whole world. The world production of fish is around 100 million tons/year and 70% of them is destined exclusively to the human feeding. The fish and derived have a great importance in the human diet, contributing with ¼ of offer of protein of animal origin. Sseafood and fish are health, because they are rich in proteins, vitamins, micronutrients and insatured fats. However, one of the most important themes, in public health, refers to the safe food. Only in the USA, 76 million case of foodborne diseases occurs every year, with 325 thousand hospitalized and 5 thousand deaths. According to the microbiological parameters, the Brazilian Food Sanitation Standard (Decree No. 12, 2001) defined that fish, roes of fish, crustaceans and mollusks in natura cooled or frozen, no consumed raw should present up to 103 MPN of coagulase positive Staphylococcus in the absence of Salmonella in 25g. Based on this, this work verified the microbiological quality of fish and seafood retailed in supermarkets and fish store in Botucatu city. A hundred samples were analyzed, being 65 frozen (65%) and 35 cooled (35%). The samples included various kinds of fish and seafood. Among the frozen samples, 31 were fish and 34 seafood. About the cooled ones, 28 were fish and 7 seafood. The methods used for analysis are in agreement with APHA (2001). The samples were acquired in 4 establishments (3 supermarkets and a fish store). Ina total of 100 samples, all were negative to coagulase positive Staphylococcus and 2 were positive for Salmonella (2%). According to the results, we conclude that the presence of Salmonella is a risk factor for the consumers' health and these foods should not be consumed raw. In spite of the freezing to be a good conservation way, this process doesn't totally eliminate the pathogens of the food

Means for milk, not otherwise specified, the product from complete and uninterrupted milking , in a hygienic, healthy cows, well fed and rested. The milk of other animals must be called according to origin of species. One of the main characteristics that defined the milk is the set of their sensory characteristics, and the main flavor. The control of milk quality in Brazil has been an important factor for the consolidation of the entire production chain, passing necessarily by the dairy industry. The production of milk with good quality guarantees, of course, food safety for consumers. The measures to obtain milk begin on the property, in carrying out correct procedures for milking, storage and transportation of the product also in the dairy. Later, in the laboratory evaluation of physicochemical properties, research fraud, and microbiological examinations. Finally, measures of health education are need for producers to become aware of the economic benefits by obtaining a better quality milk. The objective of this review is to emphasize the importance of using diagnostic procedures methods for the control of mastitis and consequently obtain better Milk quality

Tem havido uma preocupação global com o desaparecimento de polinizadores dos campos de cultivo, podendo causar uma queda na produção de alimentos, e consequentemente, afetar a segurança alimentar em decorrência de déficits de polinização. Dessa forma, ações visando à conservação de espécies polinizadoras e de seus habitats vem assumindo uma importância cada vez maior. A região do município de Guapiara destaca-se no Estado de São Paulo como a principal produtora de tomate. O tomateiro possui flores hermafroditas e autofecundadas, porém uma melhor produtividade pode ser alcançada com a polinização por abelhas. A região apresenta uma diversidade de habitats agrícolas próximos a ambientes naturais preservados (Parque Estadual Intervales e Parque Estadual Turístico do Alto Ribeira), o que favorece o estabelecimento de uma fauna de polinizadores diversificada, mas fortemente impactada pela aplicação intensiva de produtos químicos nos cultivos. A proposição de um plano de manejo objetivando a conservação de espécies de abelhas junto às áreas cultivadas se justifica plenamente para a região, considerando a fauna rica em espécies de abelhas com potencial de polinização para cultivos agrícolas. Planos de divulgação sobre a importância da conservação das espécies ou habitats alvo são parte integrante dos planos de manejo. Entre as ações de divulgação, a elaboração de material impresso é importante pela capacidade de alcance de diferentes setores envolvidos com as espécies e habitats a serem manejados e conservados. Este trabalho é parte integrante de um amplo estudo sobre a importância das abelhas em cultivos de tomate na região de Guapiara. Escherichia coli O157:H7 is a foodborne pathogen associated with enteritis in humans, ranging from a mild to bloody diarrhea to hemolytic uremic syndrome, thrombotic thrombocytopenic purpura and even death. Large E. coli O157:H7 outbreaks have been reported worldwide and are frequently associated with consumption of undercooked beef. Cattle are a major reservoir of the pathogen, which is found in the intestinal tract of the animal. The carcasses can be contaminated with feces during the slaughter and production process. Ground beef remains the most common vehicle. The purpose of this study was to determine the E. coli O157:H7 importance associated to human illness and productivity losses to the meat industry, as well as identifying mechanisms of contamination related to beef and strategies to improve the safety of beef products

In order to assure the maintenance of foods integrity and quality, for avoiding chemical, physical or biological contamination, it is essential to follow the Good Manufacturing Practices (GMP). Among the techniques used for evaluating GMP there is the observational analysis carried out by means of a check-list form application. The present study evaluated the suitability of GMP in a dairy industry producer of Minas fresh and ricotta cheeses, located in São José do Rio Preto, SP, by applying a check-list form. A significant improvement in conformity was evidenced, increasing from 43% to 78%. Neither the blocks related to the handlers nor the existing documentation in the company showed any improvements, as poor conditions unchanged. All of the other evaluated blocks showed significant improvement after applying the GMPrelated corrective measures. Based on these findings, the observance of corrective measures by the dairy industry on dairy products, physical environment, GMP, and handlers training was crucial for assuring the improvements and to increase the product quality and consumers safety.

Hazard analysis and critical control points (HACCP) is one of the main tools currently used to ensure safety, quality and integrity of foods. So, the aim of this study was to develop and implement the HACCP program in the processing of pasteurized grade A milk Checklists were used to assess on the level of the pre requisites programs and on the sanitary classification of the dairy industry and the results were used as references for the development of the HACCP system. A "decision tree" protocol was used for the identification of the critical control points (CCP). No physical or chemical CCP were identified, whereas pasteurization and packaging were considered biological CCP For these CCP, the limits for prevention, monitoring needs, corrective actions, critical limits and verification procedures were established. The pre requisites program was essential for the establishment of the system. The implementation of the HACCP for the processing of grade A pasteurized milk was efficient to control the biological hazards and enabled the product to comply with the legislation specifications and achieve safety.

OBJETIVO: Conhecer as representações sociais dos profissionais das equipes de saúde da família sobre o fazer teórico-prático do nutricionista. A pesquisa foi realizada em Unidades de Saúde da Família de um município do estado de São Paulo. MÉTODOS: Foi utilizada a metodologia qualitativa, tendo como sujeitos 27 profissionais, eleitos por critério intencional. A coleta de dados foi realizada por meio de entrevistas semiestruturadas. Para a interpretação dos dados, utilizou-se a análise categorial temática, apropriando-se da Teoria das Representações Sociais. RESULTADOS: Como resultados, emergiram quatro temas: Nutricionista na Estratégia de Saúde da Família, Abordagem de questões alimentares pelos profissionais da equipe de saúde da família, Educação nutricional e Problematizando a ausência do nutricionista na equipe de saúde da família. As principais representações obtidas com relação ao nutricionista foram relacionadas à prescrição de dietas, além de revelarem um conhecimento mais amplo sobre as funções e atribuições desse profissional. Não houve dúvidas sobre a importância da educação nutricional na promoção de práticas alimentares saudáveis, apesar de os sujeitos terem demonstrado uma visão superficial e pouco abalizada teoricamente sobre o tema. CONCLUSÃO: A ausência do nutricionista na equipe de saúde da família foi atribuída a fatores como o baixo reconhecimento social, a desvalorização profissional, o pouco tempo de existência da profissão, o desconhecimento do núcleo de competência do nutricionista e a manutenção do modelo médico hegemônico. Concluiu-se pela necessidade de mais estudos que problematizem a inserção do nutricionista em equipes de saúde da família.

We interviewed 21 farmers in order to access which sanitary practices adopted in the production systems of beef cattle on farms located in São Paulo, Mato Grosso, Mato Grosso do Sul and Rondonia. The survey was conducted through a qualitative approach to the collection of data obtained through questionnaire and personal interview with the landowners. We questioned the attitudes and sanitation procedures in these current production systems such as veterinary assistance, preventive health practices and disease surveillance, knowledge of health hazards for the safe production of food, animal feed, vaccine and immunizations, registration system, measures with newborns, products used in the environment and animals, grace period, employee training, destination of the dead animals, among others. Along with the data found that only 30% of properties had veterinary care, 67% said they meet the expiration dates of the products, although it was not mentioned on the products if there were any. In only 48% of properties were veterinarians who prescribed drugs to animals. Only two of the owners confirmed buying and using expired products in animals and only 48% have received some training on the property. In this setting, it is evident that farmers should be better prepared for insertion of its products in a highly demanding and competitive market. In this context, add value to the product depends mainly on the condition of sanitation of the herds.
