The food industry is continually growing with new products becoming available every year. Extrusion combines a number of unit operations in one energy efficient rapid continuous process and can be used to produce a wide variety of snacks foods. The objective of this study was to evaluate the effect of extrusion temperature, screw speed, and amount of cassava leaf flour mixed with cassava starch on the physical properties of extruded snacks processed using a single screw extruder. A central composite rotational design, including three factors with 20 treatments, was used in the experimental design. Dependent variables included the expansion index, specific volume, color, water absorption index, and water solubility index. Among the parameters examined, the amount of cassava leaf flour and extrusion temperature showed significant effects on extruded snack characteristics. Mixtures containing 10% of cassava leaf flour extruded at 100 degrees C and 255 rpm shows favorable levels of expansion, color, water absorption index, and water solubility index.

A erosão genética de espécies domesticadas, provocada pelos processos associados a Revolução Verde despertou o interesse mundial pela agrobiodiversidade manejada em sistemas agrícolas de pequena escala onde situam-se agricultores familiares. Propostas de conservação in situ e/ou on farm têm sido elaboradas. No Brasil, a agricultura familiar tem grande importância na produção de alimentos e a mandioca (Manihot esculenta Crantz) é a espécie que se sobressai, sendo a agricultura familiar responsável por 87% da sua produção. O presente estudo teve como objetivos: um levantamento etnobotânico dos cultivos alimentícios de raízes e tubérculos de agricultores familiares do município de Rio Claro, São Paulo; e analisar aspectos sócio-econômicos visando estratégias para a conservação in situ de variedades por eles cultivadas e potencial continuidade das atividades pelas gerações futuras. Foram entrevistados 31 agricultores, em sua maioria homens, usando o método “Bola de neve”, distribuídos entre nove bairros ou distritos rurais da cidade de Rio Claro. As entrevistas realizadas para coleta dos dados foram semi-estruturadas, tanto para dados sócioeconômicos como para os dados sobre as variedades reconhecidas pelos agricultores. As entrevistas foram realizadas nos sítios dos agricultores e suas áreas de cultivo foram visitadas, onde foram feitas coletas botânicas. Os dados foram analisados de forma qualitativa utilizando-se gráficos e tabelas e descrições do estudo de caso. A espécie predominante da amostra foi a mandioca. Os agricultores mostraram possuir fatores positivos que os caracterizam como mantenedores da diversidade agrícola, como o fato de cultivarem etnovariedades de mandioca diversas e terem um sistema de caracterização e reconhecimento delas de base empírica, contudo, estes agricultores perderam, em sua maioria... The fall armyworm is a pest that feeds on various botanies species. The objective of this experiment was to study the biology of this pest in corn and cassava leaves. Caterpillars were collected in area under cultivation with cassava and maintained on artificial diet for two generations. Under controlled conditions in a climatic chamber (B.O.D) in the laboratory (25 degrees, 60 +/- 10% RH and photophase 14 hours) were evaluated daily 50 caterpillars in corn treatments and 50 in cassava, where duration and viability of the larval phase and pupal, weight of pupas were observed after 24 hours, deformation percentage of pupas and adults, longevity, fecundity and total life cycle. The viability of larvae fed on leaves of maize and cassava was 74% and 60%, respectively. The larval period of the insects was shorter in maize 16.89 days (seven instars) and cassava 20.08 days (six instars). The pupal phase lasted 11.42 days in cassava treatment and 10.87 in the maize. The pupal weight of females and males was higher in corn 204.91 mg and 198.97 mg, respectively. The biological cycle varied depending on the ingested food. Adult longevity lasted 9.88 days for insects fed on cassava leaves. Therefore, cassava affected the development of S. frugiperda.

Starch is one of the most important sources of reserve of carbohydrate in plants and the main source in the human diet due to its abundance in the nature. There no other food ingredient that can be compared with starch in terms of sheer versatility of application in the food industry. Unprocessed native starches are structurally too weak and functionally too restricted for application in today’s advanced food and industrial technologies. The main objective of this study was to compare the thermal behavior of native cassava starch and those treated with hydrogen peroxide, as well as those treated with hydrogen peroxide and ferrous sulfate. The cassava starch was extracted from cassava roots (Manihot esculenta, Crantz) and treated by standardized hydrogen peroxide (H2 O2 ) solutions at 1, 2 and 3% (with or without FeSO4 ). Investigated by using they are thermoanalytical techniques: thermogravimetry - TG, differential thermal analysis – DTA and differential scanning calorimetry - DSC, as well as optical microscopy and X-ray powder diffractometry. The results showed the steps of thermal decomposition, changes in temperatures and in gelatinization enthalpy and small changes in crystallinity of the granules.

The production of starch and cassava starch (Manihot esculenta) if has shown to an important business for the region the northwest of the Paraná, generating income and job for a significant agricultural producers. The production of the region is processed for industries at private capital and cooperatives of producers. The study involving agricultural producers and one of the most important cooperatives of the region (C-Vale) objectified to evaluate the relationships between cooperative and producers, and the mechanisms of coordination of the productive chain. The results had disclosed that the relationships are not harmonious, generating opportunism situations, high costs of transaction and diffidence in the operations between producers and cooperative. Also if it perceived a difficulty of coordination of the productive chain, due to lack of integration between the partners, what it affects the competitiveness and the efficiency of the sector.
