A Agricultura exerce papel fundamental na economia de um país, seja ela para emprego de mão de obra e geração de renda, seja para produção de alimentos destinados para a exportação e consumo interno. No Brasil a Agricultura familiar é responsável por produzir uma parcela importante de alimentos consumidos pela população nacional. Durante a década de 1990, políticas públicas foram sendo implantadas para auxiliar o desenvolvimento rural, tendo como público alvo a agricultura familiar e incidindo sobre entraves para o seu desenvolvimento, como a questão da comercialização dos produtos advindos desse segmento. Em 2003, O Programa de Aquisição de Alimentos (PAA), foi instituído pelo artigo 19 da lei federal 10.696, que tinha como objetivo promover a inclusão social e econômica no campo por meio do fortalecimento da agricultura familiar, através da aquisição de alimentos desses produtores. Tais alimentos adquiridos são destinados a ações de alimentação empreendidas por entidades das redes sócioassistenciais, Bancos de Alimentos e para famílias em situação de vulnerabilidade social. O presente trabalho consistiu em um estudo de caso, que teve como objetivo diagnosticar a influência do PAA no município de Rio Claro (SP), quantificando o número de agricultores que participavam do programa no município, e, identificando a diversidade e quantidade de alimentos produzidos destinados ao PAA. Foram também analisados os valores destinados ao programa desde sua implantação. Além disso, foram mapeadas as entidades sócio-assistenciais que receberam os alimentos destinados ao programa. Com base na leis de nº 10.696/2003 e nº 11.326/2006, e os Decretos de nº 6.447/2008 e nº 6.959/2009, que dão providências ao PAA, foram realizadas coletas de dados e informações junto às Secretarias de Ação Social e ao Banco de Alimentos do município de Rio Claro... Living organisms are constantly subjected to the action of free radicals, which are one of the causes of oxidation reactions, because they have on free electron, what makes it very reactive. They are products of organism reactions or they are produced by exogenous factors, such as tobacco. Fatty acids are the most vulnerable target, and may suffer lipid peroxidation, what affects the cell structure. Cardiovascular diseases, cancer and diseases of aging are occurrence of these reactions in the organism related. The aliments are also subjected to suffer oxidation reactions, what make them unfit for consumption and decreasing the useful life. Synthetics antioxidants are used as aliments preservatives, but they present some toxicity for the organism. Studies for the utilization of natural antioxidants have gained more importance in recent decades, due to the conservation potential and low toxicity. Phenolics compounds are largely present at the vegetable kingdom and they present high antioxidant potential due to the neutralization and kidnapping of free radicals capacity. These compounds are used by the industry at the aliments conservation, specially the phenolics acids. The consumption of aliments rich in phenolic compounds, such as teas, wines and fruits are low incidence of degenerative diseases related. This study consists in a bibliographic revision that covers these compounds importance in diet and at the food conservation, and the methodologies and difficulties in the extraction process due to variety of molecules of this group.

Among the major food-borne parasitic zoonoses, the helminthiasis transmitted by consumption of fish have been highlighted because they involve a large number of individuals in many regions of the world in recent years. In the past, these parasitosis were restricted to underdeveloped nations or with peculiar eating habits; however the process of globalization of food production, the increased international travel and consumption of fish for their nutritional benefits caused the expansion into new areas, which had never before been recorded, making it a serious public health problem in some countries. This review discuss the main helminths transmitted by eating raw or undercooked fish, in order to alert the public, the scientific community and health authorities about their risks to human health, as well as stimulate the realization of new researches that contributes to a greater knowledge of the epidemiological situation in the country of these parasites and the development of strategies for prevention and control of them.

Collective food services have been increasing worldwide, and the self-service restaurant has been the current preference by consumers. Considering the importance of hygienic quality of food, the microbiological composition of ready-to-eat food was assessed. In the second semester of 2008, 20 samples of meals, mainly meat-based foods, were collected from different self-service restaurants in Araçatuba city, SP. Bacteriological analyses were performed following the conventional methodologies, and the results were compared with the standards established by the effective Brazilian legislation. Coliforms at 35ºC were detected in 90% of analyzed samples. Coliforms at 45°C were found in 55% of the samples and, among these, in 63.63%, the occurrence of Escherichia coli was confirmed. Coagulase-positive staphylococci were detected in 10% of samples and no sample showed Salmonella spp. or Bacillus cereus contamination. Sulfite reducing clostridia at 42o C were not investigated in this study. These findings indicate the need for a rigorous approach for improving the sanitary conditions during preparation and presentation of ready-to-eat food, as the consumption of contaminated products represents a potential risk to public health.

The yerba mate (Ilex paraguariensis) is composed of bioactive that interfere with lipid metabolism. The objective was to evaluate if daily consumption of mate tea (MT) change the lipid deposits and dyslipidemia caused by excessive consumption of sucrose. Thirty male Wistar rats (40 days old) were divided into four groups: Group C - free access to commercial chow and deionized water; S - free access to commercial food, water and sucrose solution 30% (w/v) in water; MTS and deionized - free access to commercial feed solution, water, 30% sucrose (w/v) and treated with daily infusion of MT (soluble mate Leão Júnior®) via orogastric tube at a dose of 100 mg/kg/mc for 8 weeks. After the trial period the lipid profile was evaluated by the following parameters: a) direct weighing of the retroperitoneal (RP) and epididymal (EPI) adipose tissues; b) determination of plasma total cholesterol, triglycerides and HDL cholesterol concentration. The MT promoted the reduction of 1.4 times in both tissues RP and EPI in MTS group compared to group S. Treatment with MT decreased 2.7 times triglyceride in the MTS group compared with the group S. The sucrose consumption did not alter the plasma cholesterol concentration, however the consumption of MT significantly reduced total cholesterol circulating. The HDL cholesterol concentration, in the MTS group, showed higher concentration than in group S (1.3 times). MT prevents in young male rats the increase of lipid deposits and dyslipidemia caused by excessive consumption of sucrose.

Brazil is one of the largest milk producers in the world, with an estimated total production of 37 billion liters in 2014. Of this total, 33% is not inspected, being destined for the informal market. Objective: The aim of this study was to collect and analyze data on raw milk consumption in the city of Araraquara (SP, Brazil). Methods: Regular milk consumers were provided with exploratory questionnaires in locations chosen for convenience. The reproducibility of each question was tested by Kappa statistics. Associations of interest were 2 detected by the chi-squared (χ ) or Fisher's exact test. Statistical significance was established when p0.05. Results: Most of the volunteers (97.6%) reported consuming milk daily, the type of milk chosen most, mainly for ease of purchase, being boxed UHT. Regarding raw milk, 15.3% of volunteers said they consume it, the greatest consumption being observed among subjects with complete secondary or higher education. The majority of the participants reported knowing of the possibility of diseases being transmitted by unprocessed milk. Most respondents pointed to "flavor" as the main reason for consumption. Only 15.3% reported that someone in their house had become ill from drinking milk, and only 4.1% attributed this to the ingestion of raw milk. Conclusion: It was found that 15.3% of consumers drink raw milk in the city of Araraquara, which is more than the expected proportion in a medium sized city located in the state of São Paulo.
