It is possible in many countries, perhaps all, there is business groups of pharmaceuticals industry, cosmetics together with the universities that use animals in scientific research and testing for the creation of new products and medicines. Currently is growing discussion about standards and criteria for the use of these animals (guinea pigs) and also increases the number of debates on ethical issues in research with animal models. This research seeks to portray the reality of the use of animals in scientific research academic at the University, specifically to research in physical education, as it has used animals in the areas of Physiology of Sport and Physical Activity, Nutrition for Athletes, among others. Initially is shown the pre-reflection, exposing the laws governing the subject, treating the animal experimentation with regard to its history and the issues of speciesism and the methodological mistake. It reveals what it is and as is the use of animals in education and the inability of the student to change that reality, to refuse to participate in the cruel activity, and even they are aware of their rights as in the case of the withdrawal of consciousness. Presents researchers and universities not use animals and ends the pre-debate showing Who is really the most animal research at the university by providing alternatives for them. We conducted a literature survey on animal experimentation, research universities, and alternative methods. The following is the phenomenon in understanding and awareness of the researchers who use animals in their research, conducting a phenomenological analysis of his speeches, revealing the meanings of their animal research. The focus of this study is, therefore, the analysis of discourses of researchers who carried out research using animal experiments (guinea pigs). The gastrointestinal tract is the main route of nutrients absorption and drugs delivery. Is important to know the parameters related to the tract, like gastric emptying and gastrointestinal transit, in order to better understand the behavior of different kind of meals or drugs passing through the GIT. Many techniques are used to study these parameters, such as manometry, scintigraphy, phenol red, activated charcoal and carbon-13 reading. However, these methods use radiation, are invasive and require animal sacrifice. As an alternative proposal, the Alternate Current Biosusceptometry (ACB), a magnetic technique, has proved to be effective for these studies with small animals, in a noninvasive way, low cost, radiation free and avoiding the animal death. Associating the ACB to magnetic micro or nanoparticles used as tracers, it is possible to observe the meal behavior inside of the GIT. Focusing meanly on liquid meals digestion, this paper had the objective to evaluate the efficiency of the ACB technique in gastric emptying and gastrointestinal transit evaluation of liquid meals in rats. To perform the experiments, magnetic nanoparticles (ferrite, MgFe2O4) were used on a 1,5 ml solution introduced by gavage on similar weight and age rats. The sensor made by 2 pairs of coils, capable of generating and detecting magnetic fields, creates a field on the interest place and when this field is in contact with the marked meal, it changes, resulting on a variation of the measured voltage. The voltage variation is analyzed and is obtained a particle concentration on the interest region. The results showed that is possible to apply the ACB technique on the GIT evaluation of liquid particles digestion, gastric emptying and meal cecum arrival time curves were obtained and from that, is possible to observe a pattern of gastrointestinal transit. Living organisms are constantly subjected to the action of free radicals, which are one of the causes of oxidation reactions, because they have on free electron, what makes it very reactive. They are products of organism reactions or they are produced by exogenous factors, such as tobacco. Fatty acids are the most vulnerable target, and may suffer lipid peroxidation, what affects the cell structure. Cardiovascular diseases, cancer and diseases of aging are occurrence of these reactions in the organism related. The aliments are also subjected to suffer oxidation reactions, what make them unfit for consumption and decreasing the useful life. Synthetics antioxidants are used as aliments preservatives, but they present some toxicity for the organism. Studies for the utilization of natural antioxidants have gained more importance in recent decades, due to the conservation potential and low toxicity. Phenolics compounds are largely present at the vegetable kingdom and they present high antioxidant potential due to the neutralization and kidnapping of free radicals capacity. These compounds are used by the industry at the aliments conservation, specially the phenolics acids. The consumption of aliments rich in phenolic compounds, such as teas, wines and fruits are low incidence of degenerative diseases related. This study consists in a bibliographic revision that covers these compounds importance in diet and at the food conservation, and the methodologies and difficulties in the extraction process due to variety of molecules of this group.
