Ethanol production has gained great prominence in the investment new renewable energy sources and Brazil is among the leaders of production. However, this activity generates large amounts of waste being the largest volume of the sugar cane bagasse. For this reason looking up ways to use this material as burning for energy production and composition of forage in the diet of ruminants, however there are difficulties to use this production for this last one. This paper proposes a microbiological treatment with Lentinula edodes and Pleurotus ostreatus in order to enable the bagasse in ruminant feed composition in order to be used more noble than their burning. After treatment with the fungus, tests were performed for quantifying crude protein by the method of Kjeldhal. It was verified that the protein content in the pure bagasse was 1.0% after fermentation the protein content was 4.2% with L.edodes and 4.9% with P. ostreatus. To evaluate the protein quality of the product fermented by L. edodes and P. ostreatus was applied microbiological method for growth of Enterococcus zimogenes verifying that after fermentation the protein quality was 76 and 27.4% with L. edodes and P.ostreatus, respectively, compared with casein. The quantification of amino acids showed significant improvement of protein with altered amino acid profile with treatments of fungos. About of DQO and BOD were also found considerable improvement besides considerable drop in toxicity as measured by acute toxicity test with Daphinia similis

The purpose of the present investigation was to characterize the pitanga seeds on centesimal composition, and also to evaluate its antioxidant potential and fatty acid profile. For obtaining the extract, the dehydrated and ground seeds were treated with ethyl alcohol for 30 minutes, at a proportion of 1:3 of seeds:ethyl alcohol, under continuous agitation at room temperature. Afterwards, the mixture was filtered and the supernatant was placed into a rotoevaporator at 40ºC for determining the extract’s dry matter yield, by direct weighing. According to the results, the seeds of cherry showed high amounts of carbohydrates, and offer relevant content and antioxidant activity of phenolic compounds. In the seed oil, cherry high lighted a higher percentage of unsatured fatty acids, oleic being the main component.

The rancidity of vegetable oils is considered one problem in the food industry, thus, are added antioxidants in food. The objective of this study was to investigatethe antioxidant effect of oregano and thyme extracts in soybean oil underthermoxidation. Soybean oil containing 3,000 mg/kg of oregano and thyme oleo-resins and the mixture of both, as well as soybean oil containing tert-butylhydroquinone (TBHQ; 50 mg/kg) and soybean oil free of were subjected tothermoxidation. Then, the physicochemical properties and fatty acid profile wereevaluated. Oregano and thyme oleoresins applied separately presented a higherprotective effect, inhibiting a greater formation of polar compounds than the anti-oxidant TBHQ, indicating that the addition of 3,000 mg/kg has ensured a betteroxidative protection than the synthetic antioxidant. The increase in the concentra-tion of oleoresins by mixing thyme and oregano extracts has given a higher pro-tective effect.

This study aimed at evaluating the oils extracted from seeds originating from agro-industrial waste, in order to identify the presence of bioactive compounds. Therefore, determinations of fatty acid profile, triacylglycerols, tocopherol composition, phytosterols, phenolic compounds, total carotenoids, and antioxidant capacity were performed in the oils of grape, guava, melon, passion fruit, pumpkin, soursop, and tomato seeds. Antioxidant capacity analysis was performed by the methods DPPH• , ABTS•+, FRAP, and β-carotene/linoleic acid, besides measure of oxidative stability in the oils. The oils showed to be predominantly unsaturated with high percentage of linoleic essential fatty acid (38.8 to 79.4%), besides presenting significant quantities of tocopherols, phytosterols, and phenolic compounds. Tomato and guava oils showed better results in the antioxidant capacity tests and pumpkin oil had higher induction period in the oxidative stability test (65.3 h). The results obtained in this study collect information that enables the use of new alternative sources of vegetable oils, obtained from agroindustrial waste, which may serve as raw material for food, chemical, and pharmaceutical industries.
