The objective was to evaluate fatty acids composition of the back fat in loin meat (Longissimus muscle) from Nellore and Canchim young bulls. The animals were finished at feedlot and received sugar cane diets with two concentrate levels (40 and 60% of dry matter). The concentrates were formulated with sunflower grains, corn, soybean meal, dry sugar cane yeast, urea and mineral mixture. The experimental design was a completely randomized design with a 2x2 factorial arrangement (genetic group x concentrate level), and the results were submitted to the variance analysis and means compared by Tukey test at 5% probability, when the interaction was significant. The loin backfat of Nellore bulls had higher concentration of conjugated linoleic acids than Canchim bulls (0.86 and 0.59%, respectively). On the other hand, the loin back fat of Canchim bulls had higher concentrations of estearic (17.07%) and linoleic acids (2.40%) and polyunsaturated fatty acids than Nellore bulls, that showed values of 13.47 and 1.44%, respectively. The Nellore and Canchim loin back fat presents significant amounts of beneficial fatty acids to human health. Levels of 40 and 60% of concentrate in the diet did not alter the fatty acids composition of loin backfat.

This work has as main theme optimize the method of determination of fatty acids such as methyl octanoate, methyl palmitate, methyl stearate, methyl oleate, methyl linoleate and methyl linolenate in blood plasma samples from mice. The method proved to be very suitable for the analysis, in which we obtained the following linear coefficients: 0.9992, 0.9989, 0.9996, 0.9995, 0.9999 for methyl linoleate acid, methyl oleate, methyl palmitate, methyl stearate and methyl octanoate, respectively. Esterification of the samples gave good reading of chromatograms of samples without interfering peaks. The results obtained were as expected from the diet of mices

This study evaluated the chemical and lipid composition of uncooked or cooked loin (Longissimus thoracis) and rump (Biceps femoris) in samples of 2.54 cm thick from 35 carcasses of Nellore young bulls finished in feedlot for 96 days and slaughtered at an average weight of 532.17 ± 30.25 kg and 24 months of age. The rump had the lowest level of protein and ash (18.57 and 0.90%, respectively) and the highest level of ether extract compared to loin (3.37 and 1.90%, respectively). Higher levels of cholesterol were found in rump compared to loin (40.91 e 30.93 mg 100 g-1, respectively). The uncooked loin showed lower content of saturated fatty acids and higher content of polyunsaturated fatty acids. The best values for the omega-6: omega-3 ratio was observed in the uncooked beef. In the present study, the loin was healthier due to the higher amount of polyunsaturated fatty acids compared to rump. Cooking the meat decreases the levels of polyunsaturated fatty acids, omega-3, omega-6 and the omega-6: omega-3 ratio.

Epidemiological studies have shown an inverse relationship between nuts, including walnuts, intakes and chronic diseases such as cardiovascular diseases and cancers. The nuts contain phenolics compounds and flavonoids and are rich in tocopherol, phytosterols, and squalene. They are sources of carbohydrates, essential fatty acids and minerals. Since walnuts contain high levels of n-3 fatty acids and low unsaturated fatty acids, high levels of vitamin E, pholyphenols, flavonoids, arginine and fiber. The compounds possible beneficial effects are due to their antioxidant and antiproliferative activities, which are linked to a reduced risk for developing atherosclerosis and cancer. In recent years, the consumers have been showing an increased interest in nuts and walnuts because of their nutritional qualities and their potential beneficial effects on people’s health This review aims to describe the importance of beneficial bioactive compounds present in nuts and walnuts.

The analysis of serum cholesterol and triglycerides was performed in 20 healthy mongrel dogs, 10 male and 10 female, before and after supplementation for 30 days with fatty acids of long chain polyunsaturated derived from omega-3 n (497mg docosahexaenoic acid and 780mg eicosapentaenoic acid). The serum cholesterol presented a significant reduction after supplementation in both sexes (271.6±79.8mg/dL; 236,2±67,6mg/dL, before and after supplementation respectively). Regarding serum triglycerides, there was a reduction only in females (57.8±12,1mg/dL; 45.2±7,8mg/dL, before and after supplementation respectively), with no effect of supplementation in males.

O objetivo deste trabalho foi avaliar os efeitos de dietas com diferentes relações entre ácidos graxos poliinsaturados ômega-6 e ômega-3 nos parâmetros hematológicos e lipídeos plasmáticos de tilápias-do-nilo, antes e após estímulo pelo frio. Foram utilizados 320 alevinos invertidos para macho (±7,5 g), distribuídos aleatoriamente em 40 tanques (250 L) e alimentados com oito dietas: basal (sem adição de óleo), 6% de óleo de girassol (OG), 5% de OG + 1% de óleo de linhaça (OL), 4% de OG + 2% OL, 3% de OG + 3% de OL, 2% de OG + 4% de OL, 1% de OG + 5% de OL e 6% de OL. Os parâmetros hematológicos e os lipídeos plasmáticos foram determinados ao final de 85 dias de cultivo e após três dias de estímulo pelo frio. Não houve efeito das dietas sobre nenhuma das variáveis analisadas no período anterior ao estímulo. O número de leucócitos foi reduzido em peixes alimentados com a dieta 6% de OL, após estímulo pelo frio. O estímulo pelo frio provocou um declínio do estado geral de saúde, como leucopenia. Tilápias-do-nilo alimentadas com dietas com 6% de OL apresentaram menor resistência ao frio.
