerar informações sobre a composição física e as relações músculo:osso, músculo:gordura e porção comestível:osso do lombo de ovelhas abatidas em diferentes estágios fisiológicos, além das possíveis correlações entre as variáveis avaliadas neste estudo. Foram utilizadas 21 ovelhas Santa Inês, distribuídas nos respectivos estágios fisiológicos: OL = ovelhas que permaneceram por 60 dias em lactação com seus respectivos cordeiros e abatidas um dia após o desmame dos mesmos; OSC = ovelhas que permaneceram por 60 dias em lactação com seus respectivos cordeiros e por mais um período aproximado de 30 dias sem os cordeiros e posteriormente abatidas; e ONP = ovelhas que permaneceram por 60 dias em confinamento e que não pariram durante o ano. Os percentuais de músculos e gorduras intermuscular e comestível foram semelhantes entre os estágios fisiológicos. O abate de ovelhas em diferentes estágios fisiológicos alterou a relação porção comestível:osso do lombo. Maiores proporções de gordura subcutânea corresponderam a menores quantidades de gordura intermuscular no lombo ou vice-versa.

Os frutos de Pachira aquatica Aublet apresentam sementes comestíveis com características organolépticas muito apreciadas pelas populações amazônicas, sendo pouco utilizados em outras regiões. Este trabalho teve como objetivo caracterizar as sementes quanto à composição centesimal e determinar as características físico-químicas e perfil de ácidos graxos. A determinação da composição centesimal das sementes (teores de umidade, lipídios, proteínas, cinzas e carboidratos) e análises do óleo extraído das mesmas (ácidos graxos livres, índices de peróxido, iodo, refração, saponificação, ponto de fusão e perfil de ácidos graxos) foram realizadas seguindo metodologia oficial. O teor de óleo nas sementes 38,39% demonstrou que estas têm potencial para aproveitamento industrial. Das características físico-químicas analisadas, o óleo extraído das sementes apresentou 39,2% de ácidos graxos livres (expresso em % ácido oleico), índice de iodo de 27,4 g I2.100 g-1, índice de saponificação de 208,0 mg.KOH g-1, índice de refração (40 °C) de 1,4569 e ponto de fusão de 41,9 °C. Quanto à composição de ácidos graxos do óleo predominaram os ácidos palmítico (44,93%), oleico (39,27%) e linoleico (11,35%). Tal fato favorece o uso deste óleo como matéria-prima para as indústrias alimentícia, farmacêutica e de cosméticos.

The family Myrtaceae is one of the most important related to fruit species. In Brazil it encloses more than 100 species of native fruit from North to South of the country (Giacometti, 1992; Donadio, 1992; Mattos, 1992). The genus Eugenia, Campomanesia, Psidium and Myrciaria are the most important, grouping most of the species of some importance. The germplasm bank of the Universidade Estadual Paulista includes some of the major species. Some characteristics are typical for most of the Myrtaceae fruit species. The most relevant are the long juvenile period presented by the trees, taking long time to produce, when propagated by seed; the slow growing tree behavior; difficult to propagated by vegetative means; large variability in trees obtained by seed propagation. The cited characteristics are commented for some species as well as the fruit quality, from data obtained in trees at the same ecological conditions.The species evaluated are: 1) Eugenia stipitata Mc Vaugh; 2) Eugenia tomentosa Cambes; 3) Eugenia brasiliensis Lam.; 4) Eugenia uniflora L.; 5) Eugenia luchsnathiana Berg.; 6) Eugenia uvalha Cambess; 7) Camponesia spp; 8) Plinia edulis (Veil. Sobral); 9) Eugenia involucrata D.C.; 10) Psidium acutangulum Mart.; 11) Myrciaria dubia Mc Vaugh; 12) Engenia guabiju Berg. The main conclusions based on the data analysed are: the fruits of some species present good general characteristics, mainly for fresh consumption, as high Vitamin C, sugars, pulp and other characteristics; 'Araca-boi' presents some good fruit characteristics, but is more adapted for processing, by its high acidity; Some species present low % of edible portion and need to be improved to gain commercial acceptance. mainly the 'cabeludinha' and 'cambuca'.

1. Until the late 1960s, Euterpe edulis was the most important edible palm species in the Brazilian markets. Since then, overharvesting of natural stands and the limited scope of plantations have caused the industry to shift to the multistemmed E, oleracea from the Amazon river estuary.2, As a result of the relocation of the industry, the structure of the palm harvesting industry has changed and illegal trade has continued to exploit the remaining natural stands of E, edulis.3, it is suggested that, to avoid the total harvesting of E. edulis and to achieve sustainable management of the palm heart, it will be necessary to diversify the local economy, create incentives for small land owners to improve their management practices, while keeping their competitiveness against the illegal trade, create the incentive of new sources of palm hearts and create a 'green stamping' For management palms.4, Transformation of the illegal structure of the palm heart industry is probably the only solution to avoid the total depletion of the wild stands of E. edulis.

The mushroom Agaricus blazei has been extensively investigated because of evidence of its antimutagenic, antitumor, and anticarcinogenic activities. This study investigated the clastogenic and/or anticlastogenic activity of aqueous extract of Agaricus blazei (10% w/v) in drug-metabolizing rat hepatoma tissue cells (HTCs), with continuous treatment and treatment during different phases of the cell cycle. DNA damage was induced utilizing two directacting agents-methyl methane sulfonate and ethyl methane sulfonate-and two indirect-acting agents-2-aminoanthracene and cyclophosphamide. The aqueous extract of A. blazei with either continuous treatment or treatment during different phases of the cell cycle showed clastogenic activity. The results with continuous treatment showed that A. blazei does not protect against DNA damage-inducing agents that are direct acting. Meanwhile, when combined with indirect-acting agents, a protective effect was demonstrated. A protective effect was also found during different phases of the cell cycle when cells were treated with indirect-acting agents. The protective effects against indirect-acting agents (continuous treatment and during the different phases of the cell cycle) suggest that A. blazei may provide some health benefits to the public when used as a functional food.

Shiitake (Lentinula edodes (Berkeley) Pegler) is one of the most consumed mushrooms, for both therapeutic purposes and as food, therefore, the study of its biological properties is of great interest for producers and consumers. Aqueous extracts of the shiitake mushroom (L. edodes (Berkeley) Pegler) were evaluated by the micronucleus test (MN) in HEp-2 cells in vitro, to analyze their possible mutagenic and antimutagenic activities. None of the three extract concentrations tested (0.5, 1.0 and 1.5 mg/mL) presented mutagenicity at any of the preparation temperatures (4 degrees C, 22 +/- 2 degrees C and 60 degrees C). In the antimutagenicity evaluation, all extract concentrations at all preparation temperatures presented a strong protective activity for the HEp-2 cells in response to the alkylating agent methyl methanesulfonate (MMS) in the different treatment protocols: pre-treatment, simultaneous treatment and post-treatment. The extracts prepared at 22 +/- 2 degrees C presented the lowest frequencies of MN in the evaluations of mutagenicity and antimutagenicity, indicating these as the best option for potential therapeutic use. The edible parts of cassava cultivar Pioneira roots after 12 and 24 months of cultivation were analysed for human consum. The yield was 63% when the roots were harvested at the right time (12 months), and lower (58%) for older roots, with 24 months. Total cyanide contents were 62,0 - 61,8 and 58,0 - 63,4 ppm, respectively. Cooking time was 13,5 min and 19,5 min, respectively, although the cooked mass quality was similar good. The edible part of the roots was processed in french fries or tholes, submited to two treatment: blanching for three minutes and boiling for ten minutes. Treated and in natura tholes were fried in vegetable oil at 190-degrees-C. The effect of freezing (-20-degrees-C for 60 days) on the cooking quality was also evaluated. The frozen storage reduced the total cyanid content in all treatment. The rate of cyanid decrease were 45%, 84% and 88% with frying, blanching and frying, and boiling and frying, respectively. Blanching followed by frying assured a safe cyanid level for human consum as well as a good acceptance in sensorial analysis. The influence of the age of the roots in cooking quality was a decrease in softness. Frozen storage softened the 24 month old roots and worsened the flavor of 12 month old root. For table purposes cassava roots should be processed in french fries and blanching, what would allow frozen storage of edible part.

A procedure for the standardization of ensembles of gold nanodisk electrodes (NEE) of 30 nm diameter is presented, which is based on the analytical comparison between experimental cyclic voltammograms (CV) obtained at the NEEs in diluted solutions of redox probes and CV patterns obtained by digital simulation. Possible origins of defects sometimes found in NEEs are discussed. Selected NEEs are then employed for the study of the electrochemical oxidation of iodide in acidic solutions. CV patterns display typical quasi-reversible behavior which involves associated chemical reactions between adsorbed and solution species. The main CV characteristics at the NEE compare with those observed at millimeter sized gold disk electrodes (Au-macro), apart a slight shift in E1/2 values and slightly higher peak to peak separation at the NEE. The detection limit (DC) at NEEs is 0.3 mu M, which is more than one order of magnitude lower than DL at the Au-macro (4 RM). The mechanism of the electrochemical oxidation of iodide at NEEs is discussed. Finally, NEEs are applied to the direct determination of iodide at micromolar concentration levels in real samples, namely in some ophthalmic drugs and iodized table salt. (c) 2006 Elsevier B.V. Agaricus blazei Murrill ss. Heinem, known as the sun mushroom or himematsutake, is a basidiomycete native to Brazil, which is popular for its medicinal properties. The aim of this study was to test hexane extracts (one fraction and its four sub-fractions) of A. blazei for bioactivity in cultured mammalian cells (CHO-K1). The comet assay, the colony forming assay (CFA) and CHO/HGPRT gene mutation assay were used respectively to determine genotoxicity, cytotoxicity and antimutagenicity of these extracts at different concentrations. The cells were incubated in culture medium and treated for 3 h according to the standard protocol for each assay. The DNA damage-inducing agent ethylmethane sulfonate (EMS) was utilized as the positive control and also in combination with extracts to test for a protective effect. Statistical analysis of the data was performed using analysis of variance (ANOVA) and Tukey's test. A relationship between cytotoxicity and genotoxicity could be established and two extracts EH6B and EH6D showed a protective tendency, while the others did not, with the primary extract EH6 causing the most substantial damage to genetic material. These findings warrant more in-depth studies of the active principles of this mushroom. (c) 2005 Elsevier Ltd. All rights reserved.

One of the overall goals of industries is to use packages that do not cause environmental problems at disposal time, but that have the same properties as the conventional ones. The goal of this study is to synthesize edible films based on hydroxypropyl methylcellulose (HPMC) with guava puree and chitosan (CS) nanoparticles. This was divided into two stages, the first is the synthesis of chitosan nanoparticles and the second is the production of the films. For the nanoparticles, average size and zeta potential measurements were performed. The characterizations of mechanical and thermal properties, solubility and water vapor permeability tests were conducted in the films. It was observed that when the nanoparticles were added to HPMC and guava puree films, they improved their mechanical and thermal properties, as well as decreased the films solubility and permeability. The potential application of the films prepared would be in edible films with flavor and odor to extend the shelf life of products.

In a culture of a Pleurotus ostreatus (oyster mushroom) strain, macro and micronutrients of the raw material and the initial and spent substrates were evaluated. Substrates were formulated with sawdust from Simarouba amara Aubl. and Ochroma piramidale Cav. ex. Lam., crushed Bactris gasipaes Kunth and crushed Saccharum officinarum (sugar cane). Samples were solubilized by means of acid digestion (nitric-peridrol). Ca, Mg, Fe, Cu, Zn and Mn were determined by atomic absorption spectrophotometry, Na and K by atomic emission, and P by colorimetry. The mineral composition of the fruiting body varied with the substrates, which made possible the production of a fruiting body rich in K, P Mg and Fe. Potassium was the mineral with the highest content in the fruiting body in all substrates tested (36.83-42.18g.kg(-1)). There was an increase of protein and mineral content in the spent substrate in relation to the initial one.

The viability of the utilization of wood and agroindustrial residues available in the Amazon region in the formulation of alternative substrates for the cultivation of Pleurotus ostreatus was tested. Thus, two wood residues: marupa sawdust (SIAMP) and pau-de-balsa sawdust (SAPB), and two substrates derived from agroindustrial residues: sugar-cane bagasse (SIACN) and pupunheira stem (SIAPP), were used. These were supplemented with a mixture of rice bran, wheat and corn as protein source, with addition of 2-3% of CaCO(3) for pH correction (6.5). The substrates were placed in polyethylene (HDPE) bags, sterilized at 121 degrees C for 1h and inoculated in a laminar flow chamber. The cultivation was carried out in an axenic way, in a modified atmosphere. The productivity of the substrates was evaluated in relation to the biological efficiency, with the following mean results: 125.60, 99.80%, 94.00 and 64.60% for SIAPP, SIACN, SIAMP and SIAPB, respectively. The high biological efficiency of the substrates and the cultivation process clearly showed the viability of the utilization of the residues, suggesting the commercial cultivation of this mushroom, which may contribute for improving the social and economical conditions and sustainability of the regional biodiversity resources of Amazonia.
