This study was developed with the aim of evaluating recombinant bovine somatotropin (rbST) on non-carcass components of goat kids of three genotypes. It was used 23 male goat kids of three genotypes, being 8 Alpine, 4 ½ Boer + ½ Alpine (½ BA) and 11 ¾ Boer + ¼Alpine (¾ BA), from which 12 received rbST e 11 control. The growth hormone used was the recombinant bovine somatotropin (rbST) and animals of treatment 1 received the hormone in the amount of 0.3 mg/kg live weight, from 45 days, adjusted in intervals of 14 days. Animals of treatment 2 (control) received saline solution in the same dosage and interval. The ½ BA goats presented a higher proportion of external non-carcass components (head, feet and skin) in relation to Alpine goats. Regarding the vital organs, such as lungs, kidneys and spleen, and the non-carcass components blood, internal fat and perinephric fat, Alpine goats presented higher values than ¾ BA goats. The administration of recombinant bovine somatotropin (rbST) did not produce effect on proportions and weight of non-carcass components. Proportions and weight of non-carcass components varied in function of genotypes, although animals were slaughtered at similar live weight.

This work aimed to evaluate the carcass yields, commercial cuts and non-carcass components of Santa Inês lambs fed with 30, 40, 50 or 60% of oldman saltbush hay with concentrated. Were used 32 castrated lambs at 8 months old and initial body weight of 22 + 1.97kg, housed individually and slaughtered after 60 days of feedlot. The weights of hot and cold carcass decreased linearly with the inclusion of saltbush hay in the diet, however, there was no effect for true carcass yield and commercial cuts: shoulder (19.26%), neck (8.52%) ribs (26.57%) and leg (33.88%). There was a linear decrease for ribeye area and fat thickness when the level of hay in the diet increased. The weights and yields of skin, liver, heart, kidneys with perirenal fat, omental and mesenteric fats decreased linearly with the inclusion of hay in the diet, while the content (%) of gastrointestinal tract increased. The increased proportion of saltbush hay in the diet of lambs provided adequate true carcass yield and commercial cuts, however, reduces the ribeye area and fat thickness, important measurements in the qualitative evaluation of the lamb's carcass.

The objective of this study was evaluate the effects of immunocastration on body weight gain, carcass characteristics and meat quality of Nellore beef cattle. Eighty Nellore beef cattle, with initial body weight of 357 +/- 8.63 kg, were placed in feedlots and distributed in two treatments (40 animals per treatments) as follow: one - non-vaccinated bulls and two - immunocastrated bulls (Bopriva (R), Pfizer Animal Health). The animals placed on treatment two were vaccinated in two doses, first application 30 days before they arrive on the feedlots and second on the day they arrive on feedlots. After 67 days of experimental period, was calculated the daily gain of live weight in kg/day of the 80 animals and selected 20 animals from each treatment for the slaughter and carcass evaluations, and ten from each group for the meat analyzes. The data were submitted to analysis of variance. Immunocastrated animals showed lower daily weight gain, hot carcass weight, carcass yield, pH, leg thickness, muscle depth, loin muscle area, carcass muscle percentage, shear force and moisture. However, this animals had higher concentration of lactate and cortisol blood, chest depth, fat thickness, finishing degree, a *, b * and c*, liquid loss in thawing process, myofibrillar fragmentation index and ether extract of meat when compared to non-vaccinated bulss. The immunocastration (Bopriva (R)) is an alternative for improving the quality of meat by the higher fat deposition and by the reduction of the shear force of the meat when compared to non-vaccinated bulls.

The genus Salmonella was characterized in 1885. It is divided into two species and six subspecies or subgenera. Belonging to the family Enterobacteriaceae is composed of Gram-negative rods, usually producing mobile gas from glucose, except in those serovars S. gallinarum and S. Pullorum. Salmonela is one of the biggest problems in public health for its wide occurrence in humans and in animals, where they occupy the center of the epidemiology of enteric salmonelosis. These are responsible for significant rates of morbidity and mortality. Several outbreaks of food transmitted diseases are described involving meat birds. Sources of salmonela in broiler chicks infected stem, feed and farm environment. Currently, S. enteritidis and S. typhimurium are the two most prevalent serovars. In this context, the sum is increased resistance to antimicrobial drugs is including the latest generation of its indiscriminate use in veterinary medicine. This fact represents risk to human and animal health. New strategies have been adopted by the Brazilian poultry industry to control salmonela in broilers, but the contamination by this pathogen is still present in slaughterhouses putting public health at risk
